Abstract

Using manual oil palm fruit harvesting tools requires a lot of energy and time, especially for trees with a height of more than 5 meters. This study aims to design and create an efficient, ergonomic, and environmentally friendly electric-based oil palm fruit harvesting tool. This system uses a DC electric motor controlled by a switch, with a sickle-shaped cutting blade driven by a transmission belt. The test results showed that the tool could cut oil palm bunches at 5-8 meters height with an average cutting time of 5-7 seconds per bunch. Power consumption was recorded at 150 Watts with a 24V 10Ah lithium battery power source.

Abstract

Manual oil draining on banana chips takes longer and leaves residual oil, affecting the texture and shelf life. This study uses centrifugal force to develop and test an oil-draining machine for banana chips. The method applied was experimental, with variables including rotation speed, draining time, and material capacity. The results show that the machine reduced oil content by 6% in 1 minute, improving crispness and shelf life.

Abstract

Manually slicing shallots is challenging for MSMEs engaged in the fried shallot industry. This study aims to analyze the effect of variations in the speed of knife rotation on the quality of the results of the sliced ​​shallots on the slicing machine. The study was conducted experimentally with five variations in rotation speed, measured using a tachometer, and visual observation to assess the quality of the slices. The results showed that the cutting speed increased from 61 kg/hour to 89 kg/hour, with the quality of the slices remaining at 85%. This study recommends the highest speed as optimal for productivity without reducing the quality of the slices.

Abstract

This study aims to analyze the performance of a fried onion draining machine designed for the needs of small-scale food industries. The machine operates using the principle of centrifugal force and is constructed with 304 stainless steel to ensure food safety and resistance to corrosion. Testing was conducted using variables such as rotation speed, draining time, and material capacity. Results show that the machine can reduce oil content in fried onions by 14.29% within 2 minutes, with a draining capacity of 50 kg per hour at 700 rpm. Energy efficiency achived was 35,49%, showing the potential for practical application of this machine in the UMKM environment. The use of this machine results in fried onions that are crispier, have a longer shelf life, and are processed more hygienically and efficiently. Further recommendations include design and operation system optimization to improve performance.

Abstract

Community Service Activities by the Mechanical Engineering Study Program of Medan Area University aim to bridge the world of higher education with the needs of local industry. This activity takes the form of industrial visits and hands-on learning at CV Bengkel Bukit Harapan, a metal casting manufacturing workshop located in Deli Serdang, North Sumatra. The methods used include theoretical counseling, field observation, open discussions, and direct practice. Students gain real-world experience in the metal casting process, from melting and pouring to work safety aspects and product finishing. The interaction between lecturers, students, and industry partners results in a two-way exchange of Knowledge that enriches students' technical insights and practical skills while also providing industry partners with valuable technical input. This activity demonstrates that a field-based collaborative approach enhances the effectiveness of learning and fosters stronger campus-industry partnerships. The results of this activity will serve as a model for sustainable synergy in community empowerment through technical education.

Abstract

Abstract This study aims to analyze the efficiency and cutting quality of a plastic ring cup cutting machine as a solution to the manual separation process, which is time-consuming and less effective. An experimental test was conducted using a cutting machine with a design capacity of 100 kg/hour and a 1 hp electric motor operating at a speed of 627.2 rpm. The testing focused on production capacity efficiency, cutting time, accuracy, and the quality of the cut. From ten trials, the average actual output was 44.69 kg/hour with an efficiency of 44.69% compared to its maximum capacity. These results indicate that several factors, including blade sharpness, machine size, and operational conditions, influence the machine’s performance. In terms of quality, some samples showed rough or incomplete cuts due to reduced blade sharpness. Nevertheless, the cutting machine proved capable of significantly improving the speed and efficiency of plastic waste processing on a small scale. With design improvements and proper blade maintenance, the machine’s performance can be optimized, making it a practical and environmentally friendly alternative for plastic waste processing equipment.

Abstract

This study aims to design and implement a shallot slicing machine with a 50 kg/hour capacity to improve production efficiency among food-sector MSMEs. The machine features an elbow-iron frame, a 0.5 HP electric motor, and a pulley-V belt transmission system driving stainless steel blades. Performance testing evaluated actual capacity, transmission stability, and slice uniformity. Results show the machine operates stably with near-target capacity and produces relatively consistent slices. The estimated cost of IDR 6,700,000 is economical for small businesses. The design’s strength lies in its simplicity, hygienic materials, and affordability. This machine is expected to offer an appropriate technological solution to enhance productivity and product quality in shallot processing.

Abstract

Micro, Small, and Medium Enterprises (MSMEs) in the food sector still face obstacles at the stage of drying potato oil. This process reduces quality, accelerates cooling, and reduces product shelf life. This research designed a simple centrifugal force-based oil slicing machine with food-grade material that is safe to use. Tests showed the machine was able to lower the oil content by up to 28% in a duration of 60 seconds per cycle, with an adequate capacity of five kilograms of fries. This innovation improves production efficiency, quality, and competitiveness of MSMEs in the processed food industry.

Abstract

The small-scale food industry faces challenges at the drying stage of potato chips that affect product quality, texture, and shelf life. This research designed and tested a centrifugal force-based slicing machine with a capacity of 20 kg per cycle. The design method is carried out through an engineering approach that includes literature studies, AutoCAD design, prototype fabrication, and performance testing. The engine uses a 1 HP electric motor, a V-belt transmission system, and perforated stainless steel tubes. The test results showed that the engine was able to significantly lower the oil content in just ±30 seconds per cycle. This design is considered appropriate to increase production efficiency and competitiveness of MSME products.

Abstract

This study aims to analyze the performance of oil slicing machines on potato chip products that are specifically designed for the needs of small-scale food industries. The machine has a capacity of 10 kg and is operated for 3 minutes per cycle. The test was conducted five times on potato chip samples, with the primary parameters being the weight before and after the slicing process. The average weight of chips before draining is 568 grams, while after draining, it decreases to 529 grams, indicating a 39-gram decrease in mass, which corresponds to a reduction in oil content. The calculation of the thinning efficiency revealed that the engine was capable of reducing the oil content by up to 6.87% of the initial weight. The engine is driven by an electric motor with a rotation of 1380 rpm, transmitted through a pulley system (3 inches: 13 inches), resulting in a tube rotation of 330.5 rpm. These results demonstrate that the slicing machine effectively reduces the oil content of potato chips in a short time, making it suitable for micro and small businesses in the snack sector due to its simplicity, energy efficiency, and cost-effectiveness.
