Abstract

Various local carbohydrate sources can be produced into flour to substitute for flour, save foreign exchange and improve food security. Based on the availability of raw materials and prices, cassava has the most potential to be processed into flour. The research results of cassava are also the most abundant among the carbohydrate source commodities. The name cassava has an inferior stigma in society, compared to rice and wheat, even corn. This is one of the considerations that cassava flour is then better known as cassava flour, to improve the image and interest of users. Cassava flour, with various technological variants, and other local flours have been widely researched, produced and used for various flour-based food products, but nationally the real impact on decreasing wheat consumption is still not significant. Therefore, this paper discusses the prospects and constraints of its use in the food industry. Keywords: Food Security, Carbohydrate Source, Casava Flour.

Abstract

Pangan segar asal tumbuhan (PSAT) merupakan pangan yang menjadi kewenangan dinas yang menangani urusan pangan di Kabupaten/kota. Pelaksanaan pemenuhan 3 komitmen registrasi pangan segar asal tumbuhan (PSAT) oleh pelaku usaha PSAT akan dapat berjalan secara efektif dan efisien apabila didukung oleh berbagai sarana dan prasarana termasuk sumberdaya manusia yang memahami akan pentingnya pemenuhan 3 komitmen registrasi PSAT. Tujuan kegiatan internship di Dinas Ketahanan Pangan adalah agar pelaksanaan pembinaan pemenuhan 3 komitmen registrasi PSAT oleh pelaku usaha dapat berjalan secara efektif sesuai dengan peraturan yang berlaku. Metode yang digunakan dalam kegiatan internship ini adalah dengan cara terjun langsung dalam pelaksanaan kegiatan pembinaan pemenuhan 3 komitmen registrasi PSAT baik di Bidang Keamanan Dinas Ketahanan Pangan Kabupaten Sukabumi, maupun di pelaku usaha PSAT yaitu PD. Aster. Dari hasil internship ini dihasilkan 2 jenis google form untuk form penilaian mandiri dan form penilaian penerapan yang baik PSAT, dihasilkan pula beberapa form standard operating procedures (SOP) yang dapat membantu PD. Aster dalam pemenuhan penerapan yang baik PSAT serta Pendampingan pembuatan SOP di PD. Aster yang telah dilakukan untuk memperbaiki SOP yang telah ada, dan membantu membuat SOP yang belum tersedia untuk dapat mempercepat pemenuhan persyaratan penerapan penanganan yang baik PSAT.

Abstract

Local potential is the potential of certain resources owned by an area including the environment, natural resources, people, technology, and culture that can be developed to build national independence. Science learning in schools should not be limited to transferring theories but, there must be a process of natural investigation. The activities were conducted to improve the ability of teachers to design science observation and experiment activities based on environmental potential. Activities were carried out as many as four meetings in a blended manner, namely online and offline. At the beginning of the activity, coordination was carried out with the Science Teacher Group in Yogyakarta. There were 30 participants who participated in the training with a background of science teachers and students. Evaluation of activities is measured through attitude scale instruments and assessment rubrics. There are two types of attitude scales used, namely open and closed attitude scales. The material presented in the form of an introduction to local potential, and the use in the classroom as outlined in the LKPD. The results showed that the greatest understanding of local potential was shown in the benefits indicator with a value of 78.6. While the others, namely the lowest experience indicator with an average of 53.6 while knowledge with a value of 74.6 and application of 57.1. Teachers who can integrate local potential in science learning such as traditional apem wonolelo can be integrated with the concept of temperature, saparan bekakak ceremony can be used in the concept of substances mixture, making pottery heat can be interagted in the concept of pressure, measurement, etc. This service is useful to increase teacher innovation in learning.

Abstract

Kejadian luar biasa (KLB) keracunan pangan merupakan peristiwa yang terjadi ketika dua orang atau lebih mengalami gangguan kesehatan dengan gejala yang serupa atau hampir serupa setelah mengonsumsi pangan yang terkontaminasi. Kejadian ini dapat disebabkan oleh berbagai faktor, salah satunya adalah pangan olahan siap saji yang banyak dijual oleh penyedia pangan jajan keliling dan jasa boga, yang menempati urutan kedua dan ketiga sebagai penyebab keracunan pangan, setelah masakan rumah tangga. Untuk itu, penyedia pangan olahan siap saji wajib memenuhi persyaratan prinsip higiene dan sanitasi yang ketat agar pangan yang disajikan aman dikonsumsi oleh konsumen. Dengan demikian, konsumen dapat terhindar dari risiko keracunan dan kejadian KLB dapat dicegah. Upaya pencegahan juga harus dilakukan secara berkelanjutan dengan melibatkan berbagai pihak, seperti individu, masyarakat, otoritas kompeten, dan pemerintah. Sinergi antar pihak-pihak ini diperlukan agar tren kejadian KLB keracunan pangan dapat dicegah dan dikendalikan secara efektif, serta untuk meningkatkan kesadaran masyarakat tentang pentingnya keamanan pangan.

Abstract

This study aims to produce PBL-STEM-based Student Worksheet Electronics assisted by PhET simulation on the topic of temperature and heat that is feasible and able to improve science literacy in a limited way by reviewing the results of N-Gain score analysis. The subjects in this study were students of class VII C SMP Muhammadiyah 3 Depok Sleman totaling 30 students, with 17 male and 13 female students. The research model used in this research is the 4-D (Four D) development model which consists of four stages, namely define, design, develop, and disseminate. The instruments in this study were interview guidelines, validation sheets, and students' pre-test and post-test questionnaires. Analysis of feasibility data was obtained through a validation questionnaire validated by three expert validators, while the improvement of science literacy was obtained through the results of limited trials. The data was obtained through the results of the pre-test and post-test given to students before the application of PBL-STEM-based Electronic Student Worksheets assisted by PhET simulation and after the application of PBL-STEM-based Electronic Student Worksheets assisted by PhET simulation. The validity results of this study obtained an average assessment score from the three expert validators of 93% with very valid criteria so that the PBL-STEM-based Electronic Student Worksheet aided by PhET simulation can be applied to science learning. The results of improving science literacy through limited testing of PBL-STEM-based Electronic Student Worksheets assisted by PhET simulation as an effect caused by the use of development products are creating a problem solution of 0.78, identifying scientific issues of 0.74, explaining scientific phenomena of 0.72 and using scientific evidance of 0.71. Overall, the increase obtained for each indicator is categorized as high, resulting in an average N-Gain value of 0.71 with high value criteria so that it can improve students' science literacy. Based on the results of the study, it is concluded that the development of PBL-STEM-based Electronic Student Worksheets assisted by PhET simulation is valid and can improve students' scientific literacy through limited tests with high N-Gain categories in each science literacy indicator.         Keywords: elektronic student worksheet, problem based learning, STEM, science literacy.DOI: http://dx.doi.org/10.23960/jpmipa/v25i3.pp1099-1112
