Abstract

Meretrix meretrix empirically has been widely believed by the public to a wide variety of health benefits. It is necessary to do an analysis of the level of toxicity of Meretrix meretrix extract. The experiment was carried out extraction sample with water (1;4) (w/v), analysis of acute toxicity Meretrix meretrix extract with the OECD method 403:2009. Based on the results of water extract of Meretrix meretrix no effect on physical observations of test animals with LD50> 15 g/kg BW. Histopathological observation on the liver and kidneys, there is necrosis of the liver cells and some cell degeneration in the kidneys, but on the whole network under normal conditions appropriate control group.

Abstract

Saat ini variasi pengembangan choux pastry masih sangat terbatas. Salah satu cara pengembangan produk ini adalah pembuatan choux pastry dengan penambahan ikan tamban. Pemanfaatan daging ikan tamban pada choux pastry diharapkan mengandung kualitas serta kandungan gizi yang baik. Selain itu, penggunaan protein yang terkandung dalam ikan tamban pada pembuatan choux pastry mampu menghasilkan produk dengan cita rasa gurih. Tujuan dari penelitian ini yaitu untuk menentukan dan mengetahui formulasi terbaik dari penambahan ikan tamban pada choux pastry berdasarkan uji hedonik serta menentukan karakteristik fisik dan nutrisi dari choux pastry yang terpilih berdasarkan uji hedonik. Metode Penelitian ini menggunakan Rancangan Acak Lengkap (RAL), yang terdiri dari empat perlakuan, yaitu IK0 (0%), IK1 (15%), IK2 (20%), IK3 (25%). Hasil pengujian hedonik menunjukkan bahwa pada perlakuan IK3 dengan penambahan ikan 25% mendapatkan hasil terbaik dengan nilai parameter warna (2,50%), aroma (2,66%), rasa (2,79%) dan tekstur (2,66%). Nilai proksimat yang dihasilkan dari hasil uji hedonik yang terpilih mendapatkan nilai kadar air (8,41%), kadar abu (3,81%), kadar protein (20,37%), kadar lemak (37,77%) dan kadar karbohidrat (32,80%).

Abstract

Tahun 2019 merupakan tahun dimana semua aspek kehidupan mengalami perubahan, pada penghujung tahun terjadi pandemi yang disebut Covid-19 yang melanda semua negara, dampak pendemi ini membuat banyak pihak melakukan perubahan dan mencari solusi untuk keluar dari situasi ini, salah satu yang bisa dilakukan adalah dengan cara mengkonsumsi makanan sehat. Tujuan sosialisasi ini adalah untuk mengenalkan makanan sehat produk perikanan pada siswa Sekolah Dasar sebagai cikal bakal generasi tangguh Covid-19 di Desa Pengujan Kabupaten Bintan. Target dari sosialisasi ini adalah siswa-siswi Sekolah Dasar dengan harapan dapat menumbuhkan kesadaran untuk mengkonsumsi makanan sehat dari produk perikanan. Permasalahan yang ditemukan di lapangan yaitu kurangnya informasi kepada siswa Sekolah Dasar mengenai makanan sehat yang dapat membantu meningkatkan imunitas dan Kesehatan. Hasil dari pengabdian ini diharapkan dapat memberikan pengetahuan tentang keamanan produk perikanan serta pengaruhnya terhadap kesehatan. Berdasarkan kegiatan pengabdian yang telah dilakukan terhadap siswa Sekolah Dasar, adanya peningkatan pemahaman siswa setelah mendapatkan materi tentang makanan yang sehat untuk anak usia sekolah dasar dan mengetahui perilaku hidup sehat yang baik selama masa pandemi Covid-19.

Abstract

Benan is one of the islands located in Senayang District, Lingga Regency, Riau Islands. Most of the people on Benan Island work as sea cucumber fishermen, this is because the existence of sea cucumbers on the island is still abundant. The processing of liquid waste originating from post-harvest sea cucumbers in the form of wet sea cucumbers and dry sea cucumbers has not been carried out optimally, even though the more raw materials for sea cucumbers are prepared at the time of postharvest, the more waste generated will also be. The problem with partners is that the liquid waste originating from the post-harvest preparation of sea cucumbers has not been carried out optimally. The solution given to partners is education through socialization of liquid waste processing from the results of postharvest preparation of sea cucumbers into local microorganisms (MOL) in the Benan village field trip group, so that postharvest processing of sea cucumbers becomes zero waste. The methods in the activities carried out are discussion and socialization. The results obtained after this service is increasing public knowledge about sea cucumber wastewater treatment.

Abstract

Resun Village, Lingga Regency, is a coastal area with preserved mangrove forest potential, but the utilization of mangrove fruits such as Sonneratia caseolaris (pedada) is still limited. This activity aims to empower the community through processing pedada fruit into dodol as a local food product with economic and ecological value. The methods used include socialization, dodol making training, organoleptic testing, proximate analysis, and product packaging design. Dodol is made from pedada fruit juice which is boiled and mixed with additional ingredients such as sugar, coconut milk, and glutinous rice flour, then cooked for more than 3 hours. Organoleptic tests by 59 panelists showed the highest level of preference for aroma (2.90) and taste (2.34), while texture received the lowest score (1.68). The results of the proximate test showed that dodol met the quality standards of SNI 01-2986-1992 with a water content of 2.84%, fat 2.84%, protein 2.32%, ash 0.44%, and carbohydrate 68.34%. This activity also succeeded in increasing public awareness of mangrove conservation and forming local business groups based on non-timber forest products.   Keywords: Proximate analysis, Resun Village, Mangrove dodol, Community empowerment, Sonneratia caseolaris, Organoleptic test
