Abstract

Pekalongan National Fishing Port (PPN Pekalongan), a type B fishing port, is recognized for its well-managed facilities and serves as an operational base for purse seine vessels. Purse seines are widely employed to harvest schooling pelagic fish, most of which are species of high economic value, thus requiring appropriate handling to maintain quality. This study aims to examine the handling practices of purse seine catches on board KM. Bintang Mas Maritim, focusing on storage temperature, handling equipment, and storage duration under freezer-based systems. Data collected included fish temperature at hauling, during freezing, and after storage, as well as the handling methods and equipment used by fishermen. The initial body temperature of the fish was 29.3°C at hauling. Fish were sorted by species, size, and quality, then washed and frozen at -18°C for 24 hours. Once frozen, they were packaged and transferred to the fish hold at -13.7°C for storage. The findings highlight the importance of systematic handling, washing, rapid freezing, and controlled storage—to maintain fish quality and extend shelf life.

Abstract

The blue swimming crab is a leading commodity in Karawang Regency in terms of economic value. It is marketed locally and internationally. Blue swimming crabs are sold to consumers both alive and processed, so a supply chain process is needed that can meet consumer demand quickly and maintain excellent quality. This study aims to analyze the management, structure, and costs of the blue swimming crab supply chain and evaluate its external performance using the Supply Chain Operations Reference (SCOR) method, which is considered a systematic approach for measuring supply chain performance. This study was conducted in Tirtajaya District, Cilamaya Wetan District, and at a blue swimming crab processing company in Cirebon. The results of this study include an explanation of the supply chain targets, supply chain structures, types of costs incurred by fishermen, traders, collectors, and suppliers, as well as the value of the external performance of the supply chain. The research subjects consisted of fishermen, traders, and collectors. The structure of the blue swimming crab supply chain in Karawang Regency had two different flows or chain networks from fishermen to suppliers. The costs generally incurred are operational costs, including diesel fuel, supplies, fishing gear, bait (if using traps), and transportation. External performance measurements of the blue swimming crab supply chain in Karawang Regency consistently yield superior results across all indicators. However, the order fulfillment indicator yielded parity due to the lean season.

Abstract

Research related to the influence of facilities on the quality of fish landed and auctioned has been done previously, but the catches under this study are still limited to large pelagic fish with complex fish auction facilities. This study was conducted for small pelagic fish where the handling facilities at this location are still very limited. Therefore, survey research with purpose to analyze the effect of handling facilities (ships, fish auction sites, baskets) on the quality of small pelagic fish. The data taken is daily data with the method of observation at the location on the ship, fish auction place, and baskets. The species that taken were Eleutheronema tetradactylum, Ilisha elongate, Pampus argenteus, and Johnius trachychepalus. Each species consists of 5 individuals. Its tests was done by looking at the organoleptic and pH values. The tests were done to every species of fish. The pH value was obtained by testing the fish meat sample on the meat pH meter, while the organoleptic value was obtained by looking at the physical condition of the fish using a score sheet of fresh fish quality parameters. Then after the results are obtained, an analysis is carried out to determine the magnitude of facility influence on fish quality by simple linear regression analysis. The organoleptic values of four kinds of samples were on average 6.84 - 4.95, while the pH values measured in these fish ranged from 6.3 - 5.94. The effect of fish handling facilities on the organoleptic value is 82% compared to other factors. The fish quality as measured by the organoleptic test showed a fairly good quality, while measured by the pH test showed good results. Handling facilities do not greatly affect the quality of fish and there are other factors that can affect the decline in fish quality other than facilities. The relationship between fish handling facilities and quality can give an overview of the contribution of handling facilities to fish quality.Keywords:Fish auction marketFish qualityHandling facilities
