Abstract

The purpose of the research was to identify the physicochemical characteristics of acetatedarenga starch produced by way ofan acetylation technique. This study used a completely randomized design (CRD) with treatments consisted of five different time lengths of reaction between the arenga starch and acetic anhydride 5 % i.e. 15, 30, 45, 60 and 75 minutes.  The reaction between the arenga and the acetic anhydride 5% was being maintained at pH 8.0-8.5. The research resultsshowed that theacetatedarenga starch contained 6.69% of water, a viscosity of 376 cp and emulsion stability of 74.00%.  The viscosity of the acetated arenga starch produced is stable suggesting that this substance is suitable to be utilized in food processing. Key Word: Acetated arenga starch, Emulsion, Physicochemical and Viscosity.

Abstract

The objectives of the research were to increase the use of arenga starch and to achieve an optimal processing method of instant starch noodle made of arenga starch. In the research, the instant starch noodle was made using porridge methods. The methods of making instant starch noodle porridge including determination of starch/water ratio, duration of cooking, and optimal aging time. The starch/water ratio and duration of cooking was established based on inter-molecule binding freedom level (gelatinization and retro gradation) with a minimal score of 80% according to instant noodle requirement (SNI 01-3551-1994). While, the determination of aging time was based on physicochemical properties of instant starch noodle produced. The physicochemical properties included water content, inter-molecule binding freedom level, and cooking speed, cooking loss, tensile strength, elongation, texture and white level. The results of the research indicated that the best porridge method was done with starch/water ratio of 1:1.5 (v/v), cooking duration of 12 minute, and aging of 60 minute. Physicochemical properties of instant starch noodle porridge using such method resulting in water content of 7.62%, inter molecule binding freedom level of 82.70%, cooking speed of 2.42 minute, cooking loss of 6.15%, tensile strength of 0.018 MPa, elongation of 7.44%, texture of 10.27 N and white level of 76.30%.

Abstract

The research conducted was aimed at increasing the use of arenga starch and finding an optimal processing method of instant starch noodle made of arenga starch. The instant starch noodle was made using a bihon method.  The stages of the bihon  method  process  including  determination  of  starch/water  ratio,  duration  of  cooking,  and  optimal  aging  time.  The starch/water  ratio  and  duration  of  cooking  were  established  based  on  the  degree  of  freedom  of  inter-molecular  binding (gelatinization and retro-gradation) with a minimal score of 80% in accordance with the instant noodle requirement (SNI 01-3551-1994). While, the determination of aging time  was based on physicochemical properties of  the instant starch noodle produced. The analysed physicochemical properties included water content, the degree of freedom of inter-molecular binding, cooking rate, cooking loss, tensile strength, elongation, texture and white degree. The results of the research indicated that the best instant starch noodle process using the bihon method was done at starch/ hot water ratio of 1:0.9 (v/v), cooking duration of 15 minutes, and aging time of 60 minutes. The physicochemical properties of the instant starch noodle were at water content of 8.57%, the degree of freedom of inter molecular binding of 83.23%, cooking rate of 3.31 minutes, cooking loss of 7.06%, tensile strength of 0.09 MPa, elongation of 7.44%, texture of 12.29 N and white degree of 75.10%.

Abstract

One product well-known to be liked by people young and old is chicken meat floss, even though its quality is often overlooked by either the producer or consumer.  The aim of this research was to identify physical, chemical and anti-oxidant characteristics of chicken meat floss produced by micro – small – medium enterprises (MSME) in Palu city.  The research use a completely randomized design with eight samples utilized and replicated three times, therefore, there were 24 research samples.  Parameter analyzed included water content, protein, fat, ash, total microbes, and anti-oxidant activities.  The research results showed that the chicken meat floss producing and distributing in Palu city had water content ranging from 4.32% – 12.35%, ash content ranging from 4.20% – 5.91%, protein content ranging from 29.71% – 40.72%, fat content ranging from 17.74% – 21.98%, the number of total microbes ranging from 1.10 – 8.87 log cfu/g, and anti-oxidant activities as shown by Inhibition Concentration/IC50 ranging from 5126.42 ppm – 12674.90 ppm and the percentage of inhibition ranging from 20.89% – 51.16%.  The percentage of free radical inhibition of the chicken floss UMKM in Palu was varied, however, the UMKM with the highest effect of inhibition belong to UMKM 5 as shown by its low IC50 concentration (5126.42 ppm) and highest percentage of microbe inhibition (51.16%).

Abstract

The purpose of this research is the chemical characteristics of prebiotic bread from various modified sago starch, namely acetylated sago starch (ASS), butyrylated sago starch (BSS), phosphorylated sago starch (PSS). Preparation of prebiotic bread was done by using a ratio of wheat flour (WF) with a single modified sago starch consisting of 360 WF:0; 180 WF: 180 ASS; 180 WF: 180 BSS and 180 WF: 180 PSS with 4 replicates. Research parameters include water, ash, fat, protein, fiber and carbohydrate content. The results showed that the best prebiotic bread was obtained at 180 WF:180 ASS with 28.33% water, 0.79% ash, 3.58% fat, 6.85% protein, 0.096% fiber and 58.98% carbohydrates. Modified sago starch has been potential as an alternative raw material for the manufacture of prebiotic bread.

Abstract

Tujuan dari penelitian ini yaitu untuk menentukan dan mengetahui pengaruh modifikasi ganda dari pati sagu asetat butirat, pati sagu asetat fosfat, dan pati sagu butirat fosfat pada karakteristik fisikokimia, fungsional, dan sensoris mie prebiotik yang dihasilkan. Penelitian ini dilakukan dengan 4 taraf parameter yang dilakukan yaitu 360TT : 0, 180TT : 180PSAF, 180TT : 180PSAB, dan 180TT : 180PSBF. Parameter penelitian meliputi rendemen, daya serap air (WHC), daya serap minyak (OHC), daya mengembang dan kelarutan, kadar air, kadar serat, waktu pemasakan (cooking time), kehilangan padatan akibat pemasakan (cooking loss), dan uji organoleptik. Hasil penelitian menunjukan bahwa mie prebiotik pada parameter WHC, OHC, Kadar Air, Kadar Serat, Pangan, Daya Mengembang Dan Kelarutan, Cooking Time, dan Cooking Loss, memberikan pengaruh yang nyata. Sedangakan pada parameter rendemen dan uji organoleptik tidak memberikan pengaruh nyata pada berbagai macam rasio. Sehingga dapat diketahui bahwa penambahan tepung modifikasi pati sagu asetat fosfat, asetat butirat, dan butirat fosfat mempengaruhi struktur mie yang dihasilkan.

Abstract

Penelitian ini bertujuan untuk menentukan karakteristik gugus fungsi asetil dan kristanilitas pati ubi banggai asetat melalui modifikasi pati secara asetilasi dengan waktu reaksi yang berbeda. Penelitian ini menggunakan Rancangan Acak Lengkap dengan perlakuan waktu reaksi (T) yaitu T1 : 30 menit, T2 : 35 menit, T3 : 40 menit, T4 : 45 menit, T5 : 50 menit, T6 : 55 menit. Penelitian ini  dilakukan untuk menentukan karakteristik pengikatan gugus fungsi asetil FTIR dan kristanilitas XRD.   Hasil penelitian menunjukkan bahwa terbentuknya pati ubi banggai asetat ditunjukkan dengan hasil identifikasi FTIR berupa adanya serapan gugus karbonil (C=O) pada bilangan gelombang 1651,07 cm-1, 1645,28 cm-1, 1643,35 cm-1, 1645,28 cm-1, 1651,07 cm-1 dan 1647,21 cm-1 dan munculnya gugus fungsi (C-O) ester dari gugus asetil pada bilangan gelombang 1163,08 cm-1, 1161,15 cm-1, 1159,22 cm-1, 1161,15 cm-1, 1163,08 cm-1 dan 1155,36 cm-1. Hasil analisis kristanilitas difraktogram XRD pati ubi banggai asetat diperoleh pada waktu reaksi 50 menit (16,97%) yang bersifat kristalin.Modification of Starch by Acetylation of the Acetyl Function Group and the Kristanility of Banggai Yam Starch AcetateAbstractThis study aims to determine the characteristics of the acetyl functional groups and the Banggai yam acetate crystallinity by acetylation modification of starch with different reaction times. This study uses a Completely Randomized Design with treatment time of reaction (T) namely T1: 30 minutes, T2: 35 minutes, T3: 40 minutes, T4: 45 minutes, T5: 50 minutes, T6: 55 minutes. This study was conducted to determine the binding characteristics of the acetyl FTIR functional groups and the XRD crystallinity. The results showed that the formation of banggai yam starch with acetate was indicated by the results of FTIR identification in the form of absorption of carbonyl groups (C = O) at wave number 1651.07 cm-1, 1645.28 cm-1, 1643.35 cm-1, 1645, 28 cm-1, 1651.07 cm-1 and 1647.21 cm-1 and the appearance of the functional group (C-O) esters of the acetyl group at wave number 1163.08 cm-1, 1161.15 cm-1, 1159.22 cm-1, 1161.15 cm-1, 1163.08 cm-1 and 1155.36 cm-1. The results of the analysis of the XRD diffractogram crystallinity of starch cassava proud with acetate were obtained at a reaction time of 50 minutes (16.97%) which were crystalline.Keyword : Banggai yam starch, asetylation, FTIR, XRD

Abstract

The lifestyle and eating patterns of the community make residents more demanding for instant food products and guaranteed food safety for consumption. One of the foodstuffs that are in great demand by the public is beef meatballs. The process of making meatballs generally uses ingredients a tapioca starch thickener that can create meatballs with the characteristics of taste, chewy, compact, and juicy that are favored by consumer .In addition to the use of tapioca flour as a meatball thickener, it is necessary to look for other thickening agents as a meatball thickener, namely taro flour as a safe alternative to use as a natural thickener in the manufacture of meatballs. In this research, an analysis of the physical and chemical properties was attempted, including protein content, fat content, water content, as well as an analysis of the total microbial( Total Palte Count/ TPC) beef meatballs processed with taro flour, tapioca flour, and coconut shell liquid smoke. The results showed that the highest protein content was obtained in the B2 meatball sample, namely 12, 22+ 0. 12% and the lowest was obtained in the B3 meatball sample, which was 9. 11+ 0. 54%, the highest fat content was obtained in the B2 sample code, namely 0, 24+ 0, 01% and the lowest was obtained in sample code B4 of 0, 17+ 0, 01%, the highest water content obtained in sample code B1 of 76, 10+ 0. 67%, and the lowest was obtained in sample code B0( control) of 70, 20+ 0. 03%, and the highest average total number of microbes was obtained in sample code B4 which was 5, 92+ 0. 12 log cfu/ gr, and the lowest was obtained at sample code B1 of 0. 07+ 0. 07 log cfu/ gr.

Abstract

Penelitian ini bertujuan untuk mengetahui karakteristik fisik dan kimia mie antioksidan dari pati sagu dengan ekstrak kulit buah naga merah. Desain Penelitian menggunakan Rancangan Acak Lengkap dengan 6 perlakuan dan 3 kali ulangan sehingga diperoleh 18 unit percobaan. Perlakuan yang dicobakan yaitu pasta sagu yang dicampurkan ke dalam pati sagu yang terdiri dari 6 level: 100 g; 110 g; 120 g; 130; 140 g dan 150 g. Variabel pengamatan yang dilakukan meliputi kadar air, Water Holding Capacity (WHC) dan Oil Holding Capacity (OHC), cooking loss dan antioksidan. Data dianalisis dengan Analisis Sidik Ragam dan dilanjutkan dengan uji lanjut BNJ 5%. Hasil penelitian menunjukkan bahwa kadar air cenderung meningkat dengan meningkatnya jumlah pati sagu. WHC/OHC untuk semua perlakuan juga tidak memberikan nilai signifikan. Cooking loss cenderung meningkat dengan meningkatnya jumlah pati sagu (110-150 g). Sifat antioksidan dari mie yang terbaik diperoleh pada perlakuan pati sagu 100 g.

Abstract

Penelitian ini terdiri atas dua tahap, tahap pertama bertujuan untuk mengetahui berat bubuk pod husk kakao terbaik yang digunakan dalam Pembuatan Minuman Instan Fungsional dari Pod Husk Kakao. Hasil analisis total fenol dan kapasitas antioksidan menunjukkan bahwa penggunaan bahan pod husk kakao kering dengan pelarut etanol memiliki kadar total fenol dan kapasitas antioksidan tertinggi. Tahap ke dua bertujuan untuk mengetahui kadar total fenol dan kapasitas antioksidan minuman instan dari berbagai ekstrak pod husk kakao. Penelitian ini menggunakan rancangan acak lengkap (RAL) satu faktor yang terdiri atas empat taraf berat pod husk kakao yaitu 5 g, 10 g, 15 g dan 20 g. Penambahan 2 g Maltodekstrin dan 10 g Sukrosa dilakukan pada proses pemekatan minuman instan. Hasil analisis minuman instan memiliki kadar total fenol dan kapasitas antioksidan tertinggi pada perlakuan 20 g pod husk kakao. Kadar total fenol dan kapasitas antioksidan minuman instan terbaik dihasilkan dari ekstrak 10 g pod husk kakao yang dijadikan sebagai panduan dalam pembuatan minuman instan.
