Abstract

Penerapan Good Manufacturing Practice (GMP) dalam proses produksi minuman herbal seperti jus sari mengkudu merupakan prasyarat penting dalam menjamin mutu, keamanan, dan daya saing produk di pasar. Kegiatan pengabdian ini bertujuan untuk memberikan pelatihan dan pendampingan kepada UD. ZAM dalam produksi jus sari mengkudu agar mampu menerapkan prinsip-prinsip GMP secara konsisten. Metode yang digunakan adalah pelatihan partisipatif, demonstrasi langsung, dan evaluasi kelayakan sarana produksi yang dilaksanakan di UD. ZAM Kabupaten Jember. Hasil kegiatan menunjukkan (a) Tingkat keidaksesuaian penyimpangan diketagorikan bahwa UD. ZAM berada pada Tingkat Level II. Artinya tingkat penerapan CPPB-IRT (Cara Pengolahan Pangan yang Baik- Industri Rumah Tangga) yang cukup baik, (b) peningkatan pemahaman dan praktik sanitasi, kebersihan personal, serta dokumentasi proses produksi

Abstract

UD Al Jaliil is one of the agro-industry producers of white tofu in Balikpapan City. The challenge faced in maintaining quality is that defective products are still found. To handle this problem, UD AlJaliil needs to carry out quality control methods Six Sigma.  This research aims to 1) analyze the implementation of quality control at UD Al Jaliil using methods Six Sigma 2) Determine the DPMO value and level Sigma white tofu products 3) Identify the factors that cause defective products so that efforts can be made to improve the quality of white tofu. Quality control is carried out using methods Six Sigma. Six Sigma  is a quality control method by reducing the level of defects through five stages of DMAIC, namely Define, Measure, Analyze, Improve and Control. The results of the research show that the processes at UD Al Jaliil are not yet completely under control because processes are still found that are outside the control limits. The DPMO value is 306,300 units/process, meaning that in one million products produced there is the possibility of 306,300 defective products. Level Sigma UD Al Jaliil is 2.0064 Sigma. And there are several factors that cause defects in the texture of white tofu, namely factors man, machine, method, material and environment.

Abstract

Customer loyalty is vital for competitiveness in the restaurant industry, especially in local contexts where customer preferences vary. This study investigates the effects of Customer Relationship Management (CRM), service quality, and product quality on customer loyalty at Resto Kemuning Polije, Jember. A quantitative approach was used, collecting survey data from 150 regular customers. Multiple linear regression, along with t-tests and F-tests, assessed the data's validity, reliability, and significance. Results show that CRM, service quality, and product quality positively and significantly influence customer loyalty. Product quality has the strongest impact, followed by service quality and CRM. The model's adjusted R² value of 0.782 indicates that 78.2% of the variation in customer loyalty is explained by these factors. This highlights the importance of maintaining high product standards, delivering excellent service, and employing effective CRM strategies. The study provides insights into the synergy between CRM, service quality, and product quality, offering practical recommendations for restaurant managers. These include prioritising consistent product quality, personalised customer engagement, and staff training. Future research should examine additional factors like pricing and marketing strategies to deepen understanding. This study contributes to the literature on customer loyalty, emphasising the integration of quality and relationship management for sustainable retention.

Abstract

This study investigates how women’s economic roles and access to finance shape social resilience and economic innovation in coastal communities. Focusing on 55 households in Puger District, Indonesia, the research adopts an explanatory survey design using a structured questionnaire to measure women’s roles, access to finance, social resilience, and economic innovation on a five-point Likert scale. Descriptive statistics show that women play a strong role in household and community economies, while access to finance and innovation remain at moderate levels. Multiple linear regression reveals that women’s roles and access to finance both have significant positive effects on social resilience, alongside education and income. A second model demonstrates that women’s roles, access to finance, and social resilience jointly and significantly predict economic innovation, with social resilience emerging as a particularly strong determinant. These findings suggest that women’s participation and inclusive financial services are not only crucial for short-term welfare, but also for building the adaptive capacity and innovation needed to transform coastal livelihoods. The study recommends gender-responsive financial schemes and institutional support that strengthen social networks, collective learning, and experimentation as strategic pathways for enhancing resilience and innovation in coastal areas.

Abstract

Kegiatan pengabdian kepada masyarakat ini bertujuan meningkatkan produktivitas dan keselamatan kerja pada proses produksi keripik gadung di UD “Gadung Badean” melalui penerapan teknologi tepat guna dan standarisasi proses produksi. Pendekatan yang digunakan bersifat deskriptif dengan rancangan sebelum–sesudah (before–after) pada satu mitra UMKM. Program dilaksanakan secara partisipatif dalam beberapa tahapan, meliputi observasi awal dan pemetaan masalah, perancangan dan instalasi mesin pengiris gadung, penyusunan dan sosialisasi standar operasional prosedur (SOP) produksi dan pengemasan, pelatihan serta pendampingan operator, dan evaluasi hasil. Data kuantitatif berupa waktu pengirisan per kilogram dan kapasitas produksi harian dikumpulkan menggunakan pengukuran langsung, sedangkan data kualitatif mengenai beban kerja, kenyamanan, dan persepsi pekerja diperoleh melalui wawancara singkat, kuesioner sederhana, dan catatan lapangan. Hasil kegiatan menunjukkan bahwa rata-rata waktu pengirisan menurun dari sekitar 18 menit menjadi 7 menit per kilogram, diikuti peningkatan kapasitas produksi harian dari 25 kg menjadi 45 kg bahan baku tanpa penambahan jam kerja signifikan. Skor kelelahan pekerja menurun dan keluhan terkait risiko luka gores akibat penggunaan pisau manual berkurang. Penerapan SOP turut memperbaiki konsistensi mutu irisan dan produk akhir.

Abstract

The Jember Regency is directly adjacent to the Indian Ocean and boasts a coastline of about 170 km along the southern coast of East Java. The districts of Puger, Ambulu, Gumukmas, and Kencong have the most potential for marine fisheries in this area. The primary location for fishing operations, fish landings, and the distribution of marine goods is the Puger Coastal Fisheries Port (PPP). More than 80% of the total marine capture fisheries production in Jember Regency comes from lemuru (Sardinella lemuru), lisong tuna (Euthynnus affinis), and scad (Decapterus spp.). Finding the key elements for maximizing fish resources in Jember Regency's coastal regions is the aim of this study. The methodology employed is a descriptive exploratory approach with an expert system component. The analysis technique used is cognitive mapping analysis. This research concludes that: of the 17 factors identified, they can be classified as follows: (a) In order of priority, the following key factors directly and indirectly influence other factors that determine the direction of fish resource utilization: the income of fishermen, business groups, mutual cooperation and deliberation, the lack of large-scale industries processing captured fisheries products, the employment opportunities provided by fish processing SMEs in coastal areas, and landowners acting as leasing companies or loan sharks, (b) The income of fishermen, landowners acting as leasing companies or loan sharks, business groups, discussion and collaboration, the lack of large-scale industries processing captured fisheries products, fish processing SMEs as job opportunities in coastal areas, and landowners acting as leasing companies or loan sharks are the dominant factors that directly affect other factors, in order of priority.

Abstract

Gadung is a type of tuber that can be consumed after undergoing a process to remove its toxins. UD. Gadung Badean is an MSME that produces gadung chips. The process of slicing gadung tuber at UD. Gadung Badean is still carried out traditionally with a manual slicer, which requires a long time and greater resources. This community service activity aims to introduce and implement an efficient and easy-to-use appropriate technology in the form of a gadung slicer. The activity was carried out through socialization and training. Results showed that the use of the gadung slicer can increase the speed of the production process and potentially increase production capacity.

Abstract

Noni juice agroindustry is one of the bio-pharmaceutical businesses that has significant potential in developing herbal health beverage products in Jember Regency. However, the implementation of supply chain management in this agroindustry still faces several challenges, including unstable raw material supply, inconsistent raw material quality, limited production technology, weak information integration, and suboptimal distribution and marketing systems. This study aimed to: (1) analyze the supply chain structure of the noni juice agroindustry in Jember Regency; (2) analyze supply chain management performance based on the Supply Chain Operations Reference (SCOR) model; (3) identify constraints in supply chain management implementation; and (4) formulate supply chain development strategies for the noni juice agroindustry. The research employed a descriptive method using a mixed-method approach combining quantitative and qualitative analysis. The analysis was conducted using the SCOR model consisting of plan, source, make, deliver, and return. The results showed that the supply chain of the noni juice agroindustry involves farmers, collectors, agroindustry processors, distributors, and final consumers. Based on the SCOR performance measurement, the supply chain performance obtained an average score of 3.12, which falls into the moderate category. The source and deliver stages became the main critical points due to unstable raw material continuity, inconsistent product quality, and suboptimal distribution systems. Development strategies that can be implemented include strengthening farmer partnerships, digitalizing supply chain systems, modernizing production technology, implementing GMP and HACCP standards, and strengthening digital-based marketing to improve supply chain efficiency and the competitiveness of the noni juice agroindustry in Jember Regency.

Abstract

A significant global issue faced by urban areas worldwide is the extensive conversion of agricultural land. In Indonesia, data from the Central Statistics Agency (BPS) in 2021 indicates that the conversion of national rice fields ranges from 60,000 to 80,000 hectares annually. This trend poses a serious threat to the availability of rice and other food sources. Therefore, urban agriculture represents a practical solution for ensuring food availability in a sustainable and independent manner. One applicable technology is the Vertical Hydroponic Farming System. The objectives of this initiative are: (a) to equip teachers with technical skills so they can serve as trainers for their students, and (b) to provide technical support to SMPN 7 Jember, an environmentally friendly school, in its pursuit of achieving Adiwiyata School status at the East Java provincial level by 2024. The methods employed include: (a) delivering theoretical foundations of hydroponic farming systems through traditional lectures, (b) hands-on practice involving the construction of hydroponic installations, seeding and transplanting techniques, maintenance, harvesting, and post-harvest handling, and (c) implementing hydroponic installations and cultivation at SMPN 7 by actively engaging both teachers and students. In conclusion: (a) there was a 110% increase in teachers' knowledge and skills related to hydroponic farming, with evaluation results of the technical guidance averaging 4.9 (very good), and (b) the implementation of hydroponic installations and cultivation at SMPN 7 Jember progressed smoothly, supporting the school in its goal of achieving Adiwiyata School status at the provincial level.
