Abstract

Processing guava into dried candied is an alternative to extend the shelf life of guava. The purpose of this study was to estimate the shelf life of dried candied guava in polypropylene plastic packaging at any storage temperature. Through changes in the values of the quality parameters, the shelf life of candied guava at various storage temperatures was determined using the Accelerated Shelf Life Testing (ASLT) method of the Arrhenius model. Dried candied guava that had been packaged in polypropylene plastic packaging (0,08 mm thickness) and then was stored in an incubator with several storage temperatures, which are 35ºC, 40 ºC, 45 ºC, and 50ºC. Quality analysis was conducted on changes in water content, color value, and vitamin C. Estimation of the shelf life of the Arrhenius model is based on critical quality parameters, in this study the deterioration of vitamin C content is the critical parameter. The shelf life of dried candied guava in polypropylene plastic packaging when stored at 20˚C is 282 days, at 25˚C storage is 134 days, and storage at 30˚C lasts up to 65 days. Shelf life will increase if the dried candied guava is stored at a lower temperature and vice versa.

Abstract

This research aimed to build a model for estimating the shelf life of dried chilies in vacuum packaging stored at any storage temperature. The shelf-life estimation of dried red chilies was carried out based on the change rate of dried chilies quality parameters using the ASLT (Accelerated Shelf-Life Testing) method with the Arrhenius approach. The shelf-life estimation using the ASLT method was carried out by conditioning the storage room, which could accelerate the degradation reaction, stored at temperatures above room temperature. Prior to storage, red chilies were dried until their moisture content reaches 10%. Then it was packaged in vacuum packaging made of PE (polyethylene) plastic and stored at 35°C. During the storage period, the observation was conducted on some quality parameters, namely moisture content, color, and vitamin C content. The same experiments were also carried out at 40°C, 45°C, and 50°C to obtain different rate constant values. The shelf-life estimation results from the Arrhenius equation model were selected based on the critical parameter, in this study the critical parameter was the decrease of vitamin C content. The shelf life of dried red chilies that were packed in vacuum stored at room temperature (25°C) could maintain its quality up to 365 days. Keywords:  Arrhenius,  ASLT,  Red chili,  Vacuum packaging,  Shelf life,

Abstract

The global essential oil market is expanding rapidly, driven by demand from the pharmaceutical, cosmetic, and food industries. This has positioned Indonesia as a key producer and exporter of citronella essential. However, inconsistent processing methods lead to variable quality and suboptimal oil yields. This study addresses this gap by investigating how withering duration (0-72 hours) and distillation time (2-4 hours) affect yield and quality of distilled oil from Cymbopogon nardus (Mahapengiri variety). The results show that the highest oil yield (1.14%) was achieved with 72 hours of withering followed by 4 hours of distillation, demonstrating that prolonged withering significantly enhances extraction efficiency by reducing moisture content and facilitating oil release from plant cells. Quality assessments revealed that extended processing improved key physical parameters, including density (0.8897 g/cm³) and refractive index (1.4694), which conformed to Indonesian export standards (SNI 06-3953-1995). Chemical analysis using gas chromatography-mass spectrometry (GC-MS) indicated that optimal processing conditions increased the concentrations of citronellal (43.24%) and geraniol (21.73%), critical compounds that enhance the oil’s market value. However, longer distillation times also intensified the oil’s color, shifting it from clear to a deep yellow, which may influence consumer preference despite meeting industry chromatic standards. The study highlights the trade-offs between yield, quality, and visual characteristics in citronella oil production. These findings provide actionable insights for Indonesian producers aiming to optimize post-harvest techniques and improve the competitiveness of citronella oil in global markets.
