Abstract

Most people like instant beverage products because of their practical processing and superior taste and creative packaging, thus attracting consumers to consume them. One of the food additives that is often used in instant beverage products is artificial sweeteners such as sodium cyclamate which has a sweetness level of 3.94 kcal/g or 30 times that of sucrose. This study aims to determine the levels of sodium cyclamate in packaged and powdered drinks circulating on the campus of the Indonesian Muslim University using the gravimetric method. The sampling method used a purposive technique and obtained 6 test samples, qualitative analysis used the precipitation method and obtained all positive samples containing sodium cyclamate. The results of the quantitative analysis obtained the levels of sodium cyclamate for each sample A; B; C; D; E; F as much as 37.07 mg/kg; 30.17 mg/kg; 12.93 mg/kg; 4.31 mg/kg; 340 mg/kg; 258 mg/kg. Thus, these results indicate that all samples do not exceed the levels set by BPOM regulation No. 11 of 2019 concerning food additives, namely 350 mg/kg, so they are safe for consumption.

Abstract

Sapodilla Manila (Manilkara zapota L.) is a plant that is widely known by the public. People usually use sapodilla leaves as traditional medicine. Efficacy obtained from the presence of phenolic compounds and flavonoids in these plants. This study aims to determine the phenolic and flavonoid content of ethanol extract in sapodilla leaves (Manilkara zapota L.) from Wajo district. This research method used UV-Visible spectrophotometry and the reference standard used were gallic acid (phenolic) and quarcetin (flavonoid). The results showed that the average phenolic content of the ethanol extract of sapodilla leaves at a concentration of 100 ppm was 150.28 mgGAE/g extract and the average flavonoid content of the ethanol extract of sapodilla leaves at a concentration of 300 ppm was 36.577 mgQE/g extract.

Abstract

Ficus is a species that is rich in polyphenolic compounds, such as flavonoids. These compounds are strong antioxidants that can aid in the prevention and treatment of various diseases caused by oxidative stress. They also protect cell structures, have anti-inflammatory properties, and can act as antibiotics. The aim of this study was to evaluate the anti-inflammatory properties of the ethanol extract and ethyl acetate fraction of rubber kebo (Ficus elastica) leaves using the Bovine Serum Albumin (BSA) protein denaturation method. The measurements were taken on a Uv-Vis spectrophotometer at a wavelength of 660 nm.  The study consisted of four experimental groups: a negative control, a positive control of diclofenac sodium, and test groups of ethanol extract and ethyl acetate fraction. The study revealed that the positive control (IC50) had an anti-inflammatory value of 9.2 μg/mL. Additionally, the ethanol extracts and ethyl acetate fractions of rubber kebo leaves (Ficus elastica) demonstrated anti-inflammatory activity with IC50 values of 31.24 μg/mL and 37.89 μg/mL, respectively. These findings suggest that the ethanol extracts and ethyl acetate fractions of rubber kebo leaves possess anti-inflammatory properties.

Abstract

Hypertension is a chronic disease in which blood pressure in the arteries increases. Hypertension is a health problem that has a risk of causing other diseases such as coronary heart disease, kidney failure, nerve dysfunction and stroke. Plants such as purslane (Portulaca oleracea L.) are one of the plants that have benefits in treating disease. The purpose of the review article is to determine the potential of Portulaca oleracea L. as an anti-hypertensive. This research is a Review Journal. The subject of this review is national and international articles indexed nationally and internationally in the last 10 years which discuss the antihypertensive ability of Portulaca oleracea L. by classifying them based on the type of study and test model used in-vivo, the potential of the plant in lowering blood pressure, mechanism of action in treating hypertension, and specific chemical constituents responsible for anti-hypertensive activity. Based on the results of studies conducted on several journal articles, it can be concluded that Portulaca oleracea L. : 1. exhibits promising antihypertensive properties through various mechanisms, including vasodilation, reduction of heart rate, and improvement of endothelial function; 2. Clinical trials and comparative studies indicate that it can significantly reduce systolic blood pressure, making it a potential natural adjunct in managing hypertension; 3. exhibits multiple mechanisms that can help manage hypertension, primarily through its antioxidant, anti-inflammatory, and lipid-regulating properties, 4. contains several bioactive compounds that contribute to its antihypertensive effects such as Asperglaucide (ASP), Oleracein E and Oleracein L, Omega-3 Fatty Acids, Quercetin, and Rutin.

Abstract

Pamelo citrus is a fruit plant having the potential to be developed in Indonesia. One of the centers for producing large oranges or Pamelo citrus in South Sulawesi is Pangkep Regency. One of the components of the Pamelo citrus is pectin. Pectin is a polysaccharide compound with a high molecular weight which is widely found in plants and it can absorb metals because they contain carboxylic groups. This study aimed to analyze pectin from albedo pamelo citrus fruit as an adsorbent for heavy metal plumbum (Pb), cadmium (Cd) and copper (Cu). The method used was atomic absorption spectrophotometer with the equation analysis of heavy metal adsorption by pectin of pamelo citrus determined by Langmuir and Freundlich adsorption isothermal method. The results showed that pectin of albedo pamelo citrus following the isothermal of Freundlich adsorption which showed the adsorbent capacity of Pb, Cd and Cu with the KF values 0.561 mg/g, 0.010 mg/g and 0.066 mg/g, respectively. Meanwhile, n values were 0.823 for Pb, 0.321 for Cd and 1.121 for Cu, and in commercial pectin following the isothermal of Freundlich adsorption with the KF values of Pb, Cd and Cu were 0.650 mg/g, Cd 0.015 and Cu of 0.77 mg/g, respectively. Then the n values were 0.641 for Pb, 0.811 for Cd and 1.183 for Cu.

Abstract

Tamalanrea Jaya merupakan hasil pemekaran dari Kelurahan Tamalanrea memiliki luas sekitar 31,84 km², dan jumlah penduduk yang diperkirakan pada pertengahan 2023 mencapai 106.262 jiwa. Dengan jumlah penduduk yang tinggi, maka jumlah limbah Rumah Tangga (RT) akan dihasilkan salah satunya adalah minyak jelantah. Permasalahan yang diidentifikasi dalam program ini meliputi minimnya pengetahuan dan keterampilan masyarakat, khususnya ibu-ibu PKK, dalam mengolah limbah RT menjadi produk bermanfaat dan bahkan memiliki nilai ekonomi. Kegiatan ini kami harapkan memberikan kontribusi langsung dalam memperkuat kapasitas masyarakat desa dalam pengolahan limbah RT minyak jelantah dan menciptakan peluang usaha. Kegiatan berlangsung selama tiga bulan dan meliputi beberapa tahap utama, yaitu perencanaan, penyuluhan dan edukasi, pelatihan dan demonstrasi, serta pendampingan dan monitoring. Hasil kegiatan ini berupa sabun kertas dengan banyak keuntungan serperti Praktis dibawa saat bepergian, Mudah larut di air, Ramah lingkungan dan bisa menjadi produk UMKM atau suvenir eco-friendly. Kegiatan pelatihan pembuatan sabun kertas dari minyak jelantah memberikan banyak manfaat bagi ibu-ibu PKK (Pemberdayaan Kesejahteraan Keluarga), baik dari segi lingkungan, ekonomi, keterampilan, hingga kesehatan keluarga. Peningkatan Kesadaran Lingkungan ibu-ibu agar tidak membuang minyak jelantah sembarangan.

Abstract

The root of Bajakah Tampala (Spatholobus littoralis Hassk.) is known to contain several bioactive secondary metabolites, including saponins, flavonoids, phenolics, and tannins, which contribute to its broad pharmacological potential. Among these compounds, tannins play an important role in various therapeutic applications such as hemostasis, burn treatment, and the management of diarrhea, dysentery, and tumors. In addition, tannins possess anticholesterol properties by precipitating mucosal proteins on the surface of the small intestine, thereby reducing the absorption of cholesterol and lipids into the bloodstream. This study aimed to determine the tannin content in the ethanol extract of Bajakah Tampala root as part of an investigation into its potential as a natural anticholesterol agent. The extraction process was carried out using the maceration method with 96% ethanol as the solvent to ensure efficient recovery of phenolic compounds. Quantitative analysis of tannin content was performed using the UV-Visible spectrophotometric method at a wavelength of 750 nm, with gallic acid employed as the standard reference compound. The results showed that the tannin concentration in the ethanol extract of Bajakah Tampala root was 91.699 mg GAE/g extract (milligrams of gallic acid equivalent per gram of extract). These findings suggest that Bajakah Tampala root possesses a high tannin content, supporting its potential development as a natural anticholesterol agent and contributing to the growing evidence of its pharmacological benefits in traditional medicine.

Abstract

Antioxidants are compounds capable of neutralizing the harmful effects of oxidants by donating electrons to unstable molecules, thereby preventing oxidative damage. These compounds play a vital role in protecting biological systems from oxidative stress, which is associated with aging and various chronic diseases. Kepok banana (Musa paradisiaca Linn.) peel is an underutilized natural resource rich in secondary metabolites such as saponins, flavonoids, alkaloids, tannins, and quinones, many of which are known for their strong antioxidant potential. The present study aimed to evaluate the antioxidant activity of the ethanol extract of kepok banana peel using the Ferric Reducing Antioxidant Power (FRAP) method. Extraction was performed by maceration with 96% ethanol as the solvent to obtain a concentrated extract. The FRAP assay was carried out by reacting the extract with FRAP reagents and measuring the absorbance using a UV–Vis spectrophotometer at a maximum wavelength of 710 nm. Quercetin was used as a standard antioxidant reference, producing a calibration curve with a linear regression equation of y = 0.0203x + 0.0301 and a correlation coefficient (r) of 0.9965, indicating excellent linearity. The results revealed that the ethanol extract of kepok banana peel exhibited high antioxidant capacity, with a value of 81.6939 mgQE/g extract. These findings suggest that kepok banana peel is a promising natural source of antioxidants and could potentially be developed into functional ingredients for pharmaceutical and nutraceutical applications.

Abstract

Tanaman kersen banyak tumbuh di daerah desa Paddingin Kec. Sanrobone, Kab.Takalar yang terlihat disepanjang jalan desa sebagai tanaman pelindung. Daun dan bunga kersen telah terbukti mengandung banyak senyawa kimia yang dapat memberikan aktivitas farmakologis seperti antidiabetes, antikolesterol, antibakteri, dan antioksidan, Berdasarkan hasil survei diketahui bahwa penyakit diabetes, kolesterol, asam urat dan tekanan darah merupakan penyakit yang masuk dalam 10 besar terbanyak yang diderita oleh masyarakat di desa Paddingin. Sehingga masyarakat perlu diedukasi cara penanganan dan pencegahannya dengan pemanfaatan tanaman kersen sebagai alternatif pengobatan tanpa menggunakan obat kimia yang memiliki efek samping. Tujuan PKM ini adalah untuk memberikan pengetahuan dan keterampilan IPTEK pembuatan teh herbal dari kombinasi daun dan bunga kersen pada mitra ibu PKK desa Paddingin. Pelaksanaan kegiatan PKM ini diawali dengan tahap pre test kemudian penyuluhan tentang manfaat kersen dan sediaan teh herbal. Selanjutnya dilakukan  pelatihan cara membuat produk teh herbal dalam kantong teh celup dan dikemas dalam pouch yang diberi label agar bernilai komersial, yang dipraktekkan langsung oleh peserta. Tahap berikutnya adalah uji hedonik untuk mengukur tingkat kesukaan pada produk teh herbal yang telah dibuat dan diperoleh hasil 95% peserta memilih suka dan 5% memilih sangat suka dan 0% yang memilih agak suka dan tidak suka. Tahap terakhir evaluasi dengan melakukan post test dan tanya jawab. Hasil evaluasi menjukkan adanya peningkatan pengetahuan sebesar 75% dan keterampilan sebesar 100% dalam mengolah tanaman kersen dengan memanfaatkan daun peserta dan bunganya menjadi produk teh herbal yang bermanfaat bagi kesehatan. Dengan dilakukannya kegiatan PKM ini diharapkan ibu-ibu PKK desa Paddingin dapat membuat produk teh herbal dari kersen secara mandiri dirumah untuk kebutuhan pengobatan sendiri serta keluarga dan dapat memberi peluang wirausaha untuk membantu perekonomian keluarga.

Abstract

Button mushrooms (Agaricus bisporus) are plants that contain phenols as antioxidants. Antioxidants are electron donor or reductant compounds. These compounds have a small molecular weight but are able to inhibit the development of oxidation reactions by preventing the formation of radicals. phenol is the main antioxidant component found in Agaricus bisporus extracts.  The aim of this research is to determine the antioxidant activity value of button mushroom ethanol extract (Agaricus bisporus) using the method of ferric reducing antioxidant power (FRAP). This research uses the maceration method as an extraction process using 96% ethanol. The resulting filtrate was concentrated with a vacuum rotary evaporator to produce a thick extract. Antioxidant testing was carried out using the FRAP method with a reagent solution of potassium feryricide, phosphate buffer pH 6.6 tricloroacetic acid (TCA), aquadest, and iron 3 chloride (FeCl3). Samples were analyzed using a UV-Vis spectrophotometer at a wavelength of 725 nm using quercetin as a standard solution. The results showed that the antioxidant activity value of the button mushroom ethanol extract (Agaricus bisporus) with the FRAP method was 3.847 mg QE /g extract.
