Abstract

The Nizam Zachman Ocean Fishing Port (PPS) in Jakarta is a key fisheries hub with many cast nets and high squid landings. However, overfishing in several Fisheries Management Areas (WPP) requires an evaluation of fishing gear selectivity. This research aims to analyze the size distribution of squid (Uroteuthis chinensis) caught, cast net selectivity, and growth, mortality, and recruitment parameters. Data were analyzed using length-frequency distributions and FISAT II software. Results showed that squid mantle lengths ranged from 15–41 cm, with a modal shift from 18 cm in December 2024 to 24 cm in January 2025. The first-capture length (Lc50%) of 26.90 cm, greater than half the maximum length, suggests that cast nets tend to catch appropriately-sized individuals. The selectivity factor (SF) was 7.06, indicating high selectivity. Growth analysis using the Von Bertalanffy model showed an asymptotic length (L∞) of 41 cm, a growth rate (K) of 1.01/year, and a theoretical zero-length time (t₀) of –0.14. Total mortality was 2.02/year, with natural and fishing mortality at 1,10 and 0,92/year, respectively; exploitation rate (0,45) remained below the optimal 0,5. The recruitment pattern shows the highest peak occurred in June (26.89%). Key words: long frequency histogram, population dynamics, size distribution

Abstract

Squid is one of Indonesia's marine fisheries resources that is nutritious and in high demand by the public, hence the need for good quality squid. The obstacle experienced in fulfilling the demand for squid is the quality of squid. Various research have been conducted to determine preservatives that are effective enough to maintain the freshness of squid for a long time and extend the shelf life. This research was conducted using a literature study technique, comparing and selecting the most effective of several natural preservatives used. Some of the preservatives compared were lactate solution from cabbage fermentation, yogurt, chitosan solution, picung seeds, and cucumber. This study aims to determine the effective preservatives that have the longest shelf life for squid. The results of the literature study showed that yoghurt was the most effective preservative for extending the shelf life of squid until day 11 with total lactic acid bacteria colonies of 4.8x 105 cfu/gram and pH value of 6.8 in low temperature storage. The concentration used was 1.5%.

Abstract

Ikan kembung merupakan salah satu komoditas perikanan yang banyak digemari masyarakat Indonesia. Beberapa alasan penyebabnya ialah karena ikan ini tingkat ketersediannya cukup tinggi, mudah ditemukan di pasaran dan memiliki karakteristik flavor yang disukai oleh masyarakat. Penelitian ini bertujuan untuk mengidentifikasi senyawa flavor volatil pada ikan kembung segar. Sampel dalam penelitian ini adalah daging ikan kembung segar yang senyawa volatilnya diekstraksi pada suhu 40oC menggunakan metode Solid Phase Micro-Extraction (SPME) dan diidentifikasi menggunakan alat Gas Chromatography/Mass Spectrometry (GC/MS). Selain itu, analisis proksimat juga dilakukan pada sampel daging ikan kembung (kadar air, abu, lemak, dan protein). Hasil analisis komponen volatil menunjukkan bahwa terdapat 27 senyawa volatil pada sampel daging ikan kembung segar dimana sebagian besar senyawa volatil yang terdeteksi berasal dari kelompok senyawa hidrokarbon, aldehida, alkohol, dan keton. Hasil analisis proksimat menunjukkan bahwa ikan kembung segar yang diteliti memiliki kandungan air, abu, lemak dan protein sebesar 74,2%; 1,66%; 1,38% dan 20,91% secara berurutan.

Abstract

Catfish is one type of carnivorous fish that can adapt to artificial feed formulations. attractants from animal sources such as earthworm meal can be used as attractants in feed. Attractants added to feed in small amounts can stimulate appetite and fish growth. This study aims to determine the best dose of earthworm meal addition as an attractant in feed so that it affects the growth of catfish. This study used experimental method of Completely Randomised Design (RAL) with 5 treatments and 3 replicates. The treatment used was the addition of earthworm meal attractant in catfish feed at a dose of 0% (A), 5% (B), 7,5% (C), 10% (D), and 12,5% (E). The results showed that the addition of 10% earthworm meal attractant in feed (Treatment D) was the best dose for catfish growth which was able to increase absolute length growth by 6,85 cm and specific growth rate (SGR) by 4,74%/day.

Abstract

One method to extend the shelf life of fish filets is through antibacterial preservation, which can be achieved using a cassava peel fermentation solution containing lactic acid bacteria that can combat spoilage bacteria in fish. This study aims to determine the effect of cassava peel fermentation solution on the organoleptic quality of red tilapia filets during low-temperature storage (5°-10°C). Red tilapia filets were soaked in a cassava peel fermentation solution with varying salt concentrations across four treatments: 0% (control), 2%, 3%, and 4%, with a soaking time of 30 minutes per filet according to the treatment. Observations were conducted on days 1, 4, 7, 8, 9, 10, 11, and 12, with organoleptic evaluations (appearance, aroma, slime, and texture) and data analysis using the Friedman statistical test, Multiple Comparison, and Bayes test. Results indicated that a 3% salt concentration yielded the best organoleptic value, especially on day 10, with aroma as the highest-ranked parameter according to the Bayes test (weight 0,44), followed by appearance (0,37), slime (0,10), and texture (0,08). Thus, cassava peel fermentation solution with a 3% salt concentration effectively extends the shelf life of red tilapia filets.

Abstract

Carrageenan is a polysaccharide extracted from the seaweed, Kappaphycus alvarezii. Carrageenan serves as a food additive, functioning as both a stabilizer and a gelling agent in vanamei shrimp otak-otak (a type of Indonesian fish cake). This study aimed to determine the effect of different carrageenan concentrations on the sensory acceptance and chemical characteristics of the vannamei shrimp otak-otak. The study was conducted using an experimental method with five treatments: carrageenan addition of 0% (A), 0,5% (B), 1% (C), 1,5% (D), and 2% (E). Preference was assessed using a hedonic test covering appearance, aroma, texture, and taste, as well as a chemical test measuring moisture, ash, fat, protein, carbohydrate, and crude fiber content. Based on the analysis of 20 semi-trained panelists, the most preferred treatment was the addition of 1% carrageenan, with average scores of 7.4 (liked) for appearance, 7.1 (liked) for aroma, 7.5 (liked) for texture, and 7.3 (liked) for taste. Chemical analysis showed 54.66% moisture, 2.34% ash, 8.08% protein, 0.01% fat, 34.91% carbohydrate, and 2.72% crude fiber. The addition of 1% carrageenan was identified as the most favorable concentration compared with the other treatments.

Abstract

Ink is a fishery by-product that has the potential to be utilized as a natural colorant due to its melanin and melanoprotein pigment content, which is nutritionally valuable. This study aimed to determine the optimal concentration of squid ink as a natural colorant in popping boba based on consumer preference levels and chemical composition, and to evaluate its economic value. The research employed an experimental method using a completely randomized design (CRD) consisting of five squid ink concentrations (0%, 0.5%, 1%, 1.5%, and 2%) with three replicates. The parameters observed included hedonic tests (appearance, aroma, texture, and taste), chemical analysis (moisture, ash, protein, fat, and carbohydrates), and economic value. The results showed that the addition of 2% squid ink produced the most preferred popping boba, with appearance, aroma, texture, and taste scores of 7.9, 6.8, 7.9, and 7.1, respectively. The best popping boba formulation had a moisture content of 70.52%, ash content of 0.14%, protein content of 0.04%, fat content of 0.02%, and carbohydrate content of 29.34%. Therefore, fortifying popping boba with 2% squid ink provides an appealing color while also enhancing its nutritional value.

Abstract

Sashimi merupakan kuliner khas Jepang berupa irisan ikan mentah. Penelitian ini bertujuanuntuk mengetahui potensi cemaran bakteri Salmonella sp. dan tingkat kesegaran sashimisalmon kemasan melalui parameter kimia berupa TVB-N dan pH serta karakteristikorganoleptik dengan kenampakan daging, aroma dan tekstur sebagai parameter pengamatan.Tiga sampel sashimi salmon kemasan diperoleh dari tiga lokasi penjualan berbeda di KotaBandung. Deteksi bakteri Salmonella sp. dilakukan dengan menggunakan media SalmonellaShigella Agar sebagai media isolasi bakteri. TVB-N diuji dengan menggunakan SNI 2354-8-2009 sebagai acuan pengujian, sedangkan pH diukur dengan menggunakan pH meter.Karakteristik organoleptik diamati dengan uji skor oleh 20 panelis semi terlatih menggunakanscore sheet SNI 2693:2014 yang kemudian hasilnya dihitung dengan rumus uji skor sesuai SNI 01-2346-2006. Hasil pengujian deteksi bakteri Salmonella sp., TVB-N dan pH dianalisis secaradeskriptif kuantitatif. Hasil penelitian menunjukkan bahwa tidak terdeteksi adanya cemaranbakteri Salmonella sp. pada ketiga sampel sashimi salmon kemasan. nilai pH berkisar 6,45-6,47 dan TVB-N 3,33-6,58 mg/100g, ketiga sampel masih dalam kategori segar. Secaraorganoleptik, sampel 2 telah memenuhi standar mutu kesegaran untuk produk sashimi.

Abstract

The use of bacteria as a biological control agent in aquaculture is such new hope overcoming the negative impacts of the impropriate use of antibiotics. Bacillus is widely known as a potential probiotic for aquaculture, especially which are derived from aquatic biota. Due to a concern that the role of Bacillus as a probiotic agent will be disrupted by residues of antibiotics in the water, this research aimed to identify Bacillus species from common carp intestine based on the molecular method and investigate their resistance to some com-mercial antibiotics that widely used in aquaculture. Chloramphenicol, ampicillin, and metronidazole were used to determine the Bacillus resistance to antibiotics using the Kirby Bauer method. The resistance assay was carried out with a bacterial density of 108 CFU/mL. The results showed that Bacillus isolates derived from common carp  intestine were closely related and resistant to antibiotics. Isolates that resistant to the three types of antibiotics were Cc.1.9 (CgN9) and Cc.2.18 (CgM18).
