Abstract

Background: Coronary heart disease (CHD) is mainly related to hypercholesterolemia. Sometimes CHD occurs in people with normal cholesterol. Therefore, it is necessary to study other factors that cause CHD: apolipoprotein B (apo-B). Atherosclerosis is a marker of CHD, characterized by the thickening of the walls of blood vessels and the narrowing of blood vessels. Non-pharmacologically, CHD can be managed by consuming foods with high fiber and antioxidants, such as red guava fruit.  Objectives: This research aimed to analyze the consequence of red guava fruit on the Apo-B levels and the thickness of the abdominal aortic wall in hypercholesterolemic rats.  Methods: The research design was a pre and post-test and a randomized control group. Fifty hypercholesterolemic adults male Sprague Dawley rats were given red guava fruit. The primary treatment used red guava fruit as a treatment group, referring to the fiber requirement of 38 g/day, and simvastatin as a positive control group based on a human dose of 10 mg/day, the conversion of human to mouse dose, according to Laurence-Bacarach is 0.018. The negative control group was hypercholesterolemic rats. The standard feed for the rats was based on AIN93. The Enzyme-linked Immunosorbent Assay method measures apo-B levels, Kit For apo-B Rattus norwegicus, Catalog No. E92003Ra, produced by Uscn Life Science Inc. The aorta was taken after going through general anesthesia and thoracotomy. Furthermore, the aorta was processed for making histological preparations with hematoxylin-eosin (HE) staining to observe histopathological changes.  Results: Observation of aortic wall thickness using a microscope with a magnification of 400X. Simvastatin and red guava fruit have reduced Apo-B by 7% and 6%, respectively.  Conclusions: The performance of red guava fruit in reducing Apo-B concentration and the thickness of the abdominal aortic wall was equal to the simvastatin.

Abstract

Nutrition investment on reproductive age women is important for poverty alleviation. Nutritional problems on reproductive age women such as chronic energy deficiency and anemia can continue while they are pregnant until in the 1000 days of life of their babies. It can lead to decrease productivity as adults. Pokjakes in community established to help solve nutritional problems including on reproductive age women. Pokjakes played a role in nutrition screening and report the result to health community center. Based on observation, Pokjakes cadre in RW V Pudakpayung Banyumanik Semarang lack of nutrition screening skills on reproductive age women. This course was conducted using lecture and demonstration method to solve the problem. The course aimed to improve cadre skills and data reported to health community centre more valid. Activity followed by 22 cadres. Skills of cadres increased after training with p<0,05. Course method with lecture and demonstration can improve pokjakes cadres skills on nutrition screening ABSTRAK                 Investasi gizi pada kelompok WUS harus menjadi bagian dalam upaya penanggulangan kemiskinan. Masalah gizi pada kelompok WUS seperti kekurangan energi kronis dan anemia dapat berlanjut pada masa kehamilan dan berlanjut hingga 1000 hari pertama kehidupan bahkan dapat berdampak pada penurunan produktivitas pada usia dewasa. Pokjakes di masyarakat dibentuk untuk membantu memecahkan masalah gizi termasuk WUS salah satunya adalah membantu penapisan gizi untuk dilaporkan ke Puskesmas. Berdasarkan hasil pengamatan, Kader Pokjakes di RW V Kelurahan Pudakpayung, Banyumanik Semarang masih kurang keterampilannya dalam melakukan penapisan gizi pada WUS. Kegiatan pelatihan dengan metode ceramah dan demonstrasi dilaksanakan untuk mengatasi masalah tersebut. Kegiatan dimaksudkan agar keterampilan Kader meningkat dan data yang dilaporkan ke Puskesmas lebih valid. Kegiatan diikuti 22 orang. Keterampilan kader meningkat setelah pelatihan dengan nilai p<0.05. Metode pelatihan dengan ceramah dan demonstrasi dapat meningkatkan keterampilan Kader Pokjakes dalam melakukan penapisan gizi pada WUS.

Abstract

Pengabdian ini dilakukan untuk pendampingan dalam  penguatan kapasitas kelembagaan Pemerintah desa dalam proses perencanaan dalam pengelolaan desa yang ramah anak dan peduli Perempuan di Desa Jatijajar, Kecamatan Bergas, Kabupaten Semarang, Jawa Tengah. Perencanaan pembangunan desa merupakan langkah awal dalam menerjemahkan visi, misi, tujuan dan sasaran desa. Namun, minimnya kapasitas kelembagaan dan kapabilitas aparatur desa seringkali menjadi sebab perencanaan pembangunan desa tidak bisa berjalan dengan optimal. Urgensi pemberdayaan berbasis kewilayahan ini adalah untuk mewujudkan pengelolaan desa layak anak dengan optimalisasi penguatan kelembagaan perempuan di desa Jatijajar. Tujuan untuk tahun ke-1: (1) menguatkan kelembagaan perempuan dalam mengelola desa layak anak, (2) memberdayakan kelembagaan perempuan (Tim Penggerak PKK, Badan Usaha Milik Desa/BUMDES, Forum Anak, Kadarkum, POSYANDU) (3) membuat pusat pengasuhan ramah anak mengacu Ruang Bermain Ramah Anak/RBRA KEMENPPA RI; (4) fasilitasi edukatif Lembaga PAUD. Luaran yang dihasilkan: menguatnya peran kelembagaan perempuan dalam mengelola desa layak anak, berdirinya Rumah Asuh Ramah anak.

Abstract

MI/Elementary School has obligation to monitor nutritional status of their students. This is intended for early screening of nutritional problems to prevent negative impacts that might occur. Implementation of nutritional status monitoring at schools were still found several problems. The teacher has not been able to measure correctly and cannot assess the nutritional status of school aged children. This community service program was consist of lecture activities and short course of nutritional status monitoring of school aged children. The course was conducted in MI Nyatnyono 02 West Ungaran. The participants came from nine school representatives from ten invited schools in West Ungaran. The program aimed to improve teacher’s skills of nutritional status monitoring of their students. During the program, participants showed high enthusiasm. The result of the program is teacher’s skills in measuring weight and height has improve.

Abstract

The majority of Indonesian people use rice as a staple food, the production of which continues to decrease. One of the efforts to meet the need for rice consumption in Indonesia is to make imitation rice or analog rice. Ingredients that have a high carbohydrate content that can be used as raw materials for making analog rice are tubers. Tubers that are often found in Semarang district include suweg (Amorphophallus paeoniifolius, Dennst). The source of protein in this analog rice comes from wader fish which are often found in Rawa Pening Lake, Semarang Regency. This study aims to determine the carbohydrate, protein, fat and fiber content of analog rice made from suweg and wader fish. The research was conducted for 2 months from September to November 2023. This research was carried out at the Food Laboratory of Ngudi Waluyo University. The type of research carried out was quantitative descriptive. The tools that will be used in this research are knives, basins, cutting boards, trays, ovens, blenders, mixers, 80 mesh sieves, digital scales, and analog rice extruders. The materials needed for this research are suweg, corn flour, tapioca flour, wader fish meal, and water. The steps for making analog rice are carried out by mixing 3250 grams of suweg flour, 500 grams of corn flour, 50 grams of tapioca flour and 1000 grams of wader fish meal. Analysis of nutritional content was calculated based on TKPI 2019, including carbohydrate, protein, fat and fiber levels. Based on calculation analysis using TKPI 2019, the results show that the nutritional content of analog rice per 100 grams is 62g carbohydrates; protein 18.3g; fat 1.7g; and 3.8g fiber. Analog rice made from suweg and wader fish has a lower carbohydrate content than commercial rice, while the protein, fat and fiber content is higher.   ABSTRAK Masyarakat Indonesia mayoritas menjadikan beras sebagai makanan pokok, yang produksinya terus-menerus berkurang. Upaya ntuk memenuhi kebutuhan  konsumsi  beras  di  Indonesia salah  satunya  adalah  membuat  beras  tiruan atau beras analog. Bahan-bahan yang memiliki kandungan karbohidrat tinggi yang dapat digunakan  sebagai  bahan  baku pembuatan  beras  analog  yaitu  umbi-umbian. Umbi-umbian yang banyak dijumpai di kabupaten Semarang diantarnya suweg (Amorphophallus paeoniifolius, Dennst).  Sumber protein dalam beras analog ini berasal dari ikan wader yang banyak ditemukan di danau Rawa pening, Kabupaten Semarang. Penelitian ini bertujuan untuk mengetahui kandungan karbohidrat, protein, lemak, dan serat beras analog berbahan suweg dan ikan wader. Penelitian dilakukan selama 2 bulan mulai September hingga November 2023. Penelitian ini  dilaksanakan  di  Laboratorium  Pangan Universitas Ngudi Waluyo. Jenis penelitian  yang dilakukan adalah  deskriptif  kuantitatif.  Alat  yang  akan digunakan  pada  penelitian  ini  yaitu  pisau, baskom,  talenan,  nampan,  oven,  blender, mixer, ayakan  80  mesh,  timbangan  digital, dan ekstruder  beras  analog. Bahan  yang  dibutuhkan  pada  penelitian  ini yaitu  suweg,  tepung  jagung, tepung  tapioka,  tepung ikan wader, dan  air.  Tahapan pembuatan beras analog dilakukan dengan mencampurkan tepung suweg 3250 gram, tepung jagung 500 gram, tepung tapioka 50 gram, dan tepung ikan wader 1000 gram.  Analisis kandungan zat gizi dilakukan penghitungan berdasarkan TKPI 2019, meliputi kadar karbohidrat, protein, lemak, dan serat.  Berdasarkan analisis perhitungan menggunakan TKPI 2019 diperoleh hasil kandungan zat gizi beras analog per 100gram adalah karbohidrat 62g; protein 18,3g; lemak 1,7g; dan serat 3,8g. Beras analog berbahan suweg dan ikan wader memiliki kandungan karbohidrat lebih rendah dibandingkan beras komersial, sedangkan kandungan protein, lemak, dan serat lebih tinggi.

Abstract

Salak fruit is perishable, has a limited shelf life, so it is necessary to use appropriate technology to process snake fruit. Salak processed using simple technology that can last quite a long time is making snake fruit flour. Salak flour is processed into raw materials for making processed products into cookies. The aim of this research was to determine the level of preference and nutritional content in processed salak flour cookies. This research uses an experimental design. The sample used was 25 untrained panelists. This was done by making 4 formulations for each product using salak flour F1 (25%: 75%), F2 (50%: 50%), F3 (75%: 25%), F4 (100%) then carried out a liking test . Next,  a  nutrient  content  test  is  carried  out.  Analysis  of  protein,  ash,  water,  fat, carbohydrate and fiber content. The protein content of Pondoh salak cookies is 7.6%, energy 469,615 Kcal, ash 1.60%,  water  content  4.3%,  fat  content  19.9%,  carbohydrates  64.9%,  fiber  content 2.8%. The cookie test results based on the highest level of preference were F2 with average values for color (78.4%), aroma (75.3%), taste (77.6%), texture (74.4%). The most popular salak pondoh cookie formula is formula 2 with an average score of 76.4% in the "Fair" category. ABSTRAK Buah salak bersifat mudah rusak, umur simpan terbatas, sehingga diperlukan penggunaan teknologi yang tepat guna mengolah salak . Oalahan salak diproses dengan menggunakan teknologi sederhana, dapat bertahan cukup lama adalah pembuatan tepung salak. Tepung salak diolah menjadi bahan baku pembuatan produk olahan menjadi cookies. penelitian ini adalah untuk mengetahui tingkat kesukaan dan kandungan zat gizi dalam olahan cookies tepung salak Penelitian ini menggunakan experimental design. Sampel yang digunakan sebanyak  25  panelis  tidak  terlatih.  Dilakukan  dengan  pembuatan  4  formulasi pada masing-masing produk dengan menggunakan tepung salak F1 (25%: 75%), F2 (50% :50%), F3 ( 75% : 25%), F4 ( 100%) kemudian dilakukan uji kesukaan. Selanjutnya dilaksanakan uji kandungan zat gizi. Analisis kandungan kadar protein, abu, air, lemak, karbohidrat dan serat. Kandungan protein cookies salak pondoh yaitu 7.6%, Energi 469.615 Kkal, Abu 1.60%, kadar air 4.3%, kadar lemak 19.9%, karbohidrat 64.9%, kadar serat 2.8%. Hasil uji cookies berdasarkan tingkat kesukaan tertinggi adalah F2 dengan nilai rerata warna (78.4%) , aroma (75.3%), rasa (77.6%) , tekstur (74,4%). Formula cookies salak pondoh yang paling disukai adalah formula 2 dengan nilai rata-rata 76.4% dalam kategori “Cukup”.

Abstract

The Minister of Health Policy No. HK.01.07/Menkes/1458/2023 about clinical research management in hospital stated that every hospital need to build their own clinical research unit. RSPAW already has research unit but they are still lacking in research program and can not fulfill the target of this year. Health workers in RSPAW rarely participated in research activity. Based on interview, the target  in 2023 was not achieved yet by September. Research activity in RSPAW was done randomly, was not well documented, and unpublished. This course was about research activity in hospital. This course was held to increase the interest and skill of the health workers in RSPAW to fulfill the work target.  Furthermore, health services in hospital were expected based on research result. The monitoring results of the course are six proposal scripts are submitted to get funding from the hospital research unit and two articles have been published. This course can increase awareness and interest of health workers in the hospital to conduct research activity.   ABSTRAK                 Berdasarkan Keputusan Menteri Kesehatan Republik Indonesia Nomor HK.01.07/Menkes/1458/2023 tentang penyelenggaraan penelitian klinik di rumah sakit perlu dibentuk unit penelitian klinik di rumah sakit. RSPAW telah memiliki unit penelitian, namun kegiatan penelitian masih minim dan target rencana strategis rumah sakit belum tercapai. Praktisi di RSPAW masih jarang terpapar mengenai kegiatan penelitian. Berdasarkan hasil wawancara, target publikasi penelitian tahun 2023 di RSPAW belum tercapai hingga bulan September. Kegiatan penelitian di RSPAW sifatnya masih acak dan belum terdokumentasi dengan baik serta tidka dipublikasikan. Kegiatan bimbingan teknis mengenai pelaksanaan penelitian di rumah sakit dilaksanakan untuk meningkatkan minat dan keterampilan tenaga kesehatan di RSPAW dan membantu mencapai target kinerja. Selain itu, hasil riset diharapkan dapat menjadi dasar pelayanan kesehatan rumah sakit. Pada kegiatan tindak lanjut, telah terdapat enam naskah proposal penelitian yang disusun untuk diajukan dalam mendapatkan pendanaan rumah sakit dan dua artikel penelitian telah terbit. Kegiatan bimbingan teknis penelitian dapat meningkatkan minat tenaga kesehatan di rumah sakit untuk melaksanakan penelitian.

Abstract

As humans age, they experience an aging process that is characterized by an increasing number of metabolic and structural disorders, often referred to as “degenerative diseases”. Two of them are hypertension and diabetes mellitus (DM). The elderly need special attention in the form of good health services. Health services can be in the form of health education, namely education on nutritional management of DM and hypertension, followed by elderly gymnastics. Elderly Posyandu cadres are an extension of Puskesmas officers in providing health information to the elderly. Based on observations, the cadres of Ngudi Waras Elderly Posyandu RW V Pudakpayung Village, Banyumanik Semarang still lack knowledge and skills in providing education on the management of DM and hypertension to the elderly. Training activities with lecture methods on the management of DM and hypertension, demonstrations and simulations of providing education in the form of nutrition counseling and exercise were conducted to overcome these problems. The activity was conducted on 6 cadres. The Wilcoxon t-test showed that the cadres’ knowledge increased after the training with a p value of <0.05. The skills of cadres can be seen by their enthusiasm in participating in activities and practicing the given material. Lecture, demonstration, and simulation methods were proven to improve cadres’ knowledge and skills in the management of DM and hypertension   ABSTRAK                 Seiring bertambahnya usia, manusia mengalami proses penuaan yang ditandai dengan semakin banyaknya kelainan metabolisme dan struktur yang sering disebut dengan “penyakit degeneratif”. Dua di antaranya adalah hipertensi dan diabetes melitus (DM). Lansia memerlukan perhatian khusus berupa pelayanan kesehatan yang baik. Pelayanan kesehatan dapat berupa pendidikan kesehatan yaitu pendidikan penatalaksanaan gizi pada DM dan hipertensi yang dilanjutkan dengan senam lansia. Kader Posyandu Lanjut Usia merupakan perpanjangan tangan petugas Puskesmas dalam memberikan informasi kesehatan kepada lansia. Berdasarkan observasi, kader Posyandu Lansia Ngudi Waras RW V Desa Pudakpayung Banyumanik Semarang masih kurang memiliki pengetahuan dan keterampilan dalam memberikan edukasi pengelolaan DM dan hipertensi pada lansia. Kegiatan pelatihan dengan metode ceramah tentang penatalaksanaan DM dan hipertensi, demonstrasi dan simulasi pemberian edukasi berupa penyuluhan gizi dan senam dilakukan untuk mengatasi permasalahan tersebut. Kegiatan tersebut dilakukan terhadap 6 orang kader. Uji t Wilcoxon menunjukkan pengetahuan kader meningkat setelah diberikan pelatihan dengan nilai p<0,05. Keterampilan kader terlihat dari antusiasmenya dalam mengikuti kegiatan dan mempraktikkan materi yang diberikan. Abstract

Stunting is a condition of growth failure in children under five resulting from chronic malnutrition, particularly during the first 1,000 days of life. In the body of a stunted child, there are impediments to physical growth and mental development. This is the body's adaptation to malnutrition. The underlying causes of stunting must be addressed so that the impact of stunting is not experienced until adulthood. In 2022, Sragen Regency, Central Java, was identified as a key location for stunting intervention. One of the strategies to accelerate stunting reduction is the provision of assistance to families at risk of stunting. This is carried out by the family support team (TPK) Cadre. The Sragen Regency TPK cadres have provided communication, information, and education to the target group. However, the implementation of this strategy has not been optimised. The cadres lack the requisite skills to prepare materials, create media, and provide education to the target group. They are constrained in their ability to educate target groups about alternative nutrient-dense foods, particularly those derived from local sources in the supplementary feeding program for target groups. Training activities utilize a combination of lecture, discussion, and hands-on preparation of materials and creation of communication, information, and education media according to the target group, video screenings, and demonstrations of nutrient-dense supplementary foods. The activity was attended by 71 representatives of TPK cadres from 10 villages focused on handling stunting in Sragen Regency. The results obtained were increased knowledge and skills of cadres in providing communication, information and education and the provision of nutrient-dense supplementary food. It is recommended that cadres disseminate information about the preparation of materials, the creation of communication, information and education media and alternative nutrient-dense supplementary foods to other cadres in the village. ABSTRAK                 Stunting adalah kondisi gagal tumbuh pada anak balita sebagai akibat kekurangan gizi kronis terutama pada 1000 Hari Pertama Kehidupan. Di dalam tubuh anak yang stunting terjadi hambatan pertumbuhan fisik dan perkembangan mental. Hal ini sebagai penyesuaian tubuh terhadap kondisi kekurangan gizi. Akar penyebab stunting harus diatasi agar dampak stunting tidak dialami hingga dewasa. Kabupaten Sragen, Jawa Tengah pada tahun 2022 menjadi salah satu lokasi fokus intervensi stunting. Salah satu program percepatan penurunan stunting adalah pendampingan keluarga berisiko stunting yang dilaksanakan oleh Kader Tim Pendamping Keluarga (TPK). Kader TPK Kabupaten Sragen telah memberikan Komunikasi, Informasi dan Edukasi (KIE) pada kelompok sasaran, namun belum dilaksanakan dengan optimal. Kader TPK belum terampil dalam menyusun materi, membuat media dan memberikan edukasi kepada kelompok sasaran. Kader TPK memiliki keterbatasan dalam memberikan edukasi kepada kelompok sasaran mengenai alternatif makanan padat gizi terutama yang berbahan dasar pangan lokal dalam program Pemberian Makan Tambahan (PMT) kelompok sasaran. Kegiatan pelatihan dengan metode ceramah, diskusi dan praktik penyusunan materi dan pembuatan media KIE sesuai kelompok sasaran, pemutaran video dan demonstrasi untuk PMT pada gizi. Kegiatan tersebut diikuti oleh perwakilan Kader TPK dari 10 Desa fokus penanganan stunting di Kabupaten Sragen sebanyak 71 orang. Hasil yang didapatkan adalah meningkatnya pengetahuan, dan keterampilan kader TPK dalam memberikan KIE dan PMT padat gizi. Saran bagi kader TPK adalah meneruskan informasi mengenai penyusunan materi dan pembuatan media untuk KIE dan alternatif PMT padat gizi kepada kader TPK yang anggota kader TPK lain di desanya.

Abstract

Background: Processed products as popular snacks in Indonesia are steamed cakes and cookies. Various recipes were developed to complement and increase the nutritional value of processed products. One way is to make a formulation of steamed cakes and cookies based on the modisco formula with the addition of local food, pumpkin. Modisco is a food additive in liquid form with a composition of full cream milk, granulated sugar, margarine. The new product innovation of processed steamed cakes and cookies is fortification of modico with the addition of pumpkin as a local food. Objectives: This study conduct to describe the nutritional value of processed product formulations for steamed cakes and cookies which have been fortified with modico were used pumpkin as a local food. Methods: This study used an experimental design, divided into two groups, there are the steamed cakes group and the cookie group based on the modico formula for fortification which has been modified together with local pumpkin food. The variables measured for content analysis were the nutritional value of macronutrients, there are protein, fat, carbohydrate, and fiber. Data analysis was carried out by describing the nutritional value of steamed cakes and cookies modisco formula made from pumpkin.   Result: The processed steamed cakes based on the modisco formulation with the addition of pumpkin per 100 grams were contains 9.25 grams of protein, 11.21 grams of fat, 32.50 grams of carbohydrates and 2.18 grams of fiber, with an energy of 268.62 kcal. The processed cookies based on the modisco formulation with the addition of pumpkin per 100 grams were contain 7.92 grams of protein, 16.7 grams of fat, 61.79 grams of carbohydrates and 2.49 grams of fiber, with an energy of 426.34 kcal. Conclusion: The processed cookies based on the modisco formulation with the addition of pumpkin were contains higher energy, carbohydrates, compared to processed steamed cakes.
