Abstract

Roti bolu manis berbasis MOCAF terkomposit serbuk daun kelor merupakan salah satu inovasi produk pangan olahan non gluten. Penggunaan MOCAF sebagai bahan pengganti terigu aman untuk penderita yang intoleran terhadap gluten. Serbuk daun kelor yang kaya akan protein, serat, dan senyawa bioaktif dapat meningkatkan nilai gizi dan fungsional roti bolu manis. Penelitian ini berguna mengidentifikasi pengaruh rasio MOCAF dan serbuk daun kelor terhadap karakteristik fisik, kimia dan sensori roti bolu manis berbasis MOCAF terkomposit serbuk daun kelor. Rancangan penelitian berbasis Rancangan Acak Lengkap (RAL) serta 4 (empat) ulangan perlakuan. Faktor  perlakuan adalah rasio MOCAF dan serbuk daun kelor, yaitu: (A1)=100:0; (A2)=98:2; (A3)=96:4; (A4)= 94:6; (A5)=92:8; dan (A6)=90:1. Hasil penelitian yaitu rasio MOCAF dan serbuk daun kelor berpengaruh terhadap sifat fisik, kimia, dan sensori. Perlakuan terbaik berdasarkan uji efektivitas pada perlakuan A4 dengan rasio MOCAF 96 g dan serbuk daun kelor 4 g (A4) dan nilai daya kembang sekitar 18,22%; kadar air 28,33%; kadar protein 9,56%; kadar serat kasar 2,91%; aktivitas antioksidan 53,46%; dan polifenol total 0,45 mg GAE/g, tingkat kesukaan pada atribut rasa 5,16; aroma 4,60; warna 4,52; tekstur 4,24; dan 3,96 secara keseluruhan.

Abstract

Penerapan Good Agricultural Practice (GAP) pada pengelolaan panen dan pasca panen kopi sangat penting untuk memastikan kualitas kopi yang optimal dan menjaga keberlanjutan produksi. GAP pada tahap pasca panen berfokus pada serangkaian praktik yang memastikan hasil panen kopi diproses dengan cara yang menjaga kualitas, kebersihan, serta keamanan produk kopi. Tujuan dari pelaksanaan PKM ini adalah memberikan pembimbingan dan pelatihan kepada petani kopi di Lereng Ijen Kabupaten Bondowoso agar dapat meningkatkan kinerja dalam pengelolaan dan pasca panen kopi yang sangat vital untuk memperbaiki dan meningkatkan kualias kopi yang merupakan andalan petani kopi di lereng Ijen ini. 1 Tahap Pertama. Pada tahap pertama ini dilakukan beberapa kegiatan diantaranya, a) observasi, b) kordinasi, dan c) kesepakatan dan kesepamaham antara tim pelaksana dengan petani. Dalam implementasinya, observasi merupakan kegiatan paling awal dan mendasar untuk mengumpulkan data serta mendeskripsikan permasalahan yang ada di lapangan [6]. 2) Tahap II adalah Kegiatan sosialisasi progam pengabdian kepada amasyarakat dan penerapan Good Agriculture Practice on Coffee (GAP on Coffee) pada pascapanen kopi dilaksanakan pada tahap ini. Hasil PKM ini adalah pemanenan yang selektif, pemrosesan yang teliti dan benar, pengeringan yang baik dan proses penyangraian serta pembubukan kopi yang sesuai SNI dengan kemasan yang aman dan higienis.

Abstract

The manual cracking and separation of cocoa beans' husk result in low working productivity, a high percentage of broken beans, and the difficulty of separating cocoa nibs from the husk. This poses a challenge for both farmers and industrial players in cocoa bean management, leading to the development of a cocoa bean dehusking machine (desheller). This study was conducted to analyze the performance of the cocoa bean dehusking machine. The research involved motor speeds of 500, 700, and 900 rpm, combined with roasted cocoa bean grades AA, A, and B. The observed parameters included working capacity, yield, nib percentage, percentage of husk adhering to nibs, power transmission efficiency, and power requirements. The working capacity of the cocoa bean deshelling machine ranged from 17,413 to 41,481 kg/h, with yields between 73.83% and 80.83%. The nib percentage varied from 92.13% to 98.61%, while the percentage of husk adhering to nibs ranged from 1.08% to 6.92%. Power transmission efficiency was between 92.24% and 94.14%, and power requirements ranged from 601.33 to 645.33 watts. The best treatment in this study was found at a motor speed of 900 rpm with cocoa bean grade of AA.  Keywords:  Desheller,  Nibs,  Roasted cocoa beans, Shell,  Yield

Abstract

"Basil" or basil has economic value both in fresh form, simplicia and essential oil. This research aims to evaluate the method and duration of distillation in making essential oil from basil. Two distillation methods, namely steam and boil distillation, are carried out with different distillation times (1 hour, 2 hours, and 3 hours). The parameters observed were physical characteristics which included oil volume, yield, pH, distillation rate, color, aroma and spots. The results show that the best distillation process time is 2 h for both distillation methods. Steam distillation for 2 hours produced the best essential oil of 1.1 ml, yield 0.11%, pH 5.78, distillation rate of 0.53 ml/h, pale yellow color, strong aroma, clean spots. Meanwhile, water boiled distillation for 2 h produced 1.2 ml of essential oil, 0.12% yield, pH 6.31, distillation rate of 0.60 ml/h, brown color, weak aroma, very spotty. Distillation of basil leaf essential oil using the steam method for 2 h was determined as the best treatment based on the highest essential oil yield, smallest pH, highest distillation rate, clearest color, most distinctive aroma, and cleanest stain. Keywords: Aroma, Basil leaves, Essential oil, Steam distillation, Yield.

Abstract

Peanuts are the second largest legume crop in Indonesia, both cultivated on farms and wild. In 2019-2023, Indonesia experienced a decline in peanut production due to the declining in harvesting area. In addition, this is also due to the poor quality of seeds in the cultivation process. This study aims to observe the performance of the Multi Seed Smart Dryer (MSSD) machine for peanut seeding. This research was conducted by observing changes in moisture content, drying rate, drying temperature, and peanut germination test results using the Multi Seed Smart Dryer machine. The results showed that the left side of all shelves experienced an increase in temperature because it was close to the heat source and the level of temperature uniformity was still said to be uniform because it did not exceed the uniformity limit. The peak drying rate occurred at the 12th hour and decreased further. Based on the results of the germination test, the dried beans have a germination rate of 83%. This is in accordance with the passing standard of seed quality according to the Ministry of Agriculture of the Republic of Indonesia and International Seed Testing Association. Keywords: Drying, Multi Seed Smart Dryer, Peanut, Temperature.

Abstract

Penelitian ini bertujuan untuk menganalisis efektivitas mesin produksi gula dalam rangka meminumkan pemborosan (losses) yang terjadi pada Pabrik Gula Pandjie Situbondo. Analisis efektivitas mencakup perhitungan pemborosan (losses), dan memberikan rekomendasi perbaikan untuk mengurangi penyebab losses di Pabrik Gula Pandjie Situbondo. Pengukuran efektivitas mesin menggunakan metode Overall Equipment Effectiveness (OEE), perhitungan nilai losses menggunakan pendekatan six big losses, dan analisis penyebab losses dan rekomendasinya menggunakan metode Fault Tree Analysis (FTA). Hasil penelitian menunjukkan bahwa rata-rata nilai OEE pada stasiun gilingan, stasiun pemurnian, stasiun penguapan, stasiun pemasakan, dan stasiun puteran berada pada rentang 60%-84% yang artinya produksi dianggap wajar tetapi menunjukkan ada ruang besar untuk improvement. Hasil analisis six big losses pada setiap stasiun menunjukkan bahwa faktor losses yang paling berpengaruh adalah reduced speed losses

Abstract

Kabupaten Jember merupakan daerah di Jawa Timur yang memiliki potensi besar pada sektor pertanian, dengan kelapa sebagai salah satu komoditas unggulannya. Hampir seluruh bagian kelapa dapat dimanfaatkan, termasuk tempurungnya. Tempurung kelapa dapat diolah menjadi arang untuk meningkatkan nilai tambah limbah tempurung. Pengembangan agroindustri arang tempurung kelapa di Kabupaten Jember memiliki prospek yang cukup baik, karena ketersediaan bahan baku yang melimpah dan permintaan yang terus meningkat. Namun, optimalisasi manajemen rantai pasok diperlukan untuk memastikan efektivitas dan efisiensi pengembangan agroindustri arang tempurung kelapa. Penelitian ini dilakukan untuk memperoleh rekomendasi strategi yang efektif dan efisien untuk mengembangkan agroindustri. Penelitian ini menggunakan metode Interpretive Structural Modeling (ISM) untuk menentukan pelaku rantai pasok yang paling dominan dan metode Analytical Hierarchy Process (AHP) untuk menentukan strategi pengembangan agroindustri. Berdasarkan hasil identifikasi, struktur rantai pasok arang tempurung kelapa yaitu petani kelapa, pedagang tempurung kelapa, produsen arang, distributor, dan konsumen. Petani kelapa dan pedagang tempurung kelapa berperan sebagai pemasok tempurung kepada produsen, yang selanjutnya diolah menjadi arang dan menjualnya ke distributor dan konsumen. Pelaku utama pada rantai pasok adalah petani sebagai pihak yang menyediakan bahan baku yang berada pada Sektor IV (Level 7). Sementara itu, strategi pengembangan agroindustri arang tempurung kelapa yaitu pengembangan teknologi dan inovasi (bobot 0,4550). Strategi ini bertujuan untuk meningkatkan efektivitas dan efisiensi hubungan antar pelaku rantai pasok, khususnya antara agroindustri arang tempurung kelapa, petani kelapa, dan pedagang tempurung kelapa. Strategi ini diharapkan dapat menjamin mutu produk, meningkatkan efisiensi, dan menstabilkan atau menurunkan harga bahan baku yang dapat meningkatkan permintaan arang tempurung kelapa.

Abstract

Organic rice is cultivated without synthetic materials, offering high economic value and health benefits. Supportive biophysical components are essential for optimal growth and improving organic rice productivity. This research aims to identify the biophysical components that contribute to the land's carrying capacity for organic rice growth. The research was conducted in Rowosari Village, Jember Regency, East Java. The study analyzed on-farm activities, including producing organic fertilizers and pesticides, land mapping, agroclimate, and assessing biological components. The results show that biophysical factors significantly influence organic rice growth. Indicators of the success of organic fertilizer produced are N of 0.15%, P of 0.04%, K of 0.22%, and fertilizer pH of 4.98. The qualitative analysis of organic pesticides revealed the presence of secondary metabolites like tannin, saponin, flavonoid, alkaloid, and terpenoid with the code (+++). A high biological diversity was observed, with a Shannon-H index exceeding 1. Additionally, the concentration of organic fertilizers and pesticides significantly increased the number of rice plant saplings during the vegetative phase. The study concludes that the biophysical components of the land provide strong support for the growth of organic rice, demonstrating their vital role in the sustainability and productivity of organic farming systems.

Abstract

Abstrak.Singkong atau ubi kayu (Manihot utilissima) merupakan tanaman palawija yang produksinya cukup tinggi. Salah satu olahan singkong yang banyak diminati masyarakat yaitu keripik singkong. Salah satu alternatif untuk meningkatkan efisiensi waktu dan produktivitas dalam proses perajangan adalah menggunakan mesin perajang singkong. Penelitian ini bertujuan untuk memodifikasi dan menguji mesin perajang singkong tipe pisau horizontal. Penelitian ini menggunakan tiga pengujian yaitu uji fungsional, uji kinerja dan uji ergonomi pada mesin perajang singkong. Mesin perajang dengan dimensi keseluruhan 60 x 33 x 55 memiliki 6 komponen utama (a) hopper-in, (b) pisau perajang, (c) transmisi, (d) motor penggerak, (e) lubang pengeluaran Hasil perajangan memiliki ketebalan rata-rata 1,15 mm. Kapasitas perajangan mesin 16,72 kg/jam. Besar kehilangan bahan selama proses adalah 3,9 %. Hasil uji ergonomi pada tiga kriteria kemudahan, keamanan dan kenyaman dalam pengoperasian menghasilkan nilai rata-rata indeks 3,9 atau dapat dikatakan baik (B).Modification and Performance Test of Cassava Chopping Machine with a Horizontal-type BladeAbstract.Cassava (Manihot utilissima) is a secondary crop with high production. Fried cassava chips are one of the processed products of cassava, which have great demand for consumption. The utilization of a chopping machine is crucial to increase productivity during processing. This study aims to modify and conduct performance testing of a chopper machine with a horizontal knife. This study used three categories of testing, namely functional, performance, and ergonomics tests. The chopper machine has an overall dimension of 60x33x55 cm3 and six main components: (a) hopper-in, (b) chopper blade, (c) transmission unit, (d) electric-driven motor, (e) outlet, and (f) main frame. The chopping results had an average thickness of 1.15 mm, and the chopping capacity was 16.72 kg/hour. The amount of material loss during the process was 3.9%. The results of the ergonomics test had an average index value of 3.9, or categorized as good (B).

Abstract

Bioplastics are alternative packaging made from natural polymers, which have the properties of being biodegradable, reduce environmental pollution and are safe for health because they do not contain toxic substances. Bioplastics are made from natural materials. It is hoped that the existence of environmentally friendly plate products can reduce the use of plastic plates in the community so as to reduce the accumulation of excessive plastic waste. The addition of bagasse to environmentally friendly plate products is expected to improve their mechanical properties. There are 3 variations of bagasse fiber size used, namely 60 mesh, 1mm and 3mm. The purpose of this study was to determine the effect of bagasse size variation on tensile strength, elongation, water resistance and biodegradability of eco-friendly plates and to get the best formulation of bagasse size variation as raw material for making eco-friendly plates. The manufacture of environmentally friendly eco-friendly plates used a completely randomized design with one factor and 3 repetitions. Observations made included biodegradability test, water resistance test, tensile strength test and elongation test. The results showed that of the three treatments, the variation of adding 60 mesh bagasse (A) was the best formulation for environmentally friendly plate products. Bioplastic products for plate shape are expected to have strong mechanical properties and can be degraded in the environment.
