Abstract

An agreement is one of the sources of engagement regulated in Chapter II of Book 3 of the Civil Code which can be stated in the form of a Notarial Deed. Authentic deeds clearly stipulate rights and obligations, providing legal certainty. In dispute resolution, authentic deeds function as the strongest written evidence. However, even with perfect evidentiary power, a Notarial Deed cannot be separated from efforts to cancel the contract. Some of the reasons for cancellation are due to defects in the agreement due to elements of coercion and/or elements of deception as stated by the Plaintiff in South Jakarta District Court Decision Number 321/Pdt.G/2016/PN. Jkt. Cell. Based on the research results, the Plaintiff is obliged to provide clear evidence. When compared with the Plaintiff's evidence, the evidence presented by the Plaintiff is not sufficient to prove the argument of coercion or fraud because the Plaintiff's Witnesses did not know that the Plaintiff and the Defendants had entered into a Sale and Purchase Agreement. In the process or attempt to cancel a notarial deed, the evidence must be clear and in such a way that the party who has the notarial deed does not need other evidence to state the truth of the notarial deed. With this formulation, the judge no longer needs to test its truth or in other words, an authentic deed has perfect evidentiary power both physically and materially.

Abstract

Octopus is one of the fishery commodities that is very easy to experience quality deterioration and therefore it must be done within a very short time so that the octopus[A1] [D2] remains fresh or does not experience deterioration in quality. Therefore, appropriate handling efforts must be made so that the octopus does not experience a decline in quality. One freezing technique that can be applied to the octopus freezing process is the methodContact Plate Freezing (CPF). The aim of this research is to determine the flow of the octopus freezing process (The common octopus) and know about the octopus freezing process (The common octopus) using a machineContact Plate Freezer (CPF) at PT. Kurnia Samudera Jaya Hamparan Perak, North Sumatra. The method used in this research is a qualitative method. The qualitative method referred to is collecting data sources and data collection techniques which have been carried out through observation, documentation, interviews and literature studies. Flow of the octopus freezing process at PT. Kurnia Samudra Jaya includes: receiving raw materials, washing 1, sorting 1, weighing 1, peeling, soaking in salt water, grinding (tumbling), washing 2, weighing 2, sorting 2, sorting, freezing, glazing, packing and labeling, storage, freezing, andstuffing. The principle of freezing octopus is to use a Contact Plate Freezer (CPF) with a coolant in the form of a refrigerant[A3] [D4]. Usagefreon asrefrigerant This was chosen because it has a low and stable freezing point. The conclusion of this research is the principle of octopus freezing (The common octopus) useContact Plate Freezer is to use Freon as a refrigerant. The use of Freon as a refrigerant was chosen because it has a low and stable freezing point. Benefits of using machinesContact Plat Freezer This is a faster freezing time and easier setup for this machine, while the disadvantage is that the capacity is small and the frozen product has a uniform size and is block shaped.

Abstract

Indonesia’s high dependence on soybean imports as a raw material for tempeh has brought various efforts to find a substitute of this raw material. One of the most potential substitute is lupin (Lupinusangustifolius). However, the mass adoption of these beans as raw material for tempe production is still low. In this study, we test effects of several ratios between soybeans and lupine, by using mix starters on the characteristics and quality of a substituted tempeh. The results indicated that the best treatment for the substituted tempeh was a2b6 treatment with a 1: 2 ratio of soybeans and lupin by using the starter produced by Indonesian Institute of Sciences (LIPI). Moreover, the substituted tempeh has a low water and fiber content as well as sensory acceptable.

Abstract

White bread is a food product made from wheat flour with high gluten content. Gluten can have a negative impact on health, especially in individuals with certain health conditions, such as celiac disease, non-celiac gluten intolerance, and other intestinal diseases. Alternative flour is needed to reduce the gluten content in white bread. This study aimed to determine the best concentration of mangrove fruit flour as a substitute for white bread, based on sensory characteristics and swelling power. The treatment for making white bread is to substitute wheat flour with mangrove fruit flour, namely, 0, 10, 20, 30, and 40%. The parameters analyzed included proximate and crude fiber content, swelling power, hardness, cohesiveness, and hedonicity. The results showed that the chemical composition of white bread was 13.21-17.86%, fat 9.53-14.51%, protein 5.28-8.5%, ash 1.64-1.84%, carbohydrates 60.57-67.13%, crude fiber 2.91-8.26%, swelling power 100.35-137.70%, hardness value 20.92-68.45 N, and cohesiveness 0.58-0.82. The higher the concentration of mangrove fruit flour in white bread, the lower the preference of panelists. White bread had a 10% substitution for mangrove fruit flour with the highest level of panelist preference, with a savory taste, fragrant aroma, soft texture, yellowish-brown crust color, creamy white crumb, and good swelling power.
