Abstract

Physical damage and post-harvest decay in fruits and vegetables are common issues that can reduce product quality and shelf life. This study aims to understand the decay process and characteristics of spoilage fungi in several types of fruits and vegetables. This descriptive qualitative research used the streak plate isolation method and block square identification. The samples used included salak, grapes, oranges, potatoes, long beans, and cabbage, all of which were fresh and of good quality. Each sample was weighed to 50 gr and placed in a sterile container. Observations of the physical characteristics of the samples were conducted from day 2 to day 8, including identifying the growing spoilage fungi. The results showed the presence of six spoilage fungi coded as JPS1, JPA1, JPJ1, JPK1, JPP1, and JPU1 from each sample. These fungi exhibited varying morphological characteristics based on colony color, spore color, and fungal size. Identification revealed that isolates JPS1, JPA1, JPJ1, and JPU1 belong to the genus Aspergillus sp., isolate JPK1 to the genus Trichocladium sp., and isolate JPP1 to the genus Rhizopus sp.

Abstract

Lactic acid bacteria are a group of gram-positive bacteria that are able to ferment carbohydrates and produce lactic acid as a result of their metabolism. Lactic acid bacteria can be found naturally in the digestive tract of animals and plants. Apart from that, lactic acid bacteria are also used as a starter in the fermentation process. One of the fermented products that is processed using lactic acid bacteria is fermented milk, also known as yoghurt. Fermented milk is marketed under various trademarks. This research aims to characterize lactic acid bacteria isolates from branded fermented milk sold in supermarkets. The research was carried out using a qualitative descriptive method with stages namely sample preparation, isolation and characterization. Screening for lactic acid bacteria uses pour plate and streak plate methods. The results of the research showed that three isolates of lactic acid bacteria were obtained from the samples tested with different macroscopic characteristics, namely SFB01, SFB02 and SFB03. These three isolates were gram positive bacilli.

Abstract

Forum Kewirausahaan Pemuda (FKP) merupakan komunitas wirausaha Nasional yang menyebar disetiap provinsi di Indonesia, yang annggotanya memiliki usaha berusia 17-45 Tahun. FKP terdapat juga di Sumatera Utara, terdiri dari berbagai bidang usaha yaitu kategori kuliner, industri jasa, kreatif, sosial wirausaha, dan technopreneur. Namun beberapa kendala yang dialami oleh wirausaha di FKP adalah kurangnya informasi mengenai langkah-langkah pengurusan perizinan PIRT dan sertifikasi halal, serta produk yang dihasilkan juga masih dibutuhkan edukasi kembali agar mendapatkan hasil produk yang menarik dan tahan lama serta memahami alur proses perizinan. Sedangkan hasil riset perguruan tinggi masih banyak juga yang belum menemukan mitra untuk hilirisasi hasil risetnya dalam sebuah produk yang bisa bermafaat untuk masyarakat dan dapat dikomersilkan. Tujuan kegiatan program PKM untuk memberdayakan, menguatkan partisipasi anggota FKP dalam proses perizinan, optimalisasi hasil riset perguruan tinggi (PT), sosialisasi dengan memberikan informasi mengenai kerjasama hasil riset dengan mitra yang sesuai untuk peningkatan nilai tambah dan komersialisasi. Optimalisasi sosial media sebagai sarana promosi, Metode pendekatan yang digunakan menjalin kerjasama dengan mitra, instansi terkait, metode pendidikan, teknologi tepat guna, metode sosialisasi, pelatihan pengemasan dan metode pendampingan perijinan PIRT dan Halal MUI. Hasil, Pelaksanaan PKM dilakukan di bulan Juni 2021, Hasil sosialisasi mendapatka respon baik dari mitra, dengan bersedianya mereka untuk membantu menyampaikan informasi ke anggotanya dan dari 40 peserta hanya 10 UKM yang sudah memiliki P-IRT dan 5 usaha yang sudah memiliki Label halal MUI, mitra memahami pentingnya inovasi untuk produknya dan perlunya proses higienis dan safety saat proses penjamah makanan, produksi, dan pengemasan.

Abstract

Ikatan Boga Indonesia (IKABOGA) merupakan komunitas wirausaha khusus dibidang kuliner yang menyebar di setiap provinsi di Indonesia, anggotanya terdiri dari Ibu rumah tangga yang membantu perekonomian keluarga melalui usaha kuliner. IKABOGA terdapat juga di Sumatera Utara. Namun, beberapa kendala yang dialami oleh wirausaha di IKABOGA adalah kurangnya informasi mengenai langkah-langkah pengurusan perizinan PIRT dan sertifikasi halal, serta produk yang dihasilkan juga masih dibutuhkan edukasi kembali agar mendapatkan hasil produk yang menarik dan tahan lama serta memahami alur proses perizinan. Sedangkan hasil riset perguruan tinggi masih banyak juga yang belum menemukan mitra untuk hilirisasi, terutama dalam pengolahan pangan seperti sambal, rendang yang bisa dikemas dalam produk kalengan dan tahan lebih lama tanpa bahan pengawet sehingga dapat dikomersilkan. Tujuan kegiatan program PKM untuk memberdayakan, menguatkan partisipasi anggota IKABOGA dalam proses perizinan, optimalisasi hasil riset perguruan tinggi (PT), sosialisasi dengan memberikan informasi mengenai kerjasama hasil riset dengan mitra untuk peningkatan nilai tambah dan komersialisasi. Optimalisasi sosial media sebagai sarana promosi, Metode pendekatan yang digunakan edukasi secara luring dan daring, menjalin kerjasama dengan mitra, instansi terkait, metode pendidikan, teknologi tepat guna, metode sosialisasi, pelatihan pengemasan dan metode pendampingan perijinan PIRT dan Halal MUI. Hasil, Pelaksanaan pengabdian masyarakat dilakukan di bulan juni 2022, Hasil pengabdian masyarakat ini mendapatkan respon baik dari mitra, dengan bersedianya mereka untuk membantu menyampaikan informasi ke anggotanya dan dari 30 peserta hanya 12 UKM yang sudah memiliki P-IRT dan 5 usaha yang sudah memiliki Label halal MUI, mitra memahami pentingnya inovasi untuk produknya dan perlunya proses higienis dan keamanan pangan saat proses penjamah makanan, produksi, dan pengemasan.

Abstract

In traditional medicine, mangosteen leaves (Garcinia mangostana L.) are useful in treating diabetes, hypertension, diarrhea, dysentery, and urinary tract problems. The study aims to determine the levels of flavonoids in mangosteen leaves with 96% ethanol and ethyl acetate. The total flavonoid content was determined by UV-Vis spectrophotometry, and the maceration process on the extract using 96% ethanol and ethyl acetate. The results of phytochemical screening of mangosteen leaf extract with 96% ethanol and ethyl acetate contained flavonoids, alkaloids, saponins, tannins and steroids/triterpenoids. The total flavonoid content in 96% ethanol solvent was 50.110 mgQE/gram extract and the total flavonoid content in ethyl acetate solvent was 118.773 in the extract. Ethyl acetate solvent is more effective in attracting flavonoid compounds in mangosteen leaves.

Abstract

Jackfruit (Artocarpus heterophyllus Lam.) belongs to the moraceae family. Traditionally, jackfruit is used to treat fever, convulsions, asthma, diarrhea, anemia, cough and inflammation. The presence of flavonoid and tannin compounds isolated from jackfruit leaves has pharmacological activity in health. The purpose of this study was to screen the phytochemicals of secondary metabolites of flavonoids and tannins, and to determine the levels of secondary metabolites of flavonoids and tannins in jackfruit leaves using uv-vis spectrophotometry. The stages of this study began with sample collection, extraction, phytochemical screening, and testing of flavonoid and tannin levels. The results of phytochemical screening showed the presence of alkaloids, flavonoids, tannins, saponins, and steroids/triterpenoids in the crude drug and jackfruit leaf extract. The total flavonoid content was 234.9 mgQE/g with an R2 value of 0.9916, and for measuring the total tannin content was 343.3 mgTAE/g with an R2 value of 0.9956. The conclusion of this study is that the ethanol extract of jackfruit leaves contains flavonoid and tannin compounds with a total flavonoid content of 234.9 mgQE/g and a total tannin content of 343.3 mgTAE/g.

Abstract

Jerawat adalah penyakit kulit yang terjadi akibat adanya peradangan menahun yang dipicu oleh bakteri Propionibacterium acnes. Daun belimbing wuluh (Averrhoa bilimbi Linn.) merupakan tanaman obat tradisional yang memiliki aktivitas sebagai antibakteri. Tujuan penelitian ini adalah untuk mengetahui aktivitas antibakteri dari sediaan bedak dingin ekstrak etanol daun belimbing wuluh (A. bilimbi Linn.) terhadap Propionibacterium acnes. Metode penelitian dilakukan dengan eksperimental, dan pengujian aktivitas antibakteri dilakukan dengan menggunakan metode difusi agar. Formulasi bedak dingin F1 (5%), F2 (10%), F3 (15%), F4 (20%), kontrol positif dengan klindamisin, kontrol negatif dengan akuades. Hasil menunjukkan bahwa formulasi sediaan F3 (15%) dan F4 (20%) lebih efektif dalam menghambat pertumbuhan bakteri Propionibacterium acnes dengan diameter zona hambat 13,66 mm dan 15,16 mm dengan kategori kuatAcne is a skin disease that occurs due to chronic trade that is triggered by the bacterium Propionibacterium acnes. Starfruit leaf (Averrhoa bilimbi Linn.) as a traditional medicinal plant that has antibacterial activity. The purpose of this study was to determine the antibacterial activity from ethanol extract in the preparations cold powder of starfruit leaf (A. bilimbi Linn.) against Propionibacterium acnes. The research method was carried out experimentally, and testing for antibacterial activity was carried out using agar diffusion methods. Cold powder formulation such as F1 (5%), F2 (10%), F3 (15%), F4 (20%), positive control with clindamycin, negative control with distilled water. The results showed that the F3 (15%) and F4 (20%) formulations were more effective in inhibiting the growth of Propionibacterium acnes bacteria with inhibition zone diameters of 13.66 mm and 15.16 mm in the strong category.

Abstract

A prevalent global infection that manifests frequently in Indonesia. An example of an infectious disease that is commonly encountered during adolescence is acne (Acne vulgaris). Antibiotics can be used to treat acne; however, their misuse can lead to the development of resistance; therefore, we are searching for inexpensive, readily available alternatives that are also secure. Mangosteen leaves (Garcinia mangostana L.) are one alternative to synthetic ingredients when it comes to the treatment of acne. Mangosteen leaves comprise xanthone derivative compounds that exhibit significant biological activity, including antioxidant, antibacterial, and antimicrobial properties. Therefore, this this study aimed to ascertain the inhibitory power of an ethanol extract derived from mangosteen leaves in order to determine its antibacterial activity against Staphylococcus epidermidis bacteria. Additionally, the compound content of the ethanol extract of mangosteen leaves was determined. The inhibition test was conducted by utilizing the paper disc technique, while the extraction method employed the maceration method. As indicated by the phytochemical screening test results, simplicia and ethanol extract of mangosteen leaves were found to contain steroids/triterpenoids, alkaloids, flavonoids, saponins, and tannins. The inhibition test outcomes against Staphylococcus epidermidis bacteria revealed the following: a diameter of 3.3 mm for bacteria at a concentration of 20%, 9.4 mm for bacteria at 40%, 10.4 mm for bacteria at 60%, 12.9 mm for bacteria at 80%, and 13.2 mm for bacteria at 100%

Abstract

Skin infections contribute to one of the most significant global health issues. Acne, blisters, and abscesses are examples of skin infections that can be induced by Propionibacterium acnes, Staphylococcus aureus, and Staphylococcus epidermidis. Treatment can be attempted through the development of nanotechnology in the form of nanocellulose. Nanocellulose, an organic substance, can be produced through the conversion of coconut water waste and Acetobacter xylinum bacteria. Future applications of nanocellulose formulated with a blend of extracts derived from natural sources, including Patikan Kebo (Euphorbia hirta L.), are anticipated to include the treatment of wound dressings (patches). Determining the antibacterial potential of nanocellulose was the objective of this study. The experimental research technique is implemented in phases. The extraction process was conducted by means of maceration, while the parallel streak method was utilized for antibacterial testing. The findings of the study indicated that the mean zone of inhibition for each treatment variable was as follows: 0 mm, 15.1 mm, 23.53 mm, and 23.06 mm for nanocellulose (serving as the negative control), nanocellulose and 0.5% extract, 1% extract, 1.5% extract, and clindamycin, respectively. Conclusion: Antibacterial activity was observed in nanocellulose extracts containing 1% and 1.5%

Abstract

Beauty and healthy skin as well as skin problems such as acne are challenges for the pharmaceutical sector in innovating to produce clay mask cosmetic products made from coconut dregs. Apart from maintaining healthy skin, coconut dregs clay mask products also maintain environmental health. Galactomannan contained in coconut dregs acts as a thickener, stabilizer, emulsifier and additive. The lauric acid contained in VCO acts as an antibacterial, antiviral and antiprotozoal. The combination of coconut dregs and VCO in a clay mask is more optimal as a cosmetic product. The aim of the research is to utilize coconut dregs waste into pharmaceutical products, produce a clay mask made from coconut dregs with a combination of VCO which has the potential to act as an antibacterial and produce a clay mask product that is effective as an anti-acne. The method was carried out by preparing coconut dregs flour, making various clay mask formulations: F0, F1, F2, F3 and F4, testing the stability of the clay mask product and testing the antibacterial properties of the clay mask against P. acnes using the well diffusion method. The results show that the organoleptic formulas are semi-solid, the colors are white, cream, brownish cream and light brown, while the odor ranges from odorless to vanilla, all formulas are homogeneous, pH 7, spreadability and dryness are stable and antibacterial is in the medium to strong category. The conclusion shows that F4 is more effective as an antibacterial against Propionibacterium acnes with an inhibition zone of 16.21 ± 0.85 mm and the clay mask preparation has the potential as an anti-acne
