Abstract

Desa Sanrobone, Kabupaten Takalar, memiliki potensi besar dalam produksi buah dan sayuran lokal yang belum dimanfaatkan secara optimal, terutama dalam upaya pencegahan stunting. Stunting masih menjadi permasalahan gizi kronis yang berdampak pada kualitas sumber daya manusia di wilayah tersebut. Tujuan dari kegiatan pengabdian ini adalah untuk mengembangkan produk pangan inovatif berupa jelly dan sayuran instan berbasis buah dan sayuran lokal serta meningkatkan kapasitas kelompok PKK dalam pengolahan pangan sehat. Metode kegiatan meliputi pelatihan pengolahan pangan sesuai standar CPPB-IRT, edukasi gizi berbasis komunitas, penyediaan alat produksi sederhana, dan pemasaran produk melalui kanal digital. Proses blansir dilakukan pada suhu 90–95°C untuk menjaga kandungan vitamin, khususnya vitamin C dan β-karoten. Hasil kegiatan menunjukkan adanya peningkatan keterampilan anggota PKK dalam produksi pangan sehat dan berkembangnya tiga jenis produk jelly dan sayuran instan yang diterima baik oleh anak-anak. Selain meningkatkan kesadaran gizi, kegiatan ini juga membuka peluang usaha berbasis pangan lokal. Inovasi ini diharapkan menjadi kontribusi nyata dalam penurunan angka stunting secara berkelanjutan.

Abstract

Stunting merupakan salah satu permasalahan gizi kronis yang masih menjadi tantangan serius di Indonesia, terutama di daerah pedesaan. Desa Damai, Kabupaten Maros, Sulawesi Selatan, memiliki prevalensi stunting yang cukup tinggi dengan rendahnya konsumsi sayuran pada anak sebagai salah satu faktor penyebab. Program pengabdian ini bertujuan memberdayakan kelompok PKK Desa Damai melalui inovasi pengolahan sayuran menjadi VegeGum (gummy sayuran) sebagai alternatif pangan fungsional pencegah stunting. Metode yang digunakan meliputi sosialisasi, pelatihan, penerapan teknologi, pendampingan, serta evaluasi. Hasil kegiatan menunjukkan peningkatan keterampilan ibu PKK dalam memproduksi VegeGum secara higienis, peningkatan kesadaran gizi masyarakat, serta terbentuknya potensi usaha kecil berbasis pangan sehat. Program ini berkontribusi terhadap pencapaian SDGs, khususnya poin 2 (Zero Hunger) dan poin 3 (Good Health and Well-being).

Abstract

Kawista or Limonia acidissima, a plant traditionally used by the Bima community, offers potential health benefits. This study aimed to evaluate the antioxidant potential of ethanol extract from L. acidissima leaves by determining total flavonoid content (TFC), total phenolic content (TPC), and antioxidant activity using DPPH, FRAP, and CUPRAC assays. The ethanol extract exhibited significant antioxidant activity, with IC50 values of 10.445 and 135.42 µg/mL for DPPH and CUPRAC assays, respectively. TPC and TFC were determined to be 14.63 mgGAE/g extract and 113.9 mgQE/g extract, respectively. These findings suggest that L. acidissima leaf extract possesses potent antioxidant properties, which may be attributed to its flavonoid and phenolic content. Further research is warranted to explore this plant extract's underlying mechanisms of action and potential therapeutic applications.

Abstract

Untreated wound may lead to the infection. In some countries, plants are used to cure wound traditionally. Lemongrass (Cymbopogon citratus) has various bioactive compounds, including citronellol, limonene and geraniol that perform some pharmacological activities. In this study, the essential oil of lemongrass was designed into ointment formulation since lemongrass has been reported to have a wound healing effect in mice. The wound healing ointment made from different concentration of the essential oil of Cymbopogon citratus (F1: EOCC 5%, F2: EOCC 10% and F3: EOCC 15%) using a water-removable base and the characteristic as well as the stability (texture, color, smell, homogeneity, and pH) after been stored for 14 days was also evaluated. The result showed that all formulation (F1, F2, and F3) of wound healing formulation revealed good texture, consistency, odor, color, homogeneity and compatible to the skin until 14 days of storage. However, F3 (EOCC 15%) has a strong lemongrass smell compare to the other formulations.

Abstract

Kenikir leaves (Cosmos caudatus) from the Asteraceae family, is a family that is widely used as herbal medicine. Kenikir leaves are usually used as vegetables or fresh vegetables. Kenikir leaves (Cosmos caudatus) are also used as an ulcer medicine, boost the body's immune system, strengthen bones, increase appetite, and overcome bad breath. The purpose of this study was to conduct a research on the analysis of flavonoids in the dechlorophyllated extract of kenikir (Cosmos caudatus) leaves by UV-Vis spectrophotometer. The use of the dechlorophyllated extract method of kenikir (Cosmos caudatus) leaves to remove chlorophyll in the leaves, and this method has never been applied to extracts with other organic solvents. This method has the potential to be developed in efforts to remove chlorophyll from leaf extracts. The results obtained by dechlorophyllated extract of kenikir leaves (Cosmos caudatus) on UV-Vis spectrophotometry were identified to contain flavonoid compounds, with an ethanolic flavonoid content of 63.0833 mgQE/g extract, and a dechlorophyllated extract with a flavonoid content of 105.283 mgQE/g.

Abstract

Kunyit merupakan salah satu tanaman rempah-rempah yang memiliki berbagai aktivitas farmakologis. Rimpang kunyit (Curcuma domestica Val.) mengandung kurkumin dan minyak atsiri yang bermanfaat sebagai antioksidan, antiinflamasi, dan antibakteri. Tujuan penelitian ini yaitu untuk mengetahui potensi rimpang kunyit sebagai antiinflamasi secara in vitro menggunakan metode penghambatan denaturasi protein. Penggunaan metode ini karena salah satu penyebab inflamasi adalah terjadinya denaturasi protein pada jaringan sel tubuh. Hasil uji berupa persentase inhibisi dengan nilai 38,38% pada konsentrasi 10 ppm hingga 46,51% pada konsentrasi 50 ppm. Persentase inhibisi >20% menunjukkan bahwa ekstrak dapat menghambat denaturasi protein. Perhitungan IC50 menunjukkan nilai sebesar 46,87 μg/mL. Sehingga dapat disimpulkan bahwa ekstrak etanol 96% rimpang kunyit memiliki potensi sebagai antiinflamasi.

Abstract

The kenikir plant is a tropical plant originating from Latin America that can easily grow in various places. The use of kenikir leaves (Cosmos caudatus Kunth.) as a medicinal plant has been widely used. People usually use kenikir leaves as traditional medicine. Kenikir leaves are extracted by maceration method using 96% ethanol solvent after which a liquid extract is obtained and then evaporated using a rotavapor so that a thick extract is obtained. This study aims to analyze the levels of phenolic compounds, tannins, flavonoids, and saponins contained in kenikir leaves (Cosmos caudatus Kunth.). Determination of levels using UV-Vis spectrophotometric method. The ethanol extract of kenikir leaves (Cosmos caudatus Kunth.) contains phenolic compounds, tannins, flavonoids, and saponins with the levels of each phenolic compound, tannins, flavonoids, and saponins respectively as follows: 43.592 mgGAE/g, 40.639 mgEAT/g, 36.319, and 142.527 mgSE/g.

Abstract

The use of sulfonamide related to drug residual in the product of broiler chicken, like meat and egg. This research aimed to determine the sulfonamides (sulfamerazine, sulfanilamide, and sulfadiazine) on the broiler chicken meat, breast, and egg from the three different slaughterhouses circulating in the City of Makassar. The sample was extracted by acetonitrile and acetone then concentrated. The extract and sulfonamides then analyzed by HPLC method using C18 reverse phased column, UV-Visible detector in the wavelength of 270 nm. The result of study shows that the chromatogram of sample breast and egg has similar retention time with sulfonamides as a standard reference. The breast sample contains sulfamerazine residues, sample B and C contains 0.014 and 0.005 % (w/w), respectively. The egg sample A and D contains sulfadiazine 0.045 and 0.108 % (w/w), respectively. Sample B contains sulfanilamide 0.053 % (w/w). Sample A and B is egg yolk, while sample D is egg whites. Based on the results obtained, this is not suitable for the rules set by JECFA of 0.1 mg/kg (10-5 % w/w) as well as the standard of SNI. It can be concluded that generally broiler chicken breast and egg circulating in the City of Makassar was contaminated by sulfonamide with high concentration.
