Abstract

This research was conducted to examine the physical characteristics, chemical composition of the eggs of the filipina gosong bird (Megapodius cumingii) obtained from nesting sites on the coast of Poat Island, Pagimana District, Banggai Regency, Central Sulawesi Province. Measurement of the physical characteristics of eggs (weight, diameter, length and egg index) were carried out at the Laboratory of Biology Study Program, Tadulako University. Besides, observation on egg color, shape and egg texture were also conducted. Measurements of water and fat content, protein, carbohydrates, ash, crude fiber and egg antioxidants (Proxymate analysis) were carried out at the Chemistry Laboratory, Faculty of Mathematics and Natural Sciences, Tadulako University. Amino acid analysis was carried out at the Integrated Laboratory of IPB by using HPLC (High Performance Liquid Chromatography). The results showed that the eggs of the Filipina charred bird had an oval shape with two shell colors, dark brown and light brown, and the texture was smooth. The average size of egg weight, length, diameter and egg index were 99.35 g, 7.31 cm, 5.5 cm and 72.43%, respectively. The results of the chemical analysis of filipino gosong eggs revealed that water and fat content, protein, carbohydrates, ash, crude fiber and egg antioxidants were 50.45%, 18.75%, 13.40%, 0.02%, 375.98% and 1.82% respectively. The result showed a higher protein content compared to fat content. The 17 types of amino acids included essential and non-essential amino acids. Glutamate was the highest concentration of 2.10%, while cysteine was the lowest concentration of 0.15%.

Abstract

Masa Pandemi melanda Indonesia yang menuntut pembelajaran menjadi online. Oleh karena itu, diperlukan sebuah sarana agar pembelajaran tetap berjalan dengan baik. Program pengabdian ini bertujuan untuk memberikan pengetahuan dan keterampilan kepada guru mengenai aplikasi Edmodo yang digunakan dalam proses pembelajaran dengan online dan ofline. Metode pengabdian menggunakan pelatihan. Pelatihan dilaksanakan selama 3 hari. Tahap pelaksanaan pengabdian meliputi persiapan, pelaksanaan dan evaluasi. Sasaran dari pengabdian ini adalah guru dan siswa SMP Karuna Dipa. Jumlah responden sebanyak 35 orang yang terdiri dari 20 guru dan 15 orang siswa. Kegiatan program pengabdian kepada masyarakat yang telah dilaksanakan dapat terlaksana dengan baik. Dengan program pelatihan penggunaan edmodo guru dan siswa mengetahui cara menggunakan aplikasi edmodo sebagai alternatif dalam pembelajaran di masa Pandemi. Berdasarkan hasil penilaian kuisioner diperoleh bahwa rerata guru memperoleh 93,7% dan siswa 98,8% telah memahami dan mampu menggunakan aplikasi edmodo dalam proses pembelajaran. Guru dapat membuat konten materi pelajaran, video, kuis dan menggelolah diskusi dalam grub kelas. Selain itu, siswa juga dapat membuat akun siswa dan masuk kedalam grub class setiap matapelajaran  Training on the Use of Edmodo Applications at Karuna Dipa Middle School in Palu as an Alternative for Learning During a Pandemic  The Pandemic period hit Indonesia which demanded learning to be online. Therefore, we need a means so that learning continues to run well. This service program aims to provide knowledge and skills to teachers regarding the Edmodo application used in the online and offline learning process. The method of devotion uses training. The training was carried out for 3 days. The implementation stage of the service includes preparation, implementation and evaluation. The targets of this service are teachers and students of Karuna Dipa Middle School. The number of respondents as many as 35 people consisting of 20 teachers and 15 students. Community service program activities that have been carried out can be carried out well. With the training program on the use of Edmodo, teachers and students know how to use the Edmodo application as an alternative in learning during the Pandemic. Based on the results of the questionnaire assessment, it was found that the average teacher obtained 93.7% and 98.8% of students had understood and were able to use the Edmodo application in the learning process. Teachers can create subject matter content, videos, quizzes and manage discussions in class groups. In addition, students can also create student accounts and enter the group class for each subject.

Abstract

The nutritional problem that can arise after the disaster is the worsening nutritional status of community groups, especially for the elderly group. Energy intake that is not in accordance with the needs of the elderly caused by food assistance that is often delayed, unsustainable and limited local food availability can worsen the existing condition. The problem is even more complex with the lack of family income and lack of knowledge in food preparation. The purpose of this study was to determine the relationship between knowledge, energy intake and family income with the nutritional status of the elderly after the disaster in Lambara Village, Tawaeli District, Palu City. This type of research is analytic with a cross sectional approach which aims to determine the relationship between the independent variables (knowledge, energy intake and family income) with the dependent variable of the nutritional status of the elderly being studied at the same time. The population in this study were all advanced residents in Lambara Village totaling 117 people. A sample of 32 respondents was calculated using the Slovin formula using the proportional random sampling technique. The results showed that there was no significant relationship between knowledge and nutritional status of the elderly (H0 accepted, P = 0.273 > 0.05), there was a significant relationship between energy intake and nutritional status of the elderly (H0 rejected, P = 0.007 < 0.05). and there was a significant relationship between family income and the nutritional status of the elderly (H0 rejected, P = 0.009 > 0.05). It is hoped that elderly family members will continue to provide support and attention to the health conditions of the elderly and supervise when serving food that is in accordance with the physiological conditions and nutritional needs of the elderly.

Abstract

Umbi talas merupakan salah satu pangan alternatif makanan pokok karena memiliki kandungan gizi yang cukup baik. Tujuan dari penelitian ini untuk menentukan Kandungan Karbohidrat Umbi Talas (Colocasia esculenta) di Desa Ombo Kecamatan Sirenja dan Penerapannya sebagai Media Pembelajaran. Adapun jenis penelitian yang dilakukan yaitu deskriptif kuantitatif. Sampel dianalisis di Laboratorium Kimia MIPA Fakultas Matematika dan Ilmu Pengetahuan Alam Universitas Tadulako. Penentuan kandungan karbohidrat menggunakan metode Luff schorl. Hasil penelitian menunjukkan bahwa nilai rata-rata kandungan karbohidrat umbi talas sebesar 23,68%. Hasil validasi diperoleh nilai dari tim ahli isi sebesar 90%, ahli desain sebesar 86.66% dan hasil ahli media sebesar 74.28%. Sedangkan hasil validasi oleh 30 mahasiswa sebesar 85%. Hasil validasi media pembelajaran diperoleh nilai rata-rata sebesar 83,98%, menunjukkan sangat layak digunakan sebagai media pembelajaran dalam bentuk poster.

Abstract

Biji nangka (Artocarpus heterophyllus) merupakan bahan yang sering terbuang setelah dikonsumsi daging buahnya walaupun terdapat sebagian kecil masyarakat yang mengolahnya. Upaya yang dilakukan untuk mengolah biji nangka menjadi produk yang bermanfaat sebagai alternatif penambah sumber pangan baru adalah pengolahan biji nangka menjadi susu nabati yang enak, mempunyai kandungan gizi yang tinggi, kaya akan serat pangan dan juga dapat membantu perekonomian keluarga. Penelitian ini bertujuan untuk menentukan kadar serat kasar pada produk susu biji nangka (Artocarpus heterophyllus) dan pengembangannya sebagai media pembelajaran. Adapun jenis penelitian yang digunakan adalah jenis penelitian deskriptif eksploratif. Sampel dianalisis kadar serat kasarnya menggunakan metode gravimetri dengan tiga kali pengulangan. Hasil penelitian menunjukan bahwa nilai rata-rata kadar serat kasar susu biji nangka sebesar 8,804%.

Abstract

Penelitian ini bertujuan menjelaskan teknik pengempukan daging ayam petelur afkir menggunakan ekstrak buah nanas, menentukan konsentrasi ekstrak buah nanas yang terbaik dalam pengempukkan daging ayam petelur afkir dan menghasilkan media pembelajaran yang layak digunakan dalam bentuk E-Modul Flipbook. Penelitian ini merupakan penelitian eksperimen dengan Rancangan Acak Lengkap (RAL). Penentuan keempukan dan pH pada daging ayam petelur afkir menggunakan konsentrasi ekstrak buah nanas yang berbeda menggunakan analisis data Anova pada program SPSS 21, kemudian dilanjutkan dengan uji LSD. Hasil penelitian yang didapatkan berbeda-beda tingkat keempukan, pH, pada daging ayam petelur afkir menggunakan konsentrasi ekstrak buah nanas yang berbeda. Tingkat keempukan tertinggi terdapat pada perlakuan T3 (25 g + 30 ml) yaitu 0,442 %. Tingkat terendah keempukan terdapat pada perlakuan T0 (25 g) yaitu 0,382 %. Kandungan pH tertinggi terdapat pada perlakuan T0 (25 g) yaitu 6,317 %. Kandungan pH terendah terdapat pada perlakuan T3 (25 g + 30 ml) yaitu 4,71%. Hasil uji E-Modul Flipbook berdasarkan validator ahli isi dan ahli media layak digunakan sebagai media pembelajaran dengan persentase 70% dan 74%, menurut validator ahli desain dan mahasiswa sangat layak digunakan dengan persentase 83,64%, 85,75%, sedangkan rata-rata keseluruhan oleh ahli isi, desain, media dan kelompok mahasiswa layak digunakan dengan persentase 78,38%.

Abstract

Mie basah adalah mie mentah yang sebelum dipasarkan mengalami perebusan dalam air mendidih lebih dahulu. Kelor (Moringa oleifera L) dikenal memiliki sifat fungsional bagi kesehatan dan dapat mengatasi kekurangan nutrisi. Penelitian ini bertujuan untuk menentukan kandungan serat dan vitamin C pada mie basah yang telah ditambahkan tepung daun kelor serta menghasilkan media pembelajarn dalam bentuk video. Penelitian ini merupakan penelitian eksperimen dengan Rancangan Acak Lengkap (RAL) dan analisis data menggunakan anova pada program SPSS 25. Penentuan kandungan serat menggunakan metode Gravimetri sedangkan kandungan vitamin C menggunakan metode Spektrovometri Uv-Vis. Hasil penelitian ini menunjukkan semakin banyak pemberian tepung daun kelor pada mie basah maka kandungan serat dan vitamin C akan semakin meningkat pula. Kandungan serat tertinggi terdapat pada perlakuan 3 sebesar 8,98% dan kandungan vitamin C tertinggi terdapat pada perlakuan 3 sebesar 90,52%. Hasil uji kelayakan media pembelajaran video menyatakan layak digunakan sebagai media pembelajaran dalam bentuk video.

Abstract

Diabetes mellitus is a metabolic disorder characterized by chronic hyperglycemia due to impaired insulin secretion or action. This study aimed to examine the antihyperglycemic effect of seaweed soybean tempeh extract in alloxan-induced diabetic mice. A Completely Randomized Design (CRD) was used with 20 healthy male mice (2–3 months old, 25–30 g), divided into five groups: negative control, positive control (metformin), and three treatment groups receiving extract doses of 25, 75, and 125 mg/kg BW. Prior to treatment, mice underwent acclimatization to ensure uniform baseline conditions. Blood glucose levels were measured to assess the effects of the extract. Data were analyzed using ANOVA followed by the Least Significant Difference (LSD) test. The results showed that alloxan effectively induced hyperglycemia by damaging pancreatic beta cells. Administration of seaweed soybean tempeh extract significantly reduced blood glucose levels (p < 0.05). The highest dose (125 mg/kg BW) produced the most notable effect, comparable to metformin, while the 75 mg/kg BW dose also demonstrated significant efficacy. Both were significantly more effective than the lowest dose. In conclusion, seaweed soybean tempeh extract has potential as an alternative antihyperglycemic agent, especially at higher doses.

Abstract

In this study, we analyzed the effects of different concentrations of Moringa oleifera leaf flour on the carbohydrate, protein, and fat content of wet noodles. We conducted an experimental study using a Completely Randomized Design (CRD) and analyzed the data through ANOVA and LSD tests using SPSS 21 software. The results showed that fortifying wet noodles with Moringa leaf flour significantly altered their macronutrient composition. The carbohydrate content decreased from 28.286% in treatment 2 to 27.350% in treatment 3 and 25.677% in treatment 4. In contrast, the protein content increased from 5.289% in treatment 2 to 5.905% in treatment 3 and 6.345% in treatment 4. Similarly, the fat content rose from 0.439% in treatment 2 to 0.554% in treatment 3 and 0.645% in treatment 4. These findings suggest that increasing concentrations of Moringa leaf flour can improve the nutritional profile of wet noodles, particularly by enhancing their protein and fat content while reducing carbohydrate levels.
