Abstract

The increasing public interest in plant-based foods has encouraged the development of alternative products, one of which is analog meat with rendang seasoning. This study aims to analyze the effect of variations in the proportion of analog meat and rendang seasoning on consumer preference based on color, aroma, and taste attributes, and to determine the best formulation. The study used an experimental method with a quantitative approach. Several formulations with varying proportions of analog meat and rendang seasoning were tested using a hedonic test on 40 untrained panelists who were selected purposively with the criteria of liking rendang products. Data were analyzed using descriptive percentage analysis, Friedman test, One Way Analysis of Variance (ANOVA), and Duncan's advanced test. The best formulation was then analyzed using a proximate test. The results showed that variations in the proportion of analog meat and rendang seasoning significantly influenced the panelists' preference levels for color, aroma, and taste attributes (p<0.05). The formulation with a proportion of analog meat and rendang seasoning of 61.5%:38.5% was the most preferred formulation. Proximate analysis showed that the formulation contained 16.80 g of protein per 100 g, with an energy content of 243.20 kcal, fat 12.00 g, carbohydrate 17.00 g, water content 52.00 g, and ash content 2.20 g. These results indicate that the selected formulation has good sensory characteristics and nutritional content that supports the development of analog meat as a plant-based food alternative

Abstract

The smooth presentation of a buffet breakfast menu in a hotel is greatly influenced by the implementation of planned and systematic mise en place. However, changes in the number of guests and limited preparation time often become obstacles that can affect operational efficiency and consistent food quality. This study aims to analyze the implementation of mise en place in the production of Soto Betawi as a buffet breakfast menu at Oakwood Hotel & Residence Surabaya. The study used a qualitative descriptive approach. Data were obtained through observation, in-depth interviews with Sous Chefs and kitchen staff involved in Soto Betawi production, and documentation studies of Standard Operating Procedures (SOPs), standard recipes, and preparation lists. Data analysis was conducted using the Miles and Huberman interactive model, which includes data reduction, data presentation, and conclusion drawing. The results showed that the implementation of mise en place was carried out systematically through planning raw material requirements based on the breakfast forecast, dividing tasks between shifts, and implementing SOPs and standard recipes, thus maintaining a smooth production process and consistent product quality. The main obstacles, such as fluctuations in the number of guests and adjustments to condiment preparation, were overcome through coordination between shifts and adjustments to production quantities. These findings indicate that the implementation of structured mise en place contributes to the effectiveness of kitchen operations in buffet breakfast services.

Abstract

The development of science and technology (IPTEK) in the 21st century has brought changes in the world of education, especially in the demands on teacher competency to develop innovative learning. The change in the learning paradigm from teacher-centered to student-centered learning encourages teachers to utilize technology in creating more effective learning. This study aims to determine the use of technology in supporting the role of teachers in 21st-century learning at SMK Negeri 1 Hiliduho. This study uses a descriptive approach with data collection techniques through surveys and direct interviews. The study was conducted on May 20, 2026 with research subjects of teachers at SMK Negeri 1 Hiliduho, especially Pancasila and Citizenship Education teachers. Data were obtained through interviews with teacher and analyzed descriptively to describe the use of technology in the learning process. The results of the study indicate that the use of technology can increase the effectiveness of learning by providing more diverse learning resources, supporting learning interactions, and helping teachers in delivering material in a more interesting and innovative way. Thus, improving teacher competence in utilizing technology is an important factor in supporting the quality of learning in the digital era.

Abstract

Human resource (HR) productivity in sharia-based organizations is a crucial aspect in enhancing organizational effectiveness and competitiveness. However, increased productivity is influenced not only by technical competence but also by leadership factors based on spiritual values ​​and employee engagement to the organization. This study aims to analyze the role of spiritual leadership and employee engagement in improving HR productivity in sharia-based organizations. This study used a library research method with a qualitative approach. Research data were obtained through a review of various relevant literature, such as scientific articles, books, and other academic sources that discuss spiritual leadership, employee engagement, and HR productivity from a sharia perspective. Data were analyzed using content analysis techniques through the stages of identification, grouping, interpretation, and synthesis of various literature findings. The results of the study indicate that spiritual leadership plays a role in building employee values, motivation, and commitment through leadership oriented towards meaning, ethics, and spiritual values. In addition, employee engagement is a crucial factor in driving involvement, loyalty, and increased work productivity. Thus, the integration of spiritual leadership and employee engagement can be a strategy for sharia-based organizations in developing productive and sustainable HR.

Abstract

This study aimed to analyze the nutritional adequacy of the coffee break menu items prepared by the Novotel Samator Surabaya pastry section in relation to athletes' nutritional needs, and to evaluate the menu variety for the Fédération Internationale de Volleyball (FIVB) event. A descriptive method with a qualitative approach was employed. Data were collected through observation of the served menu items, recipe documentation, and nutritional content analysis using the Indonesian Food Composition Table (TKPI). The energy, protein, fat, and carbohydrate content of each item was calculated and compared against recommended snack nutritional requirements for female volleyball players. The results indicated that the Red Velvet cake met the energy requirements for a snack, while the Banana Cake nearly met them; however, the Chocolate Eclair and Fruit Pudding failed to meet energy requirements when served as standalone items. All menu items fell short of the recommended protein intake for athletes. Regarding variety, the coffee break menu demonstrated diversity in product types, ingredients, flavors, textures, and presentation. Thus, while the menu offered good variety, modifications—particularly the addition of protein sources—are necessary to better align with athletes' nutritional needs during sporting events.

Abstract

This study aims to analyze the improvement of student learning outcomes through the application of the Discovery Learning learning model assisted by Zep Quiz on Microsoft Word material in class X MAN 1 Kuningan. This study uses a quantitative approach with a Pre-Experiment One Group Pretest-Posttest design. The study population was 178 students, while the research sample was 29 students of class X A selected using a purposive sampling technique. The research instruments were pretest and posttest to measure learning outcomes and student response questionnaires to the implementation of learning. Data analysis was carried out through normality tests and paired sample t-tests. The results showed an increase in student learning outcomes after the application of the Discovery Learning model assisted by Zep Quiz, indicated by an increase in the average score from 60.34 in the pretest to 81.38 in the posttest with a difference of 21.04. The results of the paired sample t-test showed a significance value of 0.000 (p <0.05), which means there was a significant difference in learning outcomes before and after the application of the learning model. Student responses to the use of Zep Quiz were also in the very positive category. Thus, the Discovery Learning model assisted by Zep Quiz is effective in improving student learning outcomes and engagement in Microsoft Word material.

Abstract

This study aims to analyze the relevance of the concept of kafa'ah in choosing a life partner in modern society based on the perspective of Islamic family law, focusing on the study in Tlanakan Village, Tlanakan District, Pamekasan Regency. This research is motivated by changes in society's views on the criteria for equality in marriage due to modern social developments, which have the potential to create differences in understanding between traditional values ​​and contemporary considerations in choosing a partner. This research is an empirical legal study with a sociological approach strengthened by normative legal analysis. Primary data were obtained through interviews with religious leaders, community leaders, and married couples, while secondary data came from literature on Islamic family law, fiqh munakahat, and the Compilation of Islamic Law. Data analysis was carried out through the stages of data reduction, data presentation, and drawing conclusions. The results of the study indicate a shift in the meaning of kafa'ah from the dominance of lineage aspects to considerations of education, economics, and the independence of the couple. From the perspective of Islamic family law, the concept of kafa'ah remains relevant by placing religious equality as the main aspect, while social and economic aspects are flexible according to societal conditions and the goal of building a harmonious family

Abstract

The effectiveness of terminal facility supervision directly impacts user comfort and compliance with service standards mandated by airport regulations. This study aims to analyze the role of the Terminal Inspection Service (TIS) in supervising landside facilities at the Domestic Terminal of Juanda International Airport, Surabaya, and to identify the obstacles encountered during implementation. A qualitative approach with a case study design was employed. Data were collected through participant observation, in-depth interviews, and document analysis, then processed using the Miles, Huberman, and Saldaña interactive model, comprising data condensation, data display, and conclusion drawing and verification. The results indicate that the TIS unit conducts supervision through two approaches: proactive routine inspections and reactive complaint handling. Key challenges identified include limited personnel relative to the size of the area under supervision and delays in facility repairs due to a lack of available spare parts. The findings suggest that while the TIS unit's supervision generally aligns with the Minister of Transportation Regulation Number 41 of 2023, strengthening human resources and accelerating maintenance coordination are necessary to enhance the effectiveness of landside facility supervision.

Abstract

Ethnomathematics serves as a significant pedagogical approach for linking mathematical concepts with local culture, thereby making learning more contextual and meaningful. However, the utilization of cultural heritage as a resource for mathematics education remains limited; this includes the Ogung—a traditional musical instrument of the Toba Batak people—which holds the potential to embody various geometric concepts. This study aims to explore the 3D geometric concepts found in the Toba Batak Ogung as an application of ethnomathematics in mathematics education. A qualitative approach employing an exploratory method was used. Data were gathered through observation, interviews with Toba Batak artisans and cultural practitioners, and documentation within the Toba Batak cultural region; the data were subsequently analyzed descriptively through data reduction, data presentation, and conclusion drawing. The results indicate that the body of the Ogung represents a cylinder, the pencu (central boss) resembles a hemisphere, and the top and bottom surfaces are circular. Furthermore, concepts such as radius, diameter, height, surface area, and volume were identified. This study contributes to enriching the field of ethnomathematics by demonstrating that the Toba Batak Ogung can serve as a contextual learning resource, helping students understand 3D geometric concepts while simultaneously supporting the preservation of local culture.

Abstract

Low student learning outcomes in the Informatics subject at SMK Auto Matsuda highlighted the need for more interactive learning media. This study aimed to determine the impact of using Google Sites an interactive learning medium on student learning outcomes in Informatics. A quantitative approach was employed using a pre-experimental, one-group pretest-posttest design. The sample consisted of 34 students from the Grade X TJKT class, selected via purposive sampling. Data analysis involved descriptive statistics, a normality test, a paired sample t-test, and N-Gain analysis. The results showed an increase in average learning outcomes following the use of Google Sites, rising from 48.82 in the pretest to 76.76 in the posttest an increase of 27.94 points. The paired sample t-test yielded a significance value of 0.001 (p < 0.05), indicating a significant difference in learning outcomes before and after using Google Sites. The N-Gain score of 0.5673 fell into the medium category. Thus, the use of Google Sites demonstrated a positive influence on improving student learning outcomes in the Informatics subject at SMK Auto Matsuda.
