Abstract

Buah naga dan Daun kelor merupakan jenis pangan fungsional yang mengandung banyak zat gizi yang telah banyak digunakan dalam pencegahan anemia pada remaja putri. Eskrim merupakan makanan yang paling popular dan sangat digemari oleh semua kalangan masyarakat dikarenakan rasanya yang enak, dan tekstur yang lembut dan dapat menjadi salah satu media dalam pencegahan anemia pada remaja putri. Penelitian ini bertujuan menganalisis kadar kalsium, dan mengetahui formula eskrim buah naga yang memiliki kandungan kalsium yang lebih tinggi. Jenis penelitian adalah penelitian eksperimental, dengan metode RAL (Rancangan Acak Lengkap) yaitu dengan menambahkan tepung daun kelor pada pembuatan eskrim buah naga dengan beberapa konsentrasi yaitu F0(0%),F1(2.5%),F2(5%),F3(7.5%),dan F4(10%). Pembuatan es krim buah naga dilakukan di Dapur Dashat (Dapur Sehat Atasi Balita Stunting) di Kelurahan Rejomulyo. Uji analisis kalsium dilakukan di Laboratorium Teknologi Hasil Pertanian Politeknik Lampung menggunakan metode SNI 7854:2013 dengan 2 kali pengulangan. Analisis statistik menggunakan uji normalitas Shapiro Wilk diperoleh hasil uji kalsium berdsitribusi tidak normal dengan nilai p-value 0,000. Data hasil uji kadar kalsium dianalisis menggunakan uji Kruskal Wallis dan Mann Whitney U Test. Es krim dengan substitusi es krim buah naga dengan tepung daun kelor memiliki kadar kalsium tertinggi diantara semua perlakuan dengan F4 yaitu sebesar 0,527%. Hasil analisis penelitian menunjukkan bahwa tidak terdapat perbedaan nyata pada uji kadar kalsium eskrim buah naga dengan tepung daun kelor sebagai substitusi untuk makanan selingan remaja putri dengan p value 0,323.

Abstract

Hypertension, or high blood pressure, is one of the most prevalent non-communicable diseases in Indonesia. The Indonesian Health Survey (SKI) in 2023 reported that the prevalence of hypertension based on measurements in individuals aged ≥18 years was 30.8%. This study aimed to identify consumption factors associated with blood pressure in hypertensive patients at the Internal Medicine Clinic of Batin Mangunang Regional Hospital of Tanggamus Regency in 2024. This quantitative study employed an analytical survey with a cross-sectional design. The population consisted of 42 hypertensive patients visiting the Internal Medicine Clinic in October 2024, selected through accidental sampling. The independent variables were fruit consumption patterns, drinking water consumption patterns, and coffee consumption patterns, while the dependent variable was blood pressure. Data were collected using the Food Frequency Questionnaire (FFQ). The results showed no significant relationship between fruit consumption patterns and systolic (p = 0.820) or diastolic blood pressure (p = 0.676). Similarly, no significant relationships were found for drinking water consumption (systolic p = 0.289; diastolic p = 0.753) or coffee consumption patterns (systolic p = 0.899; diastolic p = 0.874). Conclusion It was concluded that fruit consumption, drinking water, and coffee consumption patterns were not associated with blood pressure in the respondents.

Abstract

Kepok banana (Musa paradisiaca Linn) is one of the leading horticultural commodities in Lampung Province with great potential as a raw material for food processing, particularly for banana chips and banana flour. Kepok bananas contain beneficial nutrients such as high dietary fiber, resistant starch, low glycemic index, and potassium, which can help regulate blood glucose and blood pressure. However, bananas are highly perishable fruits, thus requiring processing to extend shelf life and increase added value. This community service activity aimed to enhance the skills of PKK (Family Welfare Movement) members in Tegalrejo Village, Pringsewu Regency, in processing kepok bananas into flour and food products such as dry choux pastry. The methods used included observation, trial-and-error flour and pastry production, organoleptic testing, socialization, and demonstration. The results showed that the community participated enthusiastically throughout the process, and the best formulation for the dry choux pastry was a 25% substitution with kepok banana flour. This activity also successfully improved nutrition knowledge, entrepreneurship motivation, and awareness of local food potential. It is expected that this program will continue through intensive mentoring and the development of local food-based enterprises to support community food security and self-sufficiency

Abstract

Overweight among adolescents, including university students, continues to rise and poses long-term health risks. One preventive approach is through education and healthy food processing using local ingredients. This community service program aimed to improve students' knowledge and skills in preparing healthy steak made from tiwul (cassava granules) and tofu dregs. The activity was conducted in April–May 2025 and involved 15 students from Aisyah University of Pringsewu. The methods included nutrition education, product demonstration, and sensory evaluation. Results showed high enthusiasm from participants, who actively engaged in all stages of the activity. The developed product had acceptable taste and texture, and was high in dietary fiber, supporting weight management goals. This program proved that healthy, affordable food can be made from local resources and food by-products using simple techniques. Students are expected to apply this knowledge at home and serve as role models in promoting healthy eating habits among their peers.

Abstract

Adolescent anemia is characterized by iron deficiency associated with menstruation and unbalanced nutrient intake. Red dragon fruit and moringa leaf flour are rich in iron, flavonoids, and phenolic compounds, which possess antioxidant properties and may help prevent anemia. Both ingredients can be developed into snack products such as ice cream, which is popular among adolescents. The objective of this study was to analyze the total flavonoid and total phenolic contents in red dragon fruit ice cream with the addition of moringa leaf flour. This research employed a Completely Randomized Design (CRD) with five formulations and two replications. Chemical analysis and The ice cream was prepared at the Laboratory of Aisyah University, Pringsewu, in January 2025. Data were analyzed using One-Way ANOVA followed by Duncan’s multiple range test. The results showed significant differences (p < 0.05) among the formulations. The highest total flavonoid content was observed in formulation F4 (10%) with 0.53 mg quercetin equivalent per gram (p = 0.001). The highest total phenolic content was found in formulation F0 (0%) with 5.48 mg gallic acid equivalent per gram (p = 0.002). In conclusion, the addition of up to 10% moringa leaf flour in red dragon fruit ice cream increased the total flavonoid content but decreased the total phenolic content. Therefore, this product has potential as a functional food rich in antioxidant compounds that may benefit adolescent girls.

Abstract

Remaja merupakan kelompok populasi besar yang memiliki peran penting dalam pembangunan nasional namun tetap rentan terhadap masalah kesehatan reproduksi seperti anemia, infeksi menular seksual, dan kehamilan yang tidak direncanakan. Posyandu Remaja Tegalsari menghadapi rendahnya partisipasi yang disebabkan oleh kegiatan yang monoton dan jadwal yang kurang sesuai. Program digital KOREGA (Komunitas Remaja Gesit Antusias) diperkenalkan sebagai strategi inovatif untuk meningkatkan pengetahuan dan keterlibatan remaja melalui pemberdayaan kader sebaya, perbaikan manajemen kegiatan, serta pemanfaatan aplikasi, modul, video, dan media sosial. Program dilaksanakan pada Agustus–September 2025 dengan melibatkan 10 kader remaja melalui tahapan persiapan, sosialisasi, implementasi digital, pelatihan, monitoring, dan evaluasi menggunakan pre–post test. Analisis Wilcoxon menunjukkan peningkatan pengetahuan yang signifikan (p=0.008), dengan rata-rata nilai meningkat dari 47,33 menjadi 75,78. Temuan ini menunjukkan bahwa intervensi digital yang dikombinasikan dengan pendampingan sebaya efektif dalam meningkatkan pemahaman remaja tentang kesehatan reproduksi. Program KOREGA dapat menjadi model modern, inklusif, dan berkelanjutan untuk pemberdayaan Posyandu Remaja sekaligus mendukung Sustainable Development Goals (SDGs) poin 3 (Kehidupan Sehat dan Sejahtera) dan poin 4 (Pendidikan Berkualitas).

Abstract

Stunting adalah kondisi gagal tumbuh pada anak balita akibat dari kekurangan gizi kronis sehingga anak terlalu pendek untuk usianya. Tujuan penelitian diketahui hubungan tingkat kecukupan protein dan zinc dengan stunting pada balita di Pekon Pamenang Kecamatan Pagelaran Kabupaten Pringsewu tahun 2022. Penelitian ini menggunakan desain Cross-Sectional. Populasi adalah seluruh anak 24-59 bulan, sampel dalam penelitian ini berjumlah 151 balita teknik yang digunakan adalah simple random sampling. Analisis bivariat dengan menggunakan uji gamma. Hasil penelitian dari uji analisis bivariat antara tingkat kecukupan protein dengan stunting pada balita didapatkan hasil p=0.266. Hasil penelitian dari uji analisis bivariat antara tingkat kecukupan zinc dengan stunting pada balita didapatkan hasil p=0.641. Tidak adanya hubungan bermakna antara tingkat kecukupan protein dan zinc dengan stunting pada balita di Pekon Pamenang Kecamatan Pagelaran Kabupaten Pringsewu.

Abstract

MTs Darul Hidayah is one of 7 schools whose teenage girls experience anemia at the highest rate of 70% in the Labuhan Maringgai Community Health Center Nutrition Program. The condition of iron nutritional anemia is caused by several interrelated factors, including the insufficient amount of iron in food due to low consumption of animal protein sources. Therefore, research was conducted which aimed to analyze the relationship between animal protein consumption patterns and the incidence of anemia in young women at MTs Darul Hidayah. The type of research is quantitative with an analytical survey method using a cross sectional design approach. The research was carried out in December 2022 at MTs Darul Hidayah. Sampling was carried out by purposive sampling. The population in this study were all 101 young women at MTs Darul Hidayah classes VII, VIII and IX. The total sample after screening was 69 young women who had anemia, where each class had a sample to represent and meet the inclusion criteria. Data on animal consumption patterns was obtained using the FFQ (Food Frequency Questionnaire) Form. Hemoglobin levels were measured using a Family Dr. The statistical test used for analysis is the Fisher Exact Test. The research results show that 69.6% of young women never consume animal protein, 53.6% have chronic energy deficiency and 55.1% have moderate anemia. The results of the statistical test analysis show that there is a relationship between animal protein consumption patterns and the incidence of anemia in young women at MTs Darul Hidayah Sriminosari East Lampung with a p-value = 0.007 (p-value <0.05). So, it is concluded that there is a relationship between animal protein consumption patterns and the incidence of anemia in young women at MTs Darul Hidayah.

Abstract

The aim of this research was to analyze the fiber content and antioxidant activity in pudding made from chia seeds and soybean juice with butterfly pea flower extract. The type of research is experimental research, with the RAL (Completely Randomized Design) method, which is carried out by adding chia seeds to making pudding with 5 treatments, namely F0 (0%), F1 (2%), F2 (4%), F3 (6%) and F4 (8%). Fiber content analysis using the AOAC method and antioxidant activity analysis using the DPPH method were carried out at the Lampung State Polytechnic Laboratory. Data processing was carried out by ANOVA and Duncan tests using SPSS 20. The results of statistical tests on fiber content showed that there was no effect of adding chia seeds to making pudding with a p-value = 0.106 even though there was an increase in each formula. The highest fiber content in F4 (8%) is 5.86% or 5.8 gr/100 gr pudding, which can meet daily fiber needs, namely 2.7 -3.7 gr/day. The results of statistical tests on antioxidant activity show that there is an effect of adding chia seeds to make pudding with a p-value = 0.000. The highest IC50 antioxidant activity was in F4 (8%) at 6090 µg/mL, even though the IC50 value was in the weak category, the smaller the IC50 value, the stronger the antioxidant was in warding off free radicals. Based on research results, the more chia seed formula added, the higher the fiber content and the higher the IC50 antioxidant activity.

Abstract

T2DM merupakan penyakit tidak menular dengan jumlah kasus yang tinggi dan terus mengalami peningkatan, namun pengendalian diabetes berdasarkan pengaturan makan masih rendah. Penelitian konseling gizi melalui RSUD Zainal Abidin Pagaralam bertujuan untuk menganalisis pengaruh konseling gizi dengan media Whatsapp dan Booklet terhadap tingkat kepatuhan diet. Metode penelitian yang digunakan yaitu penelitian eksperimen dengan kelompok perlakuan dan kelompok kontrol. Populasi penelitian adalah pasien RSUD Zainal Abidin Pagaralam. Sampel penelitian terdiri dari 27 orang kelompok perlakuan dan 18 orang kelompok kontrol. Kelompok perlakuan terdiri dari kelompok dengan media Whatsapp. (P1), Booklet. (P2), dan kombinasi Whatsapp dan Booklet. (P3). Kelompok kontrol terdiri dari kontrol negatif tanpa media. (K1) dan kontrol positif dengan leaflet. (K2). Karakteristik terbanyak pasien T2DM berdasarkan umur adalah dewasa akhir, berdasarkan jenis kelamin adlaah perempuan, berdasarkan pendidikan adalah SMA. Hasil uji hipotesis menunjukkan konseling gizi berpengaruh terhadap kepatuhan diet, baik dengan media Whatsapp (Sig. 0.000), Booklet (Sig. 0.008), Whatsapp dan Booklet (Sig. 0.004), tanpa media (Sig. 0.001), ataupun dengan Leaflet (Sig. 0.002). Hasil analisis beda kelompok perilaku menunjukkan media Whatsapp dan tanpa media tidak memiliki perbedaan (Sig. 0.207), sedangkan media Whatsapp dan media leaflet memiliki perbedaan peningkatan kepatuhan diet (Sig. 0.021). Media booklet tidak memiliki perbedaan dengan tanpa media (Sig. 0.154) ataupun media leaflet. (0.912). Kombinasi media Whatsapp dan Booklet memiliki perbedaan dengan tanpa media (Sig. 0.021), namun tidak memiliki perbedaan dengan media leaflet (Sig. 0.211). Secara menyeluruh, konseling gizi secara tatap muka tanpa media, tatap muka dengan media, maupun remote counselling efektif dalam meningkatkan kepatuhan diet.
