Abstract

This research aimed to investigate the microencapsulation of synbiotics that combine probiotics, Bacillus subtilis, with prebiotic MOS for poultry diet to influence the physical quality of poultry meat. The material used in this study was 100 one-day-old unsexed broilers Cobb 500. The birds were randomly divided into the following 4 experimental groups, with five replications: The treatments were (T1) basal diet (control) without microencapsulation Synbiotic, T2, T3, and T4 supplementation basal diet with 0.25, 0.50, and 0.75% of microencapsulation synbiotics of Bacillus subtilis and MOS, respectively. The variables were physical qualities of poultry meat, including acidity (pH), cooking losses, water holding capacity (WHC), and hardness. The basal diet was formulated to meet completely the nutrient requirements broilers based on NRC (1994) recommendations. The dietary treatments were based on corn grain-soybean meal and balanced with other nutrients. The data were analyzed with one-way ANOVA in a Completely Randomized Design (CRD) using the Statistical Package for Social Science or IBM SPSS Statistics version 26, significant differences among the means were determined by using Duncans multiple range test at P0.05. The results showed that the treatment groups did not have a significant effect (P value0.05) on the physical qualities of broiler meat, which are acidity (pH), cooking losses, water holding capacity (WHC), and tenderness. To conclude, supplementation of microencapsulation synbiotic has no negative effects on the physical qualities of the meat reflected in the value of all variables, which are in the normal range of the physical quality of broiler meat.

Abstract

AbstrakKegiatan pengabdian masyarakat bertujuan untuk meningkatkan pengetahuan dan keterampilan melalui pemberdayaan kelompok wanita ternak Jaya Santosa yang beranggotakan 20 orang di Desa Panti Kabupaten Jember. Pendekatan yang digunakan yaitu Asset Based Community Development (ABCD) merupakan pemberdayaan berkelanjutan yang didasarkan pada aset dan potensi masyarakat yang dapat dikembangkan untuk mencapai tujuan. Waktu pelaksanaan pengabdian pada bulan April hingga September 2023 yang terdiri dari beberapa tahapan. Tahapan pengabdian diantaranya (1) tahap koordinasi meliputi identifikasi aset, permasalahan mitra serta solusi yang diberikan oleh tim pengabdian yaitu produk olahan hasil ternak telur asin rendah natrium; (2) tahap persiapan meliputi pembuatan alat produksi telur asin rendah natrium, materi penyuluhan dan alat serta bahan untuk kegiatan; (3) tahap pelaksanaan yaitu pemberian materi penyuluhan tentang manfaat produk olahan hasil ternak kepada mitra dan pelatihan pembuatan telur asin rendah natrium (4) tahap pendampingan dilakukan pada saat dan setelah kegiatan pengabdian; (5) tahap evaluasiprogram pengabdian tentang pengolahan produk telur asin dinilai bermanfaat untuk kelompok wanita ternak dan anggota kelompok setuju apabila diadakan kegiatan pengembangan lainnya. Kesimpulan Kegiatan pengabdian yaitu pemberdayaan dengan pendekatan Asset Based Community Development dipilih sebagai upaya dalam mengetahui potensi aset yang tersedia dan terbukti dapat mencapai tujuan dapat meningkatkan produktivitas dan kesejahteraan mitra. Kata kunci: asset based community development; pemberdayaan; telur asin Abstract This community service activity aims to increase knowledge and skills by empowering the Jaya Santosa livestock women's group with 20 members in Panti Village, Jember Regency. The approach used is asset-based community development (ABCD), which is sustainable empowerment based on community assets and potential that can be developed to achieve goals. The service implementation time is from April to September 2023, which consists of several stages. The service stages include (1) the coordination stage, which includes identified assets, partner problems, and solutions provided by the service team, namely processed low-sodium salted egg livestock products; (2) the preparation stage, which includes make low-sodium salted egg production equipment, educational materials, tools, and materials for activities; and (3) the implementation stage, which includes providing educational material about the benefits of processed livestock products to partners and training in make low-sodium salted eggs. (4) The mentoring stage is carried out during and after service activities; (5) the evaluation stage of the service program regarding the processing of salted egg products is considered beneficial for the women's livestock group, and group members agree that other development activities will be held. The conclusion service activity, namely empowerment using the asset-based community development approach, was chosen as an effort to determine the potential of available assets and is proven to be able to achieve the goal of increasing partner productivity and welfare. Keywords: asset based community development; empowerment; salted egg
