Abstract

Product modification can be used as an intervention method to prevent nutritional problems. The addition of ingredients that have certain nutrients can be used in the modification process, thereby increasing the product's superiority and affecting the quality of the resulting product. It is necessary to analyze the nutrient content to decide whether the nutrients in the product are convenient with the specified nutritional adequacy claim. The purpose of this study was formulating suction puding made from high protein ingredients and analyzing the nutrient content. This research was a quantitative study included in the experimental design to determine the nutritional content of moisture, ash, fat, protein, and carbohydrate content in the formulation of suction puding. Formulation was carried out in dietetic and culinary laboratory and Analysis of nutrient content was carried out at the Laboratory of Chemistry and Microbiology of Agricultural Products, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University. Data analysis in this study is bivariate using ANOVA test if the data is normally distributed and Duncan's further test, while data that is not normally distributed uses Kruskall-Wallis test and Mann-Withney further test. The results was formulation samples consisted of four different recipes of suction puding formulations (A, B, C and D) then the bivariate analysis in this study showed significant differences in water, fat, protein, and carbohydrate content (p<0.05), while in ash content there was no significant difference in the various formulations (p>0.05).

Abstract

Office workers are one group with a high proportion of hypertension compared to other types of work. Objectives: To determined the proportion of pre-hypertension, hypertension and risk factors for hypertension among employees in Sriwijaya University. Methods: This study used a cross-sectional design at Sriwijaya University, and samples were taken from 4 faculties totaling 152 respondents. Sampling using cluster random sampling technique. Data were collected from September to October 2020. The analysis was carried out in univariate, bivariate and multivariate analysis with logistic regression tests. Results: There were 13.2% of employees had hypertension, 40.8% had pre-hypertension, and the risk factor for hypertension among employees was age (p-value = 0.01; OR = 4.76; CI 1.50 <OR <15, 10) after controlling for the variables of the length of work, marriage status and cholesterol levels. Conclusion: There are more than 50% of employees are in a condition of pre-hypertension and hypertension, with age as the main risk; for this reason, employees who are 45 years old are expected to carry out routine health checks with the facilitation of the university and be able to implement the Dietary Approach to Stop hypertension in employees with pre-hypertension / hypertension.Keywords:  DASH, hypertension, pre-hypertension, the risk factor

Abstract

Background: Nutritional anemia is a condition where the hemoglobin level in the blood is below normal. Anemia education is very important because there are still many young women who do not know about anemia. This activity aims to increase knowledge about balanced nutrition and anemia among young women in Menanti Village. Methods: This activity is in collaboration with the Head of Menanti Village, Kec. Kelekar Muara Enim Regency with a total of 36 participants, using lecture and discussion methods. The activities carried out are measuring knowledge and providing education using the lecture method. Results: Nutrition and anemia education activities in Menanti Village, Kelekar District, Muara Enim Regency were carried out on Tuesday 11 June 2024 for 36 young women. Conclusion: Community service activities by lecturers at the FKM Nutrition Study Program at Sriwijaya University in the form of nutritional education regarding anemia in young women using leaflets as a medium increase female students' knowledge regarding anemia. Knowledge about applying the principles of balanced nutrition is one of the efforts to prevent anemia from an early age in adolescents.

Abstract

The teenage phase is a crucial period in preparing to become a woman of childbearing age who is able to prepare for the health of future generations. Therefore, nutritional status and supporting factors for growth and development in adolescence are the focus of attention in sensitive nutrition interventions. One effort to improve adolescent nutrition is through providing snacks in the form of nutritious snack bars which are formulated using local food ingredients typical of the target area. The potential of snakehead fish which has a high protein content has been used as a traditional snack such as pempek, so efforts are needed to increase the use of snakehead fish as a snack bar product. The aim of this research was to carry out social mapping and develop local food-based products as an initial project in a sensitive nutrition intervention effort to accelerate stunting reduction. Social mapping related to teenagers was carried out on 100 young women at SMA Negeri 4 Palembang and product formulation was carried out at the Nutrition Laboratory, Faculty of Public Health, Sriwijaya University. The results of the social mapping research showed that 59 subjects (59%) were at risk of CED and 30 subjects (30%) had anemia. The snack bar formulation product most liked by the trained panelists was the snakehead fish formulation with the addition of gulo puan F3, F6 and F9. The product formulation most preferred by consumer panelists is the F3 formulation.

Abstract

Santriwati (female Islamic boarding school student) are within the target age range for the 8000 HPK program, making it crucial to have sufficient protein intake to prevent stunting in future generations. Fish, being a good source of protein, is widely available in Islamic boarding schools due to its nutritional value and affordable price. However, protein intake among female students in these institutions often falls into the deficit category, primarily due to a lack of knowledge about the importance of fish as a protein source. This Community Service activity aims to enhance the knowledge of female students regarding nutrition and the role of protein through interactive classes. The interactive class includes nutrition presentation, games and coloring goodie bags with the slogan "". The activity was conducted at the Sabilul Hasanah Banyuasin Islamic boarding school involving 50 female students as respondents. The activity was carried out for 3 meetings in September 2024. The results of the paired showed a difference between knowledge before and after the educational activity was carried out (p <0.005). The female students showed great enthusiasm for the activity. Educational interventions through interactive sessions can effectively improve both the knowledge and enthusiasm of female students about the benefits of consuming fish.

Abstract

The increase in life expectancy in Indonesia has resulted in a growing elderly population (older adults) who face various health, nutritional, and psychosocial challenges, particularly those living in social care institutions. One alternative approach to address these issues is aquaponic therapy, an integrated system of fish farming and hydroponic cultivation that serves not only as a source of nutritious food but also as an environmental therapy medium. This community service program aimed to improve the knowledge, skills, and quality of life of the elderly through aquaponic training and aquaponic therapy at Boarding Care Noor Fatimah, Palembang. The program consisted of two main stages: (1) aquaponic training, including the delivery of basic concepts and hands-on practice in preparing planting media, cultivating water spinach seedlings, and stocking fish fry; and (2) aquaponic therapy, which involved simple activities such as feeding fish, watering plants, harvesting vegetables, and participating in motivational sessions guided by a psychologist. Evaluation was conducted qualitatively through observation and interviews to assess the participation, enthusiasm, and perceptions of both elderly participants and caregivers. The findings indicate that aquaponics training effectively enhanced older adults’ comprehension of the fundamental principles and benefits of the system. Participants demonstrated greater awareness of the importance of maintaining health through healthier dietary practices derived from aquaponic produce. Moreover, aquaponics therapy promoted engagement in light physical activities and nurtured a sense of responsibility in caring for both plants and fish. From an emotional perspective, participants reported increased levels of happiness, satisfaction, and pride, particularly when sharing and consuming the harvest collectively. The main challenges identified were memory limitations and physical constraints of the elderly, as well as limited caregiver availability, which highlighted the need for capacity-building and simplified maintenance systems. Overall, the program not only provided educational and psychosocial benefits but also demonstrated potential to strengthen food security and institutional independence in a sustainable manner.

Abstract

Correlation between fluid intake, potassium, sodium, and interdialytic weight gain (IDWG) in routine hemodialysis patientsBackground: Chronic kidney failure patients undergo hemodialysis regularly to help kidney function. One of the problems that often occurs in patients with chronic kidney failure when undergoing hemodialysis is an increase in interdialytic weight gain (IDWG).Objective: This study aims to determine the correlation between fluid, potassium, and sodium intake with IDWG in hemodialysis patients at RSUP Dr. Mohammad Husein Palembang.Method: This study employs a quantitative approach with a cross-sectional design. The sampling technique used was purposive sampling, resulting in 62 respondents who met the inclusion and exclusion criteria. The data collected included the characteristics of the respondents, as assessed through a questionnaire. Additionally, data on fluid, potassium, and sodium intake were collected using a 2x24-hour food recall form. Body weight data were measured before and after hemodialysis using digital scales. Bivariate analysis was carried out using the Spearman correlation test.Results: There was a significant correlation between fluid intake (p-value = 0.022) and sodium intake (p-value = 0.049) with IDWG, with a positive correlation direction, indicating a relationship in the same direction. The correlation was sufficient for fluids with IDWG, but weaker for sodium with IDWG. There was no relationship between potassium intake (p-value = 0.062) and IDWG.Conclusions: The unexpected increase in IDWG in hemodialysis patients is related to fluid and sodium intake; therefore, the higher the sodium and fluid intake, the greater the increase in IDWG.

Abstract

Shrimp shells are not just waste but has many health and economic benefits. Shrimp is a marine product that is widely produced in Dusun Sembilang Banyuasin, but the people there do not know yet how to utilize and manage shrimp waste so that shrimp shells only become waste, pollute the environment and can cause disease. Therefore, it is necessary to transfer information regarding the utilization of shrimp shell waste. The method used in this community service is to provide training in the utilization of shrimp shell waste into flavorings and crackers with a target of 25 mothers. The purpose of this activity is so that shrimp shell waste can become a product that can be sold and become income for families so that it can increase family food security. This activity was part of the Kedaireka activity with partner PT Pertamina RU III which was carried out in July 2024 in Dusun Sembilang Banyuasin. The results of this activity were that the mothers were very enthusiastic in practicing making shrimp shells into flavorings and crackers. The flavoring from shrimp shells and shrimp shell crackers have a savory taste. Evaluation of this activity requires applied technology in drying shrimp skin and crackers because conventional drying (with the sun) is very dependent on the weather.

Abstract

ABSTRAK Penyakit Tidak Menular (PTM) menjadi salah satu permasalahan kesehatan. Program Pengelolaan Penyakit Kronis (Prolanis) sebagai salah satu upaya promotif preventif dari BPJS Kesehatan untuk menanggulangi akibat PTM, khususnya yang berkaitan dengan penyakit hipertensi dan diabetes mellitus tipe II. Kegiatan pengabdian masyarakat ini diikuti oleh 45 orang peserta prolanis, aktivitas dalam Prolanis tersebut berupa senam prolanis, edukasi kelompok, pemeriksaan kesehatan (seperti berat badan dan tinggi badan untuk mengetahui status IMT, ukur tekanan darah, cek kolesterol, asam urat, dan gula darah), serta konseling gizi sebagai tindak lanjut dari hasil pemeriksaan. Melalui kegiatan Prolanis tersebut, diharapkan peserta prolanis dapat rutin berkunjung ke layanan kesehatan untuk melakukan pemeriksaan kesehatan terhadap dirinya agar dapat mencapai kualitas hidup yang optimal. Kata Kunci: PTM, Prolanis, BPJS Kesehatan  ABSTRACT Non-communicable diseases (NCDs) are one of the health problems. The Chronic Disease Management Program (Prolanis) is one of the preventive promotive efforts of BPJS Health to tackle the consequences of NCDs, especially those related to hypertension and type II diabetes mellitus. This community service activity was attended by 45 prolanis participants, the activities in Prolanis were in the form of prolanis exercises, group education, health checks (such as weight and height to determine BMI status, measure blood pressure, check cholesterol, uric acid, and blood sugar), and nutritional counseling as a follow-up to the examination results. Through these Prolanis activities, it is hoped that prolanis participants can routinely visit health services to conduct health checks on themselves in order to achieve optimal quality of life.  Keywords: NCD, Prolanis, BPJS Health

Abstract

This research aims to identify and document the local food security system in the Semende traditional community based on tunggu tubang indigenous knowledge. The study was conducted in 3 districts of Muara Enim, South Sumatra, involving 81 people from 5 villages practicing the tunggu tubang custom. Using a mixed method, the research took place from July to August 2023.The findings revealed that while tunggu tubang adherents still inherit rice fields and agricultural land, some no longer own rice fields. Inheriting rice fields has led to sufficient food availability but does not guarantee good food security. 50.6% of respondents experienced mild food insecurity due to the traditional sandwich generation where they have to support their parents and closest family. Despite this, most children (56.6%) showed good nutritional status. This research identifies and documents the local food security system in the Semende traditional community. It reveals the importance of tunggu tubang in maintaining food availability but acknowledges the challenges in achieving food security. The findings provide valuable insights for developing educational initiatives to address climate change and food security
