Abstract

Tempeh as a fermented soybean product has high nutritional value and has become an important part of local culinary in Malang. Oyster mushroom (Pleurotus ostreatus) cultivation is also growing rapidly in Malang due to the supportive natural conditions and promising economic potential. The advantages of these two raw materials make them very potential to be developed into innovative food products, one of which is natural flavoring. This study aims to develop natural flavorings based on tempeh and oyster mushrooms as a healthier substitute for MSG. Variations in the proportion of tempeh and oyster mushrooms and drying temperatures (70°C, 65°C, 60°C, 55°C) were tested to analyze product characteristics. The parameters tested included water content, carbohydrates, protein, and sensory tests. The results of the study are expected to provide an alternative natural flavoring that is safe and highly nutritious.

Abstract

Statute Cooperative and Koperasi Wanita Bhakti Ibu is prepare accountability report, as well as submission of work plan and budget plan of expenditure of cooperative expenditure at Rapat Anggota Tahunan (RAT) Forum. Presentation of accountability report in RAT which is a forum for sharing is expected to give member's opportunity to objectively and constructively assess the existence and development of cooperative as a whole, in the field of organization, management, capital, business and other activities. The latest financial reports, therefore need improvement and innovation by creating a computerized reporting application to simplify and mitigate work and minimize errors in reporting figures. Research method used to analyze system on Koperasi and design system to cooperative. System analysis purpose is tobe able identify and evaluate problems that occur and expected needs, so it can be proposed improvement. After build application, resulted conclusions: (1) Based on trial, application run effectively, minimize errors in performing data storage and facilitate data search and transactions more quickly and accurately; (2) Based on trial, application capable reports of transaction or financial administration, according to user current desire.

Abstract

The Covid-19 pandemic has hit the world since January 2020, and until now the cases are still increasing. The impact is very global covering various aspects, covering all regions in the world including Indonesia and the city of Malang in particular. As a tourism city that is very superior, of course it is very hard to hit and reduce regional income. As a tourism city that has almost a thousand MSMEs (recorded in the Malang Cooperative Service) that supports the income of the city of Malang, it finally has to go out of business. The group of residents of RT 07 Rw 05, 25% of the population has affected MSMEs. There are those who reduce their business operations, reduce production, reduce employees and some even close their businesses. The lack of income coupled with the low productivity of the citizens adds to the various problems that arise during this pandemic. Coupled with the high prices of basic commodities, agricultural products such as vegetables, fruits, spices, therefore, training activities are needed that can boost the productivity and economy of the residents. This training activity for making powder preparations is expected to add insight to the residents, so that residents can meet their instant food needs independently and if possible they can commercialize the products they produce.

Abstract

Sumberejo Village is located at the foot of Bukit Banyak and north of the Among Tani City Hall, which consists of three hamlets, namely Dusun Krajan, Dusun Sumbersari and Dusun Sumberejo. Sumberejo village has potential in agriculture. To accommodate the activities of the farmers, the “Barokah” Farmers Group was formed. The development of technology and fertilizers used in agriculture is increasing so that the use of chemical fertilizers is increasingly difficult to avoid. Over time, this will have a serious impact, especially on soil nutrients. In addition, things that need attention are agricultural waste in the form of vegetables and cheese waste (whey) generated from the activities of the cheese-making industry. Cheese waste (whey) is generally thrown away in rivers and can cause an unpleasant aroma, but it will also trigger the growth of disease-causing microorganisms. The objectives to be achieved from this training activity for the manufacture of natural bioactivators are to utilize vegetable waste and whey as an alternative source of microbes in the manufacture of bioactivators and to provide information on public knowledge about the manufacture of liquid organic fertilizer from agricultural waste using independently produced bioactivators. this activity is to present the material and then carry out direct practice to make natural bioactivators. Then an evaluation of the products produced and the processes carried out by the training participants is carried out.

Abstract

The presence of natural antioxidants in medicinal plants plays a crucial role in inhibiting the detrimental effects of oxidative stress. The aim of this research is to explore more deeply all parts of A. esculenta L from flowers, fruits, seeds, leaves, and stems for the levels of compounds and antioxidant and enzyme inhibitor activities. The flowers demonstrated the highest TPC with 173.15942 ± 6.5083 mg GAE/g. The stems exhibited the lowest TPC value at 69.1967 ± 2.8408 mg GAE/g. The flowers also showed TFC value of 83.157 ± 2.021 mg QE/g while the stems displayed the lowest with 36.7240 ± 1.337 mg QE/g. IC50 value that the flowers possessed the highest antioxidant activity with 22.6539 ± 1.6452 mg/mL, whereas the stems displayed a slightly lower. In terms of the inhibitor of a-amylase activity, the flowers had an IC50 value of 102.4885 ± 11.4370 mg/mL whereas the stems had a lower. The highest IC50 value of the a-glucosidase inhibitor was 76.95 ± 12.0888 mg/mL in the flowers, and the lowest was in the stems. The highest IC50 of pancreatic lipase inhibitor was 109.5943 ± 9.7391 mg/mL in the flowers, and the lowest was in the stems. This study show that there is a relationship between the high content of total phenolic and total flavonoids on antioxidants, antidiabetic and antilipase activities.

Abstract

Limbah pertanian di Desa Sumberejo Batu, berupa sisa sayuran dari golongan kubis, daun kol, selederi, andewi dan sawi mencapai kuantitas hingga 5 ton per hari. Perilaku masyarakat yang belum sadar akan bahaya bencana yang diakibatkan memberikan dampak yang cukup luas mengingat daerah Batu merupakan daerah Hulu yang sangat mempengaruhi 24 daerah pertanian di bawahnya. Limbah sayuran tersebut dihasilkan dari tiga masalah besar limbah yaitu 1) tercampurnya sisa sayuran dengan zat kimia akibat pemakaian pupuk kimia yang menyebabkan kerusakan tanah dan bau tidaka sedap; 2) usia produk (basah) yang pendek dan terjadi over stock saat panen raya; dan 3) sulitnya melakukan mitigas pencemaran dan tidak ada parameter target capaian pengolahan limbah. Berdasarkan hasil analisa lapangan maka pada penelitian ini di fokuskan pada pengolahan limbah sayuran menjadi pupuk organik cair. Pemilihan metode penangan masalah limbah pertanian yang ada Desa Sumberejo ini dirancang dengan desain partisipatory, artinya pengolahan limbah dilakukan bersama-sama dengan masyarakat sehingga ada keterlibatan dan tanggungjawab dari masyarakat untuk mengendalikan pencemaran lingkungan akibat limbah pertanian yang selama ini belum ditangani secara komprehensif. Pupuk cair organik yang dihasilkan mempunyai karakteristik yang sesuai dengan SNI Pupuk cair. Unsur hara yang dibutuhkan tercukupi baik secara makro maupun mikro nutrien. Unsur NPK total pupuk cair yang dihasilkan adalah 2 – 3,7%, menggunakan kondisi proses fermentasi anaerob selama 21 hari.
