Abstract

Accelerating stunting reduction is the government's focus in the health sector. The micronutrients given to pregnant women are in the form of blood supplement tablets containing iron and folic acid. Meanwhile, nutrition for toddlers is in the form of two vitamin A capsules according to the dosage and giving Zinc tablets and ORS according to the management for toddlers suffering from diarrhea. The efforts made to recognize, prevent and overcome nutritional problems include regularly weighing, giving breast milk to babies from birth to 6 months of age, varying food menus, using iodized salt, and providing nutritional supplements as recommended by health workers. Increasing the knowledge and skills of cadres through training was a method of implementing this community service activity. The method for developing this activity was by providing training and refreshing for posyandu cadres and village midwives as well as assisting cadres during the implementation of the activity. Monitoring and evaluation was carried out by the implementation team for cadres. This activity achieved results, namely the formation of a stunting care cadre group, the availability of facilities and infrastructure to support activities such as modules, tools and materials to increase cadres' knowledge and skills. After the training, there was an increase in cadres' knowledge and skills regarding Micronutrients needed by pregnant women and toddlers.

Abstract

Background : Powder drink is a powder or granule product that made from a mixture of sugar and spices with or without the addition of other ingredients. Raw ingredients of powder drink can make from various kinds of plants, such as turmeric and lemongrass, that are both of ingredients contain active compounds that can function to maintain body immunity, especially during a pandemic like now. The criterias of a good powder drink are taste, smell, color and appearance that are comparable to fresh products, have nutritional characteristics and have a good storage stability.Purpose : This study aims to determine the organoleptic acceptability of the "Terai" powder drink with three treatments and characteristics with the parameters of the water content and ash content of the most liked product.Methods : This research is an experimental research or experiment (experiment research). The design used is a completely randomized design which aims to assess a treatment or action. In this study, the treatment is carried out to determine the acceptability of "Terai" powder drink based on organoleptic colour, texture, aroma, and taste carried out on 30 trained panelists as well as characteristic tests with parameters of water content and ash content of the most liked product. The tests used are Kruskall-Wallis and Mann-Whiteney..Results : The result test of three product (F1, F2, F3) showed there was a difference of color receivability organoleptic (p=0,000) and taste (p=0,004), and smell receivability organoleptic (p=0,273) and texture (p=0,288) shwed there was no difference. So for receivability orgaanoleptic of colour and taste to be continued with Mann-Whitney test. . The result of the characteristic test with the water content parameter was 7.22% and the characteristic test result with the ash content parameter was 2.11% for the most preferred product.Conclusion : From three of ‘Terai’ powder drink’s  formulation showed that the most liked product is F2 with the water content 7,22% and the ash contenct 2,11%.

Abstract

According to 2018 Riskesdas data, 95.5% of Indonesians aged ?5 years are in the category of less fruit and vegetable consumption. Bengkulu Province shows that the proportion of the population aged ?5 years who does not consume fruits and vegetables reaches 94%. Seluma district is included in the category of less fruit and vegetable consumption.This research is descriptive with quantitative methods which aims to describe the knowledge of school-age children in Rena Panjang Village in 2021. The population in this study amounted to 52 people. Sampling in this study was taken by non-random sampling with purposive sampling method (sampling based on certain considerations that have been made by the researcher) with a total sample of 52 samples. Data collection was carried out by filling out a questionnaire. Data processing was done manually and computerized with steps of editing, coding, entry, cleaning and tabulating. The data analysis used is descriptive analysis using percentages.The results showed that most of them had poor knowledge about the importance of fruit consumption as much as 59.61% (31 respondents), adequate knowledge as much as 32.69% (17 respondents) and good knowledge as much as 7.69% (4 respondents). Most of them have poor knowledge about the importance of vegetable consumption as much as 36.53% (19 respondents), sufficient knowledge as much as 30.76% (16 respondents) and good knowledge as much as 32.69% (17 respondents). It is suggested to the community or parents or health workers who are in the working area of the district to increase their active role in providing information or health education to children about the importance of fruit and vegetable consumption, such as holding counseling or distributing brochures and leaflets.

Abstract

Latar belakang: Cara Produksi Pangan yang Baik (CPPB) diperlukan untuk mencegah produk pangan dari bahaya fisik, kimia dan biologis sehingga ada jaminan produk pangan tersebut aman untuk dikonsumsi. Konsumsi produk pangan yang aman mencegah dari keracunan makanan (foodborne disease) yang dapat menimbulkan penyakit.Tujuan: Mengetahui gambaran pengolah pangan dan penerapan cara produksi pangan yang baik (CPPB) di Kelompok Tani Hutan Kota Bengkulu.Metode: Metode yang digunakan yaitu survey deskriptif. Sampel penelitian ini adalah Kelompok Tani Hutan (KTH) Kota Bengkulu yang terdiri dari 36 orang yang dipilih secara acak (probability sampling). Responden akan mengisi informed consent dan kuesioner CPPB, selain itu akan dilakukan wawancara dan pengamatan secara langsung mengenai pengolahan pangan yang dilakukan oleh responden.Hasil: Karakteristik pengolah pangan 36 responden perempuan, usia terbanyak pada usia dewasa akhir dan pendidikan tertinggi SMA dengan pengetahuan mengenai CPPB cukup baik sebanyak 24 orang. Penerapan pengolahan pangan sebanyak 58% telah sesuai dengan CPPB dan 42% tidak sesuai CPPB, dengan persentase sesuai CPPB terendah pada pelatihan karyawan, pelabelan pangan, pencatatan dan dokumentasi.Kesimpulan: Pengolah pangan masih kurang dalam penerapan CPPB dengan kategori tidak sesuai sebesar 42%.

Abstract

Tujuan kegiatan PKM ini untuk membina ibu balita tentang penerapan isi piringku dan pengukuran Status Gizi pertumbuhan kembang anak diwilayah Padang Serai kota bengkulu, yang terletak di kecamatan kampung melayu kota Bengkulu. Kegiatan ini diselenggarakan pada minggu terakhir bulan Agustus-Oktober tahun 2023 yang berlokasi dilokasi puskesmas padang serai. Kegiatan ini diterapkan dengan metode pendidikan, pelatihan dan pendampingan kepada ibu balita dan kader. Kegiatan pengabdian masyarakat yang dihadiri oleh 60 peserta yang terdiri dari ibu kader dan ibu balita berjalan dengan lancar. Media yang digunakan adalah ppt dan leaflet. Penyuluhan dilakukan dengan metode ceramah dan tanya jawab. Dengan diperkenalkan konsep Isi Piringku mendorong masyarakat untuk makan dengan gizi seimbang, tetapi konsep gizi seimbang dipahami dan dimengerti dengan baik oleh masyarakat. Kegiatan ini berhasil dengan baik dengan ada peningkatan nilai pengetahuan sebelum dan sesudah edukasi, sikap dan tindakan Ibu balita dalam praktik pemberian makan pada anak di Wilayah Kerja Puskesmas Padang Serai Kota Bengkulu.

Abstract

Masa remaja periode pertumbuhan dan perkembangan yang pesat baik secara fisik, psikologis maupun intelektual. faktor yang mempengaruhi status gizi remaja langsung Pola makan, jenis makanan, frekuensi makan, dan penyakit infeksi. Dan faktor penyebab tidak langsung terdiri dari faktor individu seperti, durasi penggunaan alat elektronik gadget, faktor keluarga (ekonomi), lingkungan sekolah dan teman sebaya, dan media massa. Rekomendasikan durasi gadget sebanyak ≤2,5 jam/hari pada remaja. Tingginya durasi penggunaan gadget mempengaruhi status gizi. Kebiasaan makan yang sering terlihat pada remaja antara lain makan cemilan, melewatkan waktu makan terutama sarapan pagi, waktu makan tidak teratur, sering makan fast food, jarang mengkonsumsi sayur dan buah serta pengontrolan berat badan yang salah pada remaja. Asupan makanan tidak sesuai kebutuhan dan gizi seimbang mengakibatkan gizi kurang atau lebih. Desain Penelitian menggunakan deskriftif analitik dengan menggunakan pendekatan cross sectional, dimana semua variabel diukur pada waktu yang sama dengan variabel independen yaitu durasi penggunaan gadget, pola konsusmsi sedangkan variabel dependen adalah status gizi.hasil penelitian ini menunjukan dari 32 responden terdapat dengan durasi penggunaan alat elektronik gadget normal 40,6% , pola konsumsi baik 65,6%, status gizi normal 56,3%. hasil uji chi-square menunjukan ada hubungan antara durasi penggunaan alat elektronik gadget, pola konsumsi dengan status gizi remaja dengan nilai (p=<0,05).ada hubungan antara durasi penggunaan alat elektronik gadget, pola konsumsi dengan status gizi remaja.

Abstract

Indonesia yang merupakan negara berkembang berkontribusi dalam pertumbuhan angka stunting pada balita di dunia dimana saat ini Indonesia merupakan peringkat ke lima kejadian stunting pada balita di dunia. Hasil Riset Kesehatan Dasar Tahun 2018, prevalensi stunting di Indonesia mencapai 37,2 %. Upaya perbaikan dan intervensi untuk mencegah stunting tetap dibutuhkan pada usia balita. Salah satu bentuk intervensi dengan pembentukan pemberdayaan wilayah ibu sadar kesehatan dan gizi dengan inovasi biskuit fishbean. Peningkatan pengetahuan ibu balita dan kader setelah dilakukan Education. Perlunya penerapan inovasi pengembangan pangan lokal dan pemantauan pertumbuhan balita dengan melakukan pengukuran berat badan dan tinggi badan secara teratur melalui posyandu.

Abstract

Food Home Industry, hereinafter abbreviated as IRTP, is a food industry that has a place of business in a residence with manual to semi-automatic food processing equipment. Food Home Industry (IRTP) can produce the resulting processed food. IRTP Production Food is processed food produced by IRTP distributed in retail packaging and labeled. For product marketing, IRTP must have a Certificate of Home Industry Food Production (SPP-IRT). There are 20 IRTPs that do not yet have certificates. This certificate will be issued by the Health Service and obtained after the IRTP owner has received training on food safety. This community service activity will facilitate Food safety training. With this community service activity, all 20 participants of IRTP owners have a Household Industry Food Production Certificate (SPP-IRT). The results showed that there was a significant increase in knowledge before and after training.

Abstract

Stunting is caused by low nutritional intake over a long period of time and/or frequently suffering from infectious diseases. The approach that can be taken is community empowerment. Efforts to implement DAHSAT to prevent stunting are carried out by increasing the knowledge of mothers of toddlers regarding toddler food intake by assisting the implementation of the DAHSAT kitchen for toddler families in Seluma Regency. The targets of this community service activity are BKKBN Partners, mothers of babies/toddlers, the Seluma Health Office. The implementation method uses the lecture method with presentation techniques for accompanying material on the application of the DAHSAT kitchen, followed by demonstrations and discussions, Focus Group Discussions (FGD), Observations, while the problem of the ability to develop the knowledge of mothers of toddlers is resolved by providing training. This activity is packaged in the form of a workshop. There is an increase in the knowledge and skills of mothers of babies/toddlers in carrying out the practice of measuring weight and TB (anthropometry) in improving health and preventing stunting during toddler posyandu activities in Seluma Regency Village. BKKBN Seluma Regency, Poltekkes Kemenkes Bengkulu, Kungkai Baru Village and Puskesmas Air Periukkan continue to collaborate with partners to improve the management of Healthy Kitchens so that they are more active and move towards accelerating stunting reduction as evidence of the pentahelix collaboration at the Air Periukkan regional level, Seluma Regency.

Abstract

Primary school children are an age group that is vulnerable to nutrition and health problems. One that is often faced by elementary school children is a shift in diet that tends to consume foods that are high in energy and low in fluid and low in fiber, which affects the defecation patterns experienced. This study aims to determine the relationship between fluid intake, fiber intake and nutritional status on defecation patterns of grade III primary school children at SDN 78 Bengkulu City. This study is quantitative with a cross-sectional design and used 62 respondent. The study was conducted from May-June 2024.. Data were collected through questionnaires and food recall forms for 3 x 24 hours. The results of univariate analysis obtained 58.1% of respondents with adequate fluid intake, 67.7% with insufficient fiber intake, 66.1% with normal nutritional status, 56.5% with irregular defecation patterns. The results of the chi square test showed no relationship between fluid intake (p=0.34) and fiber intake (p=0.90) to the pattern of decefation and there was a relationship between nutritional status (p=0.002) to the pattern of decefation. Based on this research, it is expected that respondents can maintain nutritional status and improve fluid and fiber intake.
