Abstract

Emotional eating is the propensity to eat in response of negative emotions such as stress, anxiety and depression. Adolescents with overweight may experience an increase in leptin levels as well as disruption of serotonin resulting in disruption of sensitivity in regulating appetite and emotions, thereby causing emotional eating. Emotional eating can be aff ected by several factors including gender and fulfi llment of nutrients such as tryptophan and vitamin B3 as substances that help the production of serotonin in the body. This study aimed to examine the relationship between gender, tryptophan and vitamin B3 consumption patterns with emotional eating in overweight adolescents. This was cross sectional study in adolescents ranges 15–18 years with overweight or obesity status in Surakarta. In total 122 adolescents taken by purposive sampling method. Emotional eating data were obtained from the Eating and Appraisal Due to Emotions and Stress (EADES) questionnaire while the consumption patterns data were obtained using Food Frequency Questionnaire (FFQ). This study that there was a relationship between tryptophan consumption pattern with emotional eating in overweight adolescents, but there was no relationship between gender and vitamin B3 consumption pattern with emotional eating in overweight adolescents. It can be concluded that there was a relationship between Tryptophan consumption pattern with emotional eating in overweight adolescents and there was no relationship between gender and vitamin B3 consumption pattern with emotional eating in overweight adolescents.

Abstract

This study was conducted to evaluate the external physical quality and sensory quality of eggs fed diets added with purslane meal (Portulaca oleraceae) as a source of alpha-linolenic acids. The materials used were Hy-Line Brown laying hen (n= 150 hens, 54 weeks old). The design of the study was a one way classification with five experimental diets. Each diet was replicated five times with five hens for each replication. The diets were formulated by supplementing purslane meal to a basal diet. The levels of purslane meal were 0% (T0), 2% (T1), 4% (T2), 6% (T3), 8% (T4). The diets were given to the hens for 35 days with 7 days of adaptation period. To analyse the external quality of the eggs, a total of 30 eggs (n=6 per dietary treatment) collected at day 33, 34, and 35 were used. The sensory analysis used eggs from day 32. The results of the external quality of eggs showed that the addition of purslane meal (Portulaca oleracea) into the diets of laying hens reaching a level of 8% tended to increase egg weight and did not decrease shell thickness, shell weight, the shape index, and specific gravity (P>0.05). Dietary inclusion of purslane meal up to a level of 8% significantly increased (P<0.01) the preference of egg yolk color while texture, taste, flavor, and overall acceptance were not affected. The conclusion is that purslane meal can be included in the laying hen diets up to a level of 8% without decreasing the external physical quality and the sensory quality of boiled eggs. Diets containing purslane meal increase the preference of egg yolk color due to the increase in yolk color intensity.

Abstract

Latar Belakang. Diabetes melitus merupakan masalah utama kesehatan masyarakat dengan prevalensi yang meningkat tiap tahun. Insulitis merupakan keadaan patofisiologis inflamasi dari pulau langerhans pankreas yang berperan penting dalam mempertahankan homeostasis glukosa darah dan berkorelasi dengan perkembangan diabetes melitus tipe 2. Centella asiatica merupakan tanaman yang mengandung antioksidan jenis pentacyclic triterpenes yang mempunyai aktivitas antioksidan, antiinflamasi, dan antimikroba. Tujuan. Menganalisis pengaruh pemberian ekstrak etanol pegagan terhadap kadar gula darah dan derajat insulitis tikus Wistar jantan induksi sreptozotocin-nicotinamide. Metode. Penelitian ini terdiri atas enam perlakuan yaitu kontrol normal (K-), kontrol diabetes (K+), ekstrak etanol pegagan dosis 300 mg/kg BB (P1), ekstrak etanol pegagan dosis 600 mg/kg BB (P2), ekstrak etanol pegagan dosis 1.200 mg/ kg BB (P3), dan pemberian obat metformin dosis 45 mg/kg BB (P4), tikus diterminasi pada lama pemberian 28 hari dan 35 hari di laboratorium PSPG UGM Yogyakarta. Analisis statistik menggunakan analysis of variance (ANOVA) dan uji lanjut menggunakan Duncan multiple range test (DMRT) untuk mengetahui perbedaan antara kelompok kontrol dan kelompok perlakuan. Hasil. Hasil penelitian menunjukkan bahwa ekstrak etanol pegagan mengandung zat aktif asiaticoside dan aktivitas antioksidan 86,81%. Pemberian ekstrak etanol pegagan menurunkan kadar gula darah pada lama pemberian 28 hari (p=0,001) dan 35 hari (p=0,001). Pemberian ekstrak etanol pegagan menurunkan derajat insulitis pada lama pemberian 35 hari (0,008), namun tidak signifikan pada lama pemberian 28 hari (p=0,368). Kesimpulan. Esktrak etanol pegagan dosis 600 mg/kg BB paling efisien dalam menurunkan kadar gula darah dan derajat insulitis sehingga mencegah kondisi hiperglikemia dan inflamasi dibandingkan obat oral antidiabetes dengan efek samping yang ditimbulkannya.

Abstract

Penelitian ini bertujuan untuk mengevaluasi kualitas fisik dan organoleptik bakso berbahan dasar daging ayam yang berasal dari ayam broiler yang diberi pakan dengan suplementasi tepung purslane sebagai sumber asam lemak omega-3. Materi penelitian menggunakan 30 sampel daging paha atas ayam broiler strain Cobb yang dipanen pada umur 42 hari dengan perlakuan ransum basal yang mengandung 1,5% minyak ikan sarden dan suplementasi tepung purslane dengan level yang berbeda. Perlakuan penelitian ini terdiri dari bakso daging ayam yang berasal dari ayam broiler yang diberi pakan dengan suplementasi tepung purslane 0% (P1);  6% (P2), 12% (P3), dan 18% (P4). Enam ekor ayam dari masing-masing perlakuan diproses menjadi karkas dan selanjutnya diambil daging paha atas (thigh) dikumpulkan untuk pembuatan bakso. Pengujian kualitas bakso meliputi pengujian kualitas fisik dan organoleptik. Data dianalisis menggunakan analisis variance (ANOVA) yang dilanjutkan dengan uji Tukey’s Test. Hasil penelitian menunjukkan penggunaan daging ayam yang diberi pakan mengandung tepung purslane sampai level 18% tidak memberikan perbedaan terhadap kualitas fisik bakso (pH, daya ikat air, susut masak), kualitas organoleptik dan penerimaan konsumen, dibandingkan bakso dari daging ayam tanpa pemberian tepung purslane. Disimpulkan bahwa bakso yang mengandung daging ayam yang diberi pakan dengan suplementasi tepung purslane sampai level 18% dapat diaplikasikan pada pembuatan bakso tanpa merubah kualitas fisik dan organoleptik bakso.

Abstract

The research was purposed to know the levels of pineapple extract addition (Ananascomosus L. Merr) with bromelin compound, cooking time and the interaction between two factors on the shear force, the tensile strength, pH, water holding capacity (WHC) and cooking loss (CL) of post production duck meat. The experiment used 18 Mojosari duck with average age 84 weeks. The samples for shear force and tensile strength used drum stick, pH, WHC and CL exam used thigh. The data were analyzed by analysis of variance from Completely Randomized Design (CRD) of Factorial Pattern 4 × 3, with factor of pineapple extract addition (0, 5, 10, 15 %) and cooking time (0, 30, 60 minutes). There were interactions between pineapple extract addition and cooking time on pH, WHC and CL (P<0.01) and tensile strength (P<0.05). The addition of pineapple extract and cooking time improved tenderness, pH, WHC and decreased CL of duck meat. The addition of pineapple extract at 15% and cooking time 60 minutes produced the best quality of duck meat.Key words: pineapple extract, cooking time, meat, post production duck, physical quality

Abstract

The research was aimed to observe the effect of antemortem injection dose of crude papain, muscle part and its interaction on physical and organoleptic qualities post production laying hen meat. The sample used were the breast and thighs from 20 hens on average age 82 weeks. Completely Randomized Design (CRD) used Factorial Pattern 4 x 2. Factor A consisted A1: without papain (control); A2: 1 mg papain/ kg BW; A3: 2 mg papain/ kg BW and A4: 3 mg papain/ kg BW, factor B consisted B1: breast muscle and B2: thigh muscle. The datas were analyzed by Analysis of Variance and continued by Duncan's Multiple Range Test. The results showed that injection of crude papain dose gave highly significant difference (P<0.01) to all variables except tensile strength (P<0.05). Body parts gave highly significant difference (P<0.01) on shear force, tensile strength, WHC, cooking loss, organoleptic (shear force, texture and juice), and hedonic (P<0.05). The interaction was found between injection of crude papain dose and body part on WHC, organoleptic and hedonic (P<0.01), cooking loss (P<0.05). Dose of 3 mg/kg WB in thigh and breast meat has the best quality and the organoleptic quality of the combination of papain injection of 3 mg/kg WB in breast meat and 2 mg/kg WB in thigh meat has the best quality.Keywords: antemortem injection, crude papain, physical and organoleptic quality, post productionlaying hen meat

Abstract

The purpose of this study was to isolated, selected and characterized phytase bacteria derived from volcanic soil in the Guci, Tegal. Bacteria from the volcanic soil was isolated and selected on Luria Betany (LB) media containing 4% phytic acid. Selected colonies were optimized by physical character with determining the relative activity. Colonies of bacteria could be isolated from the volcanic soil, selected, and had the highest relative activity in colonies of TG3 and TG3-5. TG3-5 bacterial colonies producing phytate had the highest optimum value at a temperature of 55°C, pH 7, the incubation time of 90 minutes, the substrate concentration of 5% and a best metal cofactor on Zn2+ (10-4M). Abstract

Competitiveness in the competitiveness of Micro, Small and Medium Enterprises (MSMEs) is very important to be improved. This is because MSMEs are a force in driving economic development. The purpose of this activity is to improve the competitiveness of MSMEs products Ksatria Jagalan Village, Jebres Sub-district, Surakarta. The methods used are training and mentoring. The results achieved were an increase in the understanding of MSME, actors about marketing which includes aspects: MSME products including quality of product of abon, packaging of abon and labeling related to important information to be conveyed to consumers to increase the skills and existence of MSME. In addition, the factors of promotion of digital marketing era, price, technology-based marketing, branding, innovation and creativity, product competitiveness. The program's achievements are quite satisfactory. This can be seen from the achievements that have been obtained. The improvements made in this activity have made partners produce competitive products. The suggestion for this activity is that mentoring can be carried out continuously under mentoring and evaluation can be carried out periodically.

Abstract

The effect of chronotype and stress levels on nutritional status mediated by eating behavior in college students with online lectureBackground: College students are a group at risk of experiencing changes in stress levels, changes in eating behavior, and sleep quality. Unhealthy eating behavior, if done continuously, will lead to weight gain.Objective: This study aims to analyze the effect of chronotype and stress levels on nutritional status mediated by the eating behavior of college students with online lectures.Methods: Cross-sectional survey with multistage cluster random sampling on 220 respondents. Chronotype data used by Morningness - Eveningness Questionnaire (MEQ). Stress level data using by Perceived Stress Scale (PSS-10) questionnaire. Eating behavior data was used by Dutch Eating Behavior Questionnaire (DEBQ). Nutritional status data is measured according to body mass index (BMI) by measuring weight (kg) and height (m2). Data were analyzed using Partial Least Square-Structural Equation Model (PLS-SEM) analysis using SmartPLS software.Results: The results showed that there was a significant indirect effect between chronotype (x1) on nutritional status (y2) mediated by eating behavior (p=0.037) with an impact of 0.085 or 8.5%. In comparison, the magnitude of the direct effect without a mediator was 0.193 or 19.3%. Furthermore, there is a significant indirect effect between stress level (x2) on nutritional status (y2) mediated by eating behavior (p=0.017) with an impact of 0.074 or 7.4%. The direct effect without a mediator is 0.217 or 21.7%.Conclusions: There is a significant indirect effect between chronotype and stress level on nutritional status mediated by eating behavior in students with online lectures. During the COVID-19 pandemic, college students should continue to pay attention to healthy eating behavior by preventing emotional eating, setting bedtime earlier, and avoiding stress by increasing physical activity.

Abstract

Application of Floating Catfish Pellet Technology as a Solution for Utilizing Black Soldier Fly Larvae at Mazgot BSF Boyolali Business Partners. The black soldier fly (BSF) raised by a business partner Mazgot BSF Boyolali is an effort that exists to solve the problem of organic waste. However, the high production of BSF maggots has become a challenge for partners to find alternative ways to take advantage of the maggot. The application of feed technology based on BSF maggot can increase business productivity because BSF raising is not only aid for overcoming the problem of organic waste, but it can be used as a source of feed ingredients as well. The purpose of the service activity is to provide assistance in the application of fish pellet feed technology (floating fish pellet) as a solution to the use of BSF maggot. This activity was conducted by giving a mentoring of feed technology application based on BSF maggots including selection of raw feed materials, feed processing, and physical measurement of feed as well. The result of this activity showed that partners are able to formulate fish pellet based on available feed ingredients approach to the chemical content of feed ingredients and fish nutrient needs. The content of fish feed has complied with the SNI for catfish feed including crude protein 35.25%; crude fat 13.94%; crude fiber 6.37%; ash 11.43%; BETN 26.26%; and 1409.58 kcal/kg energy. The resulting physical quality is also categorized as good including buoyancy reaching 1 – 2 hours and good stability.
