Abstract

Tujuan penelitian ini adalah menghitung kebutuhan luas area industri pengolahan kombinasi buah masa pademi covid-19. Perhitungan dilakukan dengan memperhatikan protokol kesehatan, physical distanching dalam semua aktifitas bekerja. Pengaturan jarak antar pekerja minimal jarak 1 meter. Hasil penelitian menunjukkan bahwa teori perancangan tata letak atau penentuan kebutuhan luas area industri pengolahan kombinasi buah sesuai dengan masa pademi covid-19. Teori perancangan yang ada, memungkinkan tiap pekerja melakukan physical distanching. Kebutuhan luas area industri pengolahan kombinasi buah masa pademi covid-19 diperoleh hasil sama saja dengan masa normal yaitu 59,38 m2

Abstract

The aim of this research was to measure or quantitatively identify the Bulk Density Of Pertiwi Hybrid Corn Sidenreng Rappang Regency. Determination of bulk density is done by calculating the mass of corn kernels per volume occupied including the empty space between the corn kernels. The results of the calculation obtained that the Bulk Density Of Pertiwi Hybrid Corn Sidenreng Rappang Regency was in the range of 705-745 Kg/m3.

Abstract

Identification of characteristics and quality of corn a case study in Sidenreng Rappang Regency. This research aims to measure or identify quantitatively the character of corn and determine the classification of corn quality. Sampling came from each representative sub-district in Sidenreng Rappang Regency. The samples obtained were 11 (eleven) samples from each sub-district. Physical measurements and aflatoxin testing were carried out on the best samples of the 11 samples. This corn sample is a hybrid maize of Pertiwi-6. The research was carried out by determining broken grains, other colored grains, broken grains, dirt content, determination of water content, physical properties and aflatoxin. The results showed that 81.82% of maize in Sidenreng Rappang Regency had complied with the quality requirements of SNI Maize, while 18.18% of them do not meet the quality standards. The results of 11 samples, there are 9 samples that meet the quality requirements specifications in accordance with SNI Corn SNI 3920:2013, however there are 2 samples that do not belong to the quality class. Characteristics of Hybrid Pertiwi-6 maize growing in Sidenreng Rappang Regency generally have characteristics with a length of 8- 14 mm, a width of 7-8 mm, a weight of 250 (mg/seed), Bulk density 745 (Kg/m3). Aflatoxin levels obtained < 1.0 g/Kg. The aflatoxin levels have met the Indonesian national standards. These results indicate that the quality of corn in Sidenreng Rappang Regency needs to be maintained, but there are still some whose quality needs to be improved in accordance with applicable quality standards.

Abstract

Research is titled Overview of rice quality in Panca Rijang District, Sidenreng Rappang Regency. The research aims to measure or identify quantitatively the quality of rice in the District of Panca Rijang. Sampeling is obtained from a mobile car grinder, by taking a different sample from rice. The research was carried out by analyzing the water content of the sample, identification of head rice, broken grains, granular grains, red grains, yellow / damaged grains, calcifying grains, foreign objects and grain grains. The results showed that the five rice samples in Panca Rijang District, 80% met the requirements of the SNI 6128: 2015 quality class and 20% did not include the quality classes in accordance with the SNI SNI 6128: 2015. This shows that the quality of rice in Sidenreng Rappang Regency still needs to be improved, as well as maintaining the quality of rice that is in accordance with applicable quality standards.

Abstract

Tujuan pengujian ini adalah memberikan penilain awal terhadap tepung beras yang di produksi oleh Kelompok Wanita Tani (KWT) Masagenae. Sebelumnya dilakukan desminasi pengolahan tepung beras. Setelah pengadaan Desiminasi maka terbukalah wawasan KWT tersebut untuk melakukan pengolahan tepung beras yang nantinya akan dikemas dengan tujuan menghasilkan tepung beras komersil. Setelah proses pengolahan, kemudian dilakukan pengujian terhadap tepung yang dihasilkan. Pengujian awal dilakukan dengan melibatkan panelis secara langsung memberikan penilaian serta beberapa komentar. Hasil pengujian awal tepung beras Maddenra masih berbeda nyata pada taraf 5% sampai 0,10% dengan tepung beras komersil. Kadar air awal pun masih tinggi yakni 15%. Lebih lanjut kualitas tepung beras maddenra masih perlu ditingkatkan agar sesuai dengan Standar Nasional Indonesia (SNI).

Abstract

Peningkatan produksi pertanian di kawasan Panca Rijang lebih difokuskan pada peningkatan produktivitas dibandingkan peningkatan luas lahan. Pemerintah daerah menggunakan metode yang disebut ubinan saat menghitung hasil panen padi. Output ubinan menentukan produktivitas keseluruhan. Pemahaman tentang variabel-variabel yang mempengaruhi hasil padi dapat digunakan dalam perencanaan dan evaluasi program pembangunan pertanian daerah untuk lebih meningkatkan produksi pertanian. Pelaksanaan teknik ubinan ini dilakukan di Desa Bulo Kecamatan Panca Rijang, pada bulan Maret - April 2023. Luas panen penghitungannya menggunakan metode Survei Kerangka Sampel Area (KSA) yang akurasi data dan ketepatannya teruji. Sedangkan produktivitas diperoleh dari survey ubinan. Dimana metode pengukuran perkiraan hasil padi melalui petak berukuran 2,5x2,5m2, dilanjutkan dengan pengukuran dan penimbangan. Hasil ini dapat digunakan sebagai dasar penentuan rendemen 1 Ha. Pengambilan ubinan ini bertujuan untuk mendapatkan gambaran perkiraan hasil produksi tanaman di areal 1 Ha. Memuat data hasil pengambilan ubinan padi menunjukkan berat ubinan tertinggi di Desa Bulo dengan berat ubinan 5,625kg. Rata-rata produktivitas hasil ubinan sebesar 4,827 kg. Komposisi faktor produksi yang menjadi obyek pengambilan ubinan diatas perlu dilakukan perubahan agar terjadi peningkatan hasil. Beberapa faktor yang diamati dalam pengambilan ubinan ini yang mempengaruhi hasil padi adalah jumlah rumpun, jumlah bibit, jumlah pupuk kimia, pestisida, dan ada tidaknya serangan hama atau penyakit. Increasing agricultural production in the Panca Rijang Region is more focused on increasing productivity than increasing land area. Local governments in calculating rice crop production use a method known as ubinan. They yield of rice crop determines the overall level of production. An understanding of the variables that affect rice yields can be used in planning and evaluating regional agricultural development programs to further increase agricultural production. The implementation of this technique was carried out in Bulo Village, Panca Rijang District, in March-April 2023. The harvested area is calculated using the Area Sampling Survey (KSA) method whose data accuracy and precision are tested. While productivity is obtained from tile surveys. Where is the method of measuring estimated rice yields through plots measuring 2.5x2.5m2, followed by measurement and weighing. These results can be used as a basis for determining the yield of 1 Ha. The purpose of this yam sampling is to determine the estimated yield of crop production in an area of I Ha. Loading data from rice crop collection shows the highest yam weight in Bulo Village with a yam weight of 5.625 kg. The average productivity of rice crop yield is 4,827 kg. The composition of the production factors that are the object of taking rice crop above needs to be changed so that there is an increase in yield. Some of the factors observed in the intake of rice crop that affect rice yield are the number of clumps, the number of seedlings, the amount of chemical fertilizers, pesticides, and the presence or absence of pest ordisease attacks.

Abstract

Kemajuan pembuatan kue modern semakin memberikan tekanan pada kelangsungan pasar dan daya saing kue tradisional. Oleh karena itu, agar kue baruasa lebih kreatif dan bergizi, harus ditambahkan pasta. Tepung wortel dan pasta coklat dapat memberikan dimensi rasa dan kekhasan baru pada kue baruasa. Tepung wortel mengandung β-karoten, vitamin A, serat, dan antioksidan lain yang baik untuk sistem kekebalan tubuh, mata, dan kulit, sedangkan pasta coklat menambah rasa manis. Tujuan penelitian ini adalah untuk mengetahui bagaimana penambahan berbagai konsentrasi tepung wortel yang dapat mempengaruhi jumlah β-karoten pada kue baruasa. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 3 tingkat perlakuan dan 3 kali ulangan. Perlakuan pada penelitian ini merujuk pada konsentrasi tepung wortel yaitu A (10%), B (25%), dan C (40%). Parameter yang diamati yaitu kandungan β-karoten. Hasil penelitian menunjukkan bahwa penambahan tepung wortel berpengaruh sangat nyata terhadap nilai β-karoten pada kue baruasa. Kadar β-karoten tertinggi pada kue baruasa ditemukan pada perlakuan C, di mana penambahan tepung wortel mencapai 40%, dengan kadar sebesar 29.75 mg/kg. Sebaliknya, kadar β-karoten terendah tercatat pada perlakuan A, dengan kadar 20.76 mg/kg. Temuan ini menunjukkan bahwa menambahkan lebih banyak tepung wortel menghasilkan lebih banyak β-karoten. The progress of modern cake making is increasingly putting pressure on the market continuity and competitiveness of traditional cakes. Therefore, in order for the baru cake to taste more creative and nutritious, pasta must be added. Carrot flour and chocolate paste can provide a new dimension of flavor and uniqueness to baruasa cake. Carrot flour contains beta-carotene, vitamin A, fiber, and other antioxidants that are good for the immune system, eyes, and skin, while chocolate paste adds sweetness and flavor. The aim of this research is to determine how the addition of various concentrations of carrot flour affects the amount of β-carotene in baruasa cake. This study used a completely randomized design (CRD) with 3 treatment levels and 3 replications. The treatments in this study refer to the concentration of carrot flour, namely A (10%), B (25%), and C (40%). The parameter observed was the β-carotene content. The results showed that the addition of carrot flour had a very significant effect on the β-carotene value in baruasa cake. The highest level of β-carotene in baruasa cake was found in treatment C, where the addition of carrot flour reached 40%, with a level of 29.75 mg/kg. In contrast, the lowest β-carotene levels were recorded in treatment A, with levels of 20.76 mg/kg. These findings suggest that adding more carrot flour produces more β-karoten.

Abstract

Identification of the characteristics and quality of rice raises the case study of Sidenreng Rappang Regency. Sample is carried out in each District of Sidenreng Rappang Regency. The research aims to identify quantitatively the character of rice and to determine the quality classification of rice. The research was carried out by analyzing the water content of the sample, identification of head rice, broken grains, granular grains, red grains, yellow/damaged grains, calcifying grains, foreign objects and grain grains. The results showed that rice in Sidenreng Rappang Regency was 54.5% in accordance with the quality requirements of SNI 6128: 2015. While 45.5% of them do not meet quality standards. This shows that the quality of rice in Sidenreng Rappang Regency still needs to be improved, as well as maintaining the quality of rice that is in accordance with applicable quality standards.

Abstract

Chocolate (Theobrema cacao Linnaeus) is a plantation commodity that is most important in Indonesia's economic development. In South Sulawesi, especially the Tarengge area, East Luwu Regency, there is no innovation of chocolate drinks in East Luwu. While in the area of East Luwu district is famous for being a district with the largest producer of chocolate fruit in South Sulawesi, the purpose of this study was to determine the effect of the addition of ginger to ginger chocolate instant drink with the best ratio of chemical tests including yield, moisture content and organoleptic. This study was conducted with four treatments with three repetitions. the comparison of ginger in instant drinks with the ratio of A (without ginger), B (1: 1), C (1: 1.5), D (1: 2). This study uses the Complete Randomized Design (CRD) analysis method, and will be followed by an additional test, namely the Duncan Test if there are significant differences. The highest sugar content was found in treatment B (1;1) 29.41, and the highest water content was in treatment C 3.00 (1:1.5). While the highest treatment in color aspect A1 (Control), aroma aspect C (1:1.5) and taste aspect C (1:1.5) and texture aspect D (1:2). Abstract

Ubinan merupakan salah satu cara untuk memperoleh data produktivitas suatu tanaman. Data produktivitas ubinan biasanya digunakan untuk memberikan potensi hasil tanaman dari suatu luasan tertentu. Pada ilmu statistika, ubinan merupakan sampel/contoh. Pendekatan untuk memperoleh nilai produktivitas pertanian adalah dengan Survei Ubinan. Survei ubinan digunakan untuk memperkirakan produksi yang dihasilkan oleh lahan sawah 1 hektar. Survei ubinan ini mengambil sampel plot seluas 2,5 m x 2,5 m secara acak dengan metode statistik tertentu. Data produktivitas hasil ubinan banyak digunakan baik oleh peneliti/pengkaji atau Badan/Instansi yang bertugas mengumpulkan data produktivitas terutama tanaman padi. Di Kecamatan Panca Rijang Kabupaten Sidenreng Rappang telah dilakukan pengambilan 17 sampel ubinan padi di tiga desa yaitu Desa Bulo, Bulo Timoreng dan Timoreng Panua yang dilakukan dengan tujuan untuk mendapatkan informasi tentang produksi tanaman padi yang akurat. Berdasarkan data hasil pengambilan sampel ubinan padi di Kecamatan Panca Rijang menunjukkan berat ubinan tertinggi terdapat di Desa Bulo dengan berat ubinan 5.625 kg, sedangkan berat ubinan terendah terdapat pada Desa Bulo dengan berat ubinan 2.390 kg.  Dari 17 sampel plot ubinan padi di Kecamatan Panca Rijang, dapat dilihat rata-rata produktivitas hasil ubinan yang dihasilkan yakni sebesar 4.827 kg. Berdasarkan hasil pengambilan sample ubinan padi di tiga desa tersebut dapat dilakukan kegiatan evaluasi bersama untuk perbaikan usahatani yang akan datang.
