Abstract

This study aims to provide an overview of how public value research topics developed from 2001 to 2020. The mapping is expected to provide an overview of the development of research and provide input on the topic of public value research. This study uses the Scopus database from 2001 to 2020 to calculate citation analysis using the Publish or Perish (PoP) application and mapping publications using the VOSViewer application. From the analysis of literature studies based on the Scopus database from 2001 to 2020 272 journal articles are discussing public value research, it was found that the most publications were in 2019 (47 publications) and the highest research was dominated by the United Kingdom (65). For the highest number of citations, the publication with the title "From new public management to public value: Paradigmatic change and managerial implications" was 368 citations. Social science subjects are the most discussed in research on public values. The results of the visualization with the VOSViewer application for a public value research network visualization map are divided into 4 clusters. Density visualization maps can be seen that research on the topic of public value with the subject of performance management and cultural policy is still small, so there is still a chance for research. Based on the analysis of the research topic of public value, there is still a large enough opportunity for research to be carried out, especially in Indonesia based on the Scopus database, researchers have not researched the topic of public value research.

Abstract

This research aims to analyze the level of fish consumption, fish needs, and factors that influence the level of family fish consumption in families implementing the Buruan Sae Program in Bandung City. This research was carried out in three groups of the Buruan Sae Program. The implementation will be carried out in October 2023 – March 2024. The research method used is the case study method (case study). The respondents in this research were 46 people who were program implementers from three groups of the Buruan Sae Program. This research applies a saturated sampling or census method. Analysis of fish consumption levels and fish needs using quantitative analysis and analysis of factors that influence fish consumption levels using multiple linear regression analysis. The results show that the third group's annual per capita fish consumption is 17.68 kg/capita/year. Annual per capita fish consumption among these groups is lower than the average for Bandung City and West Java Province. Analysis of fish needs shows that the Warnasari Mandiri Group is experiencing a surplus, while Jasmine Integrated Farm and Belpas 15 are experiencing a deficit. Factors that influence the level of fish consumption include education and number of family members, age, income and experience do not have a significant influence.

Abstract

Ikan kembung merupakan salah satu komoditas perikanan yang banyak digemari masyarakat Indonesia. Beberapa alasan penyebabnya ialah karena ikan ini tingkat ketersediannya cukup tinggi, mudah ditemukan di pasaran dan memiliki karakteristik flavor yang disukai oleh masyarakat. Penelitian ini bertujuan untuk mengidentifikasi senyawa flavor volatil pada ikan kembung segar. Sampel dalam penelitian ini adalah daging ikan kembung segar yang senyawa volatilnya diekstraksi pada suhu 40oC menggunakan metode Solid Phase Micro-Extraction (SPME) dan diidentifikasi menggunakan alat Gas Chromatography/Mass Spectrometry (GC/MS). Selain itu, analisis proksimat juga dilakukan pada sampel daging ikan kembung (kadar air, abu, lemak, dan protein). Hasil analisis komponen volatil menunjukkan bahwa terdapat 27 senyawa volatil pada sampel daging ikan kembung segar dimana sebagian besar senyawa volatil yang terdeteksi berasal dari kelompok senyawa hidrokarbon, aldehida, alkohol, dan keton. Hasil analisis proksimat menunjukkan bahwa ikan kembung segar yang diteliti memiliki kandungan air, abu, lemak dan protein sebesar 74,2%; 1,66%; 1,38% dan 20,91% secara berurutan.

Abstract

One of the problems that arise in fish farming is the occurrence of disease attacks that can cause losses to farmers. Parasites that are classified as ectoparasites themselves usually live outside the host. The purpose of this study was to analyze the level of intensity and prevalence of ectoparasites in goldfish in Floating Net Cages (KJA). The study used a survey method, fish samples were taken using purposive sampling method. The results showed that the highest intensity value at station 1 was Tricodina sp. 7 ind/head, station 2 was Ichthyophtirius multifilis which was 2.5 ind/head, station 3 was Dactylogyrus sp. which was 2.75 ind/head with a low-medium category. The lowest intensity value is station 1 Lernea sp. and Ergasilus sp. 1 ind/head, station 2 namely Vorticella sp. and Gyrodactylus sp. namely 1 ind/head, station 3 Chilodonella sp. and Gyrodactylogyrus sp. namely 1 ind/head with a low category. The prevalence value of station 1 is Dactylogyrus sp. 20%, station 2 Dactylogyrus sp. 20.00%, station 3 Dactylogyrus sp. 20.00% with frequent category. The lowest station 1 Lernea sp. 3.33%, Tricodina sp. 3.33%, Ergasilus sp. 3.33%, and Ichthyophtirius multifilis 3.33%. Station 2 Chilodonella sp. 3.33%, and Vorticella sp. 3.33%. Station 3 Gyrodactylus sp. 3.33% with the category sometimes.

Abstract

Indonesia is the world’s largest producer of seaweed, contributing 16.2% to the global market, yet most of its seaweed is still exported in raw form. This limits added value creation and hinders the growth of micro, small, and medium enterprises (MSMEs). NORIbet, a seaweed-processed MSME based in Bandung, West Java, aims to address this gap by developing value-added seaweed products. However, the business still faces challenges in cost management, marketing, and technology access. This research was conducted from June to October 2024 to analyze NORIbet's business profile using the Business Model Canvas (BMC) and evaluate its financial feasibility. A descriptive case study approach combining qualitative and quantitative methods was used, with data collected through observations and interviews involving two business owners and two production staff, selected using purposive sampling. Financial feasibility was analyzed through indicators such as profit, revenue cost ratio (R/C), break even point (BEP), payback periods (PP), and sensitivity analysis. Findings indicate that NORIbet successfully implements the 9 BMC elements in a well-structured manner. The business earned an annual profit of IDR 766,334,100 with a profitability rate of 56.1% and an R/C ratio of 2.28. Payback period is estimated at 4.6 months, and each product packaging type has its own BEP unit. Sensitivity analysis showed that a 10% increase in cost reduced profitability to 51.7%, while a 10% cost reduction increased it to 60%, indicating strong cost efficiency and operational resilience. These results confirm that NORIbet is highly feasible and has strong development potential.

Abstract

Tulang ikan patin dapat dimanfaatkan dalam bentuk tepung untuk memperkaya gizi produk. Donat dengan penambahan tepung tulang ikan patin merupakan langkah untuk memenuhi kebutuhan pasar akan camilan yang tidak hanya enak, tetapi juga bergizi. Tujuan dari penelitian ini untuk menentukan konsentrasi terbaik tepung tulang patin pada pembuatan donat berdasarkan karakteristik sensori, daya mekar, komposisi kimia, dan kandungan kalsium. Perlakuan fortifikasi tepung tulang patin, yaitu 0; 2,5; 5; dan 7,5% berdasarkan berat tepung terigu. Parameter yang dianalisis meliputi tingkat kesukaan, kadar kalsium, proksimat, dan kemekaran donat. Hasil menunjukkan bahwa perbedaan perlakuan konsentrasi tepung tulang ikan patin tidak berpengaruh nyata (p>0,05) pada parameter ketampakan dan aroma, namun berpengaruh nyata (p<0,05) pada rasa dan tekstur. Perlakuan terbaik pada konsentrasi tepung tulang ikan patin 2,5% dengan nilai ketampakan (7,00), aroma (5,80), rasa (6,60), dan tekstur (6,28). Donat yang dihasilkan lebih disukai untuk parameter ketampakan, agak suka untuk rasa dan tekstur. Donat dengan perlakuan 2,5% memiliki daya kembang 15,77%; air 24,16%; abu 1,02%; protein 21,12%; lemak 6,94%; karbohidrat 44,35%; dan kalsium 255,30 mg/100 g. Fortikasi tepung tulang ikan patin dapat meningkatkan kadar abu, protein, dan kalsium donat.

Abstract

Penelitian ini bertujuan mengkarakterisasi ikan asin bilis (Stolephorus sp.) yang dijual di lima pasar tradisional Kota Cirebon secara kimiawi dan mikrobiologis. Pasar yang dipilih yaitu Pasar Kramat, Pasar Pagi, Pasar Kanoman, Pasar Jagasatru, dan Pasar Harjamukti. Sampel diambil secara purposive sampling dari dua penjual berbeda di setiap pasar. Uji formalin dilakukan secara kualitatif, sedangkan uji mikrobiologi menggunakan metode Angka Lempeng Total (ALT) mengacu SNI 8273:2016 dengan ambang batas maksimum 1×10⁵ koloni/g. Hasil menunjukkan 2 dari 10 sampel (20%) positif mengandung formalin dari Pasar Kramat dan Pasar Jagasatru. Kedua sampel tersebut menunjukkan jumlah bakteri tinggi (9,3×10⁵ dan 3,0×10⁵ koloni/g). Sebanyak 9 dari 10 sampel (90%) melebihi batas maksimum jumlah bakteri menurut SNI 8273:2016 dengan nilai tertinggi 8,4×10⁶ koloni/g dari Pasar Pekalipan. Hanya 1 sampel (10%) dengan jumlah bakteri terendah dari Pasar Pagi tidak melebihi batas maksimum SNI 8273:2016 dengan nilai 0,3×10⁵ koloni/g. Hasil penelitian menunjukkan formalin masih ditemukan pada sebagian sampel, mengindikasikan praktik pengawetan ilegal dan bertentangan dengan Permenkes No. 33 Tahun 2012. Tingginya jumlah bakteri pada sebagian besar sampel yang melebihi ambang batas SNI 8273:2016 menunjukkan kondisi penanganan, sanitasi, dan penyimpanan produk ikan asin bilis belum memenuhi standar. Variasi nilai jumlah bakteri antar sampel menegaskan mutu ikan asin bilis dipengaruhi praktik pengolahan dan distribusi pada tingkat pedagang.

Abstract

The enhancement of the nutritional content in Cireng can be achieved by adding milkfish meat flour. This study aims to determine the appropriate amount of milkfish flour to add in the preparation of Cireng to produce the product most preferred by the panelists. The method used was experimental, with four treatments: 0%, 2.5%, 5%, and 7.5% addition of milkfish flour. The parameters observed included preference analysis using a hedonic test to assess appearance, aroma, texture, and taste, as well as proximate analysis and Texture Profile Analyzer (TPA) to evaluate chemical composition and texture characteristics. The results showed that the 5% milkfish flour treatment produced the most preferred Cireng, with the highest average hedonic scores across all sensory attributes: 7.13 for appearance, 7.07 for aroma, 7.80 for texture, and 7.07 for taste. Proximate analysis results showed protein content (3.11%), ash content (0.73%), fat content (0.83%), moisture content (45.36%), and carbohydrate content (48.79%). The TPA results indicated an increase in hardness (1,104.188 gForce) and recovery (0.996%), but a decrease in cohesiveness (0.430%), chewiness (455.576 gForce), gumminess (478.129 gForce), and resilience (0.631%).

Abstract

Rhizophora stylosa mangrove contains secondary metabolite compounds with antioxidant potential, including those produced by endophytic bacteria within its bark tissue. This study aims to determine the antioxidant activity and secondary metabolite content of endophytic bacteria. The methods used include exploration and experimentation, with qualitative data (isolation, identification, mass culture, phytochemical tests) and quantitative data (total phenolic content and antioxidant activity). Endophytic bacteria were isolated from the bark of R. stylosa, cultured in bulk, and extracted using liquid-liquid extraction with ethyl acetate. Phytochemical tests were conducted to detect secondary metabolites, while total phenolic content was determined using the Folin-Ciocalteu method and measured with a spectrophotometer at 765 nm. Antioxidant activity was tested using the DPPH method at 500 nm and analyzed through linear regression to determine the IC50 value. Three isolates were obtained: RS1 (Gram-positive, cocci), and RS2 and RS3 (Gram-negative, bacilli). Phytochemical tests showed that all isolates contained triterpenoids, flavonoids, and phenols, while tannins were only present in RS1 and RS2. The highest phenolic content was found in RS3 (193.8431 mgGAE/g). IC50 values were 111.86 ppm (RS1, moderate), 82.01 ppm (RS2, strong), and 90.68 ppm (RS3, strong).
