Abstract

Kabupaten Dompu, Nusa Tenggara Barat, memiliki potensi besar dalam sektor perikanan, khususnya budidaya dan penangkapan udang. Udang merupakan sumber protein hewani yang kaya akan nutrisi penting bagi pertumbuhan anak, seperti vitamin B12, selenium, dan astaxanthin. Namun, belum banyak produk olahan udang yang dirancang khusus untuk anak-anak di daerah ini. Penelitian ini bertujuan untuk menganalisis kandungan gizi udang dan mengeksplorasi potensi pengembangan produk olahan udang yang ramah anak di Kabupaten Dompu. Metode penelitian menggunakan pendekatan deskriptif kualitatif melalui observasi lapangan, wawancara, dan dokumentasi. Hasil penelitian menunjukkan bahwa udang memiliki kandungan protein tinggi dan nutrisi esensial lainnya yang bermanfaat bagi anak-anak. Selain itu, terdapat peluang besar untuk mengembangkan produk olahan udang seperti siomai, dim sum, dan nugget yang disesuaikan dengan selera anak-anak dan konsumsi masyarakat secara umum. Sebagai bentuk kontribusi nyata terhadap pemberdayaan ekonomi lokal, penelitian ini juga menghasilkan rancangan teknologi tepat guna berupa alat pengering mini serbaguna bertenaga surya serta mixer dan presser manual hemat energi, yang dapat digunakan oleh UMKM dan ibu rumah tangga. Pengembangan produk ini tidak hanya dapat meningkatkan asupan gizi anak-anak tetapi juga membuka peluang ekonomi bagi masyarakat lokal dan memperkuat peran kampus dalam mengatasi ketimpangan akses teknologi. Abstract

Kekurangan Energi Kronis (KEK) pada ibu hamil masih ,menjadi masalah gizi yang berdampak serius terhadap kesehatan ibu dan janin sehingga diperlukan inovasi pangan lokal bergizi dan mudah diterima. Penelitian ini bertujuan untuk menganalisis perbedaan daya terima puding buah naga susu dengan penambahan telur pada tiga formula, yaitu F0 (tanpa telur), F1 (satu butir telur), dan F2 (dua butir telur). Metode penelitian ini menggunakan desain kuantitatif pra-eksperimental dengan pendekatan deksriptif-komparatif yang dilaksanakan di wilayah kerja Puskesmas Paruga,Kota Bima. Populasi penelitian adalah seluruh ibu hamil KEK sebanyak 53 orang, sedangkan sampel yang diperoleh di lapangan sebanyak 40 responden yang dipilih menggunakan teknik total sampling berdasarkan kriteria inklusi dan kriteria eksklusi karena sebagian tidak memenuhi kriteria yang di tetapkan. Variabel penelitian meliputi daya terima yang diukur berdasarkan aspek rasa, warna, aroma dan tekstur. Pengumpulan data dilakukan menggunakan uji hedonik dan dianalisis menggunakan uji Friedman serta uji lanjut Wilcoxon untuk mengetahui perbedaan formula. Kandungan gizi dihitung menggunakan Nutrisurvey. Hasil penelitian menunjukkan terdapat perbedaan signifikan pada aspek rasa (p=0,008), warna (p-0,004), dan aromA (p=0,006), Sedangkan tekstur tidak menunjukkan perbedaan signifikan (p=0,168). Formula 1 paling disukai pada aspek rasa, F0 pada warna dan aroma, sedangkan tekstur relatif sama pada semua formula. Secara gizi, peningkatan penambahan telur meningkatkan energi, protein, lemak, vitamin A, dan mineral dengan nilai tertinggi pada F2. Simpulan penelitian ini adalah F1 merupakan formula yang optimal.

Abstract

The Free Nutritious Meal (MBG) Program is designed to support students’ nutritional needs through the provision of safe, nutritious, and acceptable school meals. The success of the program depends not only on nutritional adequacy and food safety but also on menu acceptability and the extent to which service performance meets beneficiaries’ expectations. This study aimed to analyze the importance and performance of MBG menu attributes and to identify priority areas for improvement using Importance–Performance Analysis (IPA). A descriptive quantitative cross-sectional study was conducted from May to June 2026 in Wera District, Bima Regency. A total of 175 students aged 17–18 years who had received and consumed MBG meals were recruited using purposive sampling. Data were collected using a five-point Likert-scale questionnaire assessing the importance and performance of ten menu attributes. The analysis included mean scores, gap analysis, conformity levels, and Cartesian IPA mapping. The mean importance score was 4.72, while the mean performance score was 4.20, resulting in an average gap of ?0.52 and an overall conformity level of 88.93%. The largest gaps were identified in fruit and vegetable availability (?0.70) and menu variety (?0.68). Nutritional completeness, fruit and vegetable availability, and food taste were classified as high-priority attributes for improvement. Food hygiene, ingredient freshness, and food safety were categorized as attributes whose performance should be maintained. Overall, the MBG menu was rated positively, although its performance had not fully met students’ expectations. Improvement efforts should prioritize nutritional completeness, fruit and vegetable provision, and food taste, while menu variety should be evaluated continuously. This study assessed students’ perceptions and did not measure changes in nutritional status or academic performance.

Abstract

Stunting is a chronic nutritional problem among toddlers, characterized by impaired height-for-age growth. The occurrence of stunting can be influenced by various factors, including the quality of care, adequate nutritional intake, and the family’s socioeconomic status. This study aims to determine the relationship between parenting practices, nutritional intake, and socioeconomic status with the prevalence of stunting among children aged 24–59 months in the service area of the Penanae Community Health Center, Bima City. This study employed a quantitative approach with an analytical observational design and a cross-sectional method. The sample consisted of 78 toddlers selected using simple random sampling, comprising 39 toddlers in the stunting group and 39 toddlers in the non-stunting group. Data were collected through interviews using a questionnaire on parenting practices and socioeconomic status, nutritional intake measurements using the Food Frequency Questionnaire (FFQ), and height measurements based on the height-for-age (H/A) indicator. Data analysis was performed using the chi-square test and logistic regression. The results showed an association between parenting practices (p<0.001), nutritional intake (p=0.002), and socioeconomic status (p=0.042) and the incidence of stunting. Multivariate analysis showed that parenting practices were the most influential factor on the incidence of stunting, with an OR of 6.318 (95% CI: 2.104–18.973; p=0.001) Based on the research findings, improving the quality of child-rearing practices, meeting nutritional needs, and providing support for families’ economic conditions should be considered as measures to prevent stunting in toddlers.

Abstract

Background: Adolescent girls are at risk of anemia due to increased iron requirements during growth and menstruation. Although the iron supplementation program has been implemented, adherence rates regarding the consumption of these supplements remain low. Purpose: To determine the relationship between knowledge, attitudes, and school support and adherence to iron supplementation consumption among adolescent girls. Method: A quantitative study with a cross-sectional design was conducted involving 89 respondents selected via purposive sampling. This research was conducted at State Islamic High School 2 Bima City in April and May 2026. Data were collected using questionnaires and analyzed using the Chi-Square test and multiple logistic regression. Results: Most respondents possessed good knowledge (69.7%) and fair attitudes (59.6%) but perceived school support as inadequate (71.9%); additionally, 52.8% of respondents were non-adherent to consumption. Knowledge was not associated with adherence (p=0.096; OR=2.3), whereas attitudes (p=0.004; OR=3.8) and school support (p=0.020; OR=1.4) showed significant associations. Attitude was the most dominant factor influencing adherence. Conclusion: There is no significant relationship between knowledge and adherence to Iron Supplementation consumption among adolescent girls. Conversely, there are significant relationships between attitudes and school support and adherence to consumption among adolescent girls. Suggestion: Schools need to strengthen education and monitoring regarding consumption. Future research is advised to include factors such as family support, peer support, motivation and side effects.   Keywords: Attitude; Compliance; Iron-Folic Acid Tablets; Knowledge; School Support.

Abstract

Background: Concentration in learning is a crucial factor in the academic success of elementary school students. Concentration is influenced by various factors, including breakfast habits and nutritional status. Breakfast provides the brain with the energy it needs for cognitive function, while good nutritional status supports optimal brain growth and development. However, some students still have poor breakfast habits and nutritional problems that can affect their ability to concentrate. Purpose: To analyze the relationship between breakfast habits and nutritional status and concentration in students. Method: This quantitative, observational, and analytical study used a cross-sectional approach. The sample consisted of 84 students at Doro O'o Public Elementary School, Langgudu District, Bima Regency, West Nusa Tenggara Province, selected using a probability sampling technique using simple random sampling. Data on breakfast habits and concentration in learning were collected using a questionnaire, while nutritional status was measured using Body Mass Index for Age (BMI/Age). Data were analyzed using the Chi-Square test with a significance level of p < 0.05. Results: Most respondents had good breakfast habits (53.6%), good nutritional status (69.0%), and low levels of learning concentration (46.4%). Bivariate analysis showed a significant relationship between breakfast habits and learning concentration (p = 0.000). Furthermore, there was a significant relationship between nutritional status and learning concentration (p = 0.000). Conclusion: Breakfast habits and nutritional status are significantly related to learning concentration in elementary school students. Establishing healthy breakfast habits and maintaining optimal nutritional status are important to support cognitive function and improve students' learning concentration. Suggestion: Further research is recommended to develop studies using research designs that can explain causal relationships, such as cohort or experimental, so that the influence of breakfast and nutritional status on learning concentration can be understood more deeply.   Keywords: Breakfast; Learning Concentration; Nutritional Status.

Abstract

Background: Hypertension is a non-communicable disease with increasing prevalence and is a major risk factor for cardiovascular disease. Excessive nutritional status and unhealthy diet are modifiable risk factors that need to be studied to support hypertension prevention efforts. Purpose: To analyze the relationship between nutritional status and dietary patterns and the incidence of hypertension in the adult population. Method: A quantitative analytical design with a cross-sectional approach was used, with a sample of 92 respondents selected using simple random sampling. The study was conducted in the working area of ​​the Belo Community Health Center, Bima Regency, during May and June 2026. Nutritional status data were obtained through body mass index (BMI), dietary patterns were measured using a semi-quantitative food frequency questionnaire (SQ-FFQ), and blood pressure was measured using a sphygmomanometer. Data analysis included univariate and bivariate analyses using the chi-square test with a 95% significance level (α=0.05). Results: The majority of respondents were overweight (37.0%), had poor diet (76.1%), and had hypertension (59.8%). The analysis showed a significant association between nutritional status and the incidence of hypertension (p<0.001). Respondents with overweight nutritional status had the highest proportion of hypertension (85.3%), followed by obesity (80.0%). Furthermore, there was a significant relationship between dietary habits and the incidence of hypertension (p=0.002), with respondents with poor dietary habits more likely to experience hypertension (68.6%) than respondents with good dietary habits (31.8%). Conclusion: There is a significant relationship between nutritional status and the incidence of hypertension, as well as a significant relationship between dietary habits and the incidence of hypertension, with p values ​​<0.001 and 0.002, respectively (α<0.05). Suggestion: It is recommended to use a larger sample size, a wider area, and the addition of other unexplored variables to obtain a more comprehensive picture of the factors associated with the incidence of hypertension.   Keywords: Adults; Dietary Patterns; Hypertension; Nutritional Status.

Abstract

Background: Being underweight is a key indicator reflecting the combined impact of acute and chronic malnutrition. Although various countries have implemented nutrition interventions, progress remains insufficient to ensure the achievement of all global nutrition targets by 2030. Findings from the 2025 Joint Child Malnutrition Estimates (JME) highlight the need for intensified efforts to prevent and address child malnutrition, including underweight status, by improving access to nutritious food and quality healthcare services, as well as promoting optimal child-feeding practices. Purpose: To analyze the relationship between maternal knowledge regarding the "First 1000 Days of Life" and the incidence of underweight status. Method: This quantitative study employed an observational analytic design with a cross-sectional approach and was conducted at the East Dompu Community Health Center in June 2026. Non-probability purposive sampling was used, resulting in a sample size of 77 respondents. Research instruments included a questionnaire on nutritional intake during the first 1000 days of life and anthropometric measurements to determine the children's nutritional status. Data were analyzed using the Chi-Square test with a significance level of p<0.05. Results: A total of 24 (31.2%) children under five were underweight, while 53 (68.8%) were not. The results showed that the proportion of underweight cases was higher among mothers with a low level of knowledge compared to those with adequate or good levels of knowledge. Conclusion: There is a significant relationship between maternal knowledge regarding nutritional intake during the first 1000 days of life and the incidence of underweight status in children under five (p=0.017; p<0.05). Suggestion: Future initiatives should focus on enhancing education and outreach regarding nutrition during the first 1000 days of life through integrated health posts, classes for mothers of young children, nutrition counseling, and the empowerment of health volunteers. Sustained education is expected to improve mothers' knowledge, enabling them to adopt better feeding and caregiving practices to prevent underweight conditions among young children.   Keywords: First 1000 Days of Life; Maternal Knowledge; Nutritional Status; Under-Five Children; Underweight.

Abstract

Background: Exclusive breastfeeding is the best source of nutrition for infants. However, the coverage of exclusive breastfeeding in Bima City decreased from 76.82% in 2021 to 61.84% in 2024. One factor that may affect the success of exclusive breastfeeding is suboptimal breast milk production. Katuk leaves and peanuts contain nutrients and bioactive compounds that have the potential to support lactation. Saralact Cookies were developed as a food-based alternative that may help improve breast milk production. Purpose: To determine the effect of Saralact Cookies consumption on breast milk production among breastfeeding mothers in the working area of Mpunda Public Health Center. Method: This study employed a quasi-experimental design with a pretest-posttest control group design. The study was conducted from May to June 2026 in the working area of Mpunda Public Health Center. The study population consisted of 92 breastfeeding mothers with infants aged 0–5 months who were exclusively breastfed. A total of 30 respondents were selected using purposive sampling and divided into an intervention group (n=15) and a control group (n=15). The intervention group consumed Saralact Cookies three times daily for 14 days, while the control group received no intervention. Infant body weight was used as an indirect indicator of breast milk adequacy. Data were analyzed using the paired sample t-test and independent sample t-test. Results: The mean increase in infant body weight was 373.33 grams in the intervention group, compared with 206.67 grams in the control group. The independent sample t-test showed a statistically significant difference in infant weight gain between the intervention and control groups (p<0.001). Conclusion: Consumption of Saralact Cookies had a significant effect on increasing infant body weight as an indirect indicator of breast milk adequacy. Saralact Cookies have the potential to serve as an alternative nutritional intervention to support the success of exclusive breastfeeding.
