Abstract

Malnutrition in older people is brought on by a number of circumstances, including dentalissues that restrict food intake. Due to the strong connection between this issue and thenutritional status of the old, it requires careful consideration. As a result, new food productsthat are simple for the elderly to consume but provide a balanced diet are required. This studyis an experimental one conducted in a lab setting with three different treatments and acompletely randomized design. The Food Technology Science Laboratory of the NutritionDepartment of the Health Polytechnic of the Ministry of Health Palembang prepared the SoyaBustul healthy drink and conducted organoleptic tests there, while the Proximate Analysis testwas conducted at the Food Technology Laboratory, Sriwijaya University, Palembang. Thepanelists enjoyed the taste, aroma, texture, and color of the F1 treatment with the addition of25 grams of rice bran, 30 grams of snakehead fish meal, and 35 grams of soybean flour,according to the results of the organoleptic test using the hedonic scale. The overallacceptability of Soya Bustul is more despised the more snakehead fish meal, rice bran, andsoybean flour are added. The overall look of color, scent, taste, and texture has an impact onthis circumstance. The finest Soya Bustul beverage formulation has proximate analysis valuesof 5.20 percent fiber, 75.52% water, 1.10 percent ash, 3.72 percent fat, 5.84 percent protein,and 13.82 percent carbohydrates.Keyword : Elderly, Soybean, Snakehead Fish, Bran

Abstract

Latar Belakang: International Diabetes Federation (IDF) menyatakan bahwa lebih dari 382 juta orang di dunia penderita Diabetes mellitus. Indonesia merupakan negara yang menempati urutan ketujuh di dunia dengan jumlah penderita diabetes sebanyak 10 juta jiwa. Perencanaan makan yang tidak baik menyebabkan tidak adanya keseimbangan asupan zat gizi pada penderita Diabetes mellitus. Tujuan penelitian untuk mengetahui asupan indeks glikemik pangan, status gizi dan kadar glukosa darah pada pasien Diabetes Mellitus tipe 2 di Puskesmas Sosial Kota Palembang. Metode: Jenis penelitian bersifat observasional analitik dengan rancangan penelitian cross sectional study. Pengambilan sampel dilakukan secara purposive sampling sebanyak 80 orang. Data asupan makanan responden diperoleh dengan wawancara dengan metode food record 3 x 24 jam. Lingkar pinggang diukur menggunakan pita pengukur dengan ketelitian 0,1 cm. Komposisi lemak tubuh diukur dengan menggunakan Body Index Analyzer (BIA). Pengukuran kadar glukosa darah dengan menggunakan glucometer. Hasil: Hasil penelitian menunjukkan bahwa sebesar 60,0% kadar glukosa darah pasien adalah hiperglikemia. Kadar glukosa darah berhubungan asupan indeks glikemik pangan (p value = 0,018), lingkar pinggang (p value = 0.000) dan komposisi lemak tubuh ( p value = 0,021) Kesimpulan: Ada hubungan yang signifikan antara asupan indeks glikemik pangan, lingkar pinggang dan komposisi lemak tubuh dengan kadar glukosa darah pada pasien Diabetes Mellitus di Puskesmas Sosial Palembang.

Abstract

Background: Obesity is one of the diseases that experience an increase in prevalence every year. Diet arrangements low in energy and high in fiber can be done by obese people can carry out their diet. Goal : Make salviza instant cereal formula to be a good high fiber cereal drink for obese teens Method: This study is an experimental study using a non factorial RandomIzed Design (RAL) with 4 treatments. The study subjects were 25 organoleptic test panelists. Results : Based on the results of organoleptic test research (taste, texture, aroma and color) showed the preferred instant cereal salviza received is F3 with an average total receiving capacity of 16.56. The formula contains energy of 442.94 kcal (per 100 grams), protein 14.63%, fat 14.06%, carbohydrates 64.47%, water content of 3.83% and food fiber 9.84%. From the results of the analysis, the water content has not met the standards and fiber content of food is classified as high / rich. Conclusion : Based on the results of the study can be concluded that the addition of bran, chia seeds and green bean flour in instant cereals salviza can be used as an altefnative drink that is high in fiber to combat adolescent obesity. Abstract

Latar Belakang: Kalsium adalah mineral yang paling berlimpah dalam tubuh, 99% terletak pada kerangka yaitu tulang dan gigi. Kandungan kalsium dalam cangkang telur ayam ras adalah sebesar 6,41%. Tekwan merupakan makanan khas yang berasal dari Kota Palembang. Tekwan terbuat dari daging ikan giling, tepung tapioka, air, dan garam yang dicampur menjadi satu adonan dan dibentuk kecil-kecil, tekwan sangat digemari semua kalangan baik dari anak-anak, remaja, orang dewasa. Metode: Penelitian yang digunakan adalah eksperimental dengan menggunakan Rancangan Acak Lengkap (RAL) non faktorial dengan 4 kali perlakuan F0 (0%), F1 (1,5%), F2 (2%) dan F3 (3%). Subjek penelitian uji organoleptik sebanyak 30 orang panelis. Hasil: Berdasarkan hasil penelitian uji organoleptik (warna, aroma, rasa, tekstur, dan mouthfeel) menunjukan bahwa daya terima tekwan bubuk cangkang telur ayam ras yang disukai adalah F1 (1,5%) dengan energi 85,96 Kkal, protein 9,04% lemak 0,28%, karbohidrat 11,82% dan kalsium 720,70 mg dalam 100 gram. Uji kandungan kalsium dalam 100 g bubuk cangkang telur ayam ras mengandung 44.539,24 mg dengan metode ICP-OES. Uji friedman terdapat hubungan antara rasa, warna dan mouthfeel, tidak terdapat hubungan antara aroma dan tekstur. Kesimpulan: Berdasarkan hasil penelitian dapat disimpulkan bahwa tekwan bubuk cangkang telur ayam ras dapat dimanfaatkan sebagai selingan alternatif untuk membantu peningkatan asupan kalsium, dengan penambahan bubuk cangkang telur ayam ras (0,23%) dari total bahan atau 1 gram sudah cukup untuk memenuhi kalsium pada makanan selingan yaitu sebesar 120,49 mg kalsium.

Abstract

Background: Indonesia has a high prevalence of obesity. One of the efforts that can be done to overcome the problem of obesity is through an innovative approach to products rich in healthy dietary fiber. The types of food that can be increased in availability are oyster mushrooms, carrots, and corn flour. Methods: This research is an experimental study using a non-factorial Completely Randomized Design (CRD) with 3 corn flour substitution formulations F1 (50 g), F2 (60 g), F3 (70 g). Organoleptic test research subjects were 30 panelists. Results: Based on the results of organoleptic tests (color, aroma, taste, and texture) showed that the acceptance of baked nuggets with oyster mushroom, carrot and corn flour substitutions was the most preferred F1 with 159.54 kcal energy, 5.25% protein, 2.22 fat. %, 29.64% carbohydrates, and 11.59% dietary fiber in 100 grams. Fried test showed a relationship between color, aroma, taste, and texture. Conclusion: Based on the results of the research, it can be concluded that baked nuggets with the substitution of oyster mushrooms, carrots and corn flour can be used as an alternative source of fiber snacks. To supply the needs of energy, protein, fat, carbohydrates and fiber in snacks, teenagers can consume 3 pieces of baked nuggets with substitutions of oyster mushrooms, carrots and corn flour, which is 120 grams a day.

Abstract

The objective of this research is to investigate if the consumption of banana, watermelon, and melon Smoothies Piselon has any impact on the blood pressure measurements of hypertensive patients undergoing treatment at Puskesmas Sinar Baru, Bangka Regency.  This research is a pre-test and post-test study with a two-group design with a quasi-experiment with a control group. There are 47 subjects in the intervention group, matched by an identical number in the control group. The examination of the gathered data employed both univariate and bivariate analytical techniques.The findings from this investigation indicate that the formula containing banana, watermelon, and melon identified as Formula 1 was favored by panelists, particularly for its visual appeal, scent, flavor, and consistency. In the cohort treated for hypertension, the initial average systolic blood pressure was recorded at 158.19 mmHg and decreased to 152.62 mmHg post-treatment. Similarly, the average diastolic blood pressure was reduced from 94.89 mmHg to 90.81 mmHg. In the examined cohorts, a substantial alteration in systolic and diastolic blood pressures was discerned, as demonstrated by a t-dependent test with a statistically significant result, producing a p-value of 0.000 (p<0.05). It was conclusively determined that the intake of Smoothies Piselon markedly decreased blood pressure, with reductions averaging 5.57 mmHg in systolic and 4.08 mmHg in diastolic measurements.

Abstract

The incidence of hypertension is increasing every year. Efforts and strategies as well as interventions are needed in efforts to prevent and manage hypertension in the community, especially the age at risk and vulnerable people, so that the increase in cases and severity of hypertension disease can be controlled, one of which is by changing behavior through education. Education carried out with effective media so that it can change behavior in a positive direction in controlling hypertension and its risk factors. The purpose of this study is to determine the effectiveness of Booklet and e-Booklet educational media on improving the knowledge and behavior of hypertension patients at the Pemouthan Health Center. The research was carried out at the Pemouthan Health Center of Ogan Ilir Regency for 1 month. Primary data was collected through respondent demographic questionnaires, interviews in the form of 1 x 24-hour recall and blood pressure level measurement. The type of research used is quantitative research using the Quasi Experiment design. The study used a pre-posttest design with two groups of 45 respondents each with treatment using educational media booklet and educational media e-booklet. The statistical analysis method used is the T-test with the sign Wilcoxon Test. effectiveness test using the N-Gain method. The results of the study showed that there was a significant difference in the knowledge, attitudes and actions of hypertension patients before and after providing education using booklet and e-booklet media. Based on the effectiveness test of educational media, booklets and e-booklets are quite effective in increasing the knowledge of hypertension patients and are not effective against behavior changes.

Abstract

Anemia is a body condition in which hemoglobin (Hb) levels in red blood cells are lower, caused due to lack of iron (Fe) intake, anemia in adolescent girls with hemoglobin levels (Hb <12 g / dL) . Efforts to improve nutrition can be done by providing additional foods with high iron. The food ingredients used are chicken liver meal and pineapple selei as support. Chicken liver source of animal protein contains iron (Fe), and pineapple contains vitamin-C which is 24 mg / 100 grams. The purpose of the study was to know the acceptability, know the formulation, and determine the nutritional content of pineapple jam chicken liver substitution cookies based on proximate analysis. Experimental research method with non-factorial complete randomized design (RAL). The results showed that the selected cookies were F1 cookies (75 g wheat flour and 25 g chicken liver meal) with an energy content of 477.29 kcal (per 100 g), 9.85% protein, 23.01 % fat carbohydrates 57.70%, iron (Fe) 4.47 mg, and vitamin C 2.14 mg. Abstrak Anemia adalah suatu kondisi tubuh di mana kadar hemoglobin (Hb) dalam sel darah merah lebih rendah, disebabkan karena kurang asupan zat besi (Fe), Anemia pada remaja putri dengan kadar hemoglobin (Hb <12 g/dL) . Upaya untuk perbaikan gizi dapat dilakukan dengan memberikan makanan tambahan dengan tinggi zat besi. Bahan pangan yang digunakan adalah tepung hati ayam dan selei nanas sebagai pendukungnya. Hati ayam sumber protein hewani mengandung zat besi (Fe), dan nanas mengandung vitamin-C yaitu 24 mg/100gram. Tujuan penelitian mengetahui daya terima, mengetahui formulasi, serta mengetahui kandungan gizi pada cookies substitusi hati ayam selai nanas berdasarkan analisis proksimat. Abstract

Toddlers often nibble on items like candy, wafers, cakes, and biscuits. These foods include sucrose, which lowers salivary buffer capacity and increases the risk of tooth decay. Dental caries affects children's nutritional status, prolongs health issues, and interferes with their growth and development by causing pain, making it difficult for them to chew food, and making them cranky. The first way parents can learn about their child's development and progress is through integrated service post. Senduduk fruit, which is abundant in Pipa Putih Village, is rich in flavonoids, saponins, tannins, glycosides, and steroids/triterpenoids. Fruit extract from Senduduk is capable of preventing bacteria from colonizing and plaque from growing on teeth. The purpose of community service is to enable early childhood education teacher cadres and instructors to prepare Senduduk jelly, which helps shield kids' teeth from cavities. Activities included creating a location survey, simulating the creation of Senduduk jelly candy and presenting it to early childhood education cadres and teachers, distributing prepared goods and Senduduk jelly candy recipe pamphlets. The exercise concluded with an assessment of the cadres' performance in a simulated scenario including the preparation of Senduduk jelly for moms attending the Integrated service post. Based on the evaluation results, the understanding of early childhood education cadres and teachers regarding making sedunia jelly can be done well. The average knowledge results of early childhood education cadres and teachers increased from 62 to 78.

Abstract

Early-life chronic malnutrition causes stunting. In 2021, Muara Enim Regency had a 24.8% stunting incidence, which is still higher than the stunting prevalence in South Sumatra at 24.4%. This research aims to look into the factors contributing to stunting in the Muara Enim. The study's design was cross-sectional, with a sample of children aged 6-59 months living in the Rambang sub-district of Muara Enim Regency. There are 269 children under five were selected as samples using a stratified random sampling procedure. The chi-square test and multiple logistic regression analyses were utilized for data analysis. The findings revealed that five variables, including birth length (p=0.224 OR=1.684), exclusive breastfeeding (p=0.009 and OR=2.590), mother's height (p=0.028 OR=1.834), mother's education level (p=0.001 OR=0.488), and ownership of latrine (p=0.045 OR=0.470), had a relation with stunting incidence. According to the multiple logistic regression test result, the most influential variable associated with the stunting incidence was the mother's level of education, with OR=2.369 (95% CI OR=1.376-4.078), indicating that mothers with lower levels of education were 2.37 times more likely to have children with stunting than mothers with higher levels of education.
