Abstract

Diabetes mellitus (DM) is a non-communicable disease with an increasing incidence rate globally, including in Indonesia. The prevalence of Diabetes Mellitus in Indonesia increased from 8.5% in 2018 to 11.7% in 2023. The disease is characterized by high blood glucose levels due to impaired insulin production or action, thus requiring proper management to prevent complications. Diet, physical activity and lifestyle management. Eating a regular diet, as well as engaging in regular physical activity is essential to prevent complications. Functional food options such as probiotics are an alternative to secondary prevention. This study aims to develop a functional drink formula “Dadih Delight Yoghurt” from local ingredients such as curd, bengkuang and black glutinous rice tape to control blood glucose levels of patients with DM. This experimental study used a completely randomized design with one factor and five treatment levels (15-35% addition of bengkuang juice and black glutinous rice tape) with two repetitions. The results showed that the product “Dadih Delight Yoghurt” had good acceptability, with panelists assessing the color, aroma, taste, texture and overal of the product including the categories “somewhat like” and “like”. This indicates that this product has potential as an effective alternative treatment for diabetes mellitus.

Abstract

Abstract This research examines the comparison of production costs in setting the selling price of buffalo milk curd flour with cow milk curd flour using the full costing method. The problem is that the production cost for buffalo milk dadih flour and cow milk dadih flour products is not yet known. The purpose of this research is to determine the comparative analysis of the production cost of buffalo milk dadih flour and cow milk dadih flour using the full costing method in setting their selling prices. The method used in this research is descriptive quantitative using primary data sources. The research results show that the calculation of production costs using the full costing method for buffalo milk curd flour is higher compared to cow milk curd flour. So, the production of cow's milk dadih flour is more profitable compared to buffalo's milk dadih flour. This research shows that understanding the comparison of production costs can help producers determine more profitable pricing strategies, focusing on the production of cow's milk curd flour, which has lower costs Abstrak Penelitian ini bertujuan untuk mengkaji mengenai perbandingan harga pokok produksi dalam penetapan harga jual tepung dadih susu kerbau dengan tepung dadih susu sapi menggunakan metode full costing. Permasalahannya yaitu belum diketahuinya harga pokok produksi untuk produk tepung dadih susu kerbau dan tepung dadih susu sapi. Tujuan penelitian ini yaitu untuk mengetahui bagaimana analisis perbandingan harga pokok produksi tepung dadih susu kerbau dan tepung dadih susu sapi dengan menggunakan metode full costing dalam penetapan harga jualnya. Metode yang digunakan dalam penelitian ini adalah deskriptif kuantitatif dengan menggunakan sumber data primer. Hasil penelitian menunjukkan bahwa perhitungan harga pokok produksi dengan menggunakan metode full costing antara tepung dadih susu kerbau lebih tinggi dibandingkan dengan tepung dadih susu sapi. Jadi, produksi tepung dadih susu sapi lebih menguntungkan dibandingkan dengan tepung dadih susu kerbau. Penelitian ini menunjukkan bahwa pemahaman mengenai perbandingan harga pokok produksi dapat membantu produsen dalam menentukan strategi harga yang lebih menguntungkan, dengan fokus pada produksi tepung dadih susu sapi yang memiliki biaya lebih rendah.

Abstract

The purpose of this study was to determine the effect of glycemic load diet on blood glucose levels of adolescent soccer athletes. This study used a type of quasi-experimental research with one group pretest-posttest design. The subjects in this study were 20 soccer athletes aged 15-18 years at PPLP West Sumatra. Subjects were given 4 treatments with a one-week washout period. The diet given is in the form of setting a High IG diet with High BG. High IG with Low BG, Low IG with High BG, and Low IG with Low BG. The data taken were blood glucose levels before the intervention, blood glucose 2 hours postpandrial, and blood glucose shortly after exercise. Blood glucose levels were analyzed using repeated measures ANOVA test and one way ANOVA test (p<0,05). Based on the one way ANOVA test, there was no difference in blood glucose levels in the four groups (p>0,05). Fluctuations in blood glucose levels occurred stably in the treatment of low glycemic load diets. Low glycemic load diets are able to maintain blood glucose levels during exercise. Tujuan penelitian ini adalah untuk mengetahui pengaruh diet beban glikemik terhadap kadar glukosa darah atlet sepak bola remaja. Penelitian ini menggunakan jenis penelitian quasi experimental dengan desain one group pretest-posttest dengan subjek sebanyak 20 orang atlet sepak bola berusia 15-18 tahun di PPLP Sumatera Barat. Subjek diberikan 4 perlakuan dengan waktu satu minggu. Diet yang diberikan berupa pengaturan diet Indeks Glikemik (IG) Tinggi dengan Beban Glikemik (BG) Tinggi (TT), IG Tinggi dengan BG Rendah (TR), IG Rendah dengan BG Tinggi (RT), dan IG Rendah dengan BG Rendah (RR). Data yang diambil yaitu kadar glukosa darah sebelum intervensi (KGD1), glukosa darah 2 jam postpandrial (KGD 2), dan glukosa darah sesaat setelah latihan (KGD 3). Kadar glukosa darah dianalisis menggunakan uji repeated measures ANOVA dan uji one way ANOVA. Berdasarkan uji repeated measures ANOVA, terdapat perbedaan kadar glukosa darah 2 jam postpandrial dengan sesaat setelah latihan lari pada perlakuan TT dan RT (p<0,05). Berdasarkan uji one way ANOVA tidak terdapat perbedaan kadar glukosa darah pada keempat kelompok (p>0,05). Fluktuasi kadar glukosa darah terjadi secara stabil pada perlakuan diet beban glikemik rendah. Diet beban glikemik rendah mampu mempertahankan kadar glukosa darah saat latihan.

Abstract

Abstrak Nagari Paninggahan memiliki potensi sumber daya alam berupa ikan bilih (Mystacoleucus padangensis), yang merupakan ikan endemik di sekitar Danau Singkarak dengan kandungan zat besi dan zinc yang tinggi. Namun, pemanfaatan ikan bilih sebagai bahan pangan bergizi masih terbatas. Program pengabdian masyarakat ini bertujuan untuk mengembangkan usaha pembuatan tepung ikan bilih sebagai fortifikan sumber zat gizi mikro. Kegiatan yang dilakukan meliputi forum diskusi kelompok (FGD) untuk pengembangan usaha, pelatihan pengolahan ikan bilih menjadi tepung, penerapan cara pengolahan pangan yang baik, serta pengembangan usaha. Jumlah peserta dalam kegiatan ini adalah 11 orang, terdiri dari 5 pengusaha ikan bilih di nagari, 1 kader nagari, dan 5 perangkat desa. Metode evaluasi yang digunakan meliputi pre-test dan post-test untuk mengukur peningkatan pengetahuan dan keterampilan peserta. Hasil kegiatan menunjukkan terdapat peningkatan pengetahuan dan keterampilan terkait proses pengolahan produk setelah dilakukan pendampingan. 100% peserta mengetahui nilai gizi Seng dan Fe pada ikan bilih, 80% peserta berminat untuk memproduksi produk, dan 1 peserta sudah mulai memproduksi untuk dikirim ke industri obat tradisional. Terjadi peningkatan nilai jual ikan bilih dari Rp.80.000 dalam kondisi mentah menjadi Rp.600.000/kg. Pengembangan ini meningkatkan nilai tambah ikan bilih, membuka peluang ekonomi lokal, serta mendukung program pencegahan stunting bagi masyarakat.Kata kunci: Fortifikan, Ikan Bilih, Masalah Gizi, Pengembangan Usaha.

Abstract

Stunting in toddlers poses a significant public health challenge worldwide, with Indonesia recording a prevalence of 27.70% in 2019. This research investigates the efficacy of essential nutrient intake from local food products, specifically Bada fish (Rasbora argyrotaenia), in improving the nutritional status of stunted toddlers. The study employs a three-phase experimental design: Phase I focuses on laboratory preparation of nutritional supplements; Phase II involves the development of standardized recipes for complementary foods; and Phase III implements a Single Blind Randomized Controlled Trial to assess intervention impacts. The target population consists of children under five living within the Ophir and Suka Menanti Health Center regions, with selection criteria rigorously defined. Ethical considerations were upheld throughout the study, adhering to relevant regulations. This investigation is poised to provide critical insights into leveraging local nutritional resources to address stunting in vulnerable populations. Data indicated significant post-intervention improvements in micronutrient adequacy (p<0.05), although overall energy and protein intake did not show significant changes (p>0.05). Nutritional assessments revealed enhanced weight-for-age and weight-for-height indices, while height-for-age scores showed no significant improvement, highlighting a potential limitation in the duration of the intervention. This study underscores the viability of incorporating fish-based supplements in dietary programs designed to address child malnutrition and suggests that sustained interventions, complemented by maternal education on nutritional practices, are crucial for promoting lasting health benefits.

Abstract

Honey is a naturally sweet liquid produced by bees from flower nectar, which varies in quality and flavonoid content due to the food source, environment and the bees that produce it. This study aims to evaluate the quality and flavonoid content of honey from the Riau Forest of Indonesia. Quality testing was conducted in accordance with SNI 8664:2018 with sensory, physical, chemical and microbiological parameters. Flavonoid testing was carried out qualitatively using HPLC. The test results showed that the sensory profile of honey was in accordance with the standard, sweet taste, distinctive aroma, brown colour and thick shape. Chemical parameters obtained values of moisture content of 21.92%, diastase enzyme 3.13 DN and HMF 4.14 mg/kg have met the requirements. However, the reducing sugar of 54.1% is still below the requirement. Heavy metal parameters (Pb, Cd, As and Hg) were not detected and microbiological ALT 3.0 x 10 and yeast mould <10 colonies/gr that have met. Furthermore, the results of flavonoid qualitative tests detected several types including Luteolin, Mangiferin, Smiglanin, maltol, isoflavones, quercetin, Cnidimol C, Norcimifungin, Apigenin, Methyl ophiopogonanone B, Pectolinarigenin, Kusenol C, 3,5,6-trihydroxy-4',7-dimetoxyflavone and Lupinifoline. The conclusion of this study shows that honey from Riau forests fulfils most of the quality requirements and has a diverse flavonoid content.

Abstract

Consumption patterns are not appropriate and food safety is a risk factor that is widely found and has a significant effect on the incidence of stunting in toddlers. Balita in food insecure households has a 2.62 times greater risk of suffering from stunting compared to food-safe households. The purpose of this study is to find out the Picture of Food Consumption and Safety Patterns in Stunted Toddlers Aged 06-59 Months in the Working Area of Ophir Health Center and Sukamenanti West Pasaman Regency in 2020. Research with cross-sectional study design was conducted in the working area of Ophir Health Center and Sukamenanti Health Center of West Pasaman Regency. The sample was a stunted toddler aged 06-59 months as many as 35 people taken by means of simple random sampling. The data collected are anthropometric data, dietary data (types and frequencies of basic foodstuffs) and food safety data with the Food Frequency Questionare (FFQ) method, conducted by researchers and 2 team members. The data obtained is analyzed descriptively. The results of this study describe the consumption patterns of children under five for basic food types 62.8%, animal protein 54.3%, vegetable protein 65.7%, vegetables 57.1%, fruits 54.3% unsalized with a staple food frequency of 85.7% and animal protein 68.6% good, vegetable protein 54.3% vegetables 51.4%, and fruit 97.1% is still lacking. Food safety risks unsafe judging from the types of snacks that are most commonly consumed is snacks (91.4%) with the amount of consumption of ≥6 types and frequency of consumption of snack foods as a whole category often (100%). The results showed that the consumption patterns of stunted toddlers in the working area of Puskesmas Ophir and Sukamenanti were less diverse in all types of foodstuffs and the frequency of vegetable, vegetable, and fruit protein was still lacking. Respondents often consume snacks and the most commonly consumed type is snacks. Dexpect respondents and families of respondents can pay more attention and regulate consumption patterns and pay attention to food safety from snack food respondents.

Abstract

The incidence of hypertension is always increasing due to many factors. This study aims to determine the relationship between knowledge and diet with the incidence of hypertension in the elderly in Jorong Sikabu Hilir, Ulakan Tapakis District, Padang Pariaman Regency.This study used a cross-sectional design, the research sample was all pre-elderly people in Jorong Sikabu Hilir, Ulakan Tapakis District, Padang Pariaman Regency, totaling 42 people. Data collection uses the SQ-FFQ form and questionnaire. Data analysis using Chi Square with a confidence level of 95%. The results of the research found that 54.8% of respondents had hypertension, 52.4% had poor knowledge and 57.1% had poor eating patterns. Statistically there is a significant relationship (p=0,032) between knowledge and the incidence of hypertension, there is a significant relationship between diet (p=0,035) and the incidence of hypertension. It is hoped that the puskesmas will emphasize more on knowledge about the link between hypertension and cardiovascular disease and the community, especially the pre elderly population (45-54 years) will better maintain their diet and consume foods high in potassium and maintain an ideal body weight to prevent the occurrence of hypertension.

Abstract

This community service program aimed to improve public knowledge, skills, and awareness in preventing Non-Communicable Diseases (NCDs) through the utilization of functional local foods. The activity was conducted in Nagari Pasir Talang Timur, South Solok Regency, involving 46 participants, most of whom were productive-age women. The implementation methods included socialization, Focus Group Discussion (FGD), training and demonstration of functional local food processing, health screening, and evaluation through pre- and post-tests. The results showed that the majority of participants were obese (73.9%) with high-risk waist circumference (78.3%) and had cases of prehypertension to hypertension. Most participants had normal blood glucose levels (89.1%) and normal cholesterol levels (54.3%), though 41.3% were in the borderline high to high category. Nutrition knowledge scores increased from 62.5% to 86.75% after education. The program proved that nutrition education and training on functional local food processing effectively enhanced participants’ knowledge and awareness of NCD prevention. In conclusion, the diffusion of functional local foods serves as an effective community-based promotive and preventive strategy to control NCDs in rural populations.
