Abstract

Grain drying with bed dryer is generally effective with high temperatures, but this can increase fissured rice percentage. This can be overcome by combining drying method with tempering. These study were aim to examine drying temperature and duration on bed dryer using intermittent high temperature dryer, and its effect on quality variety of Ciherang with 20-22% moisture content. These research method consists of drying treatment without tempering using 35°C, 60°C and 80°C temperatures to 14% moisture content. Drying treatment with tempering consists of initial drying process-initial tempering-second drying- second tempering or without tempering, where the first drying temperature were 80°C for 20 minutes, 60°C for 30 minutes and second drying temperature were 60 °C and 35°C to 14% moisture content. The tempering duration used was 90 minutes. Results showed the grain drying method without tempering 35°C gave the highest percentage of head rice. However, the use of tempering had significantly reduced cracking and increased head rice percentage compared without tempering at the same temperature. Initial drying of 60°C for 30 minutes-tempering for 90 minutes-drying both temperatures of 35°C to 14% moisture content had been able to produce high head rice and low fissured rice percentage respectively 81.41% and 10%.

Abstract

Milled rice is one of the most important agricultural commodities for Indonesian people as staple food. Consumers tend to not know how to differentiate good or low quality of rice. Rice mill (RMU) in Bogor Regency mostly do not have quality standard comply with Indonesian National Standard (SNI). The purpose of this study was to identify the quality of rice and milled rice produced by RMU in Bogor Regency and evaluate the suitability of the application of rice and milled rice handling in RMU to Good Handling Practices (GHP) and Good Manufacturing Practices (GMP). The parameters measured were analysis of rice and milled rice quality and data analysis. The data resulted from measuring the quality of grain and rice was obtained from interview and observation. The results showed that four RMU rice samples not included in the class category SNI 6128: 2015 and two samples included in Medium III (M-3). On the postharvest handling conformity level was 44.92 percent for GHP and 60.25 percent for GMP. GHP and GMP guidelines were not yet fully applied by rice milling unit (RMU).

Abstract

Abstract In the processing, the red ginger powder was dried at 50°C. Red ginger powder is hygroscopic, so it is easy to absorb moisture. This research aims to determine (i) the isothermic absorption curve model in red ginger powder with different fineness modulus and (ii) the expiration date using the critical moisture content method in various types of packaging materials. Moisture sorption isotherm of red ginger powder was determined by the static gravimetric method at 300C. The relationship equilibrium moisture content between relative humidity (RH) is described by the Hasley, Chen-Clayton, Henderson, Caurie, and Oswin Models. The Estimated shelf life is determined using the ASLT (accelerated shelf-life testing) method and calculated using the Labuza model with a critical water content approach. The results obtained that moisture sorption isotherm red ginger powder has sigmoid shape a type II. Henderson is the model that illustrates the accuracy of the ISA curve of red ginger powder of 60 mesh particle size while the Chen-Clayton Model illustrates the accuracy of the ISA curve of red ginger powder of particle size of 80 mesh. The shelf life of red ginger powder is 60 mesh particle size and using HDPE, PP, and aluminum foil packaging which is stored at 75% RH and 300C temperature is 118.85 days, 467.63, and 609.26 days, respectively. The shelf life of red ginger powder 80 particle size is 148.17 days, 582.98 days and 759.54 days.

Abstract

Oleoresin extraction is generally carried out by conventional maceration method, which takes up to 7 hours. Microwave-assisted maceration extraction method has the potential to reduce extraction time and solvent consumption. This study aims to examine the effect of applying the microwave-assisted extraction method on the yield and quality of oleoresin. The material used in this study was white pepper. Microwave maceration extraction as the main treatment was carried out by dissolving 200 grams of white pepper powder (60 mesh) with 800 mL ethanol (1:4), at a power of 100 watts, a maximum temperature of 50 oC, with 4 extraction times (30 minutes, 60 minutes, 90 minutes, and 120 minutes). Extraction by conventional maceration (7 hours) was performed as a comparison. The results of this study indicate that the microwave maceration extraction method produces a higher yield than the conventional maceration method. The average yield of microwave maceration extraction for 30, 60, 90, and 120 minutes were 8.76 %, 8.32 %, 9.46 %, and 10.37 %, respectively, higher than conventional maceration (8.61 %). The quality of white pepper oleoresin extracted by microwave maceration is different from conventional maceration in terms of the type and amount of oleoresin components. It can be concluded that the microwave maceration extraction method is effective in increasing the yield and quality of white pepper oleoresin compared to conventional maceration.

Abstract

Bubuk daun torbangun mampu meningkatkan kualitas dan kuantitas air susu ibu pada ibu hamil dan menyusui karena mengandung senyawa bioaktif dari golongan fenol, terutama thymol dan carvacrol. Tujuan penelitian ini adalah mengkaji perubahan parameter bubuk daun torbangun (kadar air, asam lemak bebas, aktivitas antioksidan dan total fenol), dan menduga umur simpan bubuk daun torbangun dalam berbagai bahan kemasan. Metode Accelerated Shelf-Life Testing berdasarkan pendekatan Arrhenius digunakan untuk menduga umur simpan bubuk daun torbangun. Sebanyak 100 g bubuk daun torbangun disimpan dalam tiga bahan kemasan, yaitu HDPE, PP dan aluminium foil pada suhu 30oC, 35oC, 40oC, 45oC dan 50oC. Hasil penelitian menunjukkan bahwa suhu penyimpanan berpengaurh terhadap kadar air, asam lemak bebas, aktivitas antioksidan dan total fenol bubuk daun torbangun. Model Arrhenius dapat menggambarkan perubahan total fenol, dimana ln k= 28.29 -9746.8/T, ln k= 30.866 -10565/T dan ln k= 29.162 -10019/T berturut-turut untuk kemasan HDPE, PP dan aluminium foil. Dengan demikian, umur simpan bubuk daun torbangun pada suhu 15oC dan 28oC untuk kemasan HDPE, yaitu 691 hari dan 160 hari, disusul kemasan PP, yaitu 899 hari dan 184 hari, serta kemasan aluminium foil, yaitu 807 hari dan 173 hari.

Abstract

Mangga gedong gincu merupakan salah satu varietas mangga yang menjadi primadona bagi masyarakat lokal maupun mancanegara karena memiliki kekhasan tersendiri jika dibandingkan dengan mangga jenis lainnya. Tujuan penelitian ini adalah untuk menganalisis : 1) Karakteristik usahatani mangga gedong gincu di kabupaten Indramayu, 2) Kelayakan finansial usahatani mangga gedong gincu, dan 3) Sensitivitas usahatani mangga gedong gincu terhadap perubahan biaya produksi, harga jual, jumlah produksi dan sewa lahan. Pengumpulan data dilakukan dengan cara observasi dan wawancara terhadap 16 orang petani responden pada bulan Oktober-November 2019. Hasil penelitian menunjukkan bahwa mangga gedong gincu memiliki potensi besar untuk terus dikembangkan. Biaya investasi awal yang dibutuhkan sebesar Rp 52,226,667,-/ha dan untuk pemeliharaan selanjutnya rata-rata Rp. 8,284,000 -/ha/bulan. Pada tingkat suku bunga 8.75% menunjukkan bahwa usahatani mangga gedong gincu layak untuk dikembangkan dengan nilai NPV Rp. 39,289,514, IRR 91.00% dan B/C 1,43. Berdasarkan analisis sensitivitas faktor paling menentukan pendapatan (untung/rugi) petani mangga gedong gincu di kabupaten Indramayu adalah penurunan harga jual dan jumlah hasil produksi serta jika terjadi kenaikan biaya produksi, harga jual dan jumlah produksi sekaligus.

Abstract

Indonesia kaya akan aneka sumber karbohidrat non-beras, termasuk di dalamnya tumpang sari tanaman hutan. Bulir beras simulasi (Simulated Rice Grain/SRG) dibuat dari bahan tepung aneka sumber karbohidrat non-beras dengan pendekatan sifat fisiko kimia tepung dan bulir beras varietas Ciherang. Penelitian bertujuan untuk merancang bangun mesin pencetak SRG berbahan baku campuran tepung hasil tumpang sari tanaman hutan. Perancangan mesin pencetak SRG didekati melalui kriteria perancangan, analisa desain, desain fungsional dan proses manufaktur, mesin ini diuji coba dengan menggunakan bahan campuran terbuat 30% pati garut, 42 % tepung tales beneng dan 28% tepung sorgum. Hasil rekayasa mesin pencetak SRG mempunyai dimensi ruang pencentak 6,8 x 2,2 x 5,06 mm , rasio pemampatan  1,9-2,3, kekuatan tekan 600 N. Sudut luncur pengumpan 70o, lama tekan pencetakan  0-5000 mikrodetik, kapasitas 900 bulir per jam dan temperatur bantalan ruang cetak 25-80 oC. Pengujian mesin pencetak menghasilkan bulir SRG dengan panjang 7,1 mm, tebal 2,8 mm, bentuk agak bulat, kekerasan bulir 0,1–2 N, massa jenis SRG 620-770  kg/m3 dan bobot  17,5-29 g per 1000 butir.

Abstract

ABSTRAKKelapa kopyor memiliki kandungan gizi yang penting, seperti karbohidrat, protein, lemak, dan asam lemak. Selama penyimpanan kelapa kopyor mudah mengalami kerusakan karena proses oksidasi dan hidrolisis lemak. Hal ini menyebabkan kelapa kopyor mengalami ketengikan dan perubahan warna dari putih menjadi kuning kecoklatan. Untuk mengatasi hal tersebut, dilakukan pengemasan dengan film plastik dan menyimpannya pada suhu dingin.  Tujuan penelitian adalah untuk Memberikan informasi mengenai keefektifan film plastik untuk penyimpanan  daging kelapa kopyor. Bahan  penelitian adalah kelapa kopyor dari Kalianda (Lampung Selatan). Kelapa kopyor dikemas film plastik jenis Polyamide (PA),  Polypropylene (PP), dan High Density Polyethylene (HDPE).  Arameter mutu yang dianalisis adalah Thiobarbituric acid  (TBA),  asam lemak  bebas  (ALB),  total  padatan terlarut (TPT), pH, total mikrob,  kadar lemak, serta uji organoleptik warna,  aroma,  dan  rasa.  Penelitian menggunakan Rancangan Acak Lengkap dengan dua faktor. Faktor pertama adalah film plastik dengan tiga taraf (PA, PP, HDPE), dan faktor kedua adalah suhu dengan dua taraf (5 ± 2 dan 10 ± 2 oC). Hasil penelitian menunjukkan jenis film plastik PA pada penyimpanan suhu 5 ± 2 oC merupakan kemasan yang efektif dalam mempertahankan mutu kelapa kopyor hingga enam hari, yang dibuktikan dengan rendahnya total mikrob, TBA, dan ALB. Selain itu, panelis masih menyukai kelapa kopyor dari warna, aroma dan rasa.Kata kunci: kelapa kopyor, plastik film, mutu, suhu, waktu penyimpanan The Usage of Plastic Film for Kopyor Coconut Packaging ABSTRACTKopyor coconut contains important  nutrients, such as carbohydrates, protein, fat, and fatty acids. During storage kopyor coconut is  easily  suffered  damage,  because  of  oxidizing  and  fat  hydrolysis processes. The processes cause  kopyor coconut suffered rancidity and color change from white to brownish-yellow. Packaging  kopyor coconut with plastic film and keep it in a cool temperature could overcome this problem. The aim of the research  was to provide  information   the effectiveness  of  plastic  films  for  kopyor  coconut  storage.  Research material was kopyor coconut obtained from Kalianda (South Lampung). Kopyor   coconut   packaged   in   plastic   film   type   Polyamide (PA), Polypropylene (PP), and High Density Polyethylene (HDPE).  The quality parameters observed were Thiobarbituric acid (TBA), free fatty acids (FFA), pH, total soluble solid (TSS), pH, total microbes, fat content, and sensory characteristics including color, flavor, and taste. This research used Randomized Complete Design with two factors. The first factor was the packaging material with three different types (PA, PP, HDPE), and the second factor was the storage temperature at two levels of 5 ± 2 and 10 ± 2 oC. The results showed that the type of plastic film packaging PA at storage temperature 5 ± 2 oC is effective in maintaining the quality of kopyor coconut up to six days, as evidenced bythe low total microbe, TBA, and ALB. In addition, panelists still like kopyor coconut of color aroma and taste.

Abstract

The objectives of this research were to validate the border equation of arumanis mangoes damage caused by fruit fly using zero moment power (Mo) number. The method is based on measurement of zero moment power ultrasonic wave in arumanis mangoes. Results showed that mean of Mo number normal arumanis mangoes was 4,58 and Mo number arumanis mangoes damage caused by fruit fly was 6,40. Prediction equation was Mo number more than 5,60  for normal mango and Mo number less than or same 5,60 for mangoes invested by fruit fly. Abstract

Pengemasan secara atmosfir termodifikasi (MAP) pada penyimpanan dingin merupakan cara yang tepat untuk menjaga kualitas dan kesegaran produk yang diolah secara minimal. Tujuan dari penelitian ini adalah untuk mengkaji pengaruh suhu terhadap permeabilitas gas pada plastik film untuk pengemasan secara atmosfir termodifikasi pada produk olahan minimal. Plastik film jenis polietilen stretch (ketebalan 10 mm) dan polipropilen (ketebalan 10 mm) digunakan dalam penelitian ini. Permeabilitas gas plastik film terhadap gas O2 dan CO2 dianalisis menggunakan kromatografi gas HP 5890 pada suhu 5, 10, 15, 20, dan 25 oC berdasarkan metode konsentrasi meningkat kondisi stabil. Hasil penelitian menunjukkan bahwa permeabilitas gas meningkat dengan meningkatnya suhu penyimpanan. Model persamaan Arrhenius mampu menggambarkan pengaruh suhu terhadap permeabilitas gas sangat baik dengan nilai koefisien determinasi (R2) berkisar antara 0.9586 dan 0.9943.Kata kunci: permeabilitas gas, film polimer, modifikasi kemasan atmosfer, pengolahan minimal.
