Abstract

Ginger (Zingiber officinale) is a member of the Zingiberaceae family. The branched ginger rhizome is yellowish white and has fiber. Ginger rhizome is generally segmented and the skin is easy to peel and has a fragrant smell and spicy taste so that ginger can be used as an additive in food and beverages. Ginger milk curd is a dessert or preparation by mixing milk and ginger juice. Protease enzymes in ginger convert milk from liquid to semi-solid like pudding. This study aims to determine the effect of adding the ginger extract to milk on physical, chemical, and organoleptic tests of ginger milk curd and to obtain the best treatment from the addition of ginger extract concentration of ginger milk curd. The method used in ginger milk curd research is a completely randomized design (CRD) with 5 treatments and 5 replications so that 25 trials are obtained. The analysis carried out is physicochemical analysis including protein, pH, viscosity, and organoleptic including taste, color, and aroma. The best results were in treatment J4 (addition of 25% ginger extract concentration). With the results of the physicochemical test, protein content was 1.394%, pH 7%, viscosity was 3.278 (cP), the taste was 1.76 (slightly liked), color was 3.28 (liked) and the aroma was 3.64 (liked very much).

Abstract

The existence of waste is a challenge for the people of Wonosari Village. This is due to low public perception and knowledge, limited facilities, and government policy support in the waste management system. Therefore, it is necessary to have a commitment in waste management so that it does not cause environmental problems. Based on Law Number 18 of 2008, waste is the remains of human daily activities and/or natural processes in solid form. In general, waste is divided into three, namely organic/wet waste, inorganic/dry waste, and hazardous waste. The purpose of this Community Service is to improve the skills of students and the community to utilize, maintain and preserve the environment through waste bank management and build networks between students and the community to use waste banks into economic goods that can improve the economy. This service method refers to the Participatory Rural Appraisal (PRA) method, which is an approach and method that allows the community to jointly analyze life problems in order to formulate real plans and policies. The results of this service are 86% of the public are aware of sorting waste, and 80% of community skills are improved through training. The potential for program sustainability where the community can sort waste properly in order to facilitate the processing process, it is necessary to mobilize waste cadres in the community to understand waste grouping and make people aware of waste care.

Abstract

Organic farming and eco-friendly agricultural practices have gained significant attention as sustainable alternatives to conventional agriculture. This research method employs bibliometric and keyword analysis to explore the field’s emerging trends and future directions. The co-occurrence analysis of keywords reveals prominent research themes, including organic certification, soil health, climate change resilience, agroecological approaches, biodiversity conservation, and integrated pest management. The analysis also identifies influential authors, collaboration networks, and prominent publication venues that disseminate research in sustainable agriculture. The keyword analysis highlights the literature’s focus on adoption, agricultural products, consumer behavior, and sustainable agricultural development. This research provides valuable insights for advancing knowledge, policy development, and practical applications in organic farming and eco-friendly agrarian practices to foster sustainable and environmentally friendly agricultural systems.

Abstract

Pengabdian ini fokus pada upaya pemberdayaan pelaku Usaha Mikro, Kecil, dan Menengah (UMKM) dalam konteks pengembangan bisnis Bakmie Purnama. Tujuan utama dari Pengabdian ini adalah untuk menganalisis strategi pemberdayaan yang diterapkan untuk meningkatkan kelangsungan dan pengembangan usaha Bakmie Purnama. Metode Pengabdian melibatkan wawancara mendalam dengan pemilik usaha, analisis data kualitatif, serta pengamatan langsung terhadap operasional usaha. Melalui program pemberdayaan yang terfokus, termasuk pelatihan keterampilan, bimbingan pengelolaan usaha, serta dukungan dalam hal pemasaran dan pengembangan produk, Pengabdian ini menunjukkan bahwa pelaku UMKM Bakmie Purnama mampu mengatasi berbagai tantangan bisnis dan meningkatkan daya saing mereka di pasar. Hasil analisis menunjukkan peningkatan dalam efisiensi operasional, kualitas produk, dan efektivitas pemasaran. Hasil Pengabdian ini memberikan pandangan mendalam tentang pentingnya pemberdayaan pelaku UMKM dalam menghadapi persaingan bisnis yang semakin kompleks. Pengalaman Bakmie Purnama menjadi contoh nyata tentang bagaimana kombinasi strategi pemberdayaan dan upaya pengembangan dapat memengaruhi pertumbuhan bisnis yang berkelanjutan dan menguntungkan.

Abstract

Penelitian ini bertujuan untuk mengkombinasikan ciplukan dengan penambahan daun stevia dalam teh alami dengan tujuan mendapatkan karakteristik teh yang baik dan disukai oleh konsumen. Ciplukan adalah tanaman liar yang kaya akan kalori, karbohidrat, serat, protein, lemak, dan vitamin C, daun stevia dikenal sebagai pemanis alami untuk penderita diabetes karena memiliki indeks glikemik rendah. Metode menggunakan Rancangan Acak Kelompok (RAK) Faktorial dengan 2 faktor, yaitu konsentrasi ciplukan (4-gram, 5 gram, dan 6 gram) dan daun stevia (0.8-gram, 1 gram, dan 1.2 gram). Setiap perlakuan diulang sebanyak 3 kali menjadi 27 percobaan. Parameter yang diuji meliputi aktivitas antioksidan, gula reduksi, serta sifat organoleptik teh seperti rasa, aroma, dan warna. Data dianalisis menggunakan Minitab untuk uji Analysis of Variance dan Tukey Method untuk menentukan perlakuan terbaik. Hasil menunjukkan bahwa kombinasi konsentrasi ciplukan dan daun stevia berpengaruh signifikan terhadap aktivitas antioksidan, gula reduksi, serta rasa dan aroma teh. Namun, tidak ada pengaruh nyata terhadap sifat organoleptik warna teh. Perlakuan terbaik dengan menggunakan 1-gram daun stevia dan 5-gram ciplukan, menghasilkan teh dengan aktivitas antioksidan sebesar 80.4 ml, gula reduksi sebesar 0.27 ml, serta mendapatkan penilaian "agak suka" untuk sifat organoleptik rasa dan aroma. kesimpulan, kombinasi ciplukan dan daun stevia dalam teh alami memberikan hasil positif pada beberapa parameter kimia dan organoleptik. Penelitian selanjutnya disarankan untuk mengeksplorasi kandungan senyawa tanin dalam daun stevia dan ciplukan, serta memperhatikan masa simpan teh ciplukan dengan penambahan daun stevia. Hasil penelitian ini dapat menjadi landasan untuk mengembangkan minuman teh alami yang sehat dan disukai oleh masyarakat.

Abstract

Integrasi teknologi informasi (TI) ke dalam produksi tanaman telah muncul sebagai pendekatan transformatif untuk meningkatkan produktivitas pertanian, efisiensi sumber daya dan keberlanjutan. Analisis bibliometrik ini mengeksplorasi lanskap penelitian yang berkembang di bidang ini, dengan fokus pada pemanfaatan TI untuk mengoptimalkan produksi tanaman. Analisis ini mencakup tren publikasi, penulis berpengaruh, jaringan penulisan bersama, pola kutipan, dan tema yang muncul. Hasilnya menunjukkan peningkatan yang stabil dalam aktivitas penelitian, yang menyoroti meningkatnya pengakuan potensi TI dalam mengatasi tantangan ketahanan pangan global. Penulis terkemuka dan kolaborasi interdisipliner menggarisbawahi sifat multifaset lapangan. Makalah utama menjelaskan pentingnya konsep seperti Internet of Things, manajemen rantai pasokan, dan pembangunan berkelanjutan. Munculnya kata kunci seperti "pertanian presisi", "data besar" dan "ekonomi sirkular" menandakan eksplorasi pendekatan inovatif untuk meningkatkan praktik pengelolaan tanaman. Analisis ini menawarkan wawasan bagi para peneliti, pembuat kebijakan, dan praktisi. Temuan ini menjelaskan arah penelitian utama dan area di mana TI dapat mendorong dampak positif, mulai dari optimalisasi sumber daya hingga pengurangan limbah. Selain itu, penelitian ini mengidentifikasi kesenjangan dan tren yang muncul, memandu pengembangan strategi untuk memanfaatkan potensi TI dalam optimalisasi produksi tanaman.

Abstract

The adoption and innovation of agricultural processing technology play a vital role in ensuring food security, sustainability, and competitiveness in the agricultural sector. This research presents a comprehensive bibliometric analysis of academic literature on agricultural processing technology adoption and innovation from a global perspective. The study aims to identify key research trends, influential authors, major research themes, and emerging areas of interest in this domain. The dataset was collected from reputable scholarly databases, and VOSviewer analysis was used to visualize co-authorship networks, keyword clusters, and citation impact maps. The results revealed seven distinct clusters of research themes, including agricultural enterprise and innovation policy, market competitiveness, quality of food processing technology, technology innovation for rural development, sustainable development, technology transfer, big data in agriculture, and agribusiness and innovation technology. Moreover, ten highly cited research papers were identified, signifying their significant impact on the field. The findings offer valuable insights for policymakers, researchers, and industry stakeholders to enhance agricultural productivity, promote sustainable practices, and foster technology-driven innovations for a resilient global food system.

Abstract

This research investigates the intricate relationships between food preservation technology, sanitary hygiene practices, shelf life, and the quality of processed food products within the Indonesian food industry. Employing Structural Equation Modeling using Partial Least Squares (SEM-PLS), the study explores the impact of these factors on processed food quality. The sample comprises 250 participants, and the data are analyzed through various fit indices, measurement model assessments, and structural model analyses. The findings reveal significant positive relationships between food preservation technology, sanitary hygiene, shelf life, and the quality of processed food products. The results contribute valuable insights for manufacturers, regulators, and consumers, emphasizing the importance of a comprehensive approach to ensure optimal quality and safety in the processed food industry.
