Abstract

Functional pudding, a popular dessert, has attracted attention in recent years due to its potential as a vehicle for delivering health-promoting ingredients. This study investigates the impact of different proportions of stevia leaf extract (Stevia rebaudiana B) on the physicochemical properties of functional pudding. Stevia leaf extract, known for its natural sweetness and negligible impact on blood sugar levels, holds promise as a low-calorie alternative to traditional sweeteners. Through systematic experimentation, various concentrations of stevia leaf extract are incorporated into pudding formulations, and their effects on water content, ash content, fat content, protein content, and carbohydrate content are evaluated. The results indicate significant alterations in the physicochemical characteristics of the pudding samples, with variations observed in water content, ash content, fat content, protein content, and carbohydrate content. Specifically, sample F6, containing the highest proportion of stevia leaf extract, exhibits notable changes, including a high-water content of 88.31%, low ash content of 0.49%, moderate fat content of 0.81%, elevated protein content of 5.35%, and reduced carbohydrate content of 5.02%. These findings underscore the potential of stevia leaf extract as a functional ingredient in pudding formulations and provide insights for the development of healthier dessert options.

Abstract

Abstract

Indonesia exhibits significant potential for the development of dairy cows agribusiness; however, the country continues to register notable levels of fresh cow's milk imports. This study aims at scrutinizing the trajectory of Indonesia's fresh cow's milk imports spanning the years 2010 to 2019, delineating the origins of these imports and elucidating the determinants affecting the volume of fresh cow's milk imports. Secondary data sourced from the Center for Agricultural Data and Information Systems of the Ministry of Agriculture in 2019 form the basis of this inquiry. Methodologically, the data underwent trend analysis, quantitative descriptive analysis, and multiple linear regression. The findings reveal a downward trend in fresh milk imports across Indonesia during the period under examination. Notably, New Zealand emerges as the foremost contributor to Indonesia's fresh milk imports. The study identifies income variables, domestic fresh cow milk production, and consumption levels as collectively influencing the volume of fresh cow's milk imports. Furthermore, the import price of fresh cow's milk manifests a significant impact on import volumes, whereas the production and consumption metrics of fresh cow's milk exhibit no discernible influence on import quantities within Indonesia.

Abstract

Citrus fruit commodities cultivated by farmers have supply chain management problems at distribution agents and citrus fruit enthusiasts on a local scale. This study aimed to analyze the supply chain management (SCM) channel, the smoothness of SCM, and the efficiency of SCM in citrus fruits. The research was conducted in Poncokusumo Village, Malang Regency. Collecting data using interviews with respondents farmers and traders of oranges. Measurement of data using a Likert scale ranging from 1 to 5. The descriptive analysis method is used to describe the SCM phenomenon of citrus fruits, including information flow, commodity flow, and financial flow. The results showed 2 channel citrus fruits ended up in small traders. The smoothness analysis of SCM shows that the financial flow from small traders to middlemen is less smooth than the flow of commodities from small traders to large traders. The efficiency index and farmer share results indicate that channel two is efficient. It is recommended that middlemen apply a pre-order system so that packaging costs and transportation costs do not increase and wholesalers should communicate intensely with farmers so that sales information is conveyed directly to wholesalers.
