Abstract

Community participation in environmental protection is a very important and main component so that the living environment where humans live is safe, comfortable and provides prosperity for humans. Ambon City is the capital of Maluku Province. Ambon City consists of several sub-districts. It can be seen that in recent years the Ambon city forest environment and residential areas have experienced several fires which resulted in destruction and damage to the environment along with buildings and structures as well as loss of life. This is what happened in South Leitimu District, Sirimau District, Nunaniwe District. The cause is indicated by the low level of community participation in protecting the environment. This can be seen from human negligence or negligence, deliberate human actions, human carelessness. The aim of this community service activity is to increase public knowledge and understanding through educational and socialization facilities in order to reduce to a minimum the damage and destruction of the environment along with the loss of life.

Abstract

Considering that today's children mostly live with a consumerist attitude, it is necessary to provide education and introduction to the benefits of the value of money and manage finances by cultivating a frugal lifestyle and a love of saving from an early age. Educating them to avoid consumerist lifestyle behavior also aims to manage their own finances and can increase their comfort in the future. The main target of this activity is the community, especially children in Latta Village, Baguala District, Ambon City. This activity was attended by 25 children and 10 mothers in Latta Village. This activity program is implemented using the material presentation method. The main mission of socialization activities is to foster a frugal lifestyle, a hobby of saving from childhood for a more prosperous future, and children being able to differentiate between needs and wants.

Abstract

The increase in oil prices and other living expenses has contributed to the rise of illegal fuel adulteration practices. In order to make huge profits from the minimal cost of fuel production and distribution, certain individuals are willing to carry out these illegal practices, despite the risks and impacts they cause. The lack of knowledge and awareness in communities about adulterated fuels, as well as the lack of encouragement from the government to eradicate them, has also increased the number of these illegal practices. Being a progressive village with numerous people and activities, Passo Village needs a proper sustainable fuel supply. Therefore, it is important to raise awareness in Passo Village’s community about the characteristics and dangers of adulterated fuels in order to prevent their circulation and the practices involved. On account of this objective, the socialization program has been conducted in Passo Village in the method of material presentation.

Abstract

Diabetes is a non-communicable disease. Diabetes is one of the most common chronic diseases in the world and is characterized by increased levels of glucose in the body. This metabolic disease occurs as a result of insufficient insulin secretion. Considering that every person has the right to have, to live a healthy, sustainable and prosperous life. The main target of this activity is the Lateri Village community. Socialization activities are carried out using 1 method, which is power point presentation of material. The specific objectives of implementing socialization to prevent diabetes with Tropicana Slim include increasing awareness of safe, healthy and sustainable living, as well as bringing positive changes in sustainable lifestyle behavior patterns by consuming Tropicana Slim products to stabilize sugar levels in the body.

Abstract

Salah satu hasil laut yang berpotensi di Kabupaten Kepulauan Aru adalah udang rebon. Udang rebon oleh masyarakat Kab Kepulauan Aru diolah menjadi terasi. Proses pengolahan terasi oleh masyarakat Kep Aru, dilakukan dengan cara pencampuran udang rebon basah dan kering (1:1), ditumbuk didalam lesung kayu sampai berbentuk pasta, dan disimpan atau difermentasi pada suhu ruang selama 1-2 minggu, setelah itu di cetak, dijemur selama kurang lebih 2-3 hari dan dikemas secarara tradisional dengan menggunakan daun kering. Hasil analisis proksimat, terdiri dari kadar protein 34,00%, kadar lemak 4,10%, kadar air 24,00%, dan kadar abu 13,9%. Kandungan Asam Amino Essensial yang dominan yaitu Lisin (2,85%), Leusin (2,34%) dan Valin (1,6%) sedangkan pada Asam Amino Non Essensial yaitu Glutamat (3,40%), asparat (2,32%), dan alanin (1,58%).

Abstract

Ikan kembung termasuk ikan yang memiliki nilai ekonomis penting. Ikan ini selain mengandung komposisi gizi yang tinggi seperti protein, vitamin dan mineral juga mengandung asam lemak tak jenuh omega-3. Kandungan protein ikan kembung yang tinggi dapat dimanfaatkan menjadi hidrolisat protein. Hidrolisat protein ikan dihasilkan dari proses penguraian protein ikan menjadi peptida sederhana maupun asam amino melalui proses hidrolisis oleh enzim, asam, atau basa. Tujuan penelitian yaitu mengetahui komposisi kimia dan rofil asam amino dari hidrolisat protein daging ikan kembung. Metode yang digunakan dalam penelitian ini adalah metode eksperimen (percobaan). Komposisi kimia ikan kembung segar dan hidrolisat berturut-turut adalah protein 5,34% dan 20,80%, lemak 17,75% dan 7,56%, air 74,76% dan 67,56%, abu 1,34% dan 1,46%, karbohidrat 0,8% dan 2,62%. Hasil analisa asam amino manghasilkan 17 jenis asam amino yang terdiri dari 9 jenis asam amino esensial dan 8 jenis asam amino non esensial. Asam amino esensial tertinggi adalah lisin sebesar 12,65% dan terendah adalah metionin sebesar 1,49% sadangkan kandungan asam amino non esensial tertinggi adalah asam glutamat sebesar 11,20% dan terendah adalah sistein 0,20%.

Abstract

Finger stick merupakan produk biskuit yang mempunyai kandungan gizi yang rendah. Mengingat tetelan ikan tuna merupakan limbah yang tinggi akan kandungan protein, seiring dengan perkembangan ilmu pengetahuan dan teknologi dalam bidang diversifikasi olahan, subtitusi konsentrat protein ikan dari tetelan ikan tuna merupakan salah satu inovasi untuk meningkatkan kulitas gizi dari pada produk finger stick. Tujuan dari pada penelitian ini yaitu untuk mengetahui nilai organoleptik dan kandungan kimia (proksimat) pada finger stick dengan penambahan konsentrat protein ikan tetelan ikan tuna. Hasil yang diperoleh dari uji organoleptik menunjukan bahwa finger stick tanpa subtitusi konsentrat protein ikan, subtitusi konsentrat protein ikan sebanyak 15%, 20% dan 25% berturut-turut menunjukkan nilai kenampakan yaitu 4,4; 4,2; 4,5; dan 4,7; nilai aroma 4,8; 4,4; 4,8; dan 4,7; nilai tekstur 4,1; 4,2; 4,6; dan 4,4; dan nilai rasa 4,7; 4,1; 4,8; dan 4,6. Dari hasil organoleptik didapatkan bahwa finger stick dengan penambahan konsentrat protein ikan 20% memiliki nilai organoleptic terbaik. Selanjutnya untuk perlakuan terbaik (finger stick dengan penambahan konsentrat protein ikan 20%) dilakukan uji proksimat dan diperoleh hasil proksimat sebagai berikut: kadar air 3,00%, kadar abu 1,09%,kadar lemak 16,52%, kadar protein 32,72% dan karbohidrat 46,67%.

Abstract

The aims of this service were to increase the knowledge and skills of participants on the potential and processed sea cucumber products that can increase the economic value of sea cucumbers as well as a source of information, technology and skills that will be used by the community to support the family economy in the State of Leahari, Ambon City. The target of this activity is the community in the Leahari village, Ambon City. The method used is counseling in the form of material delivery and discussion. Increased knowledge of participants by conducting pretest and post-test. Based on the results obtained, it showed that there was an increase in the participants towards the material presented, there was a change in attitude where participants were very interested in utilizing the potential of sea cucumber resources in the Leahari village, Ambon city, to be used as processed products as new opportunities in order to improve the family economy

Abstract

Background : One type of species from the class Asteroidea phylum Echinodermata, namely sea stars. Approximately 6000 species from the Phylum Echinodermata and all live in the sea. The use of starfish by the community is still very limited, where it is only used as a food source, even though starfish can also be used as a source of bioactive compounds that are more economically valuable so that they can be used for development in the food and health sectors. This study aims to determine the content of bioactive compounds from the extracts of sea stars Protoreaster nodosus and Linckia laevigata. Methods: Samples were obtained from Waisarisa waters on Seram Island, analysis was carried out at the Biochemistry Laboratory, Department of Chemistry, Faculty of Mathematics and Natural Sciences, University of Pattimura. The parameters tested in this study were phytochemical tests which included flavanoid tests, saponin tests, steroid tests, tannin tests and phenolic tests. The extraction technique was carried out by maceration with ethanol solvent. Results: The results of the phytochemical test of the starfish extract Protoreaster nodosus which had positive results in the phytochemical test were tannins, phenolics and saponins. While the test results on the Linckia laevigata starfish extract which had positive results found bioactive flavonoids and saponins. Conclusion: The results of the phytochemical screening test of Protoreaster nodosus star extract have 3 bioactive components namely flavonoids, tannins, phenolics and saponins.

Abstract

Gonad bulu babi merupakan makanan tambahan yang kaya akan nilai gizi yaitu terkandung sekitar 28 macam asam amino, vitamin B kompleks, Vitamin A dan mineral. Vitamin dan mineral merupakan nutrisi yang sangat baik bagi kesehatan tubuh tetapi masih banyak masyarakat yang belum mengetahuinya. Penelitian ini bertujuan untuk untuk menganalisis komponen vitamin dan mineral dari gonad bulu babi Tripneustes gratilla yang ada di perairan Pulau Osi, Kabupaten Seram Bagian Barat. Metode yang digunakan dalam penelitian ini yaitu Metode Eksperimen. Parameter uji dalam penelitian ini adalah parameter objektif yaitu analisa vitamin dengan metode hplc dan analisa mineral dengan metode AAS. Data hasil penelitian dianalisa secara deskriptif, dimana hasil yang diperoleh disajikan dalam bentuk tabel dan gambar. Hasil penelitian mineral dengan menggunakan metode iodiometri yaitu Iodium 9.73 mg/Kg dan metode AAS yaitu Kalsium 0.26 %w/w, Magnesium 1076.06 mg/Kg, Iron 51.74 mg/Kg, Selenium 1.24 mg/Kg. Sedangkan hasil penelitian vitamin dengan metode HPLC yaitu Vitamin C 128.01 mg/Kg dan Vitamin A n.d IU/mg. Hasil penelitian mineral paling tinggi ada pada Magnesium dan vitamin paling tinggi ada pada Vitamin C, sedangkan vitamin A tidak terdeteksi.Kata kunci: Tripneustes gratilla, Bulu babi, Vitamin, Mineral
