Abstract

Indonesia merupakan negara dengan kekayaan sumber daya alam pangan  yang berlimpah salah satunya adalah biji-bijian yang memiliki zat gizi untuk memenuhi kebutuhan gizi dalam diet atau menu sehari-hari. Pada saat ini sudah banyak olahan dari biji-bijian salah satunya adalah tempe. Biji-bijian yang biasa digunakan dalam pembuatan tempe adalah biji kedelai. Jenis biji-bijian lain yaitu biji lamtoro dapat digunakan dalam pembuatan tempe. Plastik dan daun biasanya digunakan sebagai pembungkus tempe selama proses fermentasi. Tujuan penelitian ini dilakukan adalah untuk mengetahui perbedaan penggunaan jenis pembungkus terhadap kadar proksimat dan organoleptik tempe biji lamtoro. Metode yang digunakan adalah eksperimental dengan rancangan acak lengkap 1 faktor. Analisis statistik yang digunakan independent T-test jika berdistribusi normal dan mann whitneyjika tidak berdistribusi normal dengan drajat kepercayaan 95 %. Hasil penelitian menunjukkan bahwa perbedaan jenis pembungkus pada tempe biji lamtoro berbeda nyata terhadap kadar lemak, karbohidrat, air dan serat kasar (p < 0,05) namun tidak berbeda nyata terhadap kadar abu dan protein (p>0,05). Perbedaan jenis pembungkus tidak berbeda nyata terhadap organoleptik parameter warna, aroma, tekstur (p>0,05) dan berbeda nyata pada parameter rasa (p<0,05). Tempe yang dibungkus daun pisang memilki tingkat kesukaan lebih tinggi dari pada tempe yang dibungkus plastik.

Abstract

Nutritional services in hospitals aim to provide meals with high nutritional value, safety, appropriate quantity, quality, and satisfactory service. This study aimed to analyze and compare food service satisfaction and nutritional adequacy among patients with noncommunicable diseases (NCDs) in private and academic hospitals. The study was conducted at the UNS Hospital and YARSI Hospital from October to December. Employing a comparative cross-sectional study design, we included 50 patients with NCD, 25 general (private) hospitals, and 25 teaching hospitals. Satisfaction with food services was assessed using a validated food service satisfaction questionnaire, whereas nutritional adequacy was evaluated using the Comstock questionnaire. Nutrient intake data were processed using the NutriSurvey software. The Mann-Whitney U test was used for the statistical analysis. Our findings revealed significant differences in all food service satisfaction indicators (p<0,005), except for waitstaff friendliness (p=0,077). There were also significant differences in energy, fiber, macronutrient, and micronutrient adequacy levels, except for vitamin C intake, between patients in private and academic hospitals (p<0,005). In conclusion, the level of food services and nutritional adequacy differed significantly between private public and academic hospitals.

Abstract

Background: A health problem that often occurs in adolescent girls is disrupting the menstrual cycle. The prevalence of menstrual cycle disorders has increased from 2012 by 45% to 80% in 2018.Objectives: This study aims to identifying respondent characteristics, determine the relationship between fast food consumption habits, hemoglobin levels and sleep quality on the menstrual cycle. Analyzing which independent variable exerts the most dominant influence on the dependent variable.Methods: This research design used analytical observational quantitative methods with a case-control approach. The sampling technique used uses purposive sampling. Data collection for menstrual cycles using questionnaires and calendars, data on fast food consumption habits were obtained by interviews using FFQ, and hemoglobin level data were obtained by examination using the Easy Touch GC-Hb tool. In contrast, sleep quality data were obtained using PSQI questionnaires. Data were analyzed by Chi-square then continued with multivariate logistic regression analysis.Result: The characteristics of respondents in this study based on age mainly were 19 years old, with 49% in the case group and 44% in the control group. Most respondents have an allowance of Rp.500,000-1,000,000, with the percentage in the case group and control group 51%. The menarche age of respondents in this study was mainly 12 years, with a rate of 37%. The characteristics of respondents in the case and control groups mostly have the same distribution of characteristics based on age 19 years, allowance/mounth of Rp.500,000-1,000,000 and age of menstruation 12 years. The study results showed a relationship between fast food consumption habits on the menstrual cycle (p-value= 0.002, OR= 4.359) and there was a relationship between hemoglobin levels on the menstrual cycle (p-value= 0.003, OR= 4.308). There was a relationship between sleep quality on the menstrual cycle (p-value= 0.000, OR= 18.519).Conclusions: There was a relationship between fast food consumption habits, hemoglobin levels and sleep quality on the menstrual cycle. Hemoglobin levels are at higher risk of menstrual cycles than fast food consumption habits and sleep quality (p-value= 0.042).

Abstract

Background: Indonesian adolescents face a triple burden of malnutrition, namely undernutrition, obesity and micronutrient deficiencies. Knowledge and attitude play an important role in overcoming nutrition problems. Increasing nutrition awareness, especially those based on halal food, can be done through nutrition education from an early age. Motion graphic animation video is one of the effective learning media with attractive visual advantages and increases learning enthusiasm. Objective: This study aims to determine the effect of halal food-based nutrition education through animated audiovisual media on adolescents' knowledge and attitudes related to nutrition. Method: The study used Quasy Experimental Pre-test and Post-test group design. The sample was divided into experimental and control groups, with a pre-test, intervention, and post-test process. The sampling technique used purposive sampling. The research sample consisted of two groups with a total of 112 people, in each group there were 56 people. The variables measured involved adolescents' knowledge and attitudes related to halal food-based nutrition. Data analysis used the Wilcoxon test to test changes within groups, and the Mann-Whitney test to compare differences between groups. Results: showed that halal food-based nutrition education with motion graphic audiovisual media significantly increased knowledge (p=0.000) and improved attitudes (p=0.000) in adolescents. There is a significant difference in the use of motion graphic animation videos and video descriptions on knowledge (p=0.003) and there is no significant difference in the use of motion graphic animation videos and video descriptions on attitudes (p=0.554). Conclusion: There Significant improvements occurred in knowledge and attitudes through motion graphic and description audiovisual media. Motion graphic media is more effective in increasing knowledge, while effectiveness on attitude remains.

Abstract

Background: Glycemic control is essential in managing Type 2 diabetes and preventing complications. Several factors, including sociodemographic characteristics, BMI, and dietary compliance, may influence glycemic outcomes. This study aimed to identify key factors associated with glycemic control among Type 2 diabetic outpatients in Kuala Terengganu. Methods: A retrospective study was conducted involving 134 outpatients from one clinic and one hospital, selected through purposive sampling. Data were collected via patient records and questionnaires. Glycemic control was assessed using HbA1c levels, with compliance measured based on self-reported dietary behavior. Results: Among all sociodemographic variables, only the type of treatment (diet and oral anti-diabetic drugs) showed a significant association with glycemic control (p = 0.013). Additionally, BMI was significantly associated with glycemic outcomes (p = 0.029), as poor glycemic control was more prevalent among overweight (84.2%) and obese (82.7%) individuals. No significant association was found between dietary compliance and glycemic control (p = 0.560), potentially due to reporting bias or inconsistent adherence. Conclusion: BMI and treatment type are significant factors influencing glycemic control in this population. Despite no observed link between dietary compliance and glycemic control, further studies with larger, more diverse samples are needed. Healthcare providers should focus on improving BMI and treatment awareness to enhance diabetes management. Abstract

Rumah sakit merupakan pelayanan kesehatan yang memberikan layanan komprehensif, dikelompokkan menjadi rumah sakit pemerintah dan swasta dengan salah satu layanan pendukung medis yaitu pelayanan gizi. Penelitian ini bertujuan untuk menganalisis perbedaan kepuasan pelayanan makanan, sisa makanan dan sosial ekonomi pasien di rumah sakit pemerintah dan swasta. Penelitian menggunakan metode observasional analitik dengan desain cross-sectional, dilakukan di RSUD Ir. Soekarno Kabupaten Sukoharjo dan RSU Islam Klaten pada Bulan Oktober-November tahun 2024. Sampel penelitian dihitung menggunakan rumus Lemeshow dengan total 64 responden, berdasarkan kriteria inklusi dan kriteria eksklusi yang ditetapkan. Instrumen penelitian mencakup kuesioner kepuasan pelayanan makanan (waktu makan, penampilan, rasa, kebersihan, keramahan pramusaji, dan variasi makanan), taksiran comstock, serta kuesioner sosial ekonomi (Pendidikan, pekerjaan dan pendapatan). Hasil penelitian dengan Uji Mann-Whitney menunjukan bahwa indikator kepuasan pelayanan makanan seperti waktu makan (p=0,387), penampilan (p=0,736), rasa (p=0,302), keramahan pramusaji (p=0,231), kebersihan alat dan makanan (p=0,378), variasi makanan (p=0,770), serta sisa makanan (p=0,081), tidak menunjukkan perbedaan yang signifikan (p>0,05). Uji Chi-Square terhadap status pendidikan (p=1,000), pekerjaan (p=0,446), dan pendapatan (p=0,317) juga menunjukkan tidak ada perbedaan signifikan. Kesimpulan, tidak terdapat perbedaan signifikan antara kepuasan pelayanan makanan, sisa makanan, dan sosial ekonomi pasien di rumah sakit pemerintah dan swasta.

Abstract

The lack of knowledge about iron deficiency anemia is caused by a lack of media that can open up public knowledge about the importance of this. As the industrial era 4.0 progresses, many digital media have emerged as a means to educate the public about preventing iron deficiency anemia, one of which is health promotion media in the form of video media Instagram Reels and TikTok. This study aims to determine the effectiveness of Instagram Reels and TikTok educational media on knowledge about preventing iron deficiency anemia in adolescent girls. The research used quasi experiment method with a pre-posttest group design. The sample amounted to 105 respondents (Instagram Reels n:35, TikTok n:35, and leaflet n:35. Knowledge data were obtained by filling out pre and posttest questionnaires, processed using the Wilcoxon test. The mean difference between the three groups used Kruskal-Wallis and Post Hoc Mann Whitney tests. The effectiveness of the three media was tested using the N-Gain Score. The results of the pre and post-test research on the three media had p-value 0.000 which shows an increase in knowledge. The frequency distribution of knowledge in the TikTok group was 100%, Instagram Reels 94.3% and leaflets 51.4%. The effectiveness test of the N-Gain score of TikTok media is 81% including it in the effective category, Instagram Reels is 60% including in the moderately effective category and leaflets are 28% including in the ineffective category. The conclusion is that TikTok media is most effective compared to Instagram Reels media and leaflets.

Abstract

Kehamilan merupakan salah satu bagian dari 1000 hari pertama kehidupan yang perlu diperhatikan. Pemberikan edukasi perlu dilakukan untuk meningkatkan pemahaman ibu hamil. Tujuan dari kegiatan ini adalah untuk meningkatkan pengetahuan ibu hamil tentang pentingnya gizi seimbang selama kehamilan di Dusun Jeruk Gulung, Kendal, Ngawi. Kegiatan edukasi ini dilakukan dengan pendekatan partisipatif yang melibatkan penyuluhan, diskusi kelompok, dan sesi praktik pengolahan makanan sehat. Partisipan terdiri dari 35 ibu hamil yang aktif berpartisipasi dalam setiap sesi. Hasil kegiatan menunjukkan bahwa ibu hamil mengalami peningkatan pemahaman mengenai kebutuhan gizi selama kehamilan, seperti asupan protein, zat besi, kalsium, dan asam folat. Diskusi kelompok memberikan kesempatan bagi ibu hamil untuk berbagi pengalaman dan mengatasi tantangan terkait aksesibilitas bahan makanan sehat. Sesi praktik pengolahan makanan sehat juga berhasil meningkatkan keterampilan ibu hamil dalam menyiapkan makanan bergizi dengan bahan lokal yang mudah didapatkan. Meskipun tidak dilakukan pre-test dan post-test, observasi langsung dan umpan balik peserta menunjukkan adanya perubahan positif dalam pengetahuan dan penerapan gizi seimbang. Kegiatan ini juga menyoroti tantangan terkait dengan keterbatasan akses terhadap bahan makanan sehat dan pentingnya melibatkan ahli gizi dalam proses edukasi. Kesimpulannya, kegiatan edukasi gizi seimbang ini berhasil meningkatkan pengetahuan ibu hamil mengenai pola makan sehat dan dapat dijadikan model untuk program pengabdian masyarakat di daerah terpencil.

Abstract

Various factors such as socioeconomic conditions, dietary patterns, and exclusive breastfeeding practices contribute to the incidence of undernutrition among toddlers. A preliminary study in Merak Village recorded that approximately 21.5% of toddlers were affected by undernutrition. This study aims to explore the association between socioeconomic status, dietary patterns, and exclusive breastfeeding practices with the incidence of undernutrition among toddlers in Merak Village. A case-control design was employed, involving 50 respondents in each group, selected through purposive sampling. The sample size was determined using the Lemeshow formula. Undernutrition served as the dependent variable and was assessed based on the weight-for-age (W/A) index. sosioeconomi and exclusive breastfeeding variables using questionnaires and eating pattern using SQ-FFQ questionnaires. The data were statistically analyzed through the chi-square test and multivariate logistic regression model. The findings demonstrated significant associations between undernutrition and several variables, including family income (p = 0.012; OR = 0.316), meal frequency (p < 0.001; OR = 11.156), quantity of food intake (p < 0.001; OR = 24.571), and exclusive breastfeeding (p < 0.001; OR = 0.141). In contrast, maternal education (p = 0.288; OR = 0.566), paternal occupation (p = 0.691; OR = 1.000), and maternal occupation (p = 0.161; OR = 1.909) did not exhibit statistically significant relationships with undernutrition. Multivariate analysis further revealed that meal frequency, the amount of food intake, and exclusive breastfeeding were influential determinants of undernutrition among toddlers. Among these, exclusive breastfeeding emerged as the most dominant factor. Overall, family income, dietary practices, and breastfeeding status were identified as key risk factors contributing to undernutrition in early childhood.

Abstract

Background: Iron deficiency is a common health issue among adolescent girls, mainly due to poor eating habits and inadequate sleep. The prevalence of anemia in this group remains high, ranging from 40% to 88%. Objectives: This study aimed to examine the relationship between nutritional intake, diet quality, and sleep quality with hemoglobin levels among adolescent girls. Methods: A cross-sectional study was conducted with 80 adolescent girls aged 15–19 years, selected from a population of approximately 230 adolescent girls in Ponorogo. Hemoglobin levels were measured using the Easy Touch GCHB instrument via capillary blood sampling. Sleep quality was assessed using the Pittsburgh Sleep Quality Index (PSQI). Nutritional intake was evaluated using the Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ), and diet quality was measured with the Diet Quality Index (DQI). Multinomial logistic regression analyzed the relationships between nutritional intake, sleep quality, and hemoglobin levels. Results: The study found that 50% of participants had normal hemoglobin levels, 42.5% had mild anemia, and 7.5% had moderate anemia. The mean hemoglobin level was 13.8, the average diet quality score was 57.47, and the mean sleep quality score was 7.33. Poor nutritional intake increased the risk of mild anemia by 20.32 times (OR=20.320, 95%CI=3.12-41.55, p-value=0.004). Moderate sleep quality increased the risk of mild anemia by 22.93 times (OR=22.932, 95%CI=2.91-182.55, p-value=0.013). Conclusions: Interventions to improve nutritional intake and sleep quality are essential for adolescent girls, as these factors are strongly associated with iron deficiency in this group.
