Abstract

Food service management requires 3 main cost components, namely food costs, labor costs, and overhead costs. The preparation of food costs has an impact on the quality of food and the nutritional content in each serving. At Catering X Cirebon, food financing prioritizes low prices, but still pays attention to the variety of meals with four choices of animal side dishes. The purpose of this study is to analyze the cost and nutritional content contained in the employee menu at Catering X. Research methods used are descriptive quantitative with data collection techniques using interviews and food weighing to determine portion standards. This study was conducted on 11th until 21st April 2022 during Ramadan. All data was collected from the population in this study with a total of 9 employees. Based on the results of the study, the entire employee menu served by Jasaboga X has not met the standards for fulfilling sahoor nutrition for workers. However, the low price strategy that has been set can meet commercial benefits and can still provide a variety of balanced nutritional foods, namely staple foods (rice), animal side dishes with 4 choices per day, vegetable side dishes, vegetables, and fruit. The advice that can be given by researchers in this study is that it is necessary to make portion standards starting from rice preparation, cutting vegetable and animal side dishes, vegetables, and fruit cutting to meet 40% of employee feeding standards.Suatu penyelenggaraan makanan memerlukan 3 komponen biaya utama yaitu biaya bahan (food cost), biaya tenaga kerja (labor cost), dan biaya overhead. Penyusunan biaya makanan berdampak pada kualitas makanan dan kandungan gizi dalam tiap porsi. Pada Jasaboga X Cirebon, pembiayaan makanan mengutamakan harga yang rendah, namun tetap memperhatikan variasi makan dengan empat pilihan lauk hewani. Tujuan dari penelitian ini adalah untuk menganalisis biaya dan kandungan gizi yang terkandung dalam menu sahur karyawan di Jasaboga X. Metode penelitian yang digunakan adalah deskriptif kuantitatif dengan teknik pengumpulan data berupa wawancara dan penimbangan makanan untuk mengetahui standar porsi. Penelitian ini dilakukan pada tanggal 11-21 April 2022 saat puasa ramadhan. Data dikumpulkan dari seluruh anggota populasi dalam penelitian ini yaitu 9 orang karyawan. Berdasarkan hasil penelitian, keseluruhan menu karyawan yang disajikan oleh Jasaboga X belum memenuhi standar pemenuhan gizi sahur untuk pekerja. Akan tetapi, strategi harga rendah yang telah ditetapkan dapat memenuhi keuntungan komersil serta masih dapat menyediakan variasi makanan gizi seimbang yaitu terdapat makanan pokok (nasi), lauk hewani dengan 4 pilihan per hari, lauk nabati, sayur, dan buah. Saran yang dapat diberikan peneliti dalam penelitian ini adalah perlu dibuat standar porsi dimulai dari pemorsian nasi, pemotongan lauk nabati dan hewani, sayur, dan pemotongan buah untuk memenuhi 40% dari standar pemberian makan karyawan.

Abstract

Background: The growth and development experienced by school-age children need to be supported by optimal nutritional intake, which can be obtained from vegetables and fruit. In order for these conditions to be achieved, it is necessary to provide interesting nutrition education so that children can understand well. In addition, it will form good nutritional behavior as well.Objective: To determine the effect of Nutrition-Run Game media on children's knowledge and attitudes towards the importance of consuming vegetables and fruits.Methods: This research design is Quasi-Experimental with One Group Pretest and Posttest Design. The research subjects were 37 children aged 9-12 years in the Sitanala Multipurpose Complex RT.004. The sampling technique is purposive sampling. The number of questionnaires used for knowledge is 13 questions, and attitudes are 14 questions Subjects were given a pre-test questionnaire and then given an intervention using the Nutrition-Run Game media. After that, the subject was given a post-test 1 questionnaire. Then, seven days later, the subject was again given the same questionnaire (post-test 2). Analysis of the data used is the Paired Sample T-Test.Results: The results showed that most of the subjects had a low level of knowledge (81,1%), and there were still subjects who had poor attitudes (24,3%). After being given education, there was an increase in scores for both variables. The bivariate analysis results showed a significant difference between knowledge and attitude scores before and after giving intervention media regarding the importance of consuming vegetables and fruit (p≤0,05).Conclusion: There is an effect of using the Nutrition-Run Game media on children's knowledge and attitudes regarding vegetable and fruit consumption.

Abstract

Background: Anemia is one of the global public health problems which affect 1.62 billion world population. One of the government's programs to prevent and combat anemia on female adolescents are PPAGB programs with administration of one Fe tablet consumption once a week for a year. But not all female adolescents adhere to consume Fe Tablets which given from the program.Objective: To determine the correlation between female students' knowledge and attitude related with anemia on Fe-tablets compliance on PPAGB Programs in 26's National Junior High School (SMPN 26) Bekasi City, West Java.    Method: A research survey with cross-sectional design. Sampling technique with systematic random sampling to obtain 100 respondents. Data were analyzed with Chi-Square test.                                        Result: The results showed that attitudes and knowledge related to anemia were correlated with Fe-tablets consumption and compliance. The Chi-Square test showed the relationship between attitude and Fe-tablets compliance with p-value 0.000; 0.005, also relationship between knowledge related to anemia and Fe-tablets consumption with p-value 0.002; 0.005Conclusion: There are a relationship between female students' attitude and knowledge related to anemia on Fe-tablet compliance on PPAGB Program at 26's National Junior High School (SMPN 26) Bekasi City, West Java.

Abstract

Background: Fitness center members generally eat foods high in protein, reaching 2 grams/kg body weight or more, and are often accompanied by supplements such as creatinine. High protein intake in the long term will produce a metabolic load that can cause impaired kidney function. In addition to creatinine, the influence of high protein intake that individuals with high activity directly feel is Blood Pressure. Objective: This study aims to determine the relationship between protein intake, creatinine levels, and blood pressure in fitness members at Osbond Gym Cempaka Putih. Method: This type of quantitative research uses a cross-sectional design, with a sample of 22 respondents, namely fitness members at Osbond Gym Cempaka Putih. Data analysis was performed using the Pearson correlation test for normally distributed data and the Spearman correlation test for abnormally distributed data. The test criteria are seen if the p-value < 0.05, then Ha is accepted, and Ho is rejected. Test Results in Normality Variables Protein Intake and Type of Exercise are abnormal, and other variables are normal. Results: All respondents (100%) in this study had been on a high-protein diet for over one year. Most respondents were between 26 and 35 (40.9%) and 36-45 years (40.9%). More respondents were men (68.2%). Most respondents did this weight training (81.8%), with an average exercise frequency of 367.73 minutes/week. The average protein intake of respondents was 212.7736 grams/day, the average body mass index was 25.33 kg / m2, and the average creatinine levels of respondents were 1.01 mg / dL. Most respondents had normal systolic (72.7%) and diastolic (68.2%) blood pressures. Conclusions: There was no association between protein intake, BMI, exercise, and creatinine levels. There is a relationship between sex and creatinine levels. There was no association between protein intake, sex, BMI, and exercise with systolic and diastolic blood pressure.

Abstract

PMBA apabila tidak sesuai bisa menjadi masalah penyebab gizi, untuk itu perbaikan status gizi bayi/anak.Dalam hal ini ibu merupakan sosok penting pada pemenuhan gizi bagi anaknya terutama pendidikan ibu mengenaipedoman gizi seimbang dalam menyediakan makanan. Oleh karena itu kegiatan edukasi mengenai manajemenpemberian makan bayi dan anak yang aman, bergizi serta berkualitas pada ibu balita ini dilakukan. Kegiatan pegabdiandilakukan dalam tiga tahap, yaitu tahap persiapan, penyuluhan terkait PMBA berdasarkan prinsip gizi seimbang, danevaluasi melalui kuesioner post-test dan wawancara mendalam. Kegiatan ini dilaksanakan di Posyandu Kebayoran Lamadiikuti oleh 36 ibu balita. Evaluasi dilakukan melalui pemberian pre dan post-test yang dilakukan sebelum dan sesudahpenyuluhan. Terjadi peningkatan pengetahuan peserta sebesar 12,5%. Hal ini sesuai dengan tujuan kegiatan inidilakukan untuk meningkatkan pengetahuan pada ibu balita. Kegiatan edukasi ini perlu terus dilakukan dan lebihditingkatkan oleh kader posyandu dan tenaga kesehatan setempat.

Abstract

Abstrak: Prevalensi masalah diabetes meningkat setiap tahunya, masalah ini akan menyebabkan masalah dan komplikasi bagi kesehatan. Untuk mengatasi masalah ini, salah satunya meningkatkan pengetahuan gizi mengenai diabetes. Salah satu cara meningkatkan pengetahuan melalui cakram gizi diabetes. Tujuan pengabdian masyarakat ini adalah untuk meningkatkan pengetahuan dan keteramilan kader Posbindu di Puskesmas Rawalumbu, Kota Bekasi menggunakan cakram gizi edukasi diabetes tipe II. Kegiatan pengabdian masyarakat ini dilakukan di Puskesmas Rawalumbu, Kota Bekasi. Peserta kegiatan ini merupakan seluruh kader Posbindu di wilayah tersebut sebesar 30 orang. Edukasi dilakukan dari pukul 09.00 – 12.00 WIB di Puskesmas. Media yang digunakan dalam kegiatan ini berupa cakram gizi diabetes, cakram ini berisikan informasi mengenai gizi dan indeks glikemik pada makanan. Instrumen yang digunakan dalam kegiatan ini berupa kuesioner pre-test dan post-test, berjumlah sepuluh pertanyaan tentang kegiatan edukasi dan lima pertanyaan tentang daya terima media. Hasil kegiatan ini mendapatkan pengetahuan sebelum edukasi sebesar 77 dan menjadi sebesar 88 setelah kegiatan edukasi terjadi peningkatan sebesar 16%. Oleh karena itu, penggunaan media berupa cakram gizi diabetes dapat meningkatkan pengetahuan gizi kader Posbindu.Abstract: The incidence of diabetic complications is steadily rising each year, leading to various health issues and difficulties. One possible solution to address this issue is to enhance the understanding of diabetes through increased nutritional education. Using diabetes nutrition discs is an effective method to enhance understanding. The objective of this community service is to improve the knowledge and practice of Posbindu cadres at the Rawalumbu Community Health Center, Bekasi City, by utilizing type II diabetes educational nutrition discs. The community service initiative took place at the Rawalumbu Community Health Center, located in Bekasi City. All 30 Posbindu cadres from the vicinity were involved in this activity were 30 Posbindu cadres located in the vicinity. The educational activities take place from 09.00 to 12.00 WIB at the Puskesmas. This activity utilizes a diabetes nutrition disc, providing comprehensive information on nutrition and the glycemic index of various food items. The instruments used in this investigation consisted of pre-test and post-test questionnaires, containing a total of ten inquiries pertaining to educational activities and five inquiries on media acceptability. The pre-test of knowledge score was 77, which increased to 88 after participating in educational activities, resulting in a 16% improvement. Hence, employing media such as diabetes nutrition discs can enhance the nutritional awareness of Posbindu cadres.

Abstract

Stunting merupakan kondisi gagal tumbuh pada anak balita akibat dari kekurangan gizi kronis sehingga anak menjadi terlalu pendek untuk usianya. Kurangnya pengetahuan dan informasi selama masa PMBA merupakan salah satu penyebab tidak  tercukupinya kebutuhan anak, yang dapat berpengaruh pada status gizi anak. hasil SSGI 2021 prevalensi balita stunted di Provinsi Banten sebesar 24,5% dan salah satu penyumbang tertinggi berasal dari Kabupaten Pandeglang sebesar 37,8%. Penelitian ini bertujuan untuk mengetahui hubungan pengetahuan PMBA dengan kejadian stunting di desa Langensari UPT Puskesmas DTP Saketi. Metode pada penelitian ini yaitu kuantitatif dengan pendekatan cross sectional. Jenis data yang diambil adalah data primer dan data sekunder. Kuesioner berisi tentang data karakteristik responden (umur, jenis kelamin, nama anak, nama ibu, TB, BB) dan bagaimana pemberian makan balita dan anak yang berjumlah 12 soal dengan dua pilihan jawaban yaitu benar dan salah. Analisis data menggunakan uji statistik chi-square. Hasil : terdapat hubungan hubungan yang signifikan antara pengetahuan PMBA Ibu dengan kejadian stunting pada balita di Posyandu X Desa Langensari Wilayah Kerja UPT Puskesmas DTP Saketi Pandeglang dengan hasil p-value= 0,001 (p<0,05). Kata Kunci: Stunting, SSGI, PMBA

Abstract

Background: Hydration results from body fluids balance, while dehydration results from body fluids imbalance. Dehydration can result from losing too much water, not drinking enough or both of these things. There are certain job who has  special needs for fluids especially who works in hot environments.Objective: To determine the relationship between knowledge, fluid intake and nutritional status with hydration status in expedition couriers.Methods: A cross-sectional design with 44 expedition couriers as the research subject. Knowledge of fluids were obtained using a questionnaire, fluid intake were obtained by interview using repeated 24-h food recall, nutritional status were obtained by using BMI and the hydration status were obtained by urine specific gravity using urinalysis reagent strips. The data was processed and analyzed using Pearson correlation test.Results: Most of the respondents had sufficient knowledge (59.1%). The average fluid intake of the respondents were 2562 mL. Most of the respondents had normal nutritional status (45.4%). Almost half of respondents has pre-dehydration (45.5%). There  were arelationship between knowledge of fluids and hydration status (p=0,0001, r=-0,514), also between fluid intake and hydration status (p=0,0001, r=-0,685). There is no relationship between nutritional status and hydration status (p=0,337, r=0,148).Conclusion: Fluid intake and hydration status on expedition couriers are still not as expected, even though expedition couriers have sufficient knowledge.

Abstract

Background: Most of housewives do not understand food sanitation hygiene yet. It caused by lack of education on households food sanitation hygiene. The importance of food sanitation hygiene education to prevent foodborne diseases. One of the educational media which can used is the educational fridge magnet series media.Objective: To assess the impacts of educational fridge magnet series media towards knowledge and attitude improvement related with housewives' hygiene food sanitation.Methods: A quasi-experimental study with a non-equivalent control group pretest-posttest design. Subjects were devided into two gropus, 31 subjects from the intervention group and 30 subjects in control group. In the intervention group, subjects were given educational fridge magnet series media and lecturing session, while the control group were given lecturing-session only. Data analysis were used Paired Sample T-test, Wilcoxon, Independent Sample T-test, and Mann-Whitney.Results: There were significant differences on housewives' knowledge before and after education in the intervention group (p=0,000) and control (p=0,015). There were differences on attitudes before and after education in the intervention (p=0,000) and control (p=0,022). Knowledge score were increased by 20,00 and attitude score by 9,59 in the intervention group after education with fridge magnet series media. In the control group, the knowledge score after education were increased from 3,66 only. Meanwhile, the attitude score showed decrease by 1,98. After education, there were differences in knowledge (p=0.000) and attitudes (p= 0,000) between the two groups.Conclusion: Educational fridge magnet series media has impacts on increasing housewives' knowledge and attitudes related food sanitation hygiene. Interventions with educational media more effective than lecturing-session.

Abstract

Background: Personal hygiene is the basic principle of foodservice. Poor personal hygiene practices can lead to increase risk of microbial contamination in food. The personal hygiene of Islamic boarding schools’ food handlers are still low related to lack of knowledge. It caused by various factors, such as knowledge, attitudes, education, length of work, and habits on processing foodObjective: To examine the effect of mirroring education on the personal hygiene’s knowledge and attitudes of Islamic boarding school food handlers’ in Jombang.Methods: A pre-experimental study with a pretest-posttest group design. Total sampling were 41 food handlers in Islamic boarding school in Jombang. Data were analyzed by Paired Sample T-test and Wilcoxon test.Results: The age distribution of the respondents were 2,4% as the oldest age (58 years old) and 7,3% as the youngest age (17 years old), 26 respondents (63,4%) had working period 4 years and 22 people (53,7%) with low education. Knowledge and attitude about personal hygiene before and after education were significantly different (p=0, 01), also There were differences in knowledge and attitude about personal hygiene before and one week after education (p=0,01).Conclusion: Mirroring education can improve personal hygiene’s knowledge and attitudes of food handlers.
