Abstract

Siput gonggong merupakan slah satu komoditas yang diunggulkan di daerah Kabupaten Bintan, Kepulauan Riau. Pengabdian ini bertujuan meningkatkan nilai tambah dari daging siput gonggong dengan memanfaatkan daging siput gonggong menjadi berbagai inovasi produk makanan. Melalui pendekatan ekonomi sirkular, pada pengabdian ini akan mengolah daging siput gonggong menjadi bakso gonggong, nugget gonggong, dan juga sambal gonggong. Dengan pelatihan dan pendampingan, masyarakat di Desa Pengujan mampu memproduksi produk-produk secara mandiri dan menghasilkan produk yang berkualitas tinggi serta daya simpan yang panjang. Nantinya, pengabdian ini dapat meningkatkan pendapatan ekonomi masyarakat dan menciptakan klaster industri baru yang memiliki sifat berkelanjutan. Hasil kegiatan ini memberikan kontribusi dalam pengembangan olahan laut lokal, meningkatkan kesejahteraan masyarakat pesisir, dan juga membuka peluang pasar yang lebih luas.

Abstract

This study aims to identify critical control points in honey production in Malang that affect both product quality and halal status, using a qualitative approach. Data were collected through interviews, observations, and thematic analysis. The study identified several critical points in the honey production process that influence product quality and halal certification status, namely: the source of bees, hive cleanliness, processing methods, and packaging.The findings indicate that 80% of beekeepers understand and apply halal principles, while the remaining 20% require further education. Halal certification has been shown to increase the market value of honey by 15–20%, while also enhancing consumer trust and the product’s competitiveness in both domestic and international markets. Improving production efficiency through training, modernization of equipment, and the adoption of digital marketing strategies is essential to maximizing the potential of halal honey in the region.

Abstract

Kriteria utama produk pangan berkualitas salah satunya adalah tidak adanya mikroba patogen. Terasi sebagai produk fermentasi tradisional rentan terhadap kontaminasi bakteri yang tidak diharapkan termasuk Salmonella spp. Penelitian ini bertujuan untuk mengisolasi dan mengidentifikasi Salmonella spp. dalam terasi tradisional menggunakan pendekatan multiplex PCR (mPCR). Sampel yang digunakan mencakup terasi berbahan dasar udang (UA, UB, UC), ikan (IA, IB, IC), serta campuran keduanya (CA, CB, CC). Penelitian ini meliputi isolasi Salmonella, uji biokimia dengan TSIA dan LIA, serta deteksi molekuler menggunakan mPCR. Identifikasi isolat berbasis sekuensing 16S rDNA dilakukan pada sampel yang tidak terdeteksi Salmonella melalui mPCR, baik pada tingkat serovar maupun genus. Hasil isolasi dan karakterisasi biokimia mengonfirmasi keberadaan Salmonella spp. dalam lima sampel terasi (UA, UB, UC, CA, dan CC), dengan densitas bakteri tertinggi ditemukan pada sampel UC (8,3 × 10⁶ CFU/g). Uji TSIA dan LIA lebih lanjut memverifikasi keberadaan isolat Salmonella spp. hanya pada sampel UC sejumlah tujuh isolat, menunjukkan fermentasi glukosa, produksi hidrogen sulfida, serta morfologi koloni khas pada media XLD. Tujuh isolat dalam sampel UC tersebut teridentifikasi melalui mPCR sebagai genus Salmonella, dan satu diantaranya berhasil teridentifikasi sebagai Salmonella Typhimurium (UC8). Hasil sekuensing 16S rDNA menunjukkan bahwa enam isolat yang tidak diketahui serovarnya diidentifikasi sebagai Salmonella enterica subsp. enterica serovar Newlands, yang untuk pertama kalinya dilaporkan pada terasi di Indonesia. Sementara itu, satu isolat (UC4) yang tidak teridentifikasi pada tingkat genus terkonfirmasi sebagai Proteus mirabilis, yang mengindikasikan adanya kontaminasi non-Salmonella. Temuan ini menyoroti pentingnya peningkatan kebersihan dalam produksi terasi tradisional guna mengurangi risiko kontaminasi mikroba patogen.

Abstract

Motile Aeromonas Septicemia (MAS), primarily caused by Aeromonas hydrophila, remains a critical threat in aquaculture due to its high mortality rates and economic impact. This study evaluated the antibacterial activity of crude Terminalia catappa L. leaf extract prepared using maceration and microwave-assisted extraction (MAE) methods against A. hydrophila in vitro. Phytochemical screening confirmed the presence of flavonoids, triterpenoids, tannins, and saponins in both extracts. The MIC test showed that MAE resulted in slightly lower optical density values than maceration, suggesting greater inhibition potential. Disk diffusion assays revealed that both extracts produced clear inhibition zones, with the MAE extract generating larger zones at equivalent concentrations. Scanning Electron Microscopy (SEM) confirmed morphological damage and lysis in A. hydrophila cells exposed to the extract. These findings demonstrate that T. catappa L. leaf extract exhibits significant antibacterial activity against A. hydrophila, with MAE being the more effective extraction method to enhance bioactivity.

Abstract

Banyuurip Village has considerable aquaculture potential, one of which is the culture of green mussels. Abundant production and its low price encourage people to do green mussel products processing. In 2019, UMKM Berkah Mandiri was established to increase the selling value of green mussels by innovating several products. However, the production process is still experiencing ups and downs, coupled with inadequate equipment. In addition, the distribution permit (SPP-PIRT) for the products have not been obtained. Therefore, the aim of the Doctoral community service program was to increase the productivity of UMKM Berkah Mandiri through a series of marketing strategy training activities, registration of NIB and SPP-PIRT and procurement of new production and packaging equipment. At the end of the Doctoral community service program, UMKM Berkah Mandiri has successfully obtained the SPP-IRT certificate and has better understanding of good manufacturing practice of products from green mussels. In addition, the crackers have been tested its nutritional content using a proximate test. The results showed that the protein, moisture, fat, ash and carbohydrate contents of Kopang cracker was 5.30%, 13.83%, 0.69%, 2.99% and 77.19%, respectively. The nutritional content list is used to improve product packaging in accordance with BPOM packaging standards.

Abstract

Bacteria are bioremediation agents that are advised to overcome water pollution. This study aims to isolate biosurfactant-producing bacteria for bioremediation from Tanjung Perak Port, Surabaya. The isolates grown in specific media were tested for drop collapse, oil spreading test, and emulsification index. A total of 12 bacterial isolates were isolated from Tanjung Perak seawater contaminated with diesel oil. In the drop collapse test, four isolates had the highest positive score from this test, isolate LU-5, LU-7, LU-9, and LU-11. While in the second test, the oil spreading test, the highest positive score results were obtained in three isolates, isolates LU-2, LU-7, and LU-11. The emulsification index (E24) value showed that isolates LU-7, LU-9, and LU-11 were significantly higher than the others, which was above 10%. This study concludes that in Tanjung Perak, seawater-contaminated oil isolated several bacteria that produce biosurfactants, which have the potential to be developed as bioremediation agents.Keywords: bacteria, bioremediation, biosurfactant, diesel oil
