Abstract

Infant mortality rate is one indicators used toascertaining of community health degree. Infantmortality closely related with family education level,social economy of family, value system, customs,cleanliness, health environmental, health servicesavailable, childbirth problem, provision ofimmunization and malnutrition. Incident ofmalnutrition in infants caused by bestowalbreastfeeding is wrong and provision ofsupplementary food improper. So provisionbreastfeeding patterns and provision ofsupplementary food proper must be attention1.Breastfeeding is best food for babies in early ages hislife, good physiologically and biological.Breastfeeding containing nutrients, substanceimunogenik to protect a baby from infection2.Breastfeeding rich in carotenoids and selenium, sothat breastfeeding had a role in defense system thebody of a baby to prevent various diseases. Everydrop breastfeeding also contain minerals andenzymes to prevention of disease and antibodiesmore effective than and formula milk3. Manyresearch show the benefit of exclusivebreastfeeding4. World Health Organization (WHO)recommend to give exclusive breastfeeding for thefirst six months to achieve the growth optimal,development and health.After that, babies have toprovided with food a companion nutritious andremain suckling until two years5. Exclusivebreastfeeding is breastfeeding given to a baby eversince born during six months, without adding and orreplace with food or drink other6.Based on world health organization in 2010, 1.5million children below five 0-6 months died of theprovision of supplementary food before the time,and in the provision of breastfeeding around theworld to 15 % of infants given breastfeeding, theprovision of breastfeeding lowest in central Africaand North Africa, Asia and America Latin. Based onHealth research for basic (Riskesdas) 2013 show forgranting breastfeeding in Indonesia has been good ifcompared with the results of Riskesdas 2010 thatonly covers 15.3 %7. Based on health departmentdata at 2010 in east java obtained the scope ofprovision of exclusive breastfeeding for 6 months atprovincy as many as 31,21 %8. Exclusivebreastfeeding program for six months, hasundertaken in Jember regency since the issuance ofIndonesian Kepmenkes no.450/Menkes/IV/2004 inan effort to improve a baby or child toddlersnutritions. But, Jember regency still not reach thegoal of program that has been set is as much as 80%9. In 2010, the scope of provision of exclusivebreastfeeding in Jember regency as much as 67,10%8. Therefore, needed a special act to increase it, sothe targets can be achieved. Many factor thatinfluences mother in decide on and do provisionpatterns breastfeeding, especially physical andpsychological mother not ready, lack of informationand knowledge on benefits breastfeeding,management of lactation10. Mothers that giveexclusive breastfeeding said the real questionrelated knowledge of breastfeeding as many as40,7% and mother who do not give exclusivebreastfeeding said the real question relatedknowledge of breastfeeding as many as 29.6 %. Thisshows there was a significant correlation betweenlevel of knowledge mother about breastfeeding withprovision of exclusive breastfeeding11.

Abstract

School lunch facilities may be an alternative to solve food problems in school-age children. The contribution of food nutrients in schools will affect the total consumption of nutrients as well as nutritional status. The contribution of school lunch is 30% of nutritional needs per day. This study was to analyze both the nutritional contribution of school lunch and nutritional adequacy towards the nutritional status of students at Al-Furqan Jember Elementary School. This study was an observational analytic study with a cross-sectional approach. The population was 141 students with total samples of 58 students. This study indicated that most of the respondents did not meet 30% of the daily nutritional needs based on their lunch nutritional contribution. However, both the nutritional adequacy and nutritional status of most respondents were in the normal category. Abstrak Fasilitas makan siang sekolah dapat menjadi salah satu alternatif untuk mengatasi masalah makanan anak usia sekolah. Kontribusi zat gizi makanan di sekolah akan berpengaruh pada total konsumsi zat gizi yang juga akan berdampak pada status gizi. Kontribusi makan siang sekolah adalah 30% dari kebutuhan gizi sehari. Penelitian ini bertujuan untuk menganalisis kontribusi zat gizi makan siang sekolah dan kecukupan gizi terhadap status gizi siswa di SD Al-Furqan Jember.Penelitian ini merupakan penelitian analitik observasional dengan menggunakan pendekatan cross sectional. Populasi penelitian ini sebanyak 141 siswa dengan sampel sebanyak 58 siswa. hasil penelitian menunjukkan bahwa sebagian besar responden kontribusi zat gizi makan siang sekolahnya tidak memenuhi 30% kebutuhan gizi sehari. Sedangkan kecukupan gizi dan status gizi sebagian besar responden dalam kategori normal.

Abstract

White rice is the most consumed food by Indonesian people. However, carbohydrate levels in white rice are included in the high glycemic index (73). This makes the white rice less healthy, especially for people with Diabetes Mellitus (DM). Appropriate processing is done to lower carbohydrate and glucose levels in white rice to be more safe to eat, on the contrary is roasting and burning. The purpose of this study was to analyzed the influence and grilling of white rice on carbohydrate, glucose and white rice test after treatment. The research method used was analytic with experimental design (pre-experimental). Sample of acceptance test research from 25 people with DM in Clinic dr. Suherman University of Muhammadiyah Jember. Friedman Test and Wilcoxon Sign Rank Test was used to analyzed, glucose level and analysis used One Way Anova and Post Hoc (Tukey HSD) Test with 5% confidence level (α = 0,05). The results showed that the average of normal rice sugar, grilled rice, and baked rice (X0, X1, and X2) were 39,44%; 34.84%; and 37.45%. Medium for the average glucose levels (X0, X1, and X2) was 2.07%; 2.86%; and 3.38%. The results were performed to measured energy, aroma and texture, white rice (p <α value). Grilled rice had low carbohydrate levels and could be accessed by diabetes, 72.38 grams of grilled rice (25.22 g of carbohydrates and 2.07 g of glucose) could be consumed 1-3 times a day. Abstract

Prevalence of dental caries increase. An increase in prevalence of dental caries as a result increasing sugar consumption. This paper aims to review publish studies to khow if there was any evidence of dental caries and nutritional status of children. All paper relating to effect of dental caries and nutritional status were considered for conclution in this review. The primary focus of this paper is on dental caries problem related with nutritional status of children. Studies using cross-sectional approach. The lower index dental caries of children, so nutritional status will be getting better. Dental caries causes disruption of function of mastication that can affect nutritional intake and nutritional status.the conclusion was dental caries of children show significant relation with nutritional status.

Abstract

Background: Stunting is a problem that cannot be considered ordinary. Short toddlers (stunting) can occur due to poor nutrition and nutritional intake and lack of knowledge about stunting. Purpose: Transferring knowledge about how to prevent and manage stunting or short toddlers. Method: counseling and empowering health cadres by using tools such as LCD projectors and using leaflets and interactive discussions. Results: The implementation of this activity included advice and health cadre assistance in conducting health education to the community. Counseling for health cadres was done first to increase cadre knowledge. After that, support was given to health cadres to lead health education to the community around the village. Conclusion: After conducting mentoring activities on health cadres, which was a village program under the guidance of the University of Jember, it could increase the knowledge and motivation of cadres in conducting health education in the context of preventing and managing stunting infants.

Abstract

Puger is the largest fish producing sub-district in Jember district, which also has a prevalence of high nutritional problems. During this time there are “mitra” who are a group of fish processors and marketers (POKLAHSAR) namely "Ekonomi Puger Bahari (EPB)" and "Duta Tongkol" who try to explore the potential of fish in Puger District. Tuna fish abon produced by “mitra” has a soft texture (srundeng like) so that it is less preferred by consumers therefore this paper argues that there's a need to add banana blossoms as a compound, does not have P-IRT (product permit), and the marketing of the product is not optimal. The author believes that if there is a need for development in terms of products implemented in several respects, among others: 1) Training on modified abon production; 2) Management of P-IRT; 3) Training in business financing and marketing management; 4) Production and marketing assistance. This activity can help partner problems. Expected targets and outcomes, namely: 1) Abon modified tuna and banana heart products that have P-IRT, high protein content is expected to be a solution to KEP nutritional problems; 2) The method of business financing management and appropriate marketing management has been achieved. In addition to directly, partners have marketed their products through social networks and resellers. Partners experience additional turnover and number of buyers; 3) Mastery of skills in the form of skills makes modification abon. This activity has an impact on up-dating science and technology in partners. Keywords: abon modified; tuna fish; banana blossom; optimization.

Abstract

Stunting is a condition when a toddler fails to grow at his age due to malnutrition from the fetus until the baby is born and usually can be seen at the age of two years. According to Dinas Kesehatan Jawa Timur, Jember is included on 11 districts in Indonesia which are focused on handling stunting. The district with the highest stunting rate in Jember Regency in 2018 is Sumberjambe District. In 2016, the prevalence of stunting in Sumberjambe District was 38.38%, in 2017 was 38.14% and in 2018 was 32.32%. This study aims to look for determinants of the incidence of stunting in toddlers aged 12-59 months in Jambearum Village, Sumberjambe District. This study uses a cross sectional research design. The methode of taking sample uses simple random sampling. Data analysis used the chi square statistical test. The bivariate test showed that there was a significant relationship between food intake, consist of energy (p=0,026), zinc (p=0,045) and calcium (p=0,011) with the incidence of stunting in children under five in Jambearum Village, Sumberjambe Subdistrict, Jember Regency and there was no significant relationship between food intake (protein, iron and phosphorus) , infectious diseases, baby low birth weight status and genetic with the incidence of stunting in toddlers in Jambearum Village, Sumberjambe Subdistrict, Jember Regency.

Abstract

Stunting is one of the nutrition problems that a still concern throughout in the world. Indonesia is the third country which highest prevalence of stunting in the Southeast Asia. In East Java, one of priority districts for handling stunting is Bondowoso Regency. Pujer disrict was sub-district with the highest prevalenced of stunting in Bondowoso Regency on 2020. The prevalenced of stunting in August 2018 was 25.36%, in February 2019 of 24.70%, in August 2019 of 26.73%, and in February 2020 it was 27.66%. This research purpose to know determinants of stunting on age toddler  24 - 59 mount in Pujer Distric,Bondowoso Regency. The research method uses an observational analytic with a cross sectional design. The research sample was 84 toddlers aged 24-59 months. The sampling technique using simple random sampling. The data collection technique using quetionnarie with interwieving on monher’s toddler and the data were analyzed using the chi-square test with a significance of p <0.05. The results univariate analysis was coulded most of the toddler were not stunting at 67.9% and the toddler were stunting at 32.1%. The results of bivariate analysis showed that there was no relationship between energy consumption (0.053), protein consumption (0.456), infectious diseases (0.771), history of BBLR (0.381), and exclusive breastfeeding (0.739) with the incidence of stunting in toddler in Pujer District, Bondowoso Regency.

Abstract

Background: Diabetes mellitus is one of the degenerative diseases that have increased prevalence every year. Diet arrangement by the selection of type and amount which a low glycemic index are methods that can applied by diabetic in diet implementation. Researchers want to modify the white sweet potato pudding with addition of red dragon fruit to obtain low glycemic index, low carbohydrate, and high fiber food products.Objective: The purpose of this study was to analyze the glycemic index, nutrient content, and the acceptance capability of white sweet potato pudding with addition of red dragon fruit by 25%, 50%, and 75%. Method: The research method used is true experimental with post-test only control design. The researcher subject were 10 student for index glicemyc test and 25 diabetics patient for acceptance capability.Result: The pudding glycemic index with 4 treatment (K, P1, P2, and P3) were 37.75; 33.81; 32.81; and 29.54. The higher addition of red dragon fruit can pudding low carbohydrate and fiber level. Pudding with addition of 75% red dragon fruit was the the most preferred pudding by panelists. Conclusion: In conclusion, there was no significant difference in the addition of red dragon fruit to white sweet potato pudding. The addition of red dragon fruit had a significant difference in carbohydrate levels, and fiber content. The pudding was well received by the panelists in terms of taste, texture, aroma, and color, but based on the statistical results only the taste received had a significant difference.ABSTRAKLatar Belakang: Diabetes melitus merupakan salah satu penyakit degeneratif yang mengalami peningkatan prevalensi setiap tahunnya. Pengaturan diet dengan pemilihan jenis dan jumlah makanan berindeks glikemik rendah merupakan salah satu cara yang dapat dilakukan oleh diabetisi dalam penatalaksanaan diet. Peneliti ingin memodifikasi puding ubi jalar putih dengan penambahan buah naga merah untuk mendapatkan produk pangan dengan indeks glikemik dan kadar karbohidrat rendah serta kadar serat tinggi.Tujuan: Penelitian ini bertujuan untuk menganalisis indeks glikemik, kandungan gizi (kadar karbohidrat dan kadar serat) serta daya terima puding ubi jalar putih dengan penambahan buah naga merah sebesar 25%, 50%, dan 75%.Metode: Metode penelitian yang digunakan adalah true eksperimental dengan post-test only control design. Subjek penelitian sebanyak 10 orang mahasiswa untuk uji indeks glikemik dan 25 orang penderita diabetes melitus untuk uji daya terima.Hasil: Indeks glikemik puding dengan 4 taraf perlakuan (K, P1, P2, dan P3) adalah 37,75; 33,81; 32,81; dan 29,54. Semakin tinggi penambahan buah naga merah dapat menurunkan kadar karbohidrat dan kadar serat puding. Puding dengan penambahan buah naga merah 75% adalah puding yang paling disukai oleh panelis.Kesimpulan: Kesimpulan dari penelitian ini yaitu tidak terdapat perbedaan yang signifikan terhadap penambahan buah naga merah pada puding ubi jalar putih. Penambahan buah naga merah memiliki perbedaan yang signifikan terhadap kadar karbohidrat, dan kadar serat. Puding tersebut diterima oleh panelis dari segi rasa, tekstur, aroma, dan warna, tetapi berdasarkan hasil statistik hanya daya terima rasa yang memiliki perbedaan yang signifikan.

Abstract

Kue dadar gulung dengan penambahan sari daun kelor merupakan salah satu bentuk modifikasi makanan sebagai penanganan anemia pada remaja. Untuk meningkatkan penerimaan dan fungsi nutrisi kue dadar gulung sari kelor dengan memodifikasi komposisinya menjadi kue dadar gulung dengan penambahan sari daun kelor. Tujuan penelitian ini menganalisis kandungan zat besi, vitamin C dan hasil uji kesukaan kue dadar gulung sari kelor dengan penambahan sari daun kelor 0%, 10%, 20% dan 30%. Penelitian ini menggunakan metode penelitian eksperimen bentuk desain Posttest Onlty Control Group Desain. Desain penelitian menggunakan dua kelompok yaitu kelompok yang diberi perlakuan yaitu kue dadar gulung sari kelor dengan penambahan sari daun kelor dan kelompok yang tidak diberi perlakuan yaitu kue dadar gulung tanpa penambahan sari daun kelor. Hasil uji statistic kadar zat besi dan vitamin C menggunakan Kruskall Wallis dan One-Way ANOVA menunjukkan nilai signifikansi 0,0001 (<0,05) atau terdapat perbedaan yang signifikan terhadap kadar zat besi dan vitamin C pada kue dadar gulung dengan penambahan sari daun kelor. Hasil statitik uji kesukaan menunjukkan bahwa warna, rasa dan tekstur memiliki perbedaan yang signifikan, sedangkan aroma tidak berbeda signifikan. Berdasarkan uji kandungan zat besi, vitamin C dan uji kesukaan X2 merupakan kelompok perlakuan yang paling disukai oleh panelis.
