Abstract

The prevalence of obesity in Indonesia is 31.0%, which means that many Indonesians have obesity problems, including teenagers. Palu City is ranked tenth out of 33 provinces, with a percentage of 32.9%. Fast food consumption, sedentary lifestyle, and physical activity affect Body Mass Index (BMI). This study aims to determine the relationship between fast food consumption, sedentary lifestyle, and physical activity and the Body Mass Index (BMI) of grade X and XI students of MA Alkhairaat Pusat Palu. The research method used is quantitative with a cross-sectional study design. The study population was 246, and a sample of 159 respondents was used using a proportional random sampling technique. Data collection was conducted using FFQ, ASAQ, and physical activity questionnaires. Data were analyzed using the Chi-Square statistical test. The univariate analysis results of respondents with abnormal BMI were 64 people (40.3%), and those with normal BMI were 95 people (59.7%). Based on bivariate analysis, the results of variables that have a relationship with Body Mass Index (BMI) are fast food consumption (p = 0.000). In contrast, variables that have no relationship with Body Mass Index are sedentary lifestyle (p = 0.917), and physical activity (p = 0.256). It is expected that adolescents can adopt a healthy lifestyle under the principles of balanced nutrition.

Abstract

The research aims to analyze the levels of beta carotene, anthocyanin, antioxidant power (IC50), and yeast numbers of steamed sponge cake mold based on a combination of purple sweet potato flour (Ipomoea Batatas L.) and orange sweet potato flour (Ipomoea Batatas L.) as an alternative post-disaster snack. The type of research was a Factorial Completely Randomized Design (CRD) using a ratio of wheat flour and a combination of purple sweet potato flour and orange sweet potato flour, namely 100:0 (F0), 80:20 (F1), 70:30 (F2), 60: 40 (F3), and 50:50 (F4). Data analysis included beta carotene, anthocyanin, IC50 of antioxidant activity, and mold yeast numbers. The steamed sponge cake with the highest anthocyanin content is formula F4 (2.64 mg/100 g), followed by formula F3 (1.57 mg/100 g). The β-carotene levels (mg/100g) show that the F3 formula is the highest, at 38.83 mg/100 g, and the F2 formula is 29.33 mg/100 g. The most potent antioxidant power is the F4 formula of 91.84 µg/mL. Formula F4, at a dilution of 10-6, obtained the lowest yeast number, 7 CFU/mL. Formula F4 is the best formula of the four formulas tested. Formula F4 has high levels of anthocyanin, β-carotene, antioxidant power, and the lowest number of yeast molds.

Abstract

The prevalence of anemia among adolescent girls in the working area of Wani Public Health Center, Donggala District, remains relatively high, reaching 49.2% in 2024. Several contributing factors include poor breakfast habits, poor sleep quality, and abnormal menstrual duration. This study aims to examine the association between breakfast habits, sleep quality, and menstrual duration with the incidence of anemia among adolescent girls. This study highlights the combined role of lifestyle factors (breakfast and sleep quality) and biological factors (menstrual duration) in relation to anemia, which has been scarcely explored in this setting. This research employed a cross-sectional design with a quantitative approach. The study population included all female students in the working area of Wani Public Health Center (n = 81). A total of 68 respondents were selected using the Slovin formula and purposive sampling technique. Data were analyzed using univariate and bivariate analysis with the chi-square test at a significance level of α = 0.05. The findings revealed significant associations between breakfast habits and anemia (p = 0.000), sleep quality and anemia (p = 0.000), and menstrual duration and anemia (p = 0.000) among adolescent girls. Breakfast habits, sleep quality, and menstrual duration are significantly associated with incidence anemia among adolescent girls. These findings provide a basis for preventive efforts through nutrition education, improvement of sleep quality, and monitoring of menstrual health among adolescents.

Abstract

Kesehatan adalah keadaan sehat, baik secara fisik, mental, spiritual maupun sosial yang memungkinkan setiap orang untuk hidup produktif secara sosial dan ekonomis. Kesehatan sekolah diselenggarakan untuk meningkatkan kemampuan hidup sehat peserta didik dalam lingkungan hidup sehat sehingga peserta didik dapat belajar, tumbuh, dan berkembang secara harmonis dan setinggi-tingginya menjadi sumber daya manusia yang berkualitas. Kesehatan dan gizi yang baik pada anak usia dini penting untuk pertumbuhan dan perkembangan anak, mendukung proses belajar dengan baik dan meningkatkan kualitas hidup anak. Tujuan yang ingin dicapai dari kegiatan pengabdian pada masyarakat ini adalah meningkatkan pengetahuan peserta tentang Kesehatan dan gizi anak usia dini. Metode yang akan digunakan dalam kegiatan ini adalah metode ceramah yang digunakan untuk menjelaskan materi tentang 1) Pentingnya kesehatan dan gizi; 2) Upaya pemeliharaan kesehatan dan gizi; 3) Dasar-dasar pertolongan pertama pada kecelakaan; 4) Pentingnya gizi seimbang bagi kecerdasan pertumbuhan, pencegahan penyakit dan produktivitas; 5) Dasar-dasar perlindungan, keselamatan dan keamanan anak. Hasil pengabdian masyarakat Kegiatan penyuluhan di PAUD Aisyiyah Bustanul Athfal Dusun Liku, Kelurahan Lambara Kota Palu telah selesai dilaksanakan dengan peserta adalah guru dan orang tua siswa. Semua peserta mengikuti kegiatan dari awal hingga akhir. Materi yang disampaikan diharapkan dapat meningkatkan pemahaman peserta untuk menerapkan cara yang baik dalam bidang Kesehatan dan gizi anak usia dini. Kemudian, terdapat peningkatan pengetahuan yang diukur dari hasil pre dan posttest yaitu dari 5,5 menjadi 6,75

Abstract

Stunting is a major problem in Central Sulawesi Province, with Sigi District having the highest prevalence at 40.7%. Stunting is a condition where children under five years of age fail to thrive due to chronic malnutrition, resulting in stunted growth. This condition hinders human development and has a negative impact on the future. The study aimed to identify the factors related to post-disaster stunting in toddlers aged 25-59 months in the Biromaru Health Centre working area. The research design used a quantitative approach with a case-control design, with a sample size of 150 mothers who had babies aged 25-59 months. The results showed that the mother's education level was significantly associated with the incidence of stunting, with mothers who have a low level of education being 2.82 times more likely to have stunted children than mothers with a high level of education. Other factors, such as maternal height, family income, exclusive breastfeeding history, birth weight, gender, and access to health services, did not show a significant relationship with stunting. The study suggests that improving maternal education levels may help reduce the incidence of stunting in toddlers, highlighting the importance of education in preventing child malnutrition.

Abstract

Central Sulawesi is categorized as a food and nutrition insecure area, due to drought, narrow land ownership, high population migration, and the absence of a non-agricultural economic sector. This study aims to analyze socio-economic factors household, namely Javanese and To Pekurehua (Napu valley). This research was conducted in Central Sulawesi Province in 2 sub-districts namely Napu Valley and Java. Sampling using simple random sampling method. Determination of the number of samples using the Slovin formula consisting of 120 respondents. Data collection using in-depth interviews and direct observation. Quantitative data processing by tabulating. Data analysis was conducted by: (1) Descriptive to answer socioeconomic characteristics; (2) Quantitative to answer meal frequency and measure food consumption. For household food security level, Food Expenditure Share calculation was used. The results showed that: The results showed: (1) Household food security is categorized as food resilient, with a share of food expenditure of less than 60%, namely 55.62% for to pekurehua (Lembah napu) and 56.68% for Java; (2) Social and economic factors that influence the ability to access adequate and nutritious food are household income, equitable distribution of food and adequate infrastructure. to pekurehua and Java ethnicities have similar characteristics in meeting food needs.

Abstract

Salah satu permasalahan dalam manajemen penanggulangan bencana adalah kurangnya pengetahuan dan keterampilan dari tenaga kesehatan setempat dalam masa tanggap darurat bencana sehingga sulit untuk segera mendapatkan informasi terkait gizi pada saat bencana sehingga pelatihan-pelatihan terkait manajemen penaggulangan bencana sangat dibutuhkan. Salah satu pelatihan dibidang gizi adalah Rapid Health Assessment (RHA) Gizi pada masa tanggap bencana. Tujuan yang ingin dicapai dari kegiatan pengabdian pada masyarakat ini adalah meningkatkan pengetahuan kader posyandu dalam melakukan Rapid Health Assessment (RHA) Gizi pada masa tanggap darurat bencana. Manfaat yang dicapai dalam kegiatan pengabdian pada masyarakat ini adalah peserta dapat mengetahui cara melakukan Rapid Health Assessment (RHA) Gizi. Metode yang akan digunakan dalam kegiatan pelatihan ini adalah: 1) Metode ceramah : dilakukan untuk memberikan pengetahuan dan contoh cara pengisian formulir Rapid Health Assessment Gizi. 2) Metode diskusi : dilakukan setelah penyampaian materi selesai untuk mengetahui respon peserta. Peserta dalam kegiatan pelatihan ini adalah ibu-ibu kader kesehatan di Kelurahan Duyu Kota Palu. Kegiatan pengabdian kepada masyarakat ini dilakukan pada tanggal 5 Agustus 2023. Adapun luaran yang dari pengabdian kepada masyarakat ini ialah berupa jurnal nasional tidak terakreditasi.

Abstract

Breast milk is the best food for babies and has many benefits for feeding babies and mothers. The nutritional content is used for the development of the body's immune system and the baby's brain. One of the obstacles in providing breast milk is the lack of milk production after giving birth. Using katuk leaf juice as a snack product is believed to increase secretion and facilitate breast milk. So far, many boiled katuk leaves are still eaten as a vegetable due to a need for knowledge and skills in making steamed sponge cakes for breastfeeding mothers. Duyu Village. This community service activity aims to increase participants' knowledge of katuk leaf juice-based sponge cake as an alternative snack. The benefits achieved in activity are that participants can learn how to make steamed sponge cake based on katuk leaf juice and can increase the production of breast milk secretion for breastfeeding mothers. The methods that will be used in this training activity include the lecture method, used to explain material about how to make steamed sponge cake; practice method, used to practice how to make steamed sponge cake; Discussion method, carried out after the training activity is completed to find out the participants' responses. This training activity included pregnant and breastfeeding mothers in Duyu Village, Palu City. The type of product being socialized is steamed sponge cake based on katuk leaves. The location of the service is Duyu Village, Palu City. Community Service Activities will be held on August 19 2023.

Abstract

Antioksidan merupakan senyawa yang dapat menetralisir radikal bebas sehingga berperan dalam pencegahan penyakit degeneratif. Kabupaten Sigi memiliki potensi pangan lokal kaya antioksidan, seperti buah sukun dan ubi jalar ungu, namun pemanfaatannya masih rendah karena keterbatasan pengetahuan dan keterampilan pengolahan. Kegiatan pengabdian ini bertujuan untuk meningkatkan pengetahuan dan keterampilan masyarakat Desa Beka dalam mengolah sukun dan ubi ungu menjadi brownies sebagai makanan selingan alternatif kaya antioksidan. Metode yang digunakan meliputi ceramah, praktik pembuatan produk, dan diskusi. Peserta kegiatan adalah ibu-ibu rumah tangga di Desa Beka, Kecamatan Marawola, Kabupaten Sigi. Hasil pelatihan menunjukkan adanya peningkatan keterampilan peserta dalam mengolah pangan lokal menjadi produk fungsional yang bergizi, disukai, dan berpotensi memiliki nilai jual. Brownies sukun substitusi ubi ungu yang dihasilkan memiliki tekstur lembut, rasa enak, dan aroma khas. Kegiatan ini tidak hanya memberikan keterampilan teknis, tetapi juga meningkatkan kesadaran masyarakat mengenai pentingnya diversifikasi pangan lokal. Kesimpulannya, produk brownies sukun substitusi ubi ungu berpotensi dikembangkan sebagai usaha rumahan berbasis pangan lokal yang mendukung peningkatan kesehatan dan ekonomi masyarakat.

Abstract

Bencana memiliki dampak yang dapat merugikan manusia, termasuk remaja yang merupakan masa emas dimana anak harus dibekali makanan yang cukup gizi sebagai acuan dasar untuk kelangsungan hidupnya yang akan datang tanpa mengalami gangguan yang akan mengganggu proses tumbuh kembang. Penelitian ini bertujuan untuk mengetahui ketahanan pangan, asupan zat gizi dan indeks masa tubuh (IMT) pada remaja pasca bencana di Kota Palu. Metode yang digunakan adalah survey deskriptif dan dilaksanakan di Sekolah Menengah Pertama (SMP) Negeri 3 Palu yang dekat dengan lokasi bencana gempa bumi, tsunami dan liquifaksi dengan total sampel 96 responden. Hasil penelitian menunjukkan bahwa remaja dengan kategori tahan pangan lebih besar (61,46%) dibandingkan dengan kategori rawan pangan dengan kelaparan (10,42%) dan kategori rawan pangan tanpa kelaparan (28,12%). Kemudian asupan energi dengan kategori kurang lebih besar (98,96%) dibandingkan dengan kategori cukup (1,04%) dan IMT siswa sebagian besar masuk dalam kategori underweight (58,33%). Kesimpulan bahwa remaja yang terkena dampak bencana masih termasuk dalam kategori tahan pangan namun asupan gizi kurang yang mengakibatkan berat badan kurang sehingga berpengaruh pada IMT kategori underweight.
