Abstract

Adolescent anemia is characterized by iron deficiency associated with menstruation and unbalanced nutrient intake. Red dragon fruit and moringa leaf flour are rich in iron, flavonoids, and phenolic compounds, which possess antioxidant properties and may help prevent anemia. Both ingredients can be developed into snack products such as ice cream, which is popular among adolescents. The objective of this study was to analyze the total flavonoid and total phenolic contents in red dragon fruit ice cream with the addition of moringa leaf flour. This research employed a Completely Randomized Design (CRD) with five formulations and two replications. Chemical analysis and The ice cream was prepared at the Laboratory of Aisyah University, Pringsewu, in January 2025. Data were analyzed using One-Way ANOVA followed by Duncan’s multiple range test. The results showed significant differences (p < 0.05) among the formulations. The highest total flavonoid content was observed in formulation F4 (10%) with 0.53 mg quercetin equivalent per gram (p = 0.001). The highest total phenolic content was found in formulation F0 (0%) with 5.48 mg gallic acid equivalent per gram (p = 0.002). In conclusion, the addition of up to 10% moringa leaf flour in red dragon fruit ice cream increased the total flavonoid content but decreased the total phenolic content. Therefore, this product has potential as a functional food rich in antioxidant compounds that may benefit adolescent girls.

Abstract

MTs Darul Hidayah is one of 7 schools whose teenage girls experience anemia at the highest rate of 70% in the Labuhan Maringgai Community Health Center Nutrition Program. The condition of iron nutritional anemia is caused by several interrelated factors, including the insufficient amount of iron in food due to low consumption of animal protein sources. Therefore, research was conducted which aimed to analyze the relationship between animal protein consumption patterns and the incidence of anemia in young women at MTs Darul Hidayah. The type of research is quantitative with an analytical survey method using a cross sectional design approach. The research was carried out in December 2022 at MTs Darul Hidayah. Sampling was carried out by purposive sampling. The population in this study were all 101 young women at MTs Darul Hidayah classes VII, VIII and IX. The total sample after screening was 69 young women who had anemia, where each class had a sample to represent and meet the inclusion criteria. Data on animal consumption patterns was obtained using the FFQ (Food Frequency Questionnaire) Form. Hemoglobin levels were measured using a Family Dr. The statistical test used for analysis is the Fisher Exact Test. The research results show that 69.6% of young women never consume animal protein, 53.6% have chronic energy deficiency and 55.1% have moderate anemia. The results of the statistical test analysis show that there is a relationship between animal protein consumption patterns and the incidence of anemia in young women at MTs Darul Hidayah Sriminosari East Lampung with a p-value = 0.007 (p-value <0.05). So, it is concluded that there is a relationship between animal protein consumption patterns and the incidence of anemia in young women at MTs Darul Hidayah.

Abstract

The aim of this research was to analyze the fiber content and antioxidant activity in pudding made from chia seeds and soybean juice with butterfly pea flower extract. The type of research is experimental research, with the RAL (Completely Randomized Design) method, which is carried out by adding chia seeds to making pudding with 5 treatments, namely F0 (0%), F1 (2%), F2 (4%), F3 (6%) and F4 (8%). Fiber content analysis using the AOAC method and antioxidant activity analysis using the DPPH method were carried out at the Lampung State Polytechnic Laboratory. Data processing was carried out by ANOVA and Duncan tests using SPSS 20. The results of statistical tests on fiber content showed that there was no effect of adding chia seeds to making pudding with a p-value = 0.106 even though there was an increase in each formula. The highest fiber content in F4 (8%) is 5.86% or 5.8 gr/100 gr pudding, which can meet daily fiber needs, namely 2.7 -3.7 gr/day. The results of statistical tests on antioxidant activity show that there is an effect of adding chia seeds to make pudding with a p-value = 0.000. The highest IC50 antioxidant activity was in F4 (8%) at 6090 µg/mL, even though the IC50 value was in the weak category, the smaller the IC50 value, the stronger the antioxidant was in warding off free radicals. Based on research results, the more chia seed formula added, the higher the fiber content and the higher the IC50 antioxidant activity.

Abstract

A leading cause of death in Indonesia, with a fatality rate as high as 17.0%, is breast cancer. Energy consumption affects how proteins are metabolized during the growth of muscle mass, and eating both plant- and animal-based proteins is important for maintaining and increasing muscle mass. The purpose of this study was to look into the relationship between the amount of muscle mass and the calorie intake and consumption of animal and vegetable proteins among breast cancer patients. Using the quota sampling technique, 56 out of 291 patients with stage 2 breast cancer, ages 22 to 26, were selected for the study sample The research design was cross-sectional. Muscle mass was measured with a Karada Scan, and data on energy intake, animal protein, and vegetable protein were collected using a 3x24-hour recall. Analysis was done using the Spearman Rank test. The average calorie intake was determined to be 888.28 kcal, with 18.43 g of animal protein and 21.10 g of vegetable protein. Animal and vegetable protein did correlate (p-value = 0.000 and 0.001, respectively) with muscle mass, however energy and muscle mass did not (p-value = 0.664).

Abstract

Background & Objective: The purpose of this study was to determine the relationship between nutritional status, carbohydrate intake, and fiber intake on blood sugar levels of type 2 diabetes mellitus patients at Wonogiri Health Center. Method: This study was conducted in December 2024. This research design uses analytic observational quantitative research with a cross sectional approach. The sample of this study were patients diagnosed with type 2 diabetes mellitus in the Wonogiri Health Center work area as many as 57 respondents. Bivariate analysis of this study using the Spearman Rho test. Result: his study shows that there is no significant relationship between age and blood sugar levels of respondents (Sig. > 0.05). This happens because each individual has differences regarding other risk factors such as lifestyle, physical activity that may affect the condition of type 2 diabetes mellitus patients. Conclusion: There is a significant relationship between age and blood sugar levels of respondents.

Abstract

Penyelenggaraan makanan yang hygiene dan sehat menjadi prinsip dasar penyelenggaraan makanan institusi. Hygiene sanitasi penjamah makanan merupakan syarat utama agar tidak kontaminasi penyakit terhadap makanan yang di sajikan. Salah satu faktor yang mempengaruhi praktik hygiene sanitasi penjamah makanan adalah pengetahuan dan sikap dalam pengelolaan hygiene sanitasi makanan. Penelitian ini bertujuan untuk mengetahui hubungan pengetahuan dan sikap penjamah makanan dengan pengelolaan hygiene sanitasi makanan pada rumah makan Puti Minang Pringsewu Kabupaten Pringsewu. Penelitian ini merupakan penelitian kuantitatif observasional dengan desain penelitian cross sectional. Total Populasi penelitian ini adalah  42 orang tenaga penjamah dan sampel pada penelitian ini adalah 32 penjamah makanan pada rumah makan Puti Minang Pringsewu yang telah dilakukan pada bulan Oktober s/d bulan November 2024 di rumah makan Puti Minang Pringsewu. Sampel pada penelitian ini adalah seluruh penjamah rumah makan Puti Minang Pringsewu dengan teknik pengambilan total sampling. Instrumen yang digunakan adalah kuesioner pengetahun, kuesioner sikap dan lembar check list pengelolaan hygiene sanitasi makanan. Analisis bivariat pada penelitian ini menggunakan uji Fisher’s Exact. Hasil penelitian didapatkan bahwa tidak ada hubungan antara pengetahuan (p=0,045) dan sikap (p=1,000) dengan pengelolaan hygiene sanitasi makanan. Diharapkan pihak rumah makan Puti Minang Pringsewu menfasilitasi tenaga penjamah untuk mengikuti pelatihan tentang hygiene sanitasi makanan, melakukan pengawasan dalam penerapan prinsip-prinsip hygiene sanitasi makanan dan menyediakan sarana prasarana atau fasilitis untuk dapat memenuhi syarat penerapan higiene sanitasi.

Abstract

Diet plays a significant role in improving heart function. Excess dietary cholesterol intake can elevate blood cholesterol level, which may lead to vascular narrowing, affect cardiac pumping capacity, and result in Congestive Heart Failure (CHF). Nutritional knowledge influences attitudes and behaviors in food selection, which subsequently affects an individual’s nutritional status. A lack of nutritional knowledge can negatively impact a patient’s compliance with dietary principles and meal planning. This study aimed to analyze the correlation between nutritional knowledge and dietary compliance toward total cholesterol level in CHF patients at Harapan Bunda Hospital of Bandar Jaya. This study employed a cross-sectional design. The population consisted of 180 CHF outpatients from the cardiology clinic, with a sample of 137 respondents determined using the Slovin formula. The research was conducted on November 26, 2024. Data on nutritional knowledge and dietary compliance were collected through questionnaires, while cholesterol level were measured using the Easy Touch GCU device. Data analysis utilized the Gamma correlation test. The study results showed that 58 respondents (42.3%) had moderate nutritional knowledge, 91 respondents (66.4%) adhered to their diets, and 101 respondents (73.7%) had normal cholesterol level. A significant negative correlation was found between nutritional knowledge and cholesterol level (p = 0.001, r = -0.834). Similarly, a significant negative correlation was found between dietary compliance and cholesterol level (p = 0.001, r = -0.938). This indicates that higher level of nutritional knowledge and dietary compliance are associated with lower, more normal cholesterol level.
