Abstract

ABSTRACT With the rise in cases of stunting among children, the West Aceh Regency government is here to help minimize the number of stunting that occurs through the launch of the Healthy Kitchen to Overcome Stunting (DASHAT) program which covers up to 48 Muslim villages in West Aceh Regency. The aim of this research is to see how DASHAT is implemented in West Aceh Regency which refers to the theory of Donald Van Meter and Carl Van Horn. The research uses qualitative research methods by collecting data through observation, documentation and interview results. The results of this research show that the implementation of DASHAT in West Aceh from several villages in West Aceh Regency, in fact, some villages are still in the process of implementing DASHAT. However, for the realization of this program, there are already selected villages that have become a reference for other villages. Some of DASHAT's programs include outreach, education and cooking together at the location, while the participants of the DASHAT Program are mothers, especially mothers, so they can provide good and correct food according to the rules of what's on my plate. ABSTRAK Maraknya kasus stunting terhadap anak, pemerintah Kabupaten Aceh Barat hadir untuk membantu meminimalisir angka stunting yang terjadi melalui peluncuran program Dapur Sehat Atasi Stunting (DASHAT) yang mencakup hingga 48 desa muslimin di Kabupaten Aceh Barat. Tujuan dari penelitiann ini adalah untuk melihat bagaimama implementasi dari DASHAT yang ada di Kabupaten Aceh Barat yang merujuk pada Teori Donald Van Meter Dan Carl Van Horn. Penelitian menggunakan metode penelitian kualitatif dengan pengumpulan data secara obeservasi, dokumentasi dan hasil wawancara. Hasil penelitian ini menunjukkan bahwa Implementasi DASHAT di Aceh Barat dari beberapa desa yang ada di Kabupaten Aceh Barat secara fakta sebagian desa masih proses dalam tahapan mengimplementasikan DASHAT, namun perealisasian program ini sudah ada desa yang terpilih dan menjadi referensi bagi desa lainnya. Beberapa program DASHAT diantaranya sosialisasi, edukasi dan masak bersama dilokasi sedangkan partisipan dari Program DASHAT yaitu ibu-ibu terkhususnya agar dapat menyediakan makanan yang baik dan benar sesuai dengan kaidah isi piringku.

Abstract

This article or article aims to understand how to implement the gampong annual development plan in formulating development strategies and policies as well as formulating the Gampong Government Work Plan program for 1 (one) year. The problem is focused on the obstacles that occur during the preparation of the work plan of the gampong government by the DPMG agency and the gampong apparatus. In order to approach this problem, Goldratt's theoretical reference is used. Goldratt believes that every organization has obstacles that hinder performance, therefore Goldratt developed five sequential steps so that the process of repairing a problem that occurs is more focused and gives positive results for the previous system. (1) Identification of constraint resources on the system, (2) Designing strategies to fix constraints, (3) Linking other constraint sources to support the designed strategy, (4) Performing constraints to improve system constraint performance, (5) Returning to the first step for continuous improvement. The data were collected through Interview, Observation, and Documentation. This study concludes that in carrying out the work plan activities of the gampong government according to the Ministry of Home Affairs No. 114 of 2014 that in order to achieve national development priorities and targets, annual planning synergies are needed between the central government and local governments as well as between local governments. Then analyze the process of achieving the maximum implementation of gampong development programs/activities and are easily identified which refers to the Minister of Home Affairs Regulation No. 114 of 2014.

Abstract

Community empowerment is an effort to make people empowered and independent. Communication has an important role in the context of development and social change. Communication in empowerment is directed at raising the motivation and potential of every member of the community to rise up and be empowered to change their lives for the better. The purpose of this study is to examine and analyze development communication strategies carried out by the West Aceh District Government, especially Arongan Lambalek District. The research method used is descriptive qualitative, with data collection techniques namely observation, interviews and documentation. The results showed that there were three development communication strategies carried out by the local government in realizing women's empowerment from the processing of water hyacinth plants, including choosing the right media such as social media (facebook, instagram, youtube), through events or exhibitions of MSME products. Furthermore, conducting instructional design through socialization and special training to hone the potential and creativity of women in producing quality water hyacinth products. The last strategy is to seek community participation, this is aimed at embracing every woman so that she can earn independently from the sales of products.

Abstract

Lumi-lumi fish (Harpadon nehereus) is an endemic fish commonly found in West Aceh, known for its high protein content and various minerals. Crackers are a food often consumed as a snack, a complement to dishes, or as an appetite stimulant, with a wide variety of consumers ranging from children to adults. However, the content of crackers made from tapioca is known to have a very low protein content of 0.5%. The addition of lumi-lumi fish is expected to increase the protein content of crackers. This study aims to identify the best formulation and analyse the nutritional content of Lumi-lumi fish crackers. The research method is arranged in a one-factorial Completely Randomised Design, which consists of 4 different levels of Lumi-lumi fish concentration treatment (P0: 0%, P2: 15%, P3: 20%, and P4: 25% Lumi-lumi fish)—then identified the expansion power of crackers between treatments. Next, a hedonic method sensory test was conducted to obtain the selected formulation through a scoring test. The chosen products were analysed for nutritional content in comparison to a control group, namely P0 (0% Lumi-lumi fish). Sixty untrained panellists conducted sensory testing. The results showed a significant effect on the cracker expansion power (P = 0.001), with the highest result obtained by treatment P3 at 58.54%. In the scoring test, the selected Lumi-lumi fish crackers were treatment P3. Then based on the results of nutritional content, it was found that the addition of 25% of Lumi-lumi fish meat was able to increase the nutritional content compared to the control treatment (PO), namely the ash content from 0.83 ± 0.39% to 1.36 ± 0.25%, fat content from 0.42 ± 0.08% to 5.81 ± 0.39%, protein content from 7.16 ± 0.55% to 8.58 ± 0.17% and fiber content from 1.47 ± 0.14% increased to 1.81 ± 0.21%. However, there was a decrease in carbohydrates from 90.11 ± 0.59% to 82.44 ± 0.54%. For the analysis of water content, it follows the rules of SNI 01-2713-2009. To produce Lumi-lumi fish crackers with the best organoleptic acceptance, it is recommended to use a concentration of Lumi-lumi fish of 25%.

Abstract

Kegiatan pengabdian kepada masyarakat (PkM) ini mendokumentasikan upaya pendampingan terhadap Nutrition Fair 2023 yang diselenggarakan dalam rangka menyambut Hari Gizi Nasional (HGN) ke-63 di Universitas Teuku Umar (UTU). Peringatan HGN menjadi momentum strategis untuk menguatkan upaya pencegahan masalah gizi di Indonesia. Kegiatan ini bertujuan utama untuk meningkatkan kesadaran dan pemahaman di kalangan civitas akademika UTU mengenai signifikansi gizi yang baik dan seimbang dalam mendukung pencapaian gaya hidup sehat dan kualitas hidup yang optimal. Metode pelaksanaan PkM melibatkan partisipasi langsung tim pengabdi sebagai juri pada pameran makanan sehat dan pemilihan stan terbaik dalam kegiatan Nutrition Fair. Lokasi kegiatan adalah di Kampus UTU, Meureubo, Meulaboh, pada tanggal 14-16 Februari 2023. Pendampingan diawali dengan sosialisasi dan edukasi mengenai kriteria penilaian, meliputi aspek gizi, kebersihan, kreativitas, dan presentasi produk. Hasil kegiatan menunjukkan tingginya animo dan partisipasi aktif dari berbagai elemen civitas akademika (dosen, mahasiswa, staf, dan tenaga pendidik) dalam kegiatan sosialisasi gizi dan pameran. Pameran makanan sehat berperan efektif dalam memberikan pemahaman langsung dan interaktif mengenai pola makan seimbang (karbohidrat, protein, lemak, serat, vitamin, mineral) yang krusial untuk menjaga berat badan sehat, mendukung pertumbuhan optimal, dan mencegah penyakit terkait gizi. Disimpulkan bahwa kegiatan pendampingan ini berhasil mewujudkan tujuan peningkatan kesadaran gizi , dan partisipasi kolektif UTU menjadi langkah positif dalam menciptakan lingkungan kampus yang mendukung penerapan gaya hidup sehat.

Abstract

Nutritional problems, particularly stunting, remain a serious challenge in Indonesia, including in Aceh Province, which ranks fifth in the highest stunting prevalence nationally. One of the contributing factors is the suboptimal utilization of local food resources that actually have high nutritional potential and are easily accessible to the community. This community service activity aims to increase the knowledge and awareness of the people of Purwosari Village, Nagan Raya Regency, regarding the importance of utilizing local food as an effort to improve family nutrition, especially for preventing stunting in children. The implementation method used a qualitative approach through nutrition education, demonstrations of processing nutritious local foods, and interactive discussions with the community. The results of the activity showed an increase in community understanding of the concept of balanced nutrition, the importance of animal protein for children's growth and development, and proper methods of processing local food. In addition, innovations in local food products such as modified cassava flour (mocaf) and grilled eggplant with fish-based dishes received positive responses as opportunities for small-scale family businesses. This activity is in line with the theory of local food security and previous studies emphasizing the role of local food in improving the nutritional status of rural communities. Therefore, optimizing the use of local food can be an effective strategy in supporting food security and reducing stunting rates in rural areas.
