Abstract

Arabica coffee is coffee that has a special taste that is more complex than the Robusta, Ekselsa, or Liberica coffee types. The distinctive taste is caused by the presence of secondary metabolite compounds present in coffee cherries. The content of secondary metabolite compounds in coffee is formed when it becomes coffee cherries, in the post-harvest process, and the roasting process of coffee beans. Several regions in Indonesia are coffee bean producing areas, including Aceh, Bogor, Bandung, Situbondo and Temanggung. The purpose of this research was to determine the content of phytochemical compounds, total phenol content, and antioxidant activity in the five samples of Arabica coffee beans with the natural process which were roasted at the same light to medium roasting level. The results showed that the water content ranged from 0,867 %-1,01 %, lightness 19,66 – 20,11, the degree of acidity 5,15 – 5,33, and the total dissolved solids were 1,84 – 1,96 °Brix. Phytochemical analysis on the five samples showed that each sample contained flavonoids, tannins, saponins, steroids, triterpenoids, and alkaloids with relatively the same value qualitatively. The analysis showed that the total phenol content was 8 316,52 – 8 576,76 mg/kg gallic acid equivalent. The antioxidant activity of samples from Bandung and Situbondo was not significantly different and had the highest activity among other samples. The results of the analysis of total phenol content and antioxidant activity showed a high degree of correlation between samples. ABSTRAKKopi Arabika merupakan kopi yang memiliki cita rasa khas dan lebih kompleks dibandingkan dengan jenis kopi Robusta, Ekselsa, atau Liberica. Rasa yang khas tersebut disebabkan oleh adanya senyawa metabolit sekunder yang terdapat pada buah kopi. Kandungan senyawa metabolit sekunder pada kopi terbentuk saat menjadi buah kopi, pada proses pascapanen, dan proses penyangraian biji kopi. Beberapa daerah di Indonesia merupakan daerah penghasil biji kopi, antara lain Aceh, Bogor, Bandung, Situbondo dan Temanggung. Tujuan dari penelitian ini adalah untuk mengetahui kandungan senyawa fitokimia, kandungan total fenol, dan aktivitas antioksidan pada kelima sampel biji kopi Arabika dengan proses natural yang disangrai pada tingkat penyangraian yang sama yaitu ringan hingga medium (light to medium). Hasil penelitian menunjukkan bahwa kadar air berkisar antara 0,867 %-1,01 %, kecerahan 19,66 - 20,11, derajat keasaman 5,15 – 5,33, dan total padatan terlarut adalah 1,84 – 1,96 Brix. Analisis fitokimia pada kelima sampel menunjukkan bahwa setiap sampel mengandung flavonoid, tanin, saponin, steroid, triterpenoid, dan alkaloid dengan nilai kualitatif yang relatif sama. Karakterisasi senyawa total fenol dilakukan dengan menggunakan metode Folin-Ciocalteu dengan senyawa asam galat sebagai pembanding. Hasil analisis menunjukkan bahwa kandungan total fenol setara dengan 8 316,52 – 8 576,76 mg/kg asam galat. Analisis aktivitas antioksidan sampel dilakukan dengan metode DPPH (2,2-difenil-1-pikrilhidrazil) dengan asam askorbat sebagai standar perbandingan. Aktivitas antioksidan sampel dari Bandung dan Situbondo tidak berbeda nyata dan memiliki aktivitas paling tinggi di antara sampel lainnya. Hasil analisis kandungan total fenol dan aktivitas antioksidan menunjukkan tingkat korelasi yang tinggi antar sampel.

Abstract

Fishery commodities are one of the categories of goods that are easily damaged so that quality is maintained as a key factor in shipping goods. This research analyze on the scheme of determining the mode of transportation using Break Even Point (BEP) and  analyzing the optimization of the route by minimizing the distance traveled by using the Traveling Salesman Problem (TSP) method. The results of this research is optimizing the mode of transportation using private modes with the number of trips under 576 trips and the optimal route of travel that is Pandeglang-Jakarta-Bogor-Pelabuhan Ratu-Pandeglang of 408 Km.

Abstract

Pasar kemang merupakan salah satu pasar stimulus yang dimiliki Perumda Pasar Tohaga Kabupaten Bogor. Pasar kemang saat ini masih dalam tahap peramaian sehingga membutuhkan stimulus untuk menghadirkan konsumen untuk meningkatkan jumlah pembeli. Salah satu faktor yang dapat meningkatkan jumlah pembeli adalah stabilitas dari harga komoditi. Informasi harga komoditi kedepannya diperlukan oleh pihak manajemen untuk mempersiapkan kebutuhan sumberdaya di pasar. Kegiatan pelatihan aplikasi POM QM for Windows version 5.0 di Pasar Rakyat Kemang bertujuan untuk memberikan edukasi terkait penggunaan aplikasi untuk merencanakan harga jual komoditas kedepannya sehingga pihak manajemen pasar dan pedagang dapat bersinergi dalam mempersiapkan kebutuhan sumberdaya terkait dengan harga jual komoditas. Tahapan kegiatan pengabdian ini terdiri dari identifikasi kebutuhan, pelatihan penggunaan aplikasi dan evaluasi kegiatan pelatihan. Berdasarkan hasil pelatihan 10 orang pedagang dan manajemen pasar maka didapatkan peningkatan rata-rata nilai  pre-test sebesar 35 menjadi nilai post-test sebesar 77,5. Berdasarkan peningkatan nilai pre-test dan post-test diharapkan aplikasi ini dapat digunakan oleh pihak pasar tohaga didalam meramalkan harga jual komoditas sehingga pengambilan keputusan terkait kebutuhan sumberdaya dapat dikelola dengan optimal.

Abstract

The need for chicken eggs is inseparable from the supply chain network. Green aspects in fulfilling supply chain networks have an impact on the environment such as market cleanliness and egg quality. The current condition of Kemang Market in supply chain management has not led to environmental aspects. The purpose of this study is to identify priority criteria that can be applied to green supply chain management activities in Kemang Market, Bogor Regency. The method used is Fuzzy Analytical Hierarchy Process (AHP) to determine the main criteria in applying green supply chain management practices to chicken eggs in Kemang Market, Bogor Regency. The results showed that the main criteria used in the GSCM practice of chicken eggs are top management support in implementing supply chain operational activities, namely through clean market environment programs and monitoring systems related to egg arrival and dispensing systems in the market.

Abstract

The increasing stock condition of cotton combed 30s t-shirts causes Convection to require optimal production planning, influenced by demand, safety stock, and selling price. The analysis of forecasting demand for t-shirts obtained a need for 217 t-shirts using the Multiplicative Decomposition forecasting method with MAD = 22.47 and MAPE = 0.17. Based on demand data for 1 year, the Safety Stock that must be maintained is 126 shirts/month or 3 shirts/week. The optimal production defuzzification results are 369 t-shirts with 81 fuzzy rules used. The Master Production Planning (MPS) directs the production schedule to be carried out in January, scheduled for the 4th week of December the previous year, as many as 123 shirts and ended on the third Sunday in January as many as 92 shirts to maintain stock conditions and meet the demand of consumer.

Abstract

Rice stalls are one of the Small and Medium Enterprises (SMEs) that have significantly contributed to efforts to improve the economy. This community service activity aims to increase the ability of SME rice stalls in Bogor to manage Good Food Production Methods (CPMB) to improve marketing performance. The results of the pre-test and post-test identification revealed three potential rice stalls. The evaluation results for the training activities showed that there were three possible rice stalls with the highest post-test results, namely the Pa de Umar rice stall (score 80.00), Kabita (score 73.33), and Selamat (score 70.00). Based on the three rice stalls above, selecting potential rice stalls for mentoring activities was carried out using the Bayes method, and the Pa de Umar Rice Stall was chosen with an alternative value of 4.40. Implementing the CPMB training is expected to increase the understanding and knowledge of Bogor City rice stall participants so that business actors can improve business performance and profits.

Abstract

ABC Egg Agents ability to develop its business activities cannot be separated from the purchasing power of consumers to buy eggs of the appropriate quality and quantity. In the business of selling chicken eggs, the factors that can increase profit are eggs' selling price. One of the reasons for fluctuating sales conditions at egg agents is the selling price is too high, resulting in a decline in sales. The results of hypothesis testing show the acceptance of Hypothesis one, which offers a relationship between the selling price and the demand for eggs. Increasing selling prices can affect the market because the value of determination (R2) is above 80%, which is 91.7% which describes a solid negative relationship. This condition shows that if the price increases, the demand will decrease. This condition indicates that the Egg Agent must manage the selling price properly to increase the demand.

Abstract

Chicken eggs are a source of food with animal protein content consumed by the people of Indonesia. The availability of chicken eggs in the city of Bogor is inseparable from the ability of ABC Egg Agents to distribute products to end consumers. One of the main factors in managing the chicken egg business is the ability to identify the number of consumer requests by ABC Egg Agents. One of the demand management is done with the right forecasting technique. Based on the results of data trend analysis, it is found that the type of demand data is time series so that the method can be used to forecast demand. Based on the comparison of the value of the level of accuracy (error), the Moving Average method with N = 3 has Mean Absolute Deviation (MAD) = 552,74 and Mean Absolute Percentage Error (MAPE) = 0,14. The results of the analysis of the level of accuracy, the method chosen is the Moving Average with the results of forecasting the demand for January 2021 of 3640 crates.

Abstract

Penentuan jumlah kendaraan memiliki peranan yang sangat penting dalam kelancaran pengiriman barang. Strategi optimalisasi yang efektif terhadap pengalokasian jumlah kendaraan dengan memperhatikan kapasitas yang diangkut oleh kendaraan dengan menggunakan metode kuantitatif Penelitian ini menggunakan pendekatan statistik dengan menggunakan uji regresi linier, uji hipotesis (Uji F), dan uji determinasi dan korelasi. Hasil penelitian menunjukkan bahwa terdapat hubungan antara volume kiriman dengan jumlah kendaraan. volume kiriman barang berpengaruh terhadap variabel jumlah kendaraan sebesar 31,4%.

Abstract

Cabai merah merupakan salah satu komoditas pertanian yang sering mengalami fluktuasi harga jual baik ditingkat petani maupun konsumen. Fluktuasi harga ini dianggap menjadi salah satu penyebab terjadinya inflasi di Indonesia. Penelitian ini bertujuan untuk meramalkan harga jual cabai merah di tingkat konsumen berdasarkan data penjualan cabai merah di Pasar Rakyat Kemang Perumda Pasar Tohaga Kabupaten Bogor. Pada penelitian dilakukan perbandingan dua metode peramalan kuantitatif yaitu Moving Average dan Exponential Smoothing. Hasil penelitian menunjukan bahwa metode Exponential Smoothing memiliki hasil lebih baik, dimana nilai ukuran kesalahan MAD, MAE, dan MAPE memiliki nilai yang lebih kecil dibandingkan Moving Average sehingga harga jual cabai merah di periode Januari 2022 diperkirakan sebesar Rp. 27.579,-
