Abstract

This study investigated the effect of foaming agent type and concentration on foam characteristics during foam mat drying and the physicochemical and antioxidant properties of red dragon fruit powdered drink. Foaming agents, including soy lecithin, fresh egg whites, egg white powder, and whey protein concentrate, were tested at different concentrations (5%, 10%, and 20%). Results showed that soy lecithin produced the most stable foam, effectively preserving bioactive compounds such as phenolics and flavonoids, which contributed to higher antioxidant activity (measured by DPPH and FRAP methods). Whey protein concentrate and fresh egg whites enhanced foam overrun and moisture retention, leading to powders with lower moisture content and higher solubility. The optimal concentration of foaming agent was 10%, which resulted in the best foam stability, antioxidant preservation, and overall product quality. This study highlights the importance of selecting appropriate foaming agents and concentrations to improve the quality and antioxidant properties of red dragon fruit powdered drinks for food applications.

Abstract

UKM Sehati Yogurt Purwokerto produces good-quality yogurt but faces challenges in product stability, shelf life, and market competitiveness. To address these issues, product diversification using a konjac glucomannan stabilizer is proposed to align with consumer trends. However, marketing also presents a significant obstacle. This community service program aims to transfer yogurt production technology using konjac stabilizer and offer digital marketing guidance to enhance market reach. The program involves two steps: technology transfer and marketing support. The technology transfer includes training for the UKM owner and community on using the Konjac glucomannan stabilizer in stirred yogurt production. The digital marketing support involves providing training on creating promotional content for social media and utilizing online marketplaces for sales. The outcomes of this program include the successful production of new, higher-quality yogurt products with the added health benefits of konjac fiber. Additionally, the UKM owner and community gained new skills in both production and digital marketing. After the digital marketing training, the SME actively engaged in online sales, broadening its consumer reach. This initiative is expected to increase sales significantly through product diversification and expanded digital marketing efforts.

Abstract

Baturraden people use a combination of red ginger rhizomes and lemongrass leaves for the treatment of masuk angin. This study aims to evaluate the quality profile of red ginger and lemongrass crude drug, total flavonoid content (TPC), total phenolic content (TFC), and the antimicrobial activities of their combination water extracts. The quality of both crude drugs was standardized to Indonesian Herbal Pharmacopeia (IHP). The TPC and TFC of red ginger and lemongrass combination in five different ratios were determined by standard UV-Vis spectrophotometry methods. The antimicrobial activity was evaluated using the microdilution method against patient-isolated multidrug-resistant (MDR) Staphylococcus aureus and Candida albicans. Lemongrass crude drugs were of good quality, while red ginger did not meet the acid-insoluble ash and volatile matter content requirements. The combination showed the highest TFC in a 75:25% ratio, while that of TPC was 50:50%. All combinations of lemongrass and red ginger extracts inhibited MDR Staphylococcus aureus and Candida albicans with a minimum inhibitory concentration (MIC) of 0.16 mg/ml. Candida albicans were more susceptible to the combination extracts. Red ginger rhizomes and lemongrass leaves 75:25% and 50:50% ratios showing comparable effects to the respective components. Hence, the combination of red ginger and lemongrass in 75:25 and 50:50% ratios potentially developed further for their masuk angin efficacy.

Abstract

Bunga rosella dapat dikonsumsi sebagai minuman teh karena berpotensi menjadi sumber antioksidan alami. Akan tetapi setelah pemanenan bunga rosella sangat mudah membusuk dikarenakan tingginya kandungan air, sehingga diperlukan pengawetan. Pengeringan menjadi alternatif pengawetan bunga rosella yang sangat tergantung dari metode dan temperatur yang digunakan. Penelitian ini bertujuan mengetahui pengaruh metode pengeringan terhadap karakter fisik, Total Phenolic Content (TPC), Total Flavonoid content (TFC) serta aktifitas antioksidan bunga rosella. Metode penggeringan menggunakan metode cabinet drying pada suhu 30oC (CD30); 50oC (CD50); 70oC (CD70) dan sun drying (SD). Karakter fisik sample kering yang di amati adalah moisture content dan higrocopicity. Analisis kadar TPC dilakukan dengan menggunakan metode spectrofotometri dengan menggunakan reagen Folin dan TFC menggunakan komplek AlCl3. Analisis aktifitas antioksidan menggunakan dua metode yaitu penangkapan radikal bebas DPPH dan metode Feri Reduction Antioxidant Power (FRAP). Hasil penelitian menunjukkan bahwa perbedaan metode pengeringan memberikan perbedaan nyata (P<0,05) terhadap karakter fisik bunga rosela kering, kecuali sample CD30 yang tidak masuk dalam standar simplisia kering (SNI 01-7085-2005) karena moisture content yang masih tinggi(>10%). Kadar TPC sample CD50 (10,72± 0,06 mg GAE/g), lebih tinggi dari pada sample lain (p<0.05), akan tetapi kadar TFC tidak ada perbedaan (p>0.05). Sedangkan hasil penangkapan radikal bebas DPPH semua sampel rosella kering yang menggunakan cabinet drying lebih tinggi dibandingkan dengan pengeringan matahari (p<0.05), sedangkan hasil FRAP semua sampel rosella kering tidak ada perbedaan (p>0.05). Dari penelitian ini dapat disimpulkan pengeringan menggunakan metode cabinet drying pada suhu 50oC memberikan kadar TPC dan aktifitas antioksidan metode radikal bebas DPPH yang lebih baik dibandingkan dengan metode lain.

Abstract

Leaves and flowers of rose periwinkle (Catharanthus roseus (L.) G. Don) are used for traditional diabetes management in Banyumas, Indonesia. This study evaluated the selected quality characters, total flavonoid content (TFC), total phenolic content (TPC), and the antioxidant activities of rose periwinkle crude drugs. Plant materials were collected from three locations in the Baturraden and Sumbang subdistricts and dried using an artificial heat drying rack to obtain crude drugs. The crude drugs' quality characters, TFC, TPC, and antioxidant activities were evaluated using standard methods. The quality characters of the crude drugs were specified as follows: loss on drying (9.12±0.50%), total ash (8.20±0.71%), acid-insoluble ash (0.24±0.06%), water extractable (28.82±6.77%), and ethanol extractable (35.17±1.79%). The chromatographic profile was generated from chloroform-methanol (8:2) separation over silica GF254. The TFC and TPC were 7.66±0.48 mg Quercetin equivalent (QE)/g and 7.27±1.07 mg Gallic acid equivalent (GAE)/g, respectively. The antioxidant activities were 148.95±12.00 Trolox equivalent (TE)/g for DPPH radical scavenging activity and 651.14±77.91 mM TE/g for FRAP. The DPPH radical scavenging activity and FRAP were weakly to moderately correlated to TPC and TFC. The phenolic compound and flavonoid contents of physicochemically-characterized rose periwinkle were not significantly correlated to their antioxidant activities.

Abstract

A polyherbal formulation was developed from java tea (Orthosiphon aristatus (Blume) Miq.), turmeric (Curcuma longa L.), seed-under-leaf (Phyllanthus niruri L.), cinnamon (Cinnamomum verum J. Presl), and ginger (Zingiber officinale Roscoe). This study aimed to standardize crude drugs, optimize polyherbal formulations, and evaluate the interaction effect of the crude drug mixture. Standardization followed these methods and compared them with the Indonesian Herbal Pharmacopeia (IHP) standards. The crude drugs were mixed in 26 different ratios, and each formulation was extracted using the decoction method. The antioxidant activities of the extracts were evaluated using 2-diphenyl-2-picryl hydroxyl scavenging (DPPH) radical scavenging activity and ferric-reducing antioxidant power (FRAP) assays. The optimum formula was obtained by antioxidant activity-based prediction using the simplex lattice design (SLD) method. The interaction effects of crude drug mixtures were determined using a statistical comparison method for the predicted and obtained antioxidant activities. Crude java tea, turmeric, cinnamon, and ginger were of good quality. The five-component formulation with optimum antioxidant activity consisted of java tea, turmeric, seed-under-leaf, cinnamon, and ginger crude drugs in a ratio of 20-20-40-10-10 with interaction effects of additive toward DPPH radical scavenging activity (7.05±0.94 µmol TE/g) and antagonistic toward FRAP (19.37±0.94 µmol TE/g). Formula 21 (mixture of java tea and seed-under-leaf crude drugs) showed the highest DPPH scavenging activity (6.39±0.16 µmol TE/g) with synergistic effects, while the synergistic, highest FRAP (23.74±0.03 µmol TE/g) was shown by Formula 13 (mixture of seed-under-leaf and ginger crude drugs).

Abstract

The diversity of medicinal plants found in Banyumas Regency has encouraged the Faculty of Pharmacy at Muhammadiyah University of Purwokerto to develop medicines from these natural ingredients actively. This is demonstrated through research projects, such as student final assignments, in this field. However, there are still many students from the Faculty of Pharmacy, UMP, who exhibit a gap between their high enthusiasm and limited in-depth knowledge of local medicinal plants, resulting in a weak scientific and cultural basis for their research in their final assignments. This community service activity aimed to enhance students’ knowledge and understanding of local medicinal plants, thereby supporting the quality and progress of their final assignments, which included topics related to herbal medicines. The method employed was a knowledge-refreshing program through education and hands-on practice. The activity involved 18 students (14 undergraduate and 4 postgraduate) and was conducted in July 2025. The stages included a pretest, education using leaflets and posters, field plant identification, and a Posttest. The program’s effectiveness was analyzed statistically using a T-test to compare the pretest and Posttest scores. The results indicated a highly significant increase in knowledge. The average Posttest scores (99.3 - 100.0) far exceeded the pretest scores (80.0 - 83.3), with a p-value < 0.05. This proves that the applied educational and practical methods were highly effective. A positive impact of this initiative was observed in the accelerated completion of final projects, where 7 students successfully defended their undergraduate theses with grades of A/A- and 4 other students completed their proposal seminars. In conclusion, this community service significantly improved students’ knowledge of local medicinal plants. The combined approach of visual education and field-based identification practice proved effective in equipping students with a solid understanding of their research subjects, which ultimately contributed directly to the timely and quality completion of their final assignments.

Abstract

This community service program aims to address the problem of excessive oil content in MOCAF dumpling chips produced by the Bawang Ceria Farmer’s Women Group in Banjarnegara. The previous manual draining process was found to be ineffective, causing the product to turn rancid quickly and have a short shelf life. As a solution, the implementation team introduced an oil spinner machine based on a centrifugal system equipped with automatic speed control. The program was carried out through socialization, hands-on training, and a joint technology trial with the member group. The results indicate that the spinner effectively reduced oil content by approximately 10%, producing chips with a crispier texture and a more appealing appearance. The integrated dimmer and automatic timer features ensured stable processing and consistent product quality. Although a slight decrease in savory flavor was noted due to reduced oil content, the overall product remained well accepted by consumers. Furthermore, the training activities significantly enhanced the members’ understanding and technical skills, as reflected in an increase in knowledge level from 24.61% to 80.48%.
