Abstract

The prevalence of diabetes mellitus has been increasing. This study aimed to develop Food for Special Dietary Use (FSDU) for individuals with diabetes. Different combinations of food ingredients were added to the basic formula, consisting of brown rice and mushroom flour in a ratio of 70% and 11%. The combinations used in the formulation were F1 = 9% moringa and fish flour, F2 = 10% carrot and fish flour, F3 = 11% moringa and tempeh flour, and F4 = 12% tempeh flour. The results showed that the FSDU contained energy, fat, and fiber ranging from 391.33–404.33 Kcal, 5.53–7.75 g, and 4.22–7.60 g per 100 g product, respectively. These values were slightly higher than the respective value of a commercial product. The panelists expressed positive acceptance of the developed FSDU products, with F2 chosen as the most preferred. The developed FSDU exhibited lower scores for feeling of hunger, desire to eat, and prospective food consumption compared to the commercial product. The product provided a feeling of fullness similar to the commercial counterpart. In conclusion, the FSDU based on brown rice and oyster mushroom with an additional 10% carrot fish flour would be the most preferred option for further use as FSDU for diabetics.

Abstract

This research aimed to analize tourist satisfaction and trust in influencing tourist behavior intentions of visiting tourists to Nusa Penida Island Klungkung Bali during the Covid-19. The theory of consumer behavior is used with several concepts namely concept of destination attributes, trust, perceived risk, and behavioral intentions of tourists. This research was designed with a quantitative approach with a survey method of 100 foreign tourists visiting Nusa Penida. The data were analized by Partial Least Square (PLS). The results show that tourism attributes have a positive and significant effect on tourist trust revisit intentions. The tourist trust has a positive significant effect on revisit intentions. Perceived risks have a positive and significant effect on tourist trust and revisit intentions. This research foud out that tourists traveling do not want to take the risk in these activities. Based on these results, it can be suggested to increase the role of trust in mediating the relationship between perceived risk and revisit intention.

Abstract

This article is aimed to reinterpret the ritual of Ketupat War based on practical consciousness into reflexive consciousness to preserve agricultural tradition in Kapal Village, Badung Regency. This consciousness could be created by deconstructing the pragmatic materialistic perspective by promoting local knowledge Tri Hita Karana, philosophy on the harmonious relationship among human being, human and nature, and God. This research applied a descriptive qualitative method and structuration approach from Giddens to explain the ritual Perang Ketupat as reflexive consciousness. The research shows that the local people at Kapal Village interpret this ritual as practical consciousness without knowing the function and the meaning of the ritual. It means that ritual is only performed annually as a routine tradition. Therefore, reflexive consciousness needs to be nurtured through constructing the community`s awareness of this ritual as a tourist attraction, so that they can get the economic benefit (touristic meanings). In other words, tourism becomes a melting-pot producing space of the triple sections among nature, culture and tourism which is called Eco-Cultural Tourism Landscape (ECTL).

Abstract

Di era kemajuan teknologi, generasi milenial tidak terlepas dari internet terutama saat merencanakan perjalanan wisata. Melalui informasi atribut produk wisata yang diunggah di media sosial, akan terjadi electronic word of mouth yang memberikan kemudahan bagi calon wisatawan untuk menentukan perjalanan wisatanya. Penelitian ini bertujuan untuk mengetahui pengaruh electronic word of mouth dan atribut produk wisata terhadap keputusan berkunjung wisatawan milenial ke Desa Wisata Tenganan Pegringsingan. Dalam penelitian ini, penentuan sampel menggunakan metode purposive sampling dengan jumlah sampel sebanyak 100 responden. Pengumpulan data menggunakan observasi, kuesioner, wawancara, dokumentasi, dan studi kepustakaan. Teknik analisis data yang digunakan yaitu deskriptif kuantitatif dengan analisis regresi linear berganda melalui bantuan sofware SPSS versi 25.0. Hasil penelitian ini menunjukkan bahwa: (1) Electronic word of mouth dan atribut produk wisata secara parsial berpengaruh positif dan signifikan terhadap keputusan berkunjung wisatawan milenial ke Desa Wisata Tenganan Pegringsingan, (2) electronic word of mouth dan atribut produk wisata secara simultan berpengaruh positif dan signifikan terhadap keputusan berkunjung wisatawan milenial ke Desa Wisata Tenganan Pegringsingan.
