Abstract

National development is successful when quality human resources are available, which requires early preparation during adolescence with good nutritional status. Nutritional issues among adolescents in West Java Province, particularly stunting (24.1%) and overweight (16.9%) among individuals aged 13–15 years, remain high. These issues are influenced by suboptimal socioeconomic and demographic factors, as well as the low quality and diversity of food consumption, especially in animal-based foods (24%) and fruits and vegetables (16.9%). This study aimed to analyze the relationship between socioeconomic factors, demographics, and food consumption quality with nutritional status. A cross-sectional design was employed using primary data from 88 participants. The study was conducted in February 2024 at SMP Negeri 1 Cibungbulang and SMP Negeri 2 Cibungbulang. Participants were selected through purposive sampling based on inclusion and exclusion criteria. Inclusion criteria included grade VII students willing to participate in the study, while exclusion criteria included those unwilling to participate or with incomplete data.Statistical tests employed included descriptive analysis and relationship tests (Spearman and Chi-Square tests). The findings revealed significant relationships between maternal education level (p=0.013) and maternal employment status (p=0.041) with adolescent nutritional status. Additionally, food consumption quality showed a significant relationship with nutritional status (p=0.016). In conclusion, socioeconomic factors, demographics (maternal education level and employment status), and food consumption quality play critical roles in achieving optimal nutritional status among adolescents.

Abstract

This study aimed to find a functional food formulas (FFF) based on local food as breakfast product, that can be accepted organoleptically, nutritious, and contain antioxidants for overweight/obese adolescents. This study was laboratory experiment, randomized complete design and using five level of one factor of treatment (proportion of carrot: pumpkin were F1 7.14%:19.64%; F2 8.93%:17.86%; F3 10.71%:16.07%; F4 12.50%:14.29%; and F5 14.29%:12.50%). The result showed that 80-100% of semi-trained panelis accepted all FFFs (F1, F2, F3, F4, and F5) organoleptically. There was a significant effect of level of treatment (F1, F2, F3, F4, and F5) on the color, flavor, and overall of FFFs (p<0.05). Product F5 had the highest percentage of acceptance and the average value than other products. F5 consisted of 30.36% orange sweet potato, 28.57% red beans, 8.93% fermented soybean (tempeh), 14.29% carrot, 12.50% pumpkin, 3.75% sugar, and 1.79% cornstarch. Each portion of F5 product could contribute about 20% of the recommended energy and protein adequacy for adolescents, and it’s contain 4.02 mg of β-carotene and antioxidant activity 38.54 mg/100 g (AEAC). The total microbe content of F5 was 9.6 x 102 coloni/g, still below the threshold for a type of processed product, so that these products are safe to eat. The resulting product has the potential as a functional food because of the content of β-carotene and it's antioxidant activity and can be considered as a breakfast product for overweight/obese adolescents. Keywords: adolescent, functional food, local food, obese, overweight

Abstract

Stunting is a condition of growth failure characterized by height below the expected standard for their age. The prevalence of stunting in West Sumatra has fluctuated above 20% between 2021 and 2023, highlighting its status as a public health issue. Unaddressed stunting in early childhood can adversely affect learning capacity and elevate the risk of non-communicable diseases later in life. This ecological study analyzes factors associated with stunting prevalence in West Sumatra using secondary data from 2021 sourced from the Health Office, Social Office, Central Bureau of Statistics, and the National Population and Family Planning Board across 19 districts/cities. The dependent variable was stunting prevalence, while the independent variables included acute respiratory infections (ARI), vitamin A supplementation, antenatal care (ANC), family planning, poverty, families at risk of stunting, and Conditional Cash Transfer (CCT) beneficiaries. Statistical analyses using Pearson and Spearman tests identified significant positive associations between stunting prevalence and ARI percentage (p=0,020), poverty level (p=0,023), and CCT beneficiaries (p=0,028). Conversely, ANC coverage showed a significant negative association with the prevalence of stunting (p=0,021). In conclusion, the prevalence of stunting in West Sumatra in 2021 is influenced by various factors, including ARI, poverty levels, PKH beneficiaries, and ANC coverage.

Abstract

Anemia is a common health issue among adolescent girls, including female students at boarding schools, and it was found that the prevalence of anemia in one boarding school in Indonesia was 38%. Anemia is indicated by low hemoglobin levels caused by insufficient intake of iron and other nutrients. This study aimed to analyze the correlation between anemia knowledge, menu acceptability, and nutrient intake and hemoglobin levels in female students. This study used a cross-sectional design conducted at Dar El Hikmah Islamic Boarding School Pekanbaru, with a total of 105 female MA students who were selected purposively based on inclusion and exclusion criteria. Data were collected from November to December 2024. Anemia knowledge was measured using a questionnaire, menu acceptability estimated by leftover food, nutrient intake obtained from 2 × 24 h food recall, and hemoglobin (Hb) level measured using easy touch GCHb. Data were analyzed using the rank-Spearman test. The results showed that most subjects (53,3%) had anemia or Hb levels <12 g/dL. There was a significant negative correlation between the acceptability of the breakfast menu (r=−0,366; p=<0,001), lunch (r=−0,445; p=<0,001), and dinner (r=−0,516; p=<0,001), and a positive correlation between anemia knowledge (r=0,254; p=0,009); protein (r=0,235; p=0,019), iron (r=0,200; p=0,040), vitamin C (r=0,349; p=<0,001), vitamin B9 (r=0,471; p=<0,001), and vitamin B12 intake (r=0,221; p=0,023) with Hb level. In conclusion, knowledge is needed to prevent anemia, and the quality of school menus must be improved to increase acceptance and nutrient intake.

Abstract

Purpose: Children with tuberculosis from low-income families are often referred to hospitals, yet research on hospital-based support is limited. This study evaluated a private hospital's tailored maternal nutrition education program and its impact on the food consumption and nutritional status of children with tuberculosis (24–59 months) from underprivileged families. Methods: This observational analytical study employed a one-group pretest-posttest research design. It was conducted from January to March 2024 at the Outpatient Department of Islami Mutiara Bunda Hospital, Brebes Regency. Secondary data from 2023 medical records of children with TB (24–59 months) from low-income families who received maternal nutrition education during the intensive phase were analyzed. A total of 59 samples were obtained through total sampling. Results: Among the children, 29 (49,2%) were boys and 30 (50,8%) were girls. By age, 33 children (55,9%) were 24–36 months, and 26 (44,1%) were 37–59 months. The percentage of energy deficiency before intervention in boys is higher than in girls (90% vs 74%). Almost all subjects experienced protein deficiency. After the intervention, there was an improvement in energy and protein adequacy. Both age groups experienced malnutrition at the age of 24-36 months, as much as 48%, and of 37-59 months, as much as 19%. After the intervention, the malnutrition group obtained good nutrition. Statistical tests (p<0,05) indicated maternal nutrition education significantly improved food consumption and nutritional status during the intensive phase. Conclusion: Tailored maternal nutrition education with two-way communication effectively enhances food consumption and nutritional status in children with TB from low-income families.

Abstract

The aim of this study was to formulate flakes made from arrowroot starch, soy protein isolate, and tapioca starch, which was added by taburia (consisted of multivitamin and minerals), sugar, salt and water. Flakes made of 10% soy protein isolate substitution was the most acceptable organoleptically than 20 and 30% soy protein isolate. Taburia fortification was then applied to this formula, 50% RDA of iron fortification was more reasonable to be selected than 25% one according to contribution of iron. Addition of chocolate flavor resulted in improving acceptability of flakes. Flakes with chocolate flavor has better physical properties.Contribution of flakes with chocolate flavor to adolescents RDA of protein and iron were 5.14—6.02% and 39.46%; and flakes without chocolate flavor were 5.82—6.80% and 68.92%, respectively. Flakes with chocolate was better in acceptability, but lower in nutrients content than flakes without chocolate flavor.
