Abstract

Background: Rolade is a processed product made from a mixture of finely ground meat with flour or strach. Generally, rolade used beef as the main ingredient. This study used african catfish as the main ingridient and the addition of soybean flour to increase the nutritional contents of rolade as specially protein content.Objectives: This study amied was to analyzes the effect soybean flour subsitution on the nutritional contents (moisture, ash, fat, protein, carbohydrate, and iron) and to assess changed in the organolpetic propoerties if rolade after vacuum packaging.Methods: This design in this study was used a experimental dsign with a completely randomized design. There are 3 treatment levels (tapioca flour : soybean flour), namely 100:0 (0%), 80:20 (20%), 70:30 (30%). Rolade organoleptic testing was carried out in a Food Processing Labory at Karawang Singaperbangsa University and nutritional analysis was carried out in a Food Technology Labory at Pasundan University. Statistical analysis was used the Kruskal Wallis Test and the Mann Whitney follow-up test.Results: The addition of soybean flour in general didn’t have a significant to the hedonic yield and hedonic quality on all rolade assessment attributes (p>0,05). Vacuum packaging and cold temperature storage didn’t have a significant difference to all rolade assessment atributes (p>0,05). The addition of soybean flour increase the protein content of the rolade.Conclusion: The addition of soybean flour has an effect on the organoleptic of catfish rolade. Vacuum packaging and cold storage can maintained rolade for 14 days. Rolade protein content added to soybean flour has increased.

Abstract

Women of childbearing age are a vulnerable group to anemia so women need high iron intake. The percentage of anemia in women aged 15-24 years in Indonesia is 35,3%. Anemia has a more serious impact on the time of pregnancy, namely the risk of maternal death, premature birth and low birth weight. The purpose of this study was to determine the best formula, analyze the moisture content, ash content, protein, fat, carbohydrates, Iron (Fe) and vitamin C on the development of seaweed pudding (Eucheuma spinosum) with kelakai (Stenochlaena palustris) and papaya as snack alternative for the prevention of anemia. This research is experimental with a Complete Randomized Design consisting of three levels of treatment (seaweed : kelakai : papaya), namely F1 (100:90:210), F2 (125:70:205) and F3 (150:50:200). The results of organoleptic test observations obtained the best formula in formula 3 with the results of the analysis of water content of 95,6%, ash content of 0,49%, protein 0,11%, fat 0,79%, carbohydrates 3,01%, iron 30,6 mg/100 g dry weight and vitamin C 36 mg/ 100 g dry weight. Based on the results and discussion of the research that has been done, seaweed pudding with kale and papaya can be accepted as an alternative food for the prevention of anemia.

Abstract

Background: Student learning outcomes are one of the main indicators of the success of an education. Environment is a factor that affects the growth and development of living things. There are three places within the scope of the social environment, namely the family environment, the school environment, and the community environment. Research Metodes: This research design uses cross-sectional with a sample of 35 respondents. Data analysis used Spearman's rho test and t test, to determine the correlation of variables and significant influence. Results: There is no significant relationship between the two variables with a significant value (0.242 < 0.05). And there is no influence on the two variables with the value of tcount < ttable (-1.193 < 2.034). Conclusion: There is no significant relationship and influence between social environment and student learning outcomes.

Abstract

Sindrom metabolik merupakan salah satu tantangan serius dalam kesehatan masyarakat yang berhubungan dengan meningkatnya risiko penyakit kardiovaskuler dan diabetes. Kegiatan pengabdian ini bertujuan untuk meningkatkan pengetahuan mengenai sindrom metabolik pada wanita dewasa pedesaan melalui edukasi. Metode kegiatan pengabdian berupa edukasi berbasis ceramah kepada 22 wanita dewasa yang tinggal di pedesaan Karawang sebagai sasaran kegiatan. Kegiatan pengabdian ini juga berupa pengukuran indeks massa tubuh dan lingkar perut untuk menilai status gizi sasaran. Edukasi yang diberikan berkaitan dengan faktor risiko, kriteria, dan upaya pencegahan sindrom metabolik. Perubahan pengetahuan sasaran dinilai dengan pre-post test. Uji Wilcoxon digunakan untuk melihat perbedaan pengetahuan antara sebelum dan setelah edukasi. Hasil kegiatan menunjukkan sebagian besar sasaran memiliki status gizi obesitas (59,1%), dan obesitas sentral (72,6%). Kategori pengetahuan terkait sindrom metabolik sasaran hanya pada tingkat rendah dan sedang, baik sebelum maupun setelah edukasi. Sebanyak 4.5% sasaran mengalami peningkatan tingkat pengetahuan menjadi kategori sedang, namun secara statistik tidak signifikan (p > 0,05).

Abstract

ABSTRAK Pendahuluan: Autism Spectrum Disorders (ASD) adalah gangguan perkembangan syaraf pada anak yang ditandai dengan gangguan dalam komunikasi, interaksi sosial, dan tingkah laku. Asupan zat gizi makro, pengetahuan ibu, dan pola asuh ibu merupakan faktor yang mempengaruhi status gizi pada anak autis. Tujuan: Tujuan penelitian ini untuk menganalisis hubungan asupan zat gizi makro, pengetahuan dan pola asuh ibu dengan status gizi anak autis di SLB Kota Bandung. Bahan dan Metode: Penelitian ini dilakukan pada 28 Februari – 31 Maret 2023 di 4 SLB Kota Bandung. Jenis penelitian yaitu observasional analitik dengan menggunakan desain cross sectional. Populasi dalam penelitian ini berjumlah 52 anak autis di 4 SLB Kota Bandung dengan jumlah sampel 36 subjek yang diperoleh dengan teknik accindental sampling. Data dianalisis menggunakan uji Rank Spearman. Hasil: Hasil penelitian menunjukkan asupan zat gizi makro anak autis mayoritas kurang untuk asupan energi (30,6%), protein (61,1%), dan karbohidrat (44,4%), tingkat pengetahuan dan pola asuh ibu mayoritas baik (66,7%;94,4%), serta status gizi anak sebagian besar status gizi baik (55,6%). Ada hubungan yang signifikan antara asupan protein (p=0,003) dan lemak (p=0,023) dengan status gizi anak autis di SLB Kota Bandung. Namun, tidak ditemukan hubungan yang signifikan antara asupan energi (p=0,105), karbohidrat (p=0,190), pengetahuan ibu (p=0,591), dan pola asuh ibu (p=0,881) dengan status gizi anak autis di SLB Kota Bandung. Kesimpulan: Asupan protein dan lemak berhubungan dengan status gizi anak autis di SLB Kota Bandung. Kata kunci : autis, asupan zat gizi makro, pengetahuan ibu, pola asuh ibu, status gizi.

Abstract

Desa Pejaten memiliki jumlah penduduk 6.249 jiwa dengan luas wilayah 485.205 Ha. Desa Pejaten  memiliki TPK berjumlah 10 orang yang berasal dari masyarakat setempat. Desa Pejaten Kabupaten Karawang, masih terdapat masalah kesehatan dan status gizi buruk pada balita akibat dari keluarga prasejahtera. Hal ini mengindikasi perlunya upaya pencegahan dan pengentasan stunting sejak dini agar kejadian stunting pada balita di Desa Pejaten dapat ditekan dan meningkatkan kesehatan masyarakat. TPK sebagai fasilitator pemerintah untuk membantu percepatan penurunan stunting, salah satu tugas TPK menyediakan PMT bagi balita beresiko stunting dengan menu yang beraneka ragam dan bergizi dan menarik supaya balita tertarik dan mau memakanya dengan lahap. Tujuan PKM meningkatkan keterampilan dalam pembuatan menu gizi seimbang dalam rangka Pemberian Makanan Tambahan (PMT) pada anak-anak. Peraktek/Pelatihan Pembuatan Menu Gizi Seimbang Keluarga adalah Tim Pendamping Keluarga (TPK) yang berdomisili di desa Pejaten Kabupaten Karawang. Yang hadir dalam dua kegiatan PKM ini yaitu 15 orang terdiri dari TPK dan masyarakat umum desa pejaten. terdapat peningkatan keterampilan dalam pembuatan menu gizi seimbang keluarga dan Pelatihan Pembuatan Menu Gizi Seimbang Keluarga adalah Tim Pendamping Keluarga (TPK).

Abstract

Hygiene is an effort to maintain health with a focus on individual actions and personal care, while sanitation is an effort to maintain the health of the human environment. Good hygiene and sanitation in hotel kitchens is essential to maintain food health and safety, as well as to meet food industry hygiene standards. In a clean and well-maintained kitchen environment, the risk of food contamination can be minimized, preventing food-borne illnesses and ensuring customer satisfaction. This article discusses important practices for maintaining hygiene and sanitation in hotel kitchens, including maintaining equipment cleanliness, waste management, personal hygiene, and staff training. Implementation of strict monitoring and control systems is also necessary to ensure the effectiveness of these efforts in maintaining high standards of hygiene throughout hotel kitchen operations. This research aims to evaluate how cleanliness and sanitation are implemented in the Novotel Tangerang hotel kitchen, including aspects such as personal hygiene, cleanliness and sanitation of the kitchen area, and maintenance of kitchen equipment. The research method used uses descriptive (qualitative) data analysis, using various primary data sources such as observations, interviews, and secondary data such as certificates and log books. Research findings show that even though observations, interviews and document recording have been carried out, cleanliness and sanitation standards in the Novotel hotel kitchen, Tangerang have been fully met. This can be seen from various aspects such as personal hygiene, kitchen sanitation, and cleanliness of kitchen equipment

Abstract

PHBS in the school environment is realized to maintain cleanliness in the surrounding environment and is able to teach students very precisely by teachers so that children can maintain cleanliness wherever the child is, such as at school, at home or when the child travels. According to the Ministry of Health, Clean and Healthy Living (PHBS) is a health action carried out with awareness, aimed at ensuring that family members can help themselves in the health sector. The research method used in this research is descriptive qualitative. The use of a qualitative approach was used to gain an in-depth understanding of the implementation of clean and healthy living behavior among children at PAUD KB Anugerah, Sambas Regency, West Kalimantan. The following are some of the PHBS activities carried out by PAUD KB Anugerah, namely: facilitating PHBS support needs, eradicating mosquito larvae in the school environment, maintaining personal hygiene, and eating healthy, balanced nutrition. PHBS is implemented very well and consistently ensures the cleanliness of the school environment through consistent attention from the principal, teachers, students and everyone in the school environment. Maintaining personal hygiene, food intake, and maintaining a clean environment are very helpful to instill in young children. That way, children can practice it as a habit until they grow up.

Abstract

PkM Tanjung Bungin Village, Karawang Regency is inhabited by 891 families or around 2,612 residents. Crowded places such as entertainment venues, sales of fishermen's catches and traditional markets are always busy with people from villages, sub-districts and even Bekasi Regency. Frequent interaction between the people of Tanjungbungin Village and people outside the village area because of the necessities of life that need to be met causes a large potential for traffic accidents on the connecting road. Apart from that, the unavailability of speed bumps around roads where there are potential accidents and their lack of self-sufficiency means that speed bumps increase the risk of high traffic accidents. There needs to be a program that can provide the right solution to immediately reduce the potential for traffic accidents. Making speed bump technology made from plastic independently among the community will be the right and effective solution. The plastic speed bump technology that had been made is based on research products and uses the same manufacturing method as that carried out in the research. The method that had been implemented is integration between PkM and student KKN activity programs by means of mentoring, training, and making speed bump technology made from plastic. The output of this community service activity was the creation and implementation of a speed bump made from plastic in Tanjungbungin Village, Pakisjaya District, Karawang Regency.

Abstract

Indonesia is a large archipelagic country and has many problems, especially those related to nutritional status. Stunting is a growth and development disorder in young children that causes disruption of linear growth from pregnancy to 24 months due to lack of nutritional intake. The aim of this community service activity is to provide assistance to target toddlers to achieve a reduction in the number of stunted and pre-stunting toddlers and improve the nutritional status of toddlers. The method used in community service activities involves visiting the homes of stunted and pre-stunting toddlers and monitoring anthropometric measurements on target toddlers every month. As a result of this service activity, the target toddlers experienced an increase in weight and height, although not statistically significant, so that giving PMT was proven to be effective in increasing the weight of toddlers. Based on the results of food recall calculations and interviews with mothers of toddlers, the majority of toddlers are targeted to consume very little food so that their nutritional intake is less than their needs.
