Abstract

Abstrak : Less Chronic Energy (LCE) and Anemia are among the most common malnutrition problems in pregnant women, caused by lack of energy, protein, and iron over long periods of time. LCE will give birth to LBW in newborns. Provision of nutrition education becomes an alternative for the prevention of LCE and LBW prevention problems. To prove the influence of nutritional nutrition, iron, and weight change in pregnant women LCE. Pre experimental for 1 month (30 days) in LCE pregnant women, using pre-design and posttest design group. Provision of nutrition education using the media of pocket book and given 4 times in 1 week. Further repeated with a recall of 3x24 hours for 4 weeks post- Intervention. Data analysis using paired Ttest dependent test. The results showed an increase in intake after being given nutritional nutrients both macro nutrients, Fe, and body weight. Statistically not applicable, based on paired T-test dependent test showed no effect of nutrition education given to macro nutrient intake level (energy p 0,526, protein p 0,619, fat p 0,552, and carbohydrate p 0,445). The wilcoxon test of nutritional education influence on intake of Fe yields not charitable result with p value of 0.913. While for weight there is a significant change after given nutrition education with p value 0,001.KEK, while for macro nutrient intake and no effect.Keywords: Nutrition Education, KEK, Macro Nutrition, Iron, Weigh

Abstract

Yoghurt merupakan produk susu sapi segar dari hasil fermentasi dengan menggunakan campuran bakteri starter yaitu Lactobacillus bulgaricus dan Streptococcus thermhopillus yang berperan dalam sistem imun manusia. Penelitian ini bertujuan untuk mengidentifikasi total bakteri asam laktat (BAL) dan daya terima organoleptic pada yoghut buah naga merah. Desain penelitian adalah experimental.Pada pembuatan yoghurt digunakan 2 jenis susu dan 2 perlakuan lama fermentasi yaitu 12 jam dan 24. Sampel yoghurt sari buah naga merah dengan variasi susu dan lama fermentasi yang dibuat pada penelitian ini berjumlah 4 sampel. Hasil penelitian ini berdasarkan uji kruskall wallis yang telah dilakukan berdasarkan jenis susu dan lama fermentasi A1, A2, B1, B2 ada pengaruh signifikan terhadap daya terima uji organoleptic yoghurt sari buah naga merah yang ditunjukkan dengan nilai p = 0,005 (p < 0,05). Jumlah bakteri asam laktat dengan lama fermentasi 12 jam menggunakan variasi susu UHT lebih banyak yaitu7,2 x 107 sedangkan susu sapi 6,9 x 107. Jenis bakteri yang teridentifikasi pada yoghurt yaitu bakteri Basillus.Pada uji organoleptik yoghurt pada buah naga merahdidapatkan hasil bahwa rasa memilki pengaruh dan perbedaan antara lamanya fermentasi.Diharapkan untuk dilakukan penelitian lebih lanjut mengenai total keasaman dan pH yoghurt sari buah naga merah (Hylocereus polyrhizus) sebagai asam laktat

Abstract

Cadres are spearheading the success of monitoring the nutritional status of children under-two. Improving the knowledge, attitudes and actions of cadres through training, coaching and mentoring mothers in fulfilling the nutritional intake of under-two using the Nutrition Education Module has an impact on the success of the nutritional status monitoring function. Community service activities (PkM) are aimed at optimizing the role of cadres and families in fulfilling the New Normal Period undernutrition in Riak Siabun Village, Seluma Regency. The target audience is 10 posyandu and KPM cadres and 30 families with children aged 0-24 months. The activity is carried out with the stages of forming family companion cadres, training and coaching, as well as mentoring mothers of baduta. Evaluation of activities is carried out by measuring the knowledge, attitudes, and actions of cadres and mothers of baduta. The activity was carried out in January-November 2021. The data were analyzed by comparing the results of the pre-test and post-test. The results of community service activities showed that there was an increase in the score of knowledge, attitudes, cadres as well as the knowledge, attitudes, and actions of the mother under two for 3 months of mentoring. The results of the activity showed an increase in the average score of knowledge and attitudes before and after the training. The mentoring of 30 mothers of under-two showed an increase in the average score of mother's knowledge and attitudes about the fulfillment of nutrition for under-fives, mother's actions were still the focus of mentoring. Regulations in the form of policies and programs need to be improved to support cadre activities in assisting mothers of children under-two in the village.

Abstract

Latar Belakang: Stunting yaitu kondisi tinggi badan (TB) seorang anak yang tak sesuai terhadap umurnya, dan pengukurannya dijalankan dengan memperhitungkan Z score indeks TB berdasarkan TB/U. Anak dinyatakan stunting apabila Z score indeks TB/U = < -2 SD. Kondisi stunting mengambarkan status gizi dimasa lampau tidak baik, juga menunjukkan terdapat masalah perkembangan linier kepada anak. Riset ini memiliki tujuan dalam mencari tahu Hubungan Riwayat Pemberian IMD Dan ASI Eksklusif Dengan Kejadian Stunting Anak Balita Umur 12-59 Bulan di Desa Napal Melintang Kecamatan Selangit Kabupaten Musi Rawas. Metode: Jenis pendekatan yang dipakai pada riset ini yaitu deskriptif kuantitatif yang menggunakan rancangan cross sectional, Sampelnya sebanyak 74 anak balita yang berumur 12-59 bulan. Analisis yang dipergunakan yaitu univariat dan bivariat terhadap pengujian chisquare. Hasil: Terdapat keterkaitan dalam memberikan IMD dan ASI eksklusif terhadap stunting anak balita di Desa Napal Melintang Kecamatan Selangit Kabupaten Musi Rawas dengan p -Value 0.003 dan 0.004. Kesimpulan: Tidak memberi IMD dan ASI eksklusif bisa menjadikan balita berpotensi menjadi stunting. Kata kunci : Stunting, IMD, ASI Eksklusif.

Abstract

Pada kegiatan posyandu sering kali tidak terpantau panjang badan anak, karena keterbatasan alat ukur, kader kurang mampu menginterpretasikan hasil ukur. Tujuan pengabdian kepada masyarakat (PKM) untuk meningkatkan pengetahuan, sikap dan keterampilan kader dalam deteksi risiko stunting di Desa Riak Siabun Kabupaten Seluma, Bengkulu. Sasaran kegiatan adalah 7 kader posyandu dan 3 kader pembangunan masyarakat (KPM) serta 30 ibu yang memiliki anak berisiko stunting usia 0-24 bulan. Kegiatan PKM menggunakan metode pemberdayaan kader mulai dari pembentukan kader pendamping, pelatihan kader, dan pendampingan ibu baduta. Evaluasi kegiatan dengan mengukur perilaku kader dan ibu baduta. Kegiatan PKM pada bulan Agustus-Desember 2021. Analisis data dengan membandingkan hasil pre-test dan post-test. Hasil PKM menunjukkan bahwa pelatihan dan pembinaan kader dapat meningkatkan pengetahuan, sikap dan keterampilan kader dalam deteksi risiko stunting. Pendampingan kader selama 4 bulan terhadap ibu baduta bulan dapat meningkatkan pengetahuan, sikap dan tindakan ibu dalam pencegahan dan penanggulangan stunting.

Abstract

The antioxidant activity of natural product extracts is influenced by the type of solvent that plays an active role in binding secondary metabolites such as saponins and flavonoids. Sungkai leaves (Peronema canescens Jack) are plants that have been shown to contain secondary metabolites that have antioxidant activity. The purpose of this study was to determine the differences in the antioxidant activity of Sungkai leaves with different solvents. Sungkai leaves (Peronema canescens Jack) used in this study were obtained in Central Bengkulu Regency, Bengkulu Province. Sungkai leaves are extracted with two types of solvents, namely methanol and distilled water. Furthermore, the analysis of antioxidant activity was carried out using the DPPH method. The results showed that the antioxidant activity of IC50 (inhibitor concentration 50) was 45.709 ppm, which was very strong in methanol extract. Antioxidant activity in distilled water is known to have an IC50 value of 53.979 ppm, which means strong. Furthermore, it can be concluded that the existence of differences in solvents can affect the level of antioxidant activity of Sungkai leaves. Methanol solvent contains stronger antioxidant activity than distilled water.

Abstract

The low level of per capita fish consumption among Indonesian communities is attributed to two factors linked to weak supply and low demand. Beledang fish or Cutlass fish (Trichiurus lepturus) is one type of sea fish with high nutritional value but low consumer appeal. This study aims to determine the sensory acceptability of Beledang fish cookies. The materials required for this cookies manufacturing comprised Beledang fish flour, wheat flour, margarine, butter, fine sugar, eggs, lemon, skim milk, cornstarch, baking powder, and palm sugar. A completely randomized design (CRD) was employed for this study, with different proportions: 40%, 50%, and 60% of Beledang fish. The production of Beledang fish flour involves several steps. Firstly, 1000 grams of Beledang fish is cleaned by removing the gills and washed with flowing water. Subsequently, the fish is steamed for 10 minutes. Afterward, the fish meat is separated from the bones and dried using an oven at a temperature of 50oC for 5 h. The dried fish meat is finely ground and sifted through a mesh with a size of 60. From 1000 grams of raw Beledang fish, approximately 130 grams of flour is obtained. The organoleptic tests showed the most preferred colour, taste, texture, and aroma for cookies were found in the formulation with a 60% of Beledang fish. There were significant differences between organoleptic properties of the cookies at 40%, 50%, and 60% Beledang fish cookies (p<0.05).

Abstract

Anemia is a condition in which an abnormal number of red blood cells in the body is indicated by a low level of hemoglobin in the blood. Knowledge is the result of knowing after feeling a certain object. Protein is an important nutrient for the human body because it is a source of energy, material and regulator. Intake of vitamin C is an aid in the production of hemoglobin and the growth of red blood cells. Fe is needed for the manufacture of blood plasma which produces red blood cells. Anemia Free Youth Card is a visual-based media in the form of a rectangle containing pictures, question text which serves to explain the pictures shown. This research is a Quasy Experiment research with a treatment group, through media card games, healthy adolescents free of anemia. A sample of 36 young women was taken by purposive sampling. Knowledge of young women before and after being given education through the games method with a p-value of 0.000, then p-value (<0.05), and intake of young women before and after going through a 24 hour recall with a p-value of 0.000, then p-value (<0.05). This shows that there is an influence of the Anemia-Free Healthy Teenage Card Games as a media for educating young girls about anemia in junior high schools 19 in Bengkulu City and can be used as an alternative learning media for schools to support female students in improving learning outcomes and providing adequate nutrition during growth during adolescence.

Abstract

Saat ini tempe sebagai sumber protein nabati mulai digemari oleh masyarakat di semua kalangan dan suku tanpa memandang golongan sosial  ekonomi. Namun hasil olahan tempe cenderung kurang bervariasi. Kegiatan ini merupakan tahapan akhir setelahh lomba menciptakan menu olahan tempe. Tujuan: kegiatan ini menghasilkan produk olahan tempe yang inovatif.  Hasil: para peserta menciptakan dan mengolah tempe menjadi produk inovatif antara lain siomay tempe pelangi, cookies tempe, tempe kreasi Pamia, gelamai tempe tepung mocaf, Fermented Soybean Dessert Box. Peserta yang ikut adalah warga masyrakat yang telah mendapatkan edukasi dan mengumpulkan resep hasil olahan tempe. Rangkaian kegiatan pengabdian masyarakat ini menambah keterampilan ibu ibu di Kecamatan Sukaraja  untuk menghasilkan produk olahan tempe yang inovatif. Diharapkan ibu-ibu dapat menghasilkan produk dan sangat berpotensi untuk dijadikan usaha baru yang kekinian dan diminati oleh masyarakat.

Abstract

Purpose: This research aims to determine the antioxidant activity of bamboo shoots used as raw material for making lemea, a local fermented food. Methodology: The antioxidant activity of bamboo shoots was tested using the DPPH method. The research involved creating ethanol extracts from bamboo shoots of Mayan bamboo (Gigantochloa robusta), Betung bamboo (Dendrocalamus asper), and yellow bamboo (Bambusa vulgaris). The extracts were analyzed using a spectrophotometer at a wavelength of 517 nm after 30 minutes of incubation. Results: The study found that bamboo shoots used as raw material for lemea exhibited weak to very weak antioxidant activity. The IC50 values were 387.608 ppm for yellow bamboo shoots, 666.907 ppm for Betung bamboo shoots, and 799.593 ppm for Mayan bamboo shoots. Findings: The antioxidant activity of the bamboo shoots varied, with yellow bamboo shoots showing the highest antioxidant activity among the three types tested. Novelty: This research provides new insights into the antioxidant properties of bamboo shoots, specifically those used in making lemea. Originality: The study offers a detailed analysis of the antioxidant activity of different bamboo shoots, contributing to the understanding of their potential health benefits. Conclusions: Bamboo shoots, the raw material for making lemea, have weak antioxidant activity, with yellow bamboo shoots exhibiting the highest activity. Type of Paper: Experimental Research Article
