Abstract

This study aims to develop rice crackers into a functional food enriched with mangrove leaves (Rhizophora mucronata) from the Sangihe Islands, Indonesia, to improve their nutritional and antioxidant capacities. Mangrove leaves were extracted and analyzed using Gas Chromatography-Mass Spectrometry (GC-MS), revealing 10 fatty acid-derived compound profiles. Rice crackers were produced by adding R. mucronata leaf pulp and evaluated for proximate composition (moisture, ash, protein, fat, carbohydrate, and energy), sensory characteristics, and antioxidant capacity. Proximate analysis showed that the rice crackers contained 12.62% protein, 18.51% fat, and 59.75% carbohydrate and complied with the Indonesian National Standard (SNI) for rice crackers regarding moisture content (5.71%). Sensory evaluation showed that rice crackers with added mangrove leaves were well accepted by panelists, with “like” to “very like” ratings for appearance, aroma, taste, and texture. The antioxidant capacity of rice crackers with the addition of mangrove leaves showed moderate activity (IC50 = 123.38 µg/mL) despite a decrease due to the frying process. This study concluded that R. mucronata leaves can be a potential functional ingredient, providing nutritional benefits and antioxidant properties in rice crackers.

Abstract

This community partnership empowerment activity empowers mothers of the Family Welfare Development Team (TP. PKK) in Tahuna District, Sangihe Islands Regency, North Sulawesi through education on diversifying processed fish products to prevent stunting. This activity was carried out in September-October 2024 in three villages focused on handling stunting: Soataloara 1, Mahena, and Santiago, Tahuna District. The purpose of this empowerment activity is to empower the TP. PKK in diversifying processed fish products to help prevent stunting in the Sangihe Islands Regency. The methods used include hearings, initial observations, determining priority programs, facilitation and assistance, and monitoring and evaluation. Activities consisted of counseling on fish nutrition and technical guidance on making processed fish products such as meatballs, nuggets, and kaki naga. The evaluation was conducted through pre and post-tests to measure the improvement of participants' knowledge. The results showed a significant increase in the knowledge and skills of TP. PKK mothers. The average knowledge score on fish nutrition increased from 57% to 87%. As for the technical guidance on processed fish products, the skills improvement was seen in the making of meatballs (64% to 90%), nuggets (62% to 86%), and dragon feet (66% to 94%). This community partnership empowerment activity succeeded in increasing the understanding of PKK women in the Tahuna Sub-district about the importance of fish consumption in preventing stunting and improving the skills of TP. PKK mothers in processing fish into products with high nutritional value.

Abstract

This study aims to determine the effect of clove oil concentration and time of immersion in clove oil on the anesthesia, recovery time, and physiological responses in the payangka fish (Ophieleotris aporos). The experimental design was completely randomized with a 6 x 3 factorial arrangement. The first factor was a concentration of clove oil consisting of six levels i.e., 0.02; 0.03; 0.04; 0.05; 0.1, and 0.2 ml/L of water. The second factor was a time of immersion consisting of three levels i.e., 1; 3; and 6.5 hours. Results showed that the concentration of clove oil significantly (p<0.05) affected the anesthesia time and the recovery time after immersing. The length of immersing and concentration of clove oil also significantly (p<0.05) affected the concentration of glucose, but not significantly (p>0.05) affected the concentration of cholesterol. It showed that clove oil can be used as anesthetization for payangka fish in the appropriate dose. The optimal concentration of clove oil that can be used as anesthesia for the transportation of live payangka fish is 0.02 ml/L of water. Meanwhile, for handling activities on payangka fish, a clove oil concentration of 0.03 ml/L of water is recommended

Abstract

The purpose of this community service activity was to transfer knowledge to the PKK women of Tidore Village. The stages of implementing community service activities were observation and initial interviews, determining solutions to partner problems, implementing activities, and evaluating. There were two materials provided in this activity, namely “The Impact of Nutritional Inadequacy Which Can Lead to Stunting Conditions” and “Nutritional Benefits of Fish and Processing Techniques.” In addition to providing material, there was also a practice of diversifying fishery products from Decapterus sp. into high-value processed products, namely dragon leg, which was expected to increase fish consumption and contribute to reducing stunting rates. According to the evaluation results, this service activity could increase the knowledge and skills of PKK women about the benefits of fish consumption for child development and pregnant women. Activities like this are expected to continue to be carried out regularly so as to contribute to the prevention of stunting in the region.

Abstract

Mangrove plants, particularly Bruguiera gymnorrhiza, are recognized as sources of bioactive compounds. This study analyzed the chemical profiles, safety, and antioxidant activity of B. gymnorrhiza leaf extract origin Sulawesi, a biodiversity-rich Wallacean region. Research on B. gymnorrhiza leaves from Sulawesi remains scarce. GC-MS analysis identified inositol, fatty acid, ester, and terpenoid derivatives as major chemical profiles related to stress tolerance and remedial properties. ADMET predictions showed good intestinal absorption but suggested potential hepatotoxicity at high doses. Brine shrimp lethality tests revealed low acute toxicity with an LD₅₀ of 873.381 µg/mL, supporting in silico findings. The extract exhibited strong antioxidant activity (IC₅₀ 49.78 µg/mL), comparable to Vitamin E, and higher than reports from other regions. These results indicate that Sulawesi mangroves store valuable chemical compounds and serve as environmental health indicators. Combining chemical profiling, computational prediction, and experimental validation highlights their pharmaceutical potential while emphasizing the need for careful dose optimization and ecological monitoring. This study reinforces the importance of conserving Wallacean biodiversity and offers a foundation for safe, natural antioxidant commercialization. Future work should assess in vivo effectiveness, long-term toxicity, and the ecological impacts of pollutant immobilization in mangrove ecosystems.
