Abstract

Program Learning Outcomes (PLO) assessment is an important part of Outcome Based Education curriculum. This present study aims to directly measure the PLOs’ achievement in the bachelor program of Nutrition, Universitas Negeri Surabaya. The PLOs of the program study consist of three domain aspects namely knowledge, skill, and attitude. The direct measurement was derived from students’ performances in a total of 16 courses taught in even semesters (semesters 2, 4, 6, and, 8) of the program study. The students’ performances were assessed based on their performances in quizzes, classroom participation, mid-semester test, and final semester test by using a rubric of measurement. From the total of 9 PLOs, only 7 PLOs are assessed because in the even semesters, there was no course containing PLO 4 and 9 for their objective. Overall, the PLO mean score was ranging from 73.8 to 82.2. The domain of knowledge has the lowest score compared to the domain of skill and the domain of attitude although the gap difference is very small.

Abstract

Penelitian ini bertujuan untuk mengetahui perbedaan asupan protein, persentase lemak tubuh, dan kebugaran jasmani antara atlet UKM sepakbola dan bola basket, hubungan asupan protein dan persentase lemak tubuh terhadap kebugaran jasmani, serta hubungan asupan protein terhadap persentase lemak tubuh atlet laki-laki non-elit UKM sepakbola dan bola basket UNESA. Penelitian ini menggunakan desain cross-sectional yang melibatkan 22 atlet. Data asupan protein diambil menggunakan kuesioner SQ-FFQ, data persentase lemak tubuh diukur menggunakan BIA, dan data kebugaran jasmani diukur menggunakan tes MFT. Hasil analisis komparatif dengan uji mann-whitney menunjukkan p=0,008 pada asupan protein, p=0,003 pada persentase lemak tubuh, p=0,164 pada kebugaran jasmani. Analisis korelasi dengan uji rank-spearman pada atlet sepakbola dan bola basket antara asupan protein dengan kebugaran jasmani menunjukkan p=0,5 dan p=0,1, persentase lemak tubuh dengan kebugaran jasmani menunjukkan p=0,154 dan p=0,239 dan asupan protein dengan persentase lemak tubuh menunjukkan p=0,152 dan p=0,385. Kesimpulan dari penelitian ini adalah terdapat perbedaan asupan protein dan persentase lemak tubuh dan tidak terdapat perbedaan kebugaran jasmani antara atlet UKM sepakbola dan bola basket UNESA, tidak terdapat hubungan yang signifikan antara asupan protein dan persentase lemak tubuh terhadap kebugaran jasmani dan antara asupan protein terhadap persentase lemak tubuh atlet laki-laki non-elit UKM sepakbola dan bola basket UNESA.

Abstract

Background: In the increasingly advanced era, advertisements for high-sugar foods and beverages are prevalent, which can negatively influence a person's behavior. It has been found that individuals may experience an increase in sugar-sweetened beverage consumption of up to 4,8 grams. The consumption of sugar-sweetened beverages has increased among undergraduate student, among nutrition students at UNESA, data show that approximately 48,46% frequently consume sugar-sweetened beverages more than five times per week. Excessive consumption of sugar-sweetened beverages significantly contributes to the incidence of overweight and hyperglycemia. This study is an extension that examines the sucrose content in sugar-sweetened beverages, building upon previous research that investigated the frequency of beverage consumption without considering their sucrose content.Objectives: To determine the relationship between sucrose intake from  sugar-sweetened beverages with overweight and hyperglycemia among Nutrition students at UNESA.Methods: A cross-sectional design was conducted on 95 students selected using stratified proportional purposive sampling. Data on sugar-sweetened beverage consumption were obtained through interviews using the SQ-FFQ. Fasting blood glucose (FBG) levels were measured using a glucometer. Nutritional status data were obtained from Body Mass Index (BMI) through measurements of height and weight. Bivariate data analysis was conducted using the Somers'd test.Results: 88,4% of respondents consumed a moderate amount sucrose intake from sugar-sweetened beverages (1–50 g/day), 76,8% had normal IMT  non-overweight (18,5-25 kg/m2), and 78,9% had normal fasting blood glucose  levels non-hypergycemia (< 90 mg/dL). There was a significant relationship between sucrose intake from sugar-sweetened beverage with overweight (P-value = 0,021; r = 0,407), but no significant relationship with hyperglycemia (P-value = 0,407) which is classified as a moderate correlation.Conclusion: There is a significant relationship between sucrose intake from sugar-sweetened beverage with overweight, but no significant relationship with hyperglycemia.

Abstract

Background: The increasing prevalence of obesity and metabolic syndrome (MetS) among teachers necessitates targeted interventions to enhance health outcomes. Nutritionist-led counseling can enhance health self-efficacy by equipping individuals with knowledge, skill, and confidence to have healthier lifestyles. Objective: The study aims to assess whether a single face-to-face counseling intervention can significantly improve self-efficacy among teachers.Methods: This experimental study employed a pre-and-post-test design involving 23 high-school vocational teachers (14 females and 9 males) who participated in a one-day, three-hour counseling session by trained nutritionists. Participants underwent anthropometric measurements and MetS risk screening before the intervention. Self-efficacy was assessed using a validated questionnaire before and after counseling. Statistical analyses were conducted using paired t-tests and chi-square or Fisher's Exact tests.Results: The findings indicated a significant increase in self-efficacy scores from a baseline mean of 26±2 to 28±2 after the intervention (p<0.001). Notably, the proportion of teachers who reported confidence in selecting appropriate foods significantly improved (p=0.02). The prevalence of obesity among participants was high, with 57% categorized as obese based on BMI.Conclusion: Targeted nutrition counseling can effectively enhance self-efficacy among teachers, potentially leading to healthier lifestyle confidence and reduced MetS risk. This study underscores the importance of incorporating nutritionist-led interventions in educational settings to promote health among teachers, who serve as role models for students.

Abstract

The increasing population of pre-elderly individuals presents emerging challenges in maintaining quality of life, particularly regarding age-related cognitive decline. Previous studies have examined factors such as nutritional status, blood pressure, and total cholesterol levels; however, their findings remain inconsistent. This study examines the correlation between nutritional status, blood pressure, and total cholesterol levels with cognitive function in middle-aged individuals in Sedati Subdistrict, Sidoarjo. This quantitative study used a cross-sectional design and involved 107 respondents aged 45-59 years selected through consecutive sampling. Data collection included Body Mass Index (BMI) measurements, blood pressure and total cholesterol levels assessments, and interviews using the Mini-Mental State Examination (MMSE) questionnaire. Statistical analysis was conducted using Spearman’s Rank correlation test. The results showed that the majority of respondents were classified as overweight (71%), hypertensive (52%), with high total cholesterol levels (61%), and normal cognitive function (51%). Spearman’s Rank test result indicated no significant correlation between nutritional status (p=0.488), blood pressure (p=0.778), and total cholesterol levels (p=0.939) with cognitive function. This study concludes that no significant correlation was found between nutritional status, blood pressure, and total cholesterol levels with cognitive function in middle-aged individuals in Sedati Subdistrict, Sidoarjo.

Abstract

Polycystic ovary syndrome (PCOS) is a reproductive endocrinological disorder that has been linked to nutritional status and macronutrient adequacy. PCOS affects between 12%-21% of women of reproductive age. This study aimed to analyze the associations between nutritional status and macronutrient adequacy (carbohydrates, fats, and proteins) and the odds of PCOS among women of reproductive age. This case-control study was conducted on 196 women aged 15-49 years (48 case-group women with PCOS and 148 control-group healthy women). Macronutrient adequacy was assessed using the Semi-Quantitative Food Frequency Questionnaire over the last three months, and nutrition status was assessed using anthropometric measurements. In the case group, 60.4% of women were overweight, with excess carbohydrate and fat adequacy observed in 58.3% and 72.9%, respectively, while 43.8% had adequate protein. This study showed that overweight and obese (p = 0.000; OR = 2.95), carbohydrate adequacy (p = 0.001; OR = 3.87), and fat adequacy (p = 0.001; OR = 3.22) were significantly associated with PCOS, whereas protein adequacy (p = 0.060; OR = 0.96) was not. After adjustment for potential confounders using the Chi-Square test, protein adequacy remained non-significant. Nutritional status and macronutrient adequacy were associated with increased odds of PCOS among women of reproductive age.

Abstract

Kecukupan gizi pada atlet masih rendah terutama pada atlet wanita. Penelitian menunjukkan bahwa atlet masih dapat mengalami defisiensi gizi baik zat gizi makro maupun mikro. Dengan edukasi gizi olahraga, diharapkan atlet dapat sadar tentang pemenuhan gizi yang meningkat pada atlet dan dapat menunjang performa fisik atlet. Kegiatan PKM ini bertujuan secara umum untuk meningkatkan pengetahuan gizi olahraga pada atlet Kabaddi KONI Jawa Timur. Solusi yang diupayakan melalui kegiatan PKM ini adalah memberikan Edukasi Gizi Olahraga dan Pola Makan Bergizi Seimbang pada Atlet Kabaddi. Metode pelaksanaan kegiatan adalah edukasi gizi olahraga dengan media edukasi interaktif dan pendampingan konseling gizi pada atlet kabaddi. Hasil edukasi menunjukkan 27 responden (87,1%) mengalami peningkatan skor dan uji wilcoxong menunjukkan nilai p=0,000 yang menandakan bahwa kegiatan edukasi dapat meningkatkan pengetahuan gizi secara signfikan.
