Abstract

The Jamilurrahman Putri As-Salafy Islamic Boarding School is located in Wirokerta Village, Banguntapan Subdistrict, Bantul Regency. This boarding school operates under the auspices of the At-Turots Al-Islami Foundation. The students, predominantly girls, require education on food additives, particularly Monosodium Glutamate (MSG), to enhance the taste of food. The use of this additive is widely known and commonly used in the community, often referred to as 'micin.' The growing negative perception in society regarding MSG as a cause of cancer and other sources claiming its adverse health effects has led to concerns. This community service aims to provide education to the students that MSG is a safe food additive, and its usage is based on the recommended daily maximum intake. The community service approach employed is a community-based, directed forum discussion. The counseling activities are designed to impart additional knowledge about MSG to the female students of Jamilurrahman Putri Islamic Boarding School.

Abstract

The pandemic began with the emergence of a new coronavirus in Wuhan, China. One way to prevent the transmission of this virus is by consuming nutritious foods that can boost the body's immunity. The immune system or the body's defense system is the body's ability to fight infections against bacteria or virulent factors. Consuming food rich in nutrients such as vitamins and minerals is important for enhancing the immune system. This community service aims to provide education to the community about food that can help improve the immune system. The youth of Nyamplung village have diverse educational backgrounds. Most have worked in several factories located in Yogyakarta. High interaction allows for exposure to bacteria and viruses, so it is necessary to boost immunity by consuming foods rich in minerals and vitamins. This community service activity is carried out with a community - based approach through directed discussion forums. The target is the youth in Nyamplung Village, Srimulyo Village, Piyungan District, Bantul Regency, Yogyakarta. The initial stage involved administering a pre-test to measure the level of knowledge. The post-test results of this community service program indicated an increase in the knowledge of the youth in Dusun Nyamplung about the importance of consuming nutritio us food to enhance the immune system through community-based directed discussion forums

Abstract

Yellowfin tuna in Gorontalo is very abundant and is often exported outside the region and even abroad as fillets, so yellowfin tuna bones are also very plentiful. The community frequently processes yellowfin tuna bones into kuah asam or namely ilahe. One of the sources of ilahe is Averrhoa bilimbi L., but the leftover tuna bones are only a source of pollution. This research focuses on processing the waste into a product of high nutritional value and highlights the novelty of a more environmentally friendly fish bone calcium extraction method. One of the main novelties of this research is the use of natural materials, namely star fruit, as an alternative for calcium extraction, which reduces dependence on harmful chemicals and supports the principle of sustainability. The extraction method used heat, followed by drying to reduce moisture content, pulverizing (blender) to reduce particle size and sieving. The calcium content in tuna bone meal was then analyzed using the Atomic Absorption Spectroscopy (SSA) method. The results showed that the tuna bone meal was white in colour, and the calcium content was 184.4890 mg/g or 18.45%. This product has the potential to be applied in various fields, such as food, health, animal feed, pellets, and organic fertilizer, as well as a solution to reduce fishery waste and support environmental sustainability.

Abstract

Gout is a condition resulting from elevated levels of uric acid in the blood, primarily affecting the elderly and causing joint pain, which can significantly disrupt daily activities. There is a widespread lack of understanding regarding the distinction between gout-induced pain and pain caused by other conditions. This community service initiative aims to enhance public awareness concerning the typical symptoms of gout, strategies for managing acute attacks, and preventive measures to mitigate the likelihood of future episodes. The program commences with the assessment of participants' uric acid levels, followed by an informative session delivered by PowerPoint presentations. Subsequently, the material presentation transitions into interactive discussions and a question-and-answer segment. This activity proceeded smoothly as planned and was perceived positively by the participants. Positive initiatives should be developed to help reduce gout sufferers and maintain a healthy diet.

Abstract

Microplastics pose a significant threat to both aquatic ecosystems and human well-being. This study endeavors to conduct a community engagement initiative focused on microplastic hazards in Molotabu Regency, with the goal of raising public awareness and fostering sustainable behavior change in plastic waste management. Microplastic pollution has emerged as a concerning issue, posing potential risks to food safety and public health. This research aims to conduct a socialization program on the hazards of microplastic exposure to food safety in the community of Molotabu Village. Using a participatory approach, this socialization program involves various stakeholders, including local communities and students. The socialization activities encompass informative presentations, interactive discussions, educational campaigns, and practical demonstrations to raise awareness about the adverse effects of microplastics on food safety. The results of this community engagement are expected to serve as valuable guidance for authorities and the local community to enhance awareness about the hazards of microplastics and promote sustainable behavior change in plastic waste management.

Abstract

Background: Desa Meranti merupakan penghasil nira aren. Penelitian ini bertujuan untuk mengembangkan inovasi sabun cair berbasis air nira sebagai upaya mitigasi kriminalitas melalui pemberdayaan Karang Taruna di Desa Meranti. Sabun cair pencuci piring berbahan dasar air nira ini dirancang untuk memberikan solusi ekonomi sekaligus mengurangi angka kriminalitas dengan menciptakan peluang usaha baru bagi masyarakat. Metode: Program pengabdian kepada masyarakat ini dirancang dengan pendekatan yang komprehensif melalui tiga tahap utama: (1) Observasi awal untuk memahami potensi dan kebutuhan masyarakat setempat serta kondisi yang ada terkait dengan pengembangan produk sabun cair berbasis air nira. (2) Tahap Sosialisasi yang meliputi edukasi mengenai teknik pembuatan sabun cair berbasis air nira serta pendampingan kewirausahaan (3) Tahap Pelatihan dan Pendampingan, yang mencakup seluruh proses produksi, mulai dari pemilihan dan formulasi bahan. Hasil: peningkatan signifikan pada seluruh dimensi penilaian, dengan kenaikan lebih dari 15% pada aspek pengetahuan, keterampilan, dan sikap peserta setelah pelatihan. Hal ini menunjukkan bahwa pelatihan sabun cair berbasis air nira dapat memberikan dampak positif terhadap peningkatan keterampilan masyarakat, membuka peluang usaha baru. Kesimpulan: Kegiatan ini efektif dalam memberdayakan masyarakat melalui pemanfaatan air nira sebagai produk sabun cair bernilai ekonomi, sekaligus meningkatkan kapasitas kewirausahaan lokal secara berkelanjutan. Sehingga dapat memberikan kontribusi pada penurunan tingkat kriminalitas di Desa Meranti.

Abstract

Diabetes mellitus remains a major global health challenge, prompting the exploration of natural products as sources of safer antidiabetic agents. This study aimed to identify bioactive compounds from the roots of Acalypha indica and evaluate their potential as inhibitors of glutamine–fructose-6-phosphate amidotransferase (GFAT), an enzyme involved in glucose metabolism. Compound profiling was conducted using liquid chromatography–high resolution mass spectrometry (LC-HRMS), while the inhibitory potential against GFAT was assessed through in silico docking. This integrated approach has not been previously reported. Metabolite profiling using LC-HRMS tentatively identified thirteen carboxylic acid derivatives, including hydroxycinnamic acid, gluconic acid, trans-aconitic acid, and glucoheptonic acid. molecular docking analysis revealed strong binding affinities of several compounds toward GFAT.  Glucoheptonic acid exhibited the lowest binding energy (−8.0 kcal/mol), followed by xylaric acid A (−7.9 kcal/mol) and trans-aconitic acid (−7.5 kcal/mol). These compounds interacted with key active-site residues Gln421, Ser420, Ser422, and Lys675, suggesting a potential enzyme inhibition mechanism. In silico pharmacokinetic analysis indicated that 2-hexylpentanedioic acid exhibited favorable ADME properties, with high gastrointestinal absorption, no major inhibition of CYP450, and low predicted acute toxicity risk. These findings highlight Acalypha indica roots as a promising source of bioactive carboxylic acid derivatives, with glucoheptonic acid emerging as the most promising candidate for further in vitro evaluation as a GFAT inhibitor

Abstract

Hyptis capitata (sumambu) leaves are a traditional medicinal plant from the Lamiaceae family, commonly used to treat inflammation, swelling, pain, digestive disorders, fever, and wounds. The plant contains bioactive compounds such as oleanolic acid, alkaloids, terpenoids, and flavonoids, which may have antibacterial properties. To improve topical use, the leaf extract was formulated into an emulgel. This study aimed to evaluate the antibacterial activity of the emulgel containing ethanolic extract of H. capitata leaves against Staphylococcus aureus. The experimental study employed H. capitata leaves extracted by maceration using 96% ethanol. Phytochemical screening was conducted to identify active compounds, while the physical characteristics of the emulgel were assessed through organoleptic evaluation, spreadability, adhesiveness, and pH testing. Antibacterial activity was determined using the well diffusion method at extract concentrations of 5%, 10%, and 15%, and the results were analyzed descriptively. The findings indicated that the ethanolic extract contained flavonoids. Emulgels at all concentrations exhibited acceptable physical appearance and a pH suitable for topical use (pH 5–6). However, adhesiveness remained suboptimal (<4 s), and only the 15% formulation met the spreadability criterion, with a value of 5.56 cm. All emulgel concentrations demonstrated antibacterial activity against S. aureus, producing inhibition zones of 10 mm (5%), 12 mm (10%), and 14.6 mm (15%), whereas clindamycin cream (positive control) yielded a 40 mm inhibition zone.

Abstract

Limbah kepala dan kulit udang vaname (Litopenaeus vannamei) berpotensi mencemari lingkungan karena kandungan proteinnya yang tinggi, namun dapat dimanfaatkan sebagai bahan baku hidrolisat protein yang mengandung peptida bioaktif dengan aktivitas antioksidan. Penelitian ini bertujuan untuk menghasilkan hidrolisat protein dari kepala dan kulit udang vaname menggunakan enzim bromelain serta mengevaluasi aktivitas antioksidannya. Proses hidrolisis dilakukan dengan variasi konsentrasi enzim bromelain 4%, 5%, dan 6% pada suhu 55 °C selama 4 jam, kemudian produk dianalisis kadar protein, derajat hidrolisis, uji kualitatif protein, serta aktivitas antioksidan menggunakan metode ABTS. Hasil menunjukkan kadar protein meningkat seiring peningkatan konsentrasi enzim, yaitu 45,16% (4%), 48,27% (5%), dan 50,10% (6%). Nilai derajat hidrolisis tercatat 80,74–84,21% yang menandakan tingkat hidrolisis tinggi. Uji kualitatif memberikan reaksi positif terhadap protein, asam amino, senyawa aromatik, dan tirosin. Aktivitas antioksidan hidrolisat terbaik pada konsentrasi enzim 6% dengan nilai IC50 sebesar 3,14 mg/mL, meskipun masih lebih rendah dibandingkan vitamin C (0,12 mg/mL). Simpulan penelitian ini adalah hidrolisat protein kepala dan kulit udang vaname berpotensi sebagai sumber antioksidan alami, meskipun efektivitasnya masih perlu ditingkatkan untuk aplikasi pangan fungsional.
