Abstract

The issue of wasting remains a major concern, with Indonesia being the second-highest country in the world for child wasting, reporting more than 760,000 cases of malnourished children. This figure poses a serious threat to the future of Indonesia's younger generation. The 2022 Indonesian Nutritional Status Survey (SSGI) shows that Sigi Regency ranks first in Central Sulawesi with the highest undernutrition rate (156%). Numerous toddler food products now include moringa leaves, and the government has addressed undernutrition through programs such as the Supplementary Feeding Program. Moringa leaves have been widely used to tackle malnutrition issues, as applied in Sigi Regency, where moringa and anchovy (Teri) are staple foods of the Kaili tribe. Local food modification efforts are among the strategies to enhance nutritional intake. This study aims to evaluate the effectiveness of modifying a snack bar made from anchovy fish and moringa leaves to improve weight in malnourished toddlers. The method used was a quasi-experimental design with 40 undernourished toddlers whose weights were measured before and after consuming the modified snack bar. Results showed a significant improvement in the nutritional status of the toddlers, especially for those previously classified as severely malnourished.

Abstract

Stunting indicates impaired growth in children under the age of five due to chronic malnutrition, especially during the first 1000 days of life. The existence of complementary feeding can complement the nutritional needs of children. Complementary foods are transitional foods from breast milk to foods consumed by the family slowly. Fish contains vitamins and proteins that are more abundant than beef or goat. The potential of fisheries in East Kalimantan Province is quite high, so people can easily get animal protein sources such as fish. There are various types of fish caught by fishermen in the Mahakam River. Three types of local fish that are often caught by fishermen are Cork Fish (Channa Striata), Lais Fish (Cryptoterus sp.) and Betok Fish (Anabas testudineus). This study aims to determine the content in lais fish (kryptoterus sp) as a potential local food source to prevent stunting. This research is an experimental study with an Intac-group comparison approach. Simple random sampling technique. Based on the results of the study, the percentage of lais fish meat content for 24-hour treatment is water (96.4%), protein (2.16%), fat (2.45%), carbohydrates (1.28%) and ash (0.27%). The 48-hour treatment contained water (94.1%), protein (13.31%), fat (3.7%), carbohydrates (11.87%) and ash (0.76%). The 72-hour treatment was water content (82.14%), protein (22.56%), fat (1.89%), carbohydrates (8.78%) and ash (2.19%).

Abstract

Stunting is delayed growth due to poor health conditions or chronic malnutrition starting early in life. There are around 148.1 million cases of stunted children in various parts of the world. None other than that, Setono Pekalongan Village has the sharpest prevalence of stunting cases in 2023, reaching 120 children under five. The aim of the research is to find out the prevalence and nutritional status in cases of stunting in children aged 0-60 months. This research was a non-reactive descriptive study with total sampling involving all 66 children with stunting toddlers in Setono Village. Secondary data regarding the number of stunting cases in 2024 comes from the Sokorejo Community Health Center including variables of gender, age, weight and height. Descriptive data analysis supported by various literature studies. The results showed that 57.6% of stunted children were male, 62.1% of stunted children were aged 26-60 months, 56.1% of stunted children had normal weight and 89.4% of stunted children met the criteria according to status. Height per age in nutrition status is a short height category. It is hoped that the people of Setono will better understand the risk of stunting in their area.

Abstract

Bangle rhizome (Zingiber cassumunar Roxb.) is a part of the plant that is widely used in traditional medicine because its diverse secondary metabolites have great potential in treating various diseases. The aim of this research is to identify the content of curcumin and active compounds found in bangle rhizome (Zingiber cassumunar Roxb.) qualitatively and quantitatively using Thin Layer Chromatography and UV-Vis Spectrophotometry methods. The maceration method was used to extract the bangle rhizome with 70% ethanol solvent, resulting in an extract yield of 7.92%. The results of the study from qualitative analysis using Thin Layer Chromatography (TLC) with 3 different mobile phases, namely chloroform: ethanol (95:5), chloroform: methanol: glacial acetic acid (94:5:1), and chloroform: n-hexane: methanol (1:1:0.1), indicate that the ethanol extract from the bangle rhizome positively contains polyphenolic compounds, terpenoids, and glycosides. Quantitative analysis of curcumin using UV-Vis Spectrophotometry at a wavelength of 437 nm resulted in a linear equation y = 0.026x + 0.1026 with an R² value of 0.9958 and r = 0.997898. The absorbance values from the 3 replicates of the bangle rhizome ethanol extract sample solution obtained in this study were 0.35 nm; 0.38 nm; 0.392 nm, indicating the presence of curcumin in all three replicates of the bangle rhizome ethanol extract solution. Based on the research results, it can be concluded that the ethanol extract of bangle rhizome (Zingiber cassumunar Roxb.) positively contains polyphenolic compounds, terpenoids, glycosides, and curcumin.
