Abstract

This study aims to analyze the nutritional composition of the degree of hydrolysis and amino acids in the internal organ waste of tuna and the protein hydrolyzate of tuna's internal organs after fermentation using the Bacillus licheniformis bacteria. The analysis showed that the protein content of tuna offal was 53.52%, and after fermentation by Bacillus licheniformis, bacteria were able to increase protein levels from 56.04. The degree of hydrolysis of protein (DH) showed an increase of 13.24% in tuna offal to 22.28% of protein hydrolyzates are fermented tuna innards. The total essential amino acids and non-essential amino acids in the fermented tuna innards' protein hydrolyzates increased during the fermentation process. The highest levels of essential amino acids were found in arginine as high as 3.632965 at the 96th hour, and the lowest histidine was 1.082602. In contrast, for the highest non-essential amino acids, there was glycine at 8.52223, and the lowest for tyrosine was 1.272592.

Abstract

Pangkahkulon Village is a coastal village in Ujung Pangkah District, Gresik with more than 70% of its area being fish and shrimp farming ponds. To improve the household economy, many fishermen set up home industries (IRT) in processing fishery products. Based on the results of the Pappingkulon Village Potential Mapping, the number of fishery product businesses reached 98 units. The majority of these household businesses are the fish cracker industry with a total of 67 units. The first year of the Mitra Desa Development Program (PPDM) aims to empower communities through the development and improvement of the production and competitiveness of superior village products. Therefore, based on the mapped potential and discussion with Pangkahkulon Village officials, it was decided that the superior product of Pangkahkulon Village to be appointed was fish crackers. In general, the activities carried out in the first year were to increase production and competitiveness of IRT fish crackers, one of which was through the help of production equipment. The production facilities which were donated to IRT were in the form of two units of the mixer and one unit of automatic cracker dough cutter. This tool was granted to answer the main problem experienced by IRT, which is the inconsistency of cracker dough results because so far the making of the dough is still done by hand. Tool assistance through the PPDM program is able to increase production capacity by up to 35%.

Abstract

Kitin merupakan suatu polimer rantai panjang dari N-asetil-D-glukosamin. Sumber pakan yang mengandung glukosamin dapat berfungsi sebagai pemacu pertumbuhan dan dapat meningkatkan daya cerna. Tujuan percobaan ini adalah unti.rk menghasilkan formulasi pakan yang difortifikasi kitin dari limbah pengolahan udang untuk memacu pertumbuhan ikan gurami.Benih ikan gurami yang digunakan ukuran 2,4 t0,02 g ditebar dalam akuarlum ukuran .l 00 L dengan kepadatan 50 ekor/akuarium.

Abstract

Penelitian tentang waktu pemberian pakan yang mengandung kitin terhadap pertumbuhan dan produksi ikan gurami telah dilakukan di kolam percobaan. Tujuan percobaan adalah untuk mengetahui periode waktu yang tepat dalam pemberian pakan mengandung kitin untuk menghasilkan pertumbuhan dan produksi optimal ikan gurami.

Abstract

Desa Sumberbening terletak di Pesisir Pantai Kondangmerak dan berpenduduk mayoritas adalah nelayan yang menggunakan perahu yang berukuran sedang untuk menangkap ikan dan menyimpan hasil tangkapannya sebelum di labuhkan ke pelabuhan terdekat untuk dipasarkan. Permasalahan  yang  dialami  oleh  Mitra IbM  yaitu  pada  kondisi tempat penyimpanan sehingga es mudah mencair dan menurunkan kualitas ikan tangkapan. Solusi yang ditawarkan untuk mengatasi masalah diatas adalah dengan memberikan bantuan alat  portable insulated  fish storage  box  pada mitra  IbM yaitu sebuah kotak berinsulasi, yang akan mempertahankan kondisi dingin lebih lama karena es tidak   mudah   mencair. Selain   itu,   alat   tersebut   bisa   dipindah-pindah   sehingga memudahkan penanganan ikan untuk dipasarkan dan dipindahkan apabila kapal/perahu tidak beroperasi sehingga keamanan alat tersebut bisa terjaga. Kurangnya keterampilan fish handling dan sanitasi pada mitra akan diatasi dengan pelatihan penanganan ikan sehingga mutu ikan yang dijual akan baik dan pada akhirnya akan membantu menaikkan kesejahteraan nelayan Desa Sumberbening.

Abstract

This time, in the digital era, a business cannot be separated from digital marketing, this is by the explanation of technological developments. The existence of Small and Medium Enterprises (SMEs) in Indonesia is a driving factor in the creation of national economic development because it can spur economic growth. The high use of social media, especially Facebook in Indonesia, encourages business people to use social media as marketing media. This is also done by Anugerah Mina Lestari  SMEs. So that researchers feel they are researching the Effectiveness of the UKM Mina Lestari Marketing System Using Facebook Social Media. The research used the EPIC Model which involved 80 samples. The sample is part of the population of product buyers from Anugerah Mina Lestari SMEs. The effectiveness of the Anugerah Mina Lestari SME marketing system through Facebook social media that was analyzed using the EPIC Model with four variables (Empathy, Persuasion, Impact, Communication), showed an EPIC Rate of 2.943 which means that the Anugerah Mina Lestari SMEs marketing system through Facebook social media can be assessed effectively.

Abstract

Intensive aquaculture on catfish (Clarias sp.) has been getting problem due to pathogenic bacteria such as Aeromonas hydrophila. Fish infected by A. hydrophila would bear various symptoms, including hemorrhagic on the skin, gills, ulcers, and pale skin color. To tackle this situation, salt (sodium chloride) treatment with different concentrations can be used, which acts as both bactericidal and bacteriostatic agents. This study aimed to determine the effect of different salt concentration (viz. 0%, 5%, 10% and 15%) added in the treated samples by evaluating the availability of pathogenic bacteria using total plate count (TPC) and total A. hydrophila, along with proximate and organoleptic assessment. An experimental method was used in this research with a completely randomized design (CRD). The results showed that the TPC value in all sample treatments was higher (around 5 × 105) than that recommended by Indonesia National Standard (SNI). On the other hand, the sample added 10% and 15% salts exhibited a significant effect on the decrease of A. hydrophila through a selective medium Rimler-Shotts agar. For proximate analysis, the treated samples contained in the ranges of 67.33-80.03% (WB), 0.91-13.58% (WB), 35.06-69.92% (DW) and 4.41-1451% (DW) of moisture, ash, crude protein, and fat, respectively. In addition, a sensory test of catfish flesh samples showed that all parameter tests, including mucus, odor, and texture met the referred standard. Taken together, this study may contribute to developing an approach in treating pathogenic bacteria during rearing and also post-harvesting catfish; however, further research is required to obtain a better outcome in dealing with food safety issues.

Abstract

Edwardsielliosis is a disease that commonly infects freshwater fish including catfish (Clarias sp). Edwardsielliosis is caused by Edwardsiella tarda infection and causes mass mortality in catfish farming. Overcoming diseases in freshwater fish can use drugs or antibiotics that are classified as safe and their use is in accordance with government regulations. This study aims to determine the appropriate dosage of Oxytetracycline in catfish infected by E. tarda bacteria through histological analysis. The study design used Completely Randomized Design with 3 treatments, 1 control and 3 replications in each treatment. Catfish used were ± 25 cm in size and the dose of oxytetracycline used were 15, 30, and 45 ppm. The results showed tissue damage edema, vacuolization, necrosis, and haemorhage in fish infected with Edwardsiella tarda bacteria with the lowest damage at 45 ppm of oxytetracycline treatment. The results indicate that oxytetracycline has an effect on muscle histology and recovery of fish health.

Abstract

This community service activity aims to improve the efficiency and competitiveness of Small, Micro, and Medium Enterprises (SMEs) of fish crackers in Pangkahkulon Village, Ujung Pangkah District, Gresik Regency through the introduction of appropriate technology or “Teknologi Tepat Guna” (TTG) in the form of an automatic cracker dough cutting machine. The problem experienced by community service partners is that the thickness of the crackers is not uniform and requires a long cutting time. Through this community service program, partners are provided with automatic cracker cutting machines. In contrast to the many different cutting machines on the market, this machine can directly cut 4-6 pieces at once in one cut, thus producing more slices and saving production time. The results of the practice of using this machine show that this machine can cut very well with a thickness of 1.5-4 mm according to the needs of partners. The thickness of the crackers produced is 2.5±0.3 mm and 2.9±0.3mm which is very in line with the partner's expectations, while if the partner cuts manually the slice thickness is 2.9±0.5 mm and 2.5±0.6mm. The use of this machine also cuts the time for cutting the cracker dough to less than half before, from 2 hours to 1 hour even with a larger amount of cracker dough. The application of appropriate technology can increase the quantity, quality and competitiveness of fish cracker SMEs in Pangkahkulon Village.

Abstract

UMKM Anugrah Mina Lestari memanfaatkan limbah tulang bandeng dan intermuscular bone hasil pengolahan otak-otak bandeng menjadi kerupuk dan abon sebagai upaya zero waste produk otak-otak bandeng. Permasalahan yang dihadapi adalah kerupuk dan abon masih mengandung banyak minyak serta tingkat kekeringan krupuk yang tidak seragam. Program Doktor Mengabdi memberikan solusi permasalahan dengan memberi bantuan spiner dan oven. Dengan bantuan peralatan tersebut, terjadi peningkatan produksi kerupuk 66.6% dan abon 60% serta peningkatan penerimaan organoleptic dari agak suka (nilai 5) menjadi suka (nilai 6). Disarankan ada pengujian proksimat, kandungan mineral serta daya awet produk yang dicantumkan dalam kemasan walau sudah ada prototipe  bentuk cetakan kemasan produk .Perlu pula pengurusan IRTP untuk memperluas pasar.
