Abstract

The prevalence of stunting in Sorue Jaya Village is higher than other villages and has increased, namely in 2019 there were 4.4% Stunting Toddlers and in 2020 it was 28.6%. This study aims to determine the factors that cause stunting in toddlers in the coastal area of ​​Sorue Jaya Village, Soropia District, Konawe Regency. This research is a correlational study with a cross sectional study design. The population is all toddlers in the coastal area of ​​Sorue Jaya Village, Soropia District, Konawe Regency as many as 86 people and a sample of 86 people obtained by total sampling. Stunting data was obtained by measuring height using microtoise and the variables of diet, exclusive breastfeeding, education, occupation, family income and number of family members were obtained by distributing questionnaires. Data were analyzed using chi-square test, fisher's exact and multiple longistic regression. The results showed that there was a relationship between a history of exclusive breastfeeding, feeding patterns, education, work and number of family members with the incidence of stunting in Toddlers in the Coastal Area of ​​Sorue Jaya Village, Soropia District, Konawe Regency with p value <0.05, and there was no relationship family income with the incidence of stunting with a p value of 1,000 > 0.05. The conclusion of this study is that the factors that cause stunting in the coastal area of ​​Sorue Jaya village are a history of exclusive breastfeeding, eating patterns, education, work and number of family members.

Abstract

Abstrak. Kelor merupakan bahan pangan lokal yang banyak tersedia di lingkungan masyarakat Sulawesi Tenggara khususnya di Kota Kendari, Salah satu produk olahan kelor yang banyak digemari adalah Biskuit kelor yang dimix dengan ikan guna mengurangi rasa khas dari kelor. Ketersediaan ikan sori di Kota Kendari dapat didayagunakan guna menunjang kebutuhan zat gizi dalam setiap daur kehidupan. Tujuan penelitian adalah menganalisis kadar protein, kalsium dan Fe pada Biskuit kelor mix ikan sori. Penelitian ini adalah penelitian experiment (experimental research) dengan populasi adalah biskuit kelor sebanyak 100 gr. Data dianalisis secara deskriptif. Hasil penelitian menunjukkan bahwa Kandungan gizi biskuit Kelor mix ikan sori dalam 1 mg biskuit terdapat Protein 0,0502 mg/dl, Kalisum 0,0589 mg/dl dan Fe sebanyak 0,4680 mg/dl. Penelitian ini menyarankan agar dilakukan. The availability of sori fish in Kendari City can be utilized to support nutritional needs in every life cycle. The aims of this study was analyze the levels of protein, calcium and Fe in Moringa Biskuits mixed with sori fish. This research is an experimental research (experimental research) with a population of 100 grams of Moringa biskuits. Data were analyzed descriptively. The results showed that the nutritional content of Kelor biskuits mixed with sori fish in 1 mg of biskuits contained 0.0502 mg/dl Protein, 0.0589 mg/dl Kalisum and 0.4680 mg/dl Fe. This research suggests that it should be done. This study suggests that Moringa biskuit mix with sori fish can be consumed by the community, especially Toddlers, School Age Children, Teens and Pregnant Women to meet the needs of Protein, Calcium and Fe.

Abstract

Ibu hamil memiliki risiko mengalami KEK, hal ini dipengaruhi  berbagai faktor diantaranya kurangnya pengetahuan tentang  indikator KEK sehingga berdampak pada rendahnya konsumsi makanan yang  bergizi selama hamil dan juga tidak memahami terkait standar berat badan dan juga status LILA selama kehamilan. Tujuan pengabdian masyarakat ini adalah melakukan  pengukuran  berat  badan  dan  tinggi  badan  ibu hamil serta pengukuran LILA.  Metode yang digunakan adalah observasi melalui pengukuran antropometri. Kegiatan pengabdian dilaksanakan di wilayah kerja Puskesmas  Puuwatu. Objek pengabmas adalah  Ibu Hamil yang berkunjung ke Posyandu. Hasil pengabmas ini adalah setelah dilakukan pengukuran antropometri menunjukkan bahwa dari 40% ibu hamil mengalami KEK. Selain itu rata-rata BB ibu hamil 52,3 kg dan TB 154,1 cm dan LILA 25 cm. Saran bagi pihak Puskesmas diharapkan dapat melakukan pemantauan secara rutin kepada ibu hamil khususnya ibu hamil KEK dan memberikan intervensi berupa pemberian Biskuit PMT dan merutinkan pelaksanaan konseling pada ibu hamil khususnya tentang gizi yang tepat dikonsumsi selama kehamilan.

Abstract

Stick snack products are foods that are still rarely found in the community. Green seaweed plants contain carbohydrates, protein, fat, most of which are salt, sodium, and potassium compounds. beta-carotene and minerals. This study aims to determine the acceptability of color, texture, aroma and taste of green seaweed stick snacks with the addition of wheat flour in school children at SDN 29 Kendari. The type of research used is descriptive. The panelists were 53 students of SD Negeri 29 Kendari. The sampling technique used is the saturated survey. The data obtained using observation sheets and analyzed descriptively. The result of color preference for green seaweed stick snack products, namely R4 has the best acceptance rate of 90.6%. From the aspect of texture, that is R4 as much as 89.2%. From the aspect of aroma, namely R4 as much as 92.5%. Meanwhile, from the taste aspect, R4 is 92.5%. The conclusion of this study is the acceptability of green seaweed stick snacks based on the attributes of color, texture, aroma and taste. Meanwhile, the panelists preferred the R4 product more than other products.

Abstract

Abstract. The prevalence of overweight in adolescence at junior high (SMP) school Frater was 14.1% (exceeded the standard of the nutritional problem for 10%), and thus requires innovation in form of a handbook to overcome the obesity problem. This study aimed to know the effect of the overweight handbook on the physical activity in adolescents at SMP Frater Kendari. This was a quantitative study (pre-experimental study) with a pre-test post-test study design that was done from 7 May-14 July 2018. The population of the study was all students with overweight status at SMP as many as 38 people and the samples were 32 students that were selected through a simple random sampling. The physical activity level was assessed using IPAQ for 4 times and analyzed using the Wilcoxon sign rank test. The results of the study showed that the average METs score of the activity level in pre-measurement was 280 METs per week and the post-measurement 669 METs per week. Meanwhile, the result of the paired t-test on physical activity showed p value (0.000)<α (0.05). This present study concludes that there is an effect of the overweight handbook to the increase on physical activity level of the adolescents. It is suggested to the overweight student at SMP Frater to read the handbook regularly and increase their activity level by exercising at least 30 minutes for 2 -3 times per week and to the school party, to educate the student routinely about overweight using the handbook.

Abstract

Food is a basic need for humans, food that is not safe for consumption can cause disease in humans, nosocomial infections, and food poisoning. The results of observations at the Bahteramas General Hospital and hospitals. The city of Kendari has not yet implemented the HACCP system, so innovation is needed so that the HACCP program can be implemented. The purpose of this study was to determine the effect of socialization on the application of food processing at Bahteramas General Hospital and hospitals. Kendari City. This type of research is quantitative, Quasy experiment design. The research was conducted at Bahteramas General Hospital, Southeast Sulawesi Province and in hospitals. Kendari City on January 28 - March 4, 2022. The sample is part of the nutrition staff, hosts and waiters at Bahteramas General Hospital and in hospitals. Kendari City in 2022. The intervention sample was given socialization about HACCP as many as 25 people obtained by simple random sampling and the control sample was not given socialization as many as 19 people obtained from the total sampling. Data collection techniques with questionnaires and observation. Data were analyzed using Mc.Neymar test. The results of research at the Bahteramas General Hospital obtained p value 0.031 < 0.05 for food processing obtained, and p value 0.031 < 0.05 for food presentation The conclusion is that there is an effect of socializing the application of HACCP on food processing and serving in hospitals. Kendari City. Suggestions for hospitals to implement the HACCP system. For health workers, food handlers and food servicers, to improve food management efforts based on the principles of food hygiene and sanitation.

Abstract

Abstract. Hypertension is a condition where blood pressure exceeds 140/90 mmHg. Hypertension can cause complications of cardiovascular diseases such as stroke, heart disease and diabetes mellitus. Hypertension at the Alosia Health Center in 2021 was 72 cases and increased in 2022 for the January-March period by 90 cases. The purpose of this study was to determine the relationship between sodium intake and nutritional status with the incidence of hypertension. Quantitative research design, cross sectional study approach. The sample is partly all patients registered at the Alosika Health Center, Konawe Regency in 2022 for the January-March 2022 period as many as 89 obtained by Simple Random Sampling. Data were analyzed using Chi-square test. The results of the study from 89 samples, the incidence of hypertension, most of them had hypertension (66.3%), then based on sodium intake, most were more (67.4%) and based on nutritional status most of 56 people (62.9%) nutritional status normal. Chi-Square test obtained p value 0.000 for the relationship of sodium intake with the incidence of hypertension and p value 0.001 for the relationship between nutritional status and the incidence of hypertension. The conclusion of this study is that there is a relationship between sodium intake and nutritional status with the incidence of hypertension in the work area of the Alosika Health Center, Konawe Regency.

Abstract

Chronic Energy Deficiency (CED) is one of the nutritional problems which prevalence in Southeast Sulawesi is 21.9%, Kendari City is 14.37%, and Puuwatu Public Health Center is 11.04% (the national target for CED is 5%). The direct cause of CED is low intake of macronutrients such as energy, protein, fat and carbohydrates. During the Covid-19 pandemic, everyone is advised to stay at home so that access to food is very limited and causes a lack of nutritional intake for pregnant women. The study aimed to determine the macronutrient consumption of pregnant women who suffer from CED during the Covid-19 Pandemic. The research was conducted descriptively with a survey design. This research was conducted in June – September 2020 in the Puuwatu Public Health Center, Kendari City, Southeast Sulawesi. The research sample was 35 pregnant women in the 3rd trimester who had CED and were taken using saturated samples. Data collection by interview using a form 2x24 hour recall and also anthropometric measurements using microtoice and weight scales. Data were analyzed descriptively and presented in tabular and narrative form. The results showed that the energy and carbohydrate intake of pregnant women was 100% in the category of severe deficit, 91.4% heavy deficit protein intake and 8.6% mild deficit, then fat intake 57.1% severe deficit, 20% mild deficit and 8,6% mild deficit. In conclusion, the intake macronutrient of pregnant women in CED during the Covid-19 pandemic is mostly a severe deficit.

Abstract

Background: Chronic Energy Deficiency (CED) in pregnant women is characterized by the size of middle-upper arm circumference  (MUAC) <23.5 cm. In 2017, the prevalence of CED in Indonesia was 17.3%, 21.9%, 14.37%, and 11.04%, respectively, in Southeast Sulawesi, Kendari, and Puuwatu Health Center, which were still above the national target of 5%. Thus, there is a need to overcome the CED problems by administering nutrition assistance to pregnant women.Objective: This research aimed to understand the effect of nutrition assistance on the size of the middle-upper circumference of pregnant women with CED in the working area of Puuwatu Health Center, Kendari, Indonesia.Methods: This study was a pre-experimental study with one group pretest-posttest design conducted from June to August 2020 in the working area of Puuwatu Health Center. As many as 35 pregnant women with CED living in the work area of Puuwatu Health Center during a period of January-August were enrolled in the study through a purposive sampling method. Later, the data were analyzed using a Wilcoxon sign rank test.Results: There was an effect of nutrition assistance to the size of the middle-upper arm circumference of pregnant women with CED with a p-value= 0.000.Conclusion: The nutrition assistance increases the size of the middle-upper arm circumference of pregnant women with CED in the working area of Puuwatu Health Center.
